데치기 시간에 따른 참취의 이화학적 및 관능적 특성의 변화 (Effect of blanching time on physicochemical characteristics and sensory evaluation of Aster scaber)

  • 본 연구에서는 데치기 시간에 따른 참취의 이화학적 및 관능적 특성을 조사 하였다. 색도 $L^*$값에서는 3분 데치기 한 실험구를 제외한 다른 실험구가 유의적으로 높은 값을 보였으며 $a^*$값에서는 3분, 5분, 데치기한 실험구에서 높은 값을 보였으며, $b^*$값에서는 5분 데치기 처리한 실험구가 3분 데치기한 실험구보다 높은 값을 보였으나 다른 실험구와 유의적인 차이가 없었다. 조직감에서 경도는 참취를 데치기 처리 2, 3분 한 실험구에서 다른 실험구보다 유의적으로 높은 값을 나타내었으며 총 폴리페놀 함량은 데치기 1분부터 4분까지는 유의적으로 큰 차이가 없다가 5분 후에는 낮은 함량을 보였다. 관능평가에서는 참취의 색, 향, 외관에서는 2분 데치기 처리한 실험구에서 유의적으로 높은 값을 보였으나, 조직감, 전체적인 기호도에서는 3분 데치기 처리한 실험구에서 유의적으로 높은 값을 보였다.

  • This study was conducted to compare the meat characteristics Korean Native Commercial Chicken(KNCC) by feeding system Feeding system of T$_1$ and T$_2$were same types from hatch to 8 weeks, starter diets( 0~4 weeks, mash, ME 3,l00kcal, CP 22.94%), grower diets(4~8 weeks, crumble, ME 3,l00kcal, CP 19.31%). Nutrient contents of finisher diets of T$_1$(pellet, M.E 3, 200kcal, CP 20.44%) was higher than T$_2$(mash, ME 3,l00kcal, CP 14.88%). Breast and legs meat of KNCC were used to analyze chemical composition, physicochemical characteristics, textural traits and sensory evaluation test. Live weight(L.W) /abdominal fat accumulation(A.F.A) was significantly different(P<0.05), but live weight(L.W) /dressed weight(D.W), percentage of cutted meat, chemical composition(moisture, CF, EE, CA), meat color(CIE), physicochemical properties, sensory evaluation score were not significantly by feeding systerns, at 12 ar'd 16 weeks of age.

저장기간에 따른 산마늘 물김치의 품질특성 (Quality Characteristics of Allium victorialis Mul-kimchi during Fermentation)

  • This study was carried out to investigate the properties of mul-kimchi made with allium victorialis. Chemical and sensory characteristics were determined during fermentation at $4^{\circ}C$ for 4 weeks. The pH decreased with an increase in total acidity. Mul-kinchi showed salinity properties ranging within $1.0{\sim}1.5%$ during fermentation. Hunter's color L, a-values were gradually decreased, but b-value was increased. In the texture, hardness and strength decreased as the aging time increased. The numbers of total- and lactic bacteria cells rapidly increased up to the second week, and this slowly increased thereafter. Sensory evaluation of mul-kinchi was favored for appearance, flavor, taste, texture and overall acceptability during the second week. Sensory properties of well ripened odor and sour taste negatively correlated with physicochemical properties of pH and hardness. Sour odor and sour taste were positively correlated with acidity and total- and lactic acid bacteria.

  • Physicochemical and sensory characteristics of Yukwa(fried rice cookie) made by different processing condition were investigated to estabilish the optimum expansion of Yukwa. The expansion rate and crispness of Yukwa prepared by soaking waxy rice for 24 hours was satisfactory . Addition of 15% soy slurry gave better effect on increasing the expantion rate, crispiness and sensory preference than no addition of soy slurry . Yeast, Soju(distilled liquor) , Mackeali(rice wine, turbid) and Chunju(rice wine, clear) as expansion reagent were added to Yukwa prepration . Yeast and Mackeali among tested expansion reagent showed better expansion rate and lower hardness meausred by texturometer than Chunju. Yukwa added chungju showed more fine structure and lower expantion rate than others. Microwave puffed Yukwa was less expansion rate, but same level of crispiness and hardness compared with oil puffed. And no difference in sensory characteristics such as degree of crispiness and stickiness of microwave puffed and oil puffed.

단기 숙성 생햄의 저온 및 실온저장 과정 중 물리화학 및 관능학적 품질 특성 변화 (Physicochemical and Sensory Evaluation of Cured and Short-Ripened Raw Hams During Storage at 10 and 25°C)

  • 20개의 돼지 등심육을 각각 1주일씩 건염과 습염을 한 다음 2주일간 숙성하여 생햄을 제조한 후 진공포장하여 10과 $25^{\circ}C$에서 90일간 저장하면서 물리화학적 및 관능학적 품질을 조사하였다. 생햄의 10과 $25^{\circ}C$에서 저장 중 식염 함량은 모두 약 5.1% 수준을 유지하였다. 그리고 수분, 조단백질, 조지방 및 회분 등 일반성분의 함량에 있어서 저장 온도와 기간에 따른 시료 간 차이는 나타나지 않았다. TBA와 VBN값은 저장기간 중 계속 증가함으로써 지방과 단백질의 분해가 진공포장한 상태에서도 지속적으로 이루어졌다는 것을 알 수 있었다. 본 연구에서 조사된 pH, 수분활성도, 물성, TBA와 VBN값, 그리고 관능학적 품질 변화는 $10^{\circ}C$에서보다 $25^{\circ}C$에 저장된 시료에서 더 크게 일어나는 경향을 보였다. 저장 기간이 연장될수록 경도, 부서짐성, 탄성, 응집성, 검성 및 점착성 등과 같은 조직감에서의 유의적인 품질 저하가 관찰되었다(p<0.05). 색은 10과 $25^{\circ}C$ 시료 간, 그리고 저장구간별 큰 차이가 없었다. 관능검사 결과에 따른 생햄의 저장수명은 10과 $25^{\circ}C$에서 각각 75와 45일로 추정되었다.

