The aim of this study was to provide the quality index of salted Korean cabbage in a short-term distribution system. Salted Korean cabbages were packaged with or without 2% salt water, and then distributed in a conventional system (CVS) and a cold-chain system (CCS) for 6 h. The material temperature of samples with and without salt water gradually increased to $19.57^{\circ}C$ and $19.43^{\circ}C$ in a CVS, respectively and to $10.73^{\circ}C$ and $12.90^{\circ}C$ in a CCS, respectively. Salinity of the materials in a CCS did not change, whereas salinities of the materials in a CVS were 1.2 and 1.7 fold higher, respectively. Also, a slight increase in acidity was observed in both packaging materials in a CCS. In the case of a CVS, total aerobic bacteria and lactic acid bacteria increased to 7.62 log CFU/g and 6.77 log CFU/g in the materials with salt water, respectively, whereas the number of total aerobic bacteria and lactic acid bacteria ranged between 5.62-5.85 log CFU/g and 4.33-4.83 log CFU/g in the materials without salt water, respectively. However, significant microbial changes were not observed in a CCS as distribution time increased. CCS with salt water packaging was effective in achieving microbial control and maintaining physicochemical quality. Salinity, aerobic bacteria, and lactic acid bacteria can be useful as quality indices for a CVS, and acidity can be useful as quality index for a CCS.

Rice flours from five rice (Oryza sativa L.) varieties with different amylose content were prepared by both wet and dry milling processes. The moisture content of wet-milled rice flours (WMR) was approximately three-times higher than that of dry-milled rice flours (DMR). Water absorption index (WAI), water solubility index (WSI), and swelling power (SP) increased in proportion to temperature. The WAI, WSI and SP values of DMR were higher than those of WMR. Baeokchal (BOC), which is a waxy rice cultivar, had a significantly high WSI value. Pasting properties of DMR, except for the BOC cultivar, resulted in an increase in peak, trough, final, and setback viscosities. The levels of resistant starch in four cultivars, except for Dodamssal (DDS), were under 1%, irrespective of the milling process, whereas the resistant starch contents of DMR and WMR in DDS were 9.18% and 6.27%, respectively. In vitro digestibility of WMR was higher than that of DMR, and the estimated glycemic index of the rice flour varieties ranged from 57.6 to 81.3. Damaged starch content of WMR was less than that of DMR; in addition, a negative correlation was observed between the amylose and damaged starch contents of WMR. These results suggest that the properties of rice flour vary depending on the milling method and flour variety, and could be a reference for selecting the appropriate processing method.
This study investigated the correlation between the trees planted on the slope of the first landfill where the landfill was completed and the soil environment. 69 plots (($7{\sim}20m{\times}5{\sim}20m$) were planted with 26 kinds of major trees in the first landfill slopes for vegetation survey. The survey was conducted from 2007 to 2009. Soil analysis from 2007 to 2008 was made on the basis of the injured index and the indicator species were selected. Depending on the rate of growth of the indicator species, seven survey locations were selected for soil sample analysis. 10 tree species appeared to adapt to the landfill environment. Among them, the coniferous trees were Pinus thunbergii (Seedling) and Juniperus chinensis and the deciduous trees were Quercus aliena, Salix preudo-lasiogyne, Castanea crenata (Seedling), Prunus armeniaca var. ansu, Quercus acutissima, Chionanthus retusus, Liriodendron tulipifera (Seedling) and Celtis sinensis. 8 species of trees did not adapt well to the landfill environment. Among them, two kinds were coniferous, the other six kinds were deciduous. In addition, judgment on the other 8 species of trees as to whether they adapted well or not was postponed. The species for which judgment was postponed included one coniferous tree and seven deciduous trees. Indicator species of injured index was the species that have more than 25 % of the defect. The soil was collected from where Catalpa ovata, Sophora japonica, Albizzia julibrissin and Acer palmatum were planted for analysis. According to the soil analysis, the soil pH showed that the soil was alkaline. Regarding the three phases of the soil, most sample soil showed 60 % for the solid phase or 55 % for the solid phase but with less than 10 % of gas phase. The organic matter content was found to be 0.14 to 2.52 %.
