Quality Characteristic and Antioxidant Activity Analysis of Soybean Milk added Chickpea (병아리콩을 첨가한 두유의 품질 특성 및 항산화 활성)

  • In order to verify the quality characteristics of soybean milk added chickpeas, the following characteristics were investigated: pH, solid contents, color, DPPH radical scavenging, as well as electric nose and sensory evaluation. Physicochemical and the sensory characteristics were analyzed based on the experimental data. The pH value was different in the control and the treatments (p<0.005). As the quantity of chickpea content increased, the solid content was augmented (p<0.0001). The L value was 56.86 in the control, and with the amount of chickpea addition increasing, the L value increased to 57.43 in 100% chickpea soybean milk (p<0.0001). The a value and b value also increased significantly (p<0.0001). However, the DPPH radical scavenging in the control was the lowest but the antioxidant activity of 100% chickpea milk was more than 2.5 higher than that of the control (p<0.0001). In the electric nose experiment, the flavor component of 20%, 30% and 100% chickpea treatment showed a significant difference compared to the control in the flavor components. In the sensory evaluation, for the score of flavor (p<0.001) and taste (p<0.0001), the score was higher in the treatments where 20% and 30% of chickpeas were added. In the sensory test of texture, there was no significant difference in the different experimental conditions except for the 100% chickpea addition treatment. In the overall acceptability test, the scores of 20% and 30% chickpea treatment were the highest results, compared to other treatments (p<0.0001). According to the correlation analysis, both antioxidant activity (0.797) and solid content (0.834) had shown high correlation to pH among the physiochemical characteristics (p<0.01). In the sensory evaluation, color, flavor, taste, texture and overall acceptability had shown a positive correlation to the amount of the soy bean milk added chickpea (p<0.01). In particular, the overall acceptability had shown the highest correlation to the taste (0.803), and it was the texture which resulted in the next highest correlation for overall acceptability (0.666).

Removal of As(III) and Phenol by Multi-functional Property of Activated Carbon Impregnated With Manganese (망간첨착 활성탄의 다기능성을 이용한 3가 비소 및 페놀 제거)

  • Mn-impregnated activated carbon (Mn-AC) prepared at different conditions was applied in the treatment of synthetic wastewater containing both organic and inorganic contaminants. Phenol and As(III) was used as the representative organic and inorganic contaminants, respectively. After evaluation of the physicochemical characteristic and stability of Mn-AC, oxidation of As(III) as well as adsorption of phenol by activated carbon(AC) and Mn-AC were investigated in a batch reactor. To investigate the stability of Mn-AC, dissolution of Mn from each Mn-AC was measured pH ranging from 2 to 4. Although Mn-AC was unstable at a strong acidic condition, the dissoluted Mn was below 3 ppm at pH 4. XRD analysis of Mn-AC indicated that the mineral type of the impregnated manganese was $Mn_2O_3$. From the simultaneous treatment of As(III) and phenol by AC and Mn-AC, As(III) oxidation by Mn-AC was greater than that by AC at lower pH, while the reverse order was observed at higher pH. After impregnation of Mn onto AC, 13% decrease of the surface area was observed, causing 8% reduction of phenol removal. Considering removal properties of As(III) and phenol, Mn-AC could be applied in the simultaneous treatment of wastewater contaminated with multi-contaminants.

Seasonal Change in the Quality Characteristics of Commercial Kimchi (국내 유통 김치의 계절별 품질특성 변화)

  • This study evaluated the physicochemical and microbial quality characteristic of seasonal commercial kimchi for hygienic safety levels. The pH of seasonal commercial kimchi was 3.84-6.36 and the titratable acidity and salinity of the samples were 0.21-1.16 and 1.19-1.54%, respectively. The content of nitrate and nitrite in the commercial kimchi were lower in the spring and summer, which was affected by acidic condition of the kimchi depending on fermentation. Heavy metal contents in commercial kimchi are not an issue because they were detected only at very low levels. The total aerobic bacteria and coliforms counts ranged from 5.25 to 8.44 Log CFU/g and 0.00 to 5.08 Log CFU/g, respectively. The total aerobic bacteria and coliforms were detected more in summer than in the other seasons. E. coli was detected in three of the samples tested. Food-borne pathogens were not detected in any of the samples except for B. cereus. B. cereus was detected in the fall in more than 70% of samples. These results suggest that commercial kimchi distributed in the fall maintain the quality properties and the microbiological safety of kimchi compared to the other seasons. Therefore, further studies as an effective distribution system for the particular seasons will be needed to guarantee the hygienic safety levels of commercial kimchi required by the consumers.

