Effect of Heat Treatment on Some Qualities of Korean Pickled Cucumbers during Fermentation (열처리가 오이지의 발효에 미치는 영향)

  • Effect of high temperature soaking in salt solution and short time microwave heat treatment on quality of Korean pickled cucumbers during fermentation was investigated. The Korean pickled cucumbers were fermented at $25^{\circ}C$ for 10 days in 10% salt solution. The physicochemical properties measured were pH, the total acidity, hardness and the sensory properties of odor, taste and texture were also evaluated. The result showed that the effect of soaking cucumber in $80-90^{\circ}C$ hot salt solution significantly reduced the fermentation rate and softening rate of texture while a rather rapid fermentation was found for those soaked in $60-70^{\circ}C$. The effect of microwave treatment inhenced fermentation a little for short treatment but it was significantly reduced softening rate of texture by 3 minutes heating. The sensory evaluation of Korean pickled cucumber was found that heat treatments with hot solution and microwave heating had a possitive effect for reduction of softening of cucumber tissue, however odor and taste were not significantly affected.

Quality characteristics and antioxidant capacities of oriental melon wine depending on pretreatments (전처리 방법에 따른 참외와인의 품질특성과 항산화능)

  • Oriental melon (Cucumis melo L. var. makuwa) has been widely consumed as various processed foods, such as dried products, jelly, wine, juice, and vinegar, in Asian countries. In fruit processing, blanching and pressure treatments affect its quality, such as antioxidant activities, sensory characteristics, and etc. This study was conducted to evaluate the effects of blanching and pressure pre-treatments on oriental melon wine-making (BP, blanching and pressure filtration; BNP, blanching and non-pressure filtration; NBP, non-blanching and pressure filtration; and NBNP, non-blanching and non-pressure filtration). Physicochemical properties and antioxidant capacities by ${\alpha}$, ${\alpha}$-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, ferric ion reducing antioxidant power (FRAP) assay, and total phenolic and total flavonoid contents were measured for comparison of the different pre-treatment methods. After the aging process, the alcohol contents and pH values showed no statistical differences, whereas the amount of soluble solids, reducing sugar, and titratable acidity were slightly different among the pre-treatments (p<0.05). The samples with blanching pre-treatment showed higher antioxidant capacities than those of other pre-treatments. In the sensory evaluation, the BNP was the best in overall acceptability. Thus, this study showed that the blanching treatment enhanced the antioxidant capacities and sensory qualities of the oriental melon wine.

Quality of 'Hayward' Kiwifruit by Low-Dose Gamma Irradiation (저전량 감마선 조사된 헤이워드 참다래의 품질 특성)

  • In order to control or kill insects and pests, control ripening, and delay spoilage, kiwifruits were irradiated with gamma rays at 0.1, 0.3, and 0.5 kGy. Vitamin C, hydrogen donating activity, sugar content, organic acid content, texture, chromaticity, and sensory qualities were examined in the fruits over 2 weeks of storage at 20$^{\circ}C$. Vitamin C content and hydrogen donating activity decreased during the storage period, but they were not reduced by the irradiation process. Total sugar and reducing sugar contents increased as the storage period increased; however, these were also unaffected by irradiation. Organic acid content significantly decreased as a result of irradiation, and all samples had decreases in organic acids over the storage period. Hardness decreased with the storage period as well as with increasing doses of irradiation. In terms of Hunter's color values, irradiation increased the $L^*-\;and\;a^*-$ values in the initial storage period, but it did not have any significant effect on these values during the 2 weeks of storage. When compared with control samples, the irradiated samples had lower color and overall acceptability scores just after irradiation (week 0). However, during the storage period, the irradiated samples had higher scores for smell, taste, texture, and overall acceptability than the control. In conclusion, based on the results, gamma irradiation up to 0.5 kGy is the recommended treatment to maintain the overall quality attributes kiwifruit.