난소화성 전분을 첨가한 딸기잼의 품질 특성 (Quality Characteristics of Strawberry Jam Added with Various Levels of Resistant Starch)

  • Physicochemical and sensory characteristics of the jam with various levels of resistant starch were investigated in this study. Water content of RS20(20% resistant starch) jam had significantly the highest value of all(p<0.05) and RS5 showed significantly the highest value in sweetness. The value of pH were increased with increasing levels of the resistant starch in jam preparation. The Hunter L and a values of RS20 had the highest value among all groups. The hardness of jam was increased as the contents of the resistant starch was increased. Results of sensory characteristics of RS20 showed significantly higher values in strawberry aroma, sweetness, after taste and chalky and showed significantly lower values in strawberry flavor, spreadability, redness and glossiness than those in the other sample groups at p<0.05. Strawberry flavor, spreadability, redness and glossiness of RS5 had the largest values at the significant level(p<0.05).

  • The physicochemical and sensory characteristics of brown rice flakes by different processing conditions such as flaking Process and their heat treatments were investigated to establish the brown rice flake processing procedure. To successfully make the compressed rice grain type flakes, the most appropriate water steeping conditions were 5 hours at 60'C. The brown rice flakes by compressed flaking procedure and heat treatment with microwave toasting showed the best crispiness-texture that tested from textrometer or sensory evaluation, and there was no significant difference between the source of rice varieties. The water absorption index(WAI) of tested flakes were negatively correlated with the water soluble index( WSI) and positively correlated with bowl life. The flakes made by compressed flaking procedure and heat treatment with microwave toasting showed longer bowl life, which is the length of the time that the cereal can retain its crispness after being soaked in milk.

마를 첨가한 죽의 품질특성 (Quality Characteristics of Gruel with Added Yam)

  • In the present study, we investigated the physicochemical characteristics and sensory qualities of gruel with added ground yam (20~80%) to increase consumption and application of yams. pH and sugar content of sample gruel decreased with increasing yam content, whereas spreadability increased gradually. Lightness and greenness decreased; however, blueness increased as yam content increased. Viscosity decreased with increasing yam content. Gruel with 40% added yam was the most preferred for flavor, taste, texture, and overall preference. From these results, we found that adding 40% yam was the best to make gruel with high sensory quality.

  • The purpose of this study was to investigate the physicochemical and sensory properties of different almond gruels according to the concentration and pretreatment of the almonds. For the physicochemical parameters, pH, sweetness and viscosity decreased with an increasing almond content, while spreadability, lightness, redness, and yellowness increased. In addition, pH, sweetness, spreadability and viscosity decreased by using baked almonds. Also the L(lightness) and a(redness) color values increased by using baked almonds, whereas the b-value (yellowness) decreased. In the sensory evaluation flavor and nutty taste were significantly different(p<.001) among the samples. The overall preference scores also showed significant differences(p<.001) between the different concentrations of almond. The almond gruels containing 40%, 60%, and 80% almond showed higher preferences than the 0 and 20% concentrations.

덖음처리에 의한 민들레 잎의 이화학적 및 관능적 특성 변화 (Changes in Physicochemical and Sensory Characteristics of Dandelion (Taraxacum officinale) Leaves by Roasting Treatment)

  • 민들레 음료와 차 등의 가공제품 제조에 적합한 민들레 잎의 덖음조건을 확립하기 위하여 덖음처리에 의한 민들레 잎의 이화학적 성분 변화와 열수추출액의 이화학적 및 관능적 특성을 조사하였다. 덖음횟수가 증가함에 따라 민들레 잎의 유리당 함량이 감소하였고 특히 유리 아미노산과 총 폴리페놀 함량은 1회의 덖음처리에 의해서도 크게 감소하였다. 민들레 잎의 열수추출액의 아미노태질소, 총폴리페놀 등이 덖음처리에 의해 크게 감소하였고, 색도도 L, a, b 값이 생잎의 추출액에 비해 크게 낮은 값을 나타내었다. 반면 환원당의 경우에는 생잎에 비해 더 많은 양이 추출되는 것으로 나타나 덖음처리가 환원당 등 유용성분의 추출을 수월하게 하는 것으로 나타났다. 열수추출액의 향미묘사분석에 의해 떫은맛, 쓴맛, 풀냄새, 탄맛, 단내 등 5가지 관능적 특성이 도출되었고, 이중 떫은맛, 쓴맛, 풀냄새가 처리구간 유의적인 차이를 나타내었으며, 관능적 기호도 측정 결과 덖음횟수가 증가할수록 색과 맛에 대한 기호도가 증가하여 종합적인 기호도도 크게 증가하는 것으로 나타났다.