Growth Characteristic of Pinus densiflora by Soil Generated at Civil Works Site (현장발생토 활용 식재기반 조성유형별 소나무 생육 특성 평가)

  • This research aims to identify the possibility of developing A horizon resources that can be used for construction and civil engineering work. As such, the utility of A horizon resources was examined by establishing planting ground through a mixture of soil layers and by analyzing the growth and development of Pinus densiflora. The physicochemical and physical properties of the soil were as follows: the A horizon was sandy clay loam, B horizon was sandy loam, and the mixture of two layers appeared as sandy loam, which was identical to the B horizon. The experimental groups did not show any significant difference in their physical properties of porosity and degree of water-stable aggregates. With regards to chemical properties, the A horizon as well as the mixture of A and B horizon showed acidity while the B horizon showed alkalinity. The figures of organic matter, total nitrogen, available phosphate, and replaceable potassium were greater as the A horizon content increased, whereas the figures of replaceable calcium, replaceable magnesium, and conductivity increased as the A horizon content decreased. As a result of the growth and development of Pinus densiflora in each planting ground, the final survival rates were all above 100%. However, the tree height and the rate of growth for the diameter of root were higher in the order of A horizon > A horizon + B horizon > B horizon,indicating that the increased A horizon content is related to the growth and development of Pinus densiflora. The treatment of soil with improvement agents, used to recover the functions of in-situ soil showing poor growth and development, did not have a clear impact on the soil texture and porosity. However, the degree of water-stable aggregates increased significantly when using O horizon as the soil improvement agent among the types of in-situ soil. In contrast, all items related to the chemical properties showed significant differences following the treatment by soil improvement agents. The survival rate according to the treatment of soil improvement agents for the growth and development of Pinus densiflora was higher in the order of organic horizon = no treatment > compound fertilizer > organic fertilizer + compound fertilizer > organic fertilizer; this result was statistically significant with a marginal significance value of the log-rank test(p < 0.05).

Size Control and Dispersion Properties of Illite Clay by Physicochemical Treatment (물리화학적 처리에 의한 일라이트 점토광물의 입도조절 및 분산특성)

  • In this study, illite was size-reduced using a wet-ball-milling treatment to improve its dispersion. Changes in illite particle size, size distribution, and dispersion characteristics after varying the treatment period were investigated. And the dispersion and dispersion stability of illite solution after 2 h wet ball milling treatment with different pH conditions were also evaluated. The illite particle size significantly decreased as the treatment time increased and the size reduction effect of wet ball milling deteriorated above 2 h treatment time. In addition, illite particle size was more evenly distributed as the treatment time increased. X-ray diffraction (XRD) analysis showed that no crystal structural changes of illite were induced, but the characteristic peak of illite the weaker due to the size reduction and exfoliation, as the treatment time increased. Zeta potential analysis showed that the illite dispersion improved, as the treatment time increased. The illite wet-ball-mill treated at pH 2 had the lowest dispersion stability. Illite dispersion and dispersion stability increased as pH increased, due to the increase in surface ionization. Hence, the results showed that as the treatment time increased, the illite particle size decreased, and dispersion and dispersion stability improved due to the increase in surface energy and repulsion force between particles.

Rice Cultivar Breeding for Rice Flour with Low Amylose by Tissue Culture (저아밀로스 특성 및 쌀가루 적합 벼 품종 육성)

  • Rice consumption in Korea is continuously decreasing; therefore, methods for reducing rice stocks are now being proposed. Increasing the consumption of rice and reduce these stocks will require that the rice processing industry be developed beyond simply using cooked rice as food. The Korean people's eating habits have also diversified recently, and the consumption of bread is increasing. Therefore, breeding a cultivar for rice flour is now necessary. Here, a line suitable for processing into rice flour was cultivated by deriving a mutant line by tissue culture of Ilpum. Mutant populations were investigated for major agricultural traits in the field, and grain characteristics and endosperm characteristics were investigated after harvest. Among the lines, line 29111 had similar agricultural characteristics to the background Ilpum, and excellent grain quality, and was selected for further analysis. The physicochemical properties that determine taste were similar or improved. However, unlike Ilpum, 29111 had a non-uniform starch structure and a characteristic powdery endosperm because large and male starch grains are evenly distributed. Therefore, 29111 was viewed as a breeding line suitable for processing and for excellent agricultural characteristics and taste. The added value can be increased by diversifying the uses of rice. The taste was improved and a method for breeding cultivars with grain characteristics for glutinous rice that would satisfy both producers and consumers was presented.