In this review paper, previous studies on layered double hydroxides (LDHs) published in the Korean Citation Index (KCI) were examined to investigate a research trend for LDHs in Korea. Since the first publication in 2002, 160 papers on LDHs have been published until January 2023. Among the 31 academic fields, top 5 fields appeared in the order of chemical engineering, chemistry, materials engineering, environmental engineering, and physics. The chemical engineering shows the highest record of published paper (71 papers) while around 10 papers have been published in the other four fields. All papers were reclassified into 15 research fields based on the industrial and academic purposes of using LDHs. The top 5 in these fields are in order of environmental purification materials, polymer catalyst materials, battery materials, pharmaceutical/medicinal materials, and basic physicochemical properties. These findings suggest that researches on the applications of LDH materials in the academic fields of chemical engineering and chemistry for the improvement of their functions such as environmental purification materials, polymer catalysts, and batteries have been being most actively conducted. The application of LDHs for cosmetic and agricultural purposes and for developing environmental sensors is still at the beginning of research. Considering a market-potential and high-efficiency-eco-friendly trend, however, it will deserve our attention as emerging application fields in the future. All reclassified papers were summarized in our tables and a supplementary file, including information on applied materials, key results, characteristics and synthesis methods of LDHs used. We expect that our findings of overall trends in LDH research in Korea can help design future researches with LDHs and suggest policies for resources and energies as well as environments efficiently.

Hot-air and freeze dried powder from aged black ginger were mixed under the ratio conditions of sample "A" (8:2), "B" (5:5), "C"(2:8), "D" (10:0) and "E" (0:10), respectively. The physicochemical properties and antioxidant activities in the 5 kinds of powder were compared. The water absorption index was significantly higher in freeze dried powder, and it tended to be significantly increased depend on the ratio of freeze dried sample. The browning intensity was significantly higher in the hot-air dried samples, but the color intensity was not significant. Total and reducing sugar contents were significantly higher in freeze dried sample. Total sugar content in mixed sample tended to significantly increased as the amount of freeze dried sample. Total phenol content was significantly higher in the sample "A". The contents of gingerol and shogaol were significantly higher in mixed sample "A", 6-gingerol content showed no significant difference according to the drying method. Cholesterol absorption activity was significantly higher in the freeze dried sample "E". The DPPH radical scavenging activity showed a little difference according to the drying method, but the ABTS radical scavenging activity and reducing power in the hot-air dried sample were significantly higher than those of freeze dried. And the activity of mixed powder "A" was significantly higher than others. These results suggest that aged black ginger was superior in terms of quality and functionality of the hot-air drying compared to freeze-drying, and it would be economically effective to the mixed sample "A".
This study was undertaken to clarify the effects of electrical stimulation on physicochemical and rheological properties of the plaice (Paralichthys olivaceus) muscle at early period after death. The plaices were electrically stimulated in seawater bath (110V/60Hz) for 15sec., 35sec., and 60sec. and killed instantly with spiking at the head. Killed samples were stored at $5^{\circ}C$, and the changes in rigor index, ATP breakdown, lactate accumulation, and breaking strength of muscle through storage were investigated. Electrical stimulation effectively accelerated rigor-mortis, lactate accumulation , and ATP breakdown. As the time of electrical stimulation was lengthened, the onset of rigor-mortis of all samples were accelerated Just after killing, and the amount of lactate was rapidly increased, But, significant differences were not observed in variance of rigor-mortis and lactate concentration. Electrically stimulated plaices showed decreasing in ATP to $4.58{\mu}mole/g$ for 15sec., $4.13{\mu}mole/g$ for 35sec., and $2.39{\mu}mole/g$ for 60sec. samples as compared with $5.5{\mu}mole/g$ of unstimulated samples. As the time of electrical stimulation was lengthened, ATP in samples were decomposed more rapidly. The rate constant of ATP breakdown were $0.244hr^{-1}$ for 15sec., $0.358hr^{-1}$ for 35sec., and $0.479hr^{-1}$ for 60sec.. The level of breaking strength in muscle of the plaice was $1050.30\pm50.23g$ immediately after killing. Values of breaking strength in samples electrically stimulated for 35sec. increased rapidly just after killing among all samples. However, the breaking strength was not increased through the whole storage time in samples stimulated for 60sec.. The value and time roaching to the maximum breaking strength for each samples stimulated electrically for 15, 35 and 60 second were $1264.43\pm35.76g$ and 2hr, $1357.68\pm22.50g$ and Ohr, and $1012.18\pm57.36g$ and Ohr. Breaking strength in all samples electrically stimulated decreased significantly (P<0.05) after reaching the maximum values.