Storage stability of dry-aged beef: the effects of the packaging method and storage temperature

  • Different packaging methods and storage temperatures were tested to determine the storage stability of beef dry-aged for 21 days based on microbial, physicochemical, and sensory qualities. After completion of the dry aging, the dried surface of beef sirloin was trimmed off, and the beef was packaged using two different methods (oxygen-permeable wrap or vacuum packaging) and stored at different temperatures ($3{\pm}2^{\circ}C$ or $-23{\pm}2^{\circ}C$) for 0, 7, 14, or 21 days. Lipid oxidation and the sensory quality of the dry-aged beef were not affected by the packaging method and storage temperature during storage. No microbial growth was observed over the storage period in the vacuum-packaged dry-aged beef, regardless of the storage temperature. However, dry-aged beef in the oxygen-permeable wrap packaging showed microbial spoilage with 8.82 log CFU / g at day 7 of the refrigerated storage. The vacuum-packaged dry-aged beef showed the lowest values (p < 0.05) in $a^*$ and chroma at days 14 and 21 at $3^{\circ}C$, and days 7 and 14 at $-23^{\circ}C$, respectively. Therefore, it is recommended that dry-aged beef with wrap packaging stored in refrigerated conditions should be consumed as quickly as possible due to microbial growth. For long-term storage, dry-aged beef should be frozen because freezing can extend the color stability up to day 21 of storage without adverse effects on the hygienic or meat quality aspects of dry-aged beef.

Quality and Thermoluminescence Properties of ${\gamma}$-Irradiated Boiled-Dried Anchovies during Storage (감마선 조사와 저장 기간에 따른 건멸치류의 품질 및 열발광 특성)

  • The effect of gamma irradiation was investigated on the microbiological and physicochemical qualities of boiled-dried anchovies (large- and smallsized) packed in PVC film (0.06 ㎜) during storage at 15$\pm$1$\^{C}$ for 6 months. On the other hand, thermoluminescence characteristics of minerals extracted from the sample were analyzed to evaluate its possibility in detecting the irradiated anchovies. The samples were contaminated by microbial levels of 104∼106 CFU/g in total aerobic bacterial counts and negative in coliforms, which were different depending on the sample sizes. Gamma irradiation at 3 kGy was effective for improving the hygienic quality of both samples for 6 months, keeping the microbial population less than 20 CFU/g. Besides it was not detrimental to the quality attributes, such as instrumental color parameters L, a, b, ΔE), browning, TBA value, volatile basic nitrogen, trimethylamine-N and sensory properties(appearance, color, odor, tape, overall acceptability). However, storage conditions (time, temperature, packing) showed a critical factor nfluencing the quality changes of dried anchovies. Thermoluminscence analysis was prove to distinguish irradiated from non-irradiated anchovies by comparing both temperature at which glow curves appear and the curve intensity, that was possible even after 6 months at - 20$\^{C}$.

Quality Characteristics of Traditional Kochujang Adding Pear Juices during Fermentation (배즙을 첨가한 전통고추장의 숙성과정 중 품질특성)

  • In order to improve qualities of traditional kochujang, pear juice was added to kochujang, and the physicoche-mical and microbial characteristics of pear-added kochujang were investigated for 2 months of fermentation at 30$^{\circ}C$. Moisture contents of pear-added kochujangs increased except of 9$\%$ pear-added kochujang and crude protein contents of them decreased as the fermentation proceeded. Total sugar contents of pear-added kochujangs did not change during the fermentation period, and reducing sugar contents of them increased remarkably from early stage of fermentation. The pH of pear-added kochujangs decreased and titratable acidity of them increased during fermentation. Amino-nitrogen contents of pear-added kochujangs increased remarkable after 45 days of fermentation. Viable cells counts of yeasts in pear-added kochujangs increased to 2.2$\∼$2.9$\times$$10^{3}$CFU/g, and bacterial cell counts were in relatively constant range of 2.1$\∼$2.9$\times$$10^{7}$CFU/g at the late stage of fermentation. Color of pear-added kochujangs had no difference and 'a' value decreased slightly during fermentation. The result of sensory evaluation showed that 6$\%$ pear added kochujang were more acceptable than others.

Quality characteristics of cookies added with RS4 type resistant corn starch (RS4 형태의 옥수수 저항전분이 첨가된 쿠키의 품질 특성)

  • Effects of RS4 type resistant corn starch on the quality characteristics of cookies were investigated by physicochemical, instrumental and sensory evaluation. The resistant starch was made by cross-linking of corn starch as following; corn starch slurry was annealed at pH 2.0 and $50^{\circ}C$ for 2 h followed by the cross-linking reaction. The cross-linking reaction was performed at $50^{\circ}C$ for 12 h in the presence of 1.2%/st.ds NaOH, 10%/st.ds sodium sulfate and 10%/st.ds of sodium trimetaphosphate (STMP)/sodium tripolyphosphate (STPP) mixture. Dietary fiber content of the resistant starch was estimated to be 73.8% by the AOAC method. For quality characteristics, dough pH decreased with the increase of the resistant starch content and spread factor decreased a little at 20% of the resistant starch. The moisture content and L value of cookies increased with the increase of the resistant starch content. However, the hardness and fracturability decreased with the increase of the resistant starch content. In the sensory evaluation, no significant differences were observed between the two cookies with or without the resistant starch. The results of this study suggest that the RS4 type resistant corn starch can be a good ingredient to increase dietary fiber content in cookies without changes of their qualities.

