A Study on the Functional Characteristics of Cuscuta australis R.Brown (실새삼(Cuscuta australis R.Brown)의 기능적 특성에 관한 연구)

  • To investigate the usefulness of natural plants, physicochemical characteristics, functional components and physiological activities of dodder(Cuscuta australis R.Brown) were experimented. The extraction of dodder was carried out at 60℃ in shaking bath with 10 times of distilled water for three hours. Harmful metals such as lead, cadmium and arsenic were not detected, but the content of mercury from dodder was 0.0004ppm in acceptable standards. The extraction yield was 23.45%, total content of phenolics equivalent to gallic acid was 699.8 mg/100g and total content of flavonoid equivalent to naringin was 373.8 mg/100g. 28 kinds of free amino acids were detected with the contents of 252mg/100g in the dodder extract, and the contents of anserine and sarcosine were analysed highest in all amino acids. From the comparison of physiological activities of dodder extract with those of ascorbic acid, total reducing power, electron donating ability based on DPPH radical scavenging and ferric reducing antioxidant power was equivalent to 88%, 56% and 40%, respectively, of ascorbic acid. The nitrite scavenging activity of dodder extract was 78% of ascorbic acid on pH 1.5, but the antioxidant index of dodder on perilla oil was about 4 times greater than that of ascorbic acid.

Degradation of Plant Lignin with The Supercritical Ethanol and Ru/C Catalyst Combination for Lignin-oil (초임계 에탄올과 루테늄 촉매에 의한 초본 리그닌의 오일화 반응)

  • Asian lignin was efficiently depolymerized with supercritical ethanol and Ru/C catalyst at various reaction temperature (250, 300, and $350^{\circ}C$). Lignin-oil was subjected to several physicochemical analyses such as GC/MS, GPC, and elemental analysis. With increasing reaction temperature, the yield of lignin-oil decreased from 89.5 wt% to 32.1 wt%. The average molecular weight (Mw) and polydispersity index (Mw/Mn) of lignin-oil obtained from $350^{\circ}C$ (547Da, 1.49) dramatically decreased compare to those of original asian lignin (3698Da, 2.68). This is a clear evidence of lignin depolymerization. GC/MS analysis revealed that the yield of monomeric phenols involving guaiacol, 4-ethyl-phenol, 4-methylguaiacol, syringol, and 4-methysyringol increased with increasing reaction temperature, and these were mostly produced with applying hydrogen gas and Ru/C catalyst (76.1 mg/g of lignin). Meanwhile, the carbon content of lignin-oil increased whereas the oxygen content decreased with increasing reaction temperature, suggesting that hydrodeoxygenation was significantly enhanced at higher temperature.

  • In order to obtain the basic data for processing adaptability of hazelnut, physico-chemical properties and heat stability of hazelnut oil were invest igated, and the results obtained are summarized as follows. 1. Hazelnut showed highly nutrient value as the content of oil and protein were 59.6% and 17.35, respectively. 2. In physicochemical properties of hazelnut oil, refractive index was 1.469, specific gravity 0.912, saponification value 167.3 and iodine value 63.43, therefore, it was found to be non-drying oil. 3. In composition of fatty acids in hazelnut oil, oleic acid was contained much in comparisoon with other fatty acids, and which was similar to olive oil. 4. 18 kinds of amino acids were existence in protein of hazelnut cake and among these the content of glutamic acid was the highest. 5. The peroxide value were the highest in the heat ing at $150^{\circ}C$ for 30 hours and at $180^{\circ}C$ for 10 hours, and then decreased as the heating time were longer. The carbonyl value was increased as heating time passed. 6. Acid value of hazelnut oil in the heating at $150^{\circ}C$ for 30 hours and at $180^{\circ}C$ for 10 hours were similar to each other.

Quality Characteristics and Reduced Sugar Conditions of Yanggaeng Prepared with Steamed Liriopis Tuber Extract Using Response Surface Methodology (반응표면분석법을 이용한 증숙 맥문동 첨가 양갱의 품질 특성 및 당류 저감화 조건 연구)

  • This study was performed to optimize yanggaeng processing conditions prepared with different amounts of steamed Liriopis tuber (SLT) extract, sugar, and agar powder using response surface methodology. The experimental conditions were designed according to the central composite design with 16 experimental points, including two replicates for three independent variables. The experimental data on physicochemical properties, textural properties, and sensory evaluation were fitted to various models, and the accuracy of the equations was analyzed by ANOVA. Among the responses, pH, water content, sugar content, L-value, browning index, chewiness, gumminess, and sensory properties of appearance, color, sweetness, hardness, texture, and overall acceptability showed significant correlation with contents of SLT, sugar, and agar powder. From these results, optimum formulation of yanggaeng was calculated as follows: SLT 35 mL, sugar 55.23 g, and agar powder 3.39 g.