  • High-temperature polymer electrolyte membrane fuel cell (HT-PEMFC) has been studied as an alternative to low-temperature PEMFC due to its fast activation of electrodes and high resistance to electrode poisoning by carbon monoxide. It is highly required to develop stable PEMs operating at high temperatures even doped by ion-conducting materials for the development of high-performance and durable HT-PEMFC systems. A number of studies have been conducted to develop polybenzimidazole (PBI)-based PEMs for applications in HT-PEMFC due to their high interaction with doped ion-conducting materials and outstanding thermomechanical stability under high-temperature operation. This review focused on the development of PBI-based PEMs showing high performance and durability. Firstly, the characteristic behavior of PBI-based PEMs doped with various ion-conducting materials including phosphoric acid was systematically investigated. And then, a comparison of the physicochemical properties of the PEMs according to the different membrane manufacturing processes was conducted. Secondly, the incorporation of porous polytetrafluoroethylene substrate and/or inorganic composites to PBI matrix to improve the membrane performances was studied. Finally, the construction of cross-linked structures into PBI-based PEM systems by polymer blending method was introduced to improve the PEM properties.

Removal of Red Tide Organisms -2. Flocculation of Red Tide Organisms by Using Loess- (적조생물의 구제 -2. 황토에 의한 적조생물의 응집제거-)

  • The objective of this study was to examine the physicochemical characteristics of coagulation reaction between loess and red tide organisms (RTO) and its feasibility, in developing a technology for the removal of RTO bloom in coastal sea. The physicochemical characteristics of loess were examined for a particle size distribution, surface characteristics by scanning electron microscope, zeta potential, and alkalinity and pH variations in sea water. Two kinds of RTO that were used in this study, Cylindrothen closterium and Skeietonema costatum, were sampled in Masan bay and were cultured in laboratory. Coagulation experiments were conducted using various concentrations of loess, RTO, and a jar tester. The supernatant and RTO culture solution were analyzed for pH, alkalinity, RTO cell number. A negative zeta potential of loess increased with increasing pH at $10^(-3)M$ NaCl solution and had -71.3 mV at pH 9.36. Loess had a positive zeta potential of +1,8 mV at pH 1.98, which resulted in a characteristic of material having an amphoteric surface charge. In NaCl and $CaCl_2$, solutions, loess had a decreasing negative zeta potential with increasing $Na^+\;and\;Ca^(+2)$ ion concentration and then didn't result in a charge reversal due to not occurring specific adsorption for $Na^+$ ion while resulted in a charge reversal due to occurring specific adsorption for $Ca^(+2)$ ion. In sea water, loess and RTO showed the similar zeta potential values of -112,1 and -9.2 mV, respectively and sea sand powder showed the highest zeta potential value of -25.7 mV in the clays. EDLs (electrical double-layers) of loess and RTO were extremely compressed due to high concentration of salts included in sea water, As a result, there didn't almost exist EDL repulsive force between loess and RTO approaching each other and then LVDW (London-yan der Waals) attractive force was always larger than EDL repulsive force to easily form a floe. Removal rates of RTO exponentially increased with increasing a loess concentration. The removal rates steeply increased until $800 mg/l$ of loess, and reached $100{\%}$ at 6,400 mg/l of loess. Removal rates of RTO exponentially increased with increasing a G-value. This indicated that mixing (i.e., collision among particles) was very important for a coagulation reaction. Loess showed the highest RTO removal rates in the clays.

Cooking Properties and Antioxidant Activity of Cooked Rice According to the Addition of Glutinous and Non-glutinous Sorghum (찰수수 및 메수수 첨가 밥의 취반특성과 항산화활성)

  • The purpose of this study was to evaluate the physicochemical characteristic of the cooked rice added with glutinous and non-glutinous sorghum. The sorghum cultivars were Sorghum bicolor L. Moench cv. Hwanggeumchal, Nampungchal (glutinous), and Donganme (nonglutinous), and rice cultivar was Ilpum rice. The cooking properties and pasting characteristics of cooking rice adding with sorghum according to varieties and different addition rates evaluated. The cooking properties and pasting characteristics had significant changes with the varieties and different addition rates of sorghum. With increased addition rates of sorghum, the pasting temperature, peak viscosity, trough viscosity, breakdown viscosity, and final viscosity were decreased. With increased addition rates of sorghum, the total polyphenol and flavonoid contents before and after cooked rice were increased. Total polyphenol contents of 30% addition rates before cooking rice with Hwanggeumchal, Nampungchal, and Donganme sorghum were 1,693.30, 1,890.98 and $2,386.11{\mu}g/g$ sample, whereas those after cooking rice with sorghum were 1,189.28, 1,190.42 and $1,397.87{\mu}g/g$ sample, respectively. The high level of DPPH radical scavenging activity before and after cooking rice with sorghum were 126.29 and 70.58 mg TE/100g sample in the Donganme in 30% addition rates. Also, ABTS radical scavenging activity was 135.56 and 83.12 mg TE/100g sample, respectively. The results of this study show that the addition of sorghum can make cooked rice improved antioxidant activity.