Effect of Chlorine Dioxide Treatment on Microbial Growth and Qualities of Fish Paste during Storage (이산화염소 처리가 어묵의 저장 중 미생물학적 변화 및 품질에 미치는 영향)

  • Effect of chlorine dioxide ($ClO_2$) treatment on the microbial and physicochemical changes of fish paste was investigated. Fish paste samples were treated with 5, 10, and 50 ppm of $ClO_2$ solution, respectively, After $ClO_2$ treatment, fish paste samples were individually packaged and stored at 4$^{\circ}C$. The initial microbial loads of samples were 3.8 log CFU/g in total bacterial count, and 2.5 log CFU/g in yeasts and molds. Microbial growth of fish paste during storage showed that populations of total bacteria, yeast and mold were significantly reduced by $ClO_2$ treatment. In particular, the treatment of 50 ppm $ClO_2$ decreased total bacterial count the most significantly among the $ClO_2$ treated fish pastes. The pH and VBN of fish paste decreased with increasing $ClO_2$ concentration. Thiobarbituric acid reacted substance (TBARS) values of treated fish paste increased during storage, regardless of $ClO_2$ concentration. This study showed that 50 ppm chloride dioxide was the optimum dose level to extend the shelf-life of fish paste.

Quality Characteristics of Muffin with Added Corni fructus Powder (산수유 분말 첨가 머핀의 품질특성)

  • The purpose of this study was to examine the qualities of muffins made with 0, 2, 4, 6, and 8% Corni fructus powder. The height of the muffins did not significantly differ between the sample groups; however, the weight of the control group was higher than that of the test samples containing Corni fructus powder. The volume and specific loaf volume of muffins decreased with the addition of Corni fructus powder. The baking loss of the samples containing Corni fructus powder was also higher than that of the control group. The moisture content of the control group was 19.88%, whereas that of the test samples ranged from 16.72~21.01%. The pH of batters and muffins of the test samples were lower than those of the control group. For DPPH radical scavenging activity, the control group measured 11.46%, whereas the test samples ranged from 22.63~53.33%. The L and b values of the crust and crumbs decreased, but the a value was increased significantly by the addition of Corni fructus powder. Examination of the textural properties revealed the hardness, gumminess and brittleness of muffins containing Corni fructus powder were significantly higher than those of the control group. In term of overall preference, the sensory evaluation scores of groups containing 2% and 4% of Corni fructus powder did not show significant differences compared to the control group. Based on the above results, using Corni fructus powder at less than 4% would be appropriate for making muffins.

Monitoring on Extraction Conditions for Physicochemical Qualities of Ethanol Extract from Garlic (마늘 에탄올 추출물의 이화학적 특성에 대한 추출조건의 모니터링)

  • This study was carried out to find the optimal conditions for the extraction of the effective ingredients based on central composite by monitoring the extraction characteristics of each ingredient with a response surface methodology. The optimal condition for the effective component alliin was extract temperature of $60.86^{\circ}C$, extract time of 3.77 hr, and ethanol concentration of 50.68%, and that for allicin was $65.11^{\circ}C$, 2.79 hr, and 13.62%, respectively, with the maximum extraction of 16.72 mg%. The maximum value of extracted total phenolics was 16.72 mg%, the optimal condition for electron donating ability was $93.35^{\circ}C$, 3.22 hr and 10.38%. The optimal conditions for pH 1.2 and 3.0 nitrite-scavenging ability was extract temperature of $79.77^{\circ}C$ and $76.46^{\circ}C$, extract time of 3.22 hr and 3.31 hr, and the ethanol concentration of 10.38% and 1.12%, respectively. With this optimal condition, the obtained maximum values for nitrite-scavenging activities at pH 1.2 and 3.0 were 94.85% and 63.22%, respectively.