The effects of $\gamma$-irradiation on antioxidant and physicochemical properties of powder and 70% fermented ethanol extracts of Ishige okamurai (I. okamurai) were investigated. In case of powder, although yields were increased, there were no significant changes in total phenolic compounds (TPC) and 2,2-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging effect by $\gamma$-irradiation at 3, 7, and 20 kGy. In case of 70% fermented ethanol extracts, the results of TPC and DPPH radical scavenging effects showed no significant changes. However, antioxidant index increased in the 20 kGy irradiated I. okamurai extracts and decreased in 3 kGy irradiated ones. The optical density value of UV spectrum at 427 nm significantly decreased depending on increasing irradiation dosage. In conclusion, irradiated extracts of I. okamurai can be applied to the food industry due to irradiation stability on antioxidant properties. Also, irradiated extracts can be more useful for food processing as a result of a decrease of extracts color by irradiation.
The aim of this study was to provide useful information for making guide of quality index of Korean red pepper. The results of physicochemical characteristics analysis showed the moisture content of air-dried and sun-dried red pepper were 10.38~15.60% and 9.46~17.22%, which show that 50% of the 40 samples exceeded the 13% KS moisture standards of red pepper powder. The capsaicinoids content of the air-dried and sun-dried samples were 10.85~126.39 mg% (1,627~18,958 Scoville heat unit) and 0.43~164.09 mg% (64.5~24,613.5 Scoville heat unit). A wide distribution of ASTA values was observed: 49.12~154.69 and 70.08~182.13 for air-dried and sun-dried red pepper, respectively, with 9.29~23.10% free sugar, and 0~1,050 mg% of ascorbic acid. The total viable cells of the air-dried red peppers were 2.01~6.67 log CFU/g and of sun-dried red peppers, 1.74~5.77 log CFU/g. The contamination level of yeast in the samples were 1.03~4.12 log CFU/g of the air-dried samples and 1.05~6.10 log CFU/g of the sun-dried samples. Among the foodborne pathogens, Clostridium perfringens and Bacillus cereus were detected in many red pepper samples regardless drying method. In the principal component analysis, the first (PC1) and second principal components (PC2) accounted for 56.78 % of the total variances (38.47% and 18.31%, respectively). Ascorbic acid, ASTA, color value (L, a, b) were strongly correlated with the PC1, and quality characteristics such as moisture, microorganism, sample (drying method) showed a negative correlation with the PC1.
To verify the possibility of manufacturing a germinated rough rice tea, germinated rough rice was roasted at 200, 220, and $250^{\circ}C$ for 10, 20, and 30 min. The treated rice powder was then put into tea bags and leached for 1, 3, and 5 min, after which their antioxidant, physicochemical, and sensory characteristics were compared. The total polyphenol content and 2,2'-Azino-bis-(3-ethyl benzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities of the germinated rough rice tea increased as the roasting temperature increased as well as in response to increased roasting and leaching times. Furthermore, the greater the roasting temperature, roasting time, and leaching time, the greater the increase in total soluble solid contents. Moreover, the turbidity and browning index of the germinated rice tea rose as the roasting temperature, roasting time, and leaching time increased. Additionally, the pH tended to decrease as the roasting temperature, roasting time, and leaching time increased. Evaluation of the sensory characteristics of the germinated rice tea revealed that the formation of a Maillard reaction product in the course of heating the rice added a unique flavor, which led to increase preference for the color, flavor, and taste, and therefore, the overall preference.

This study was conducted to evaluate effects of Kimchi factory waste (KFW) as bulking agent on physicochemical properties of cow manure (CM) composting and of its application on lettuce growth. Treatments were designed as follows; CM compost [65 % CM + 35 % sawdust (SD); control], KFW 5 % (65 % CM + 30 % SD + 5 % KFW), KFW 10 % (65 % CM + 25 % SD + 10 % KFW) and KFW 15 % (65 % CM + 20 % SD + 15 % KFW). After composting for 25 days, temperature of KFW treatments was lower than that of control. As compared with control, water content of KFW 15 % treatment was low about $5^{\circ}C$, and content of organic matter (O.M.) and nitrogen (N) was higher. pH and O.M./N ratio of KFW treatments or control were unaffected. In comparison with germination index (G.I.), G.I.s of KFW treatments were more than 70 on 25 days and G.I. of control on 35 days. As applied with KFW composts in lettuce, dry weight of KFW 10 % and KFW 15 % were increased by 84 % and 67 %, respectively, than that of control. These results indicated that Kimchi factory waste was possible to use as the compost law materials in livestock manure composting and to replace some sawdust as bulking agent.