The Limnological Survey of Lagoons in the Eastern Coast of Korea (1): Lake Chungcho (동해안 석호의 육수학적 조사(1): 청초호)

  • Water quality and Pollution state of Lake Chungcho were evaluated during three years from 1998 to 2000. We surveyed physicochemical parameters, and TSI (trophic state index) was calculated using TP, Chl. a, and SD (secchi disc transparency) data of growing season average. Water samples were collected bimonthly except freezing season. During the study period, total annual precipitation in 1998, 1999 and 2000 year was 1,797,1,722 and 1,345 mm, respectively. Salinity and conductivity were high($29.3{\pm}5.5\;ppt$, and $45,105{\pm}7,585\;{\mu}S/cm$) then other lagoons in the Eastern Coast of Korea. Chemocline was formed by salinity at $0.5{\sim}1.5\;m$ water depth. As a result of this, DO concentration of hypolimnion was below $3.0\;mgO_2/L$. Especially, when intense chemocline was formed, temperature of hypolimnion was higher than epilimnion. Secchi disc transparency, chlorophyll a, and COD were $1.8{\pm}0.3\;m$, $15.7{\pm}20.7\;mg/m^3$, and $3.1{\pm}0.8\;mgO_2/L$, respectively. Most of TN/TP ratios below 20, but concentration of TN and TP was high. Values of TSI ranged between 59 and 77, indicating a eutrophic condition in this system.

Characteristics of Ganoderma lucidum during short log cultivation with soil contact barrier treatment (영지버섯(Ganoderma lucidum) 단목재배시 토양접촉차단재 처리별 자실체 특성)

  • Arthrographis cuboidea is a wood rot fungus found in soil. It causes disease in repeated cultivation areas of Ganoderma lucidum, which damage the mushroom logs and causes considerable loss of income to mushroom farmers. This study aimed to investigate the physicochemical properties of soil and characteristics of the growth environment such as the temperature of the Ganoderma lucidum cultivated land. The time required for primordia initiation was 12-13 days. In the chromaticity survey, the degree of redness (a) was 19.5 for vinyl, 20.2 for control, and 19.5 for nonwoven. The yellowness index (b) was 12.7 for vinyl, 13.3 for control, and 12.4 for nonwoven. In the study of growth characteristics, in case of no treatment (control), the length and thickness of the pileus were measured as 145.7 mm and 23.6 mm and those of the stipe were 73.9 mm and 11.5 mm, respectively, and the weight was 130 g. Treatment with non-woven fabric resulted in 157 mm and 93.3 mm long and 22.3 mm and 11.9 mm thick pileus and stipe, respectively, and the weight was 164 g. This result indicates that treatment with non-woven fabric is better than no treatment with respect to Ganoderma lucidum growth.

Product Characteristics as Factors of Process Parameters in Starch Phosphates Preparation by Twin-screw Extruder (이축압출성형기로 인산전분 제조시 Process Parameters에 따른 제품의 특성)

  • Starch phosphates were prepared from the corn starch mixed with 2% sodium tripolyphosphate by twin-screw extruder with a feed rate of 20 kg/hr and an extrusion temperature of $130^{\circ}C$, and the effects of extrusion variables on the physicochemical properties (target parameters) of starch phosphates were investigated. Interrelations of system parameters (specific mechanical energy and extrudate moisture) and rheological properities of starch was analyzed by using the response surface analysis. Degree of substitution (DS) was increased with increasing the feed moisture, and showed the maximum value at the screw of near 250 rpm, Degree of gelatinization was proportionally increased with increasing the screw speed and decreasing the feed moisture. Apparent viscosity of the paste was increased with increasing the feed moisture, but it was not significantly affected by the screw speed. It was found by scanning electron microscopy that the starch microgranules were much more degradaded, and as consequent result, the intrinsic viscosity was decreased, whereas, water solubility index was increased. The rate of retrogradation of the gels was retarded with increasing DS and decreasing viscosity.

Improvement on Storage Stability of Soybean Curd using Cuttle Bone Powder Treated with Acetic Acid (유기산처리 갑오징어갑을 이용한 두부의 저장성 개선)

  • Storage stabilities of soybean curds using cuttle bone powder treated with acetic acid (ATC-soybean curd) and calcium chloride (calcium chloride-soybean curd) as a coagulants were examined. The pH, turbidity of soaking solution, titratable acidity, and viable cell counts of calcium chloride-soybean curd did not change up to 6 days of storage, then decreased rapidly in pH and turbidity and increased rapidly in titratable acidity and viable cell counts, whereas those of ATC-soybean curd did not change up to 9 days of storage, then decreased slowly in pH and turbidity and increased slowly in titratable acidity and viable cell counts. Regardless of coagulants and storage period, white index of soybean curds did not change during cold storage. Hardness and brittleness of calcium chloride-soybean curd decreased rapidly up to 3 days in of storage, remained stable from 3 days to 6 days, then decreased rapidly. Hardness and brittleness of ATC-soybean curd also decreased rapidly up to 3 days in of storage and remained stable from 3 to 9 days, but then decreased slowly. Regardless of coagulants, results of sensory evaluation were similar to those of physicochemical tests. Judging from the above results, shelf-lives were determined as 9 and 6 days for ATC- and calcium chloride-soybean curds, respectively.

A Study on Various Trans Fatty Acid Contents (Trans지방산의 함량변화에 관한 연구)

  • In this study, the degree of rancidity and trans fatty acids formation was assessed in Soybean oil(SBO), Corn germ oil (CGO), Canola oil(CNO) and Olive oil(OLO). All samples treated under various conditions were analyzed in order to determine their physicochemical characteristics(RI: Refractive index, Tocopherol, AV: Acid Value, IV: Iodine Value) and total trans fatty acid contents via GC. The results were as follows: The AV of corn germ oil was the highest (0.49$\pm$0.01 and 0.72$\pm$0.04 respectively) among the 4 kinds of oils at $170{\pm}2^{\circ}C$ and $210{\pm}2^{\circ}C$. The IV of olive oil was the lowest(88.7$\pm$0.6 and 89.2$\pm$0.5) among the 4 kinds of oils at $170{\pm}2^{\circ}C$ and $210{\pm}2^{\circ}C$. The trans fatty acid contents of the soybean oil, corn germ oil, canola oil and olive oil, respectively(in g/100) increased from 0.41, 0.60, 0.44 and 0.11 prior to heating to 0.84, 1.36, 0.94 and 0.81 after 7 hours. Catechin and BHT reduced trans fatty acid formation by 0.5-15.5% under all treatment conditions. In particular, Catechin exerted a more profound inhibitory effect on trans fatty acids formation than that did BHT.

In vitro Study on the Functionality in Digestive Tract of Chitin and Chitosan from Crab Shell (게껍질 Chitin 및 Chitosan의 소화관내 기능성에 관한 in vitro 연구)

  • Chitin and chitosan samples prepared from crab's shells under different conditions were compared for their physicochemical properties; and functionality in gastrointestinal tract by in vitro test. Their bulk density was in the range of $127{\sim}208\;mg/ml$, and their viscosity was $80{\sim}581\;cP$ in 0.1 chitin and $80{\sim}3,670\;cP$ in 0.5% chitosan solution, showing a wide variation. The degree of deacetylation in chitosan samples as determined by IR spectral analysis was relatively high, showing $81{\sim}93%$. At the same alkali concentration and reaction temperature, a longer reaction period gave an increased degree of deacetylation and lower viscosity. The water holding capacity of chitic substance became greater at higher soaking temperature; chitosan D at $37^{\circ}C$ showed the greatest value. Chitic substance with lower bulk density showed the higher water holding capacity. The retardation effect toward glucose absorption was higher in critic substances of lower density and higher water holding capacity; chitosan D showed the highest value of 38%. The retardation index toward bile acid absorption after 1 hour dialysis was $15{\sim}34%$ in chitic substances, 39% in pectin and 9% in cellulose. The retarding effect showed the highest value of 34% in chitosan D at 3% concentration.
