  • Physico-chemical properties of methyl 5-hydroxy-dinaphtho[1,2-2',3'] furan-7,12-dione-6-carboxylate(MHDDC) were examined. The yellowish color of the solution at pH 8 below changes to a bluish color when the solution is basified to pH 10 above. This color change was presumed to a change of the molecular structure from a quinoid-type to a quinoid-type with the dissociation to the hydroxyl group as shown in chart 1.

  • This study was carried out to investigate the Physico-chemical Properties of Maeye-Dong Experiment Forest Soils. It is important to get fundmental information for establishment of economic and enviromental forest stands. The results obtained from this study were as follows: 1. The range of soil texture was in loamy sand and sandy loam. 2. The pH of Maeye-Dong Experiment forest soils found to be lower than that of Korean brown forests. 3. Most of investigated areas were known to be lack of exchangeable cation and nitrogen. 4. Fertilizer application should be advanced for establishment of economic and enviromental forest stand.

  • To find out the repeated application effect of chicken and pig manure composts on tomato growth and soil physico-chemical properties, different rates of the composts were applied to greenhouse soils with low fertility for 3 years and tomato was grown annually. As application rate of compost increased, the growth and fruit yield of tomato increased markedly, and there are also a little increase in sugar content in fruit juice and weight per fruit. When only compost was applied, however, physical and chemical properties in soil showed to be unbalanced such as significantly low bulk density and hardness, and high porosity as well as high organic matter and exchangeable K content, and low exchangeable Ca content than those of optimum range for soil diagnosis. Therefore mixed use of compost and chemical fertilizer is more promising way than the only use of compost to make suitable physico-chemical properties for tomato growth.

Soil Physico-chemical Properties by Land Use of Anthropogenic Soils Dredged from River Basins

  • This study was conducted to analyze soil physico-chemical properties of agricultural land composed from the river-bed sediments. We investigated the changes of soil physico-chemical properties at 30 different sampling sites containing paddy, upland and plastic film house from 2012 to 2015. pH, exchangeable calcium and magnesium decreased gradually in paddy soils during the four years, whereas the available $P_2O_5$, exchangeable Ca, Mg and EC increased in upland and plastic film house soil. For the soil physical properties, bulk density and hardness of topsoil were $1.47g\;cm^{-3}$ and 21.5 mm and those of subsoil were $1.71g\;cm^{-3}$ and 25.7 mm in paddy soils. In upland soils, bulk density and hardness of topsoil were $1.48g\;cm^{-3}$ and 15.9 mm and those of subsoil were $1.55g\;cm^{-3}$ and 16.9 mm. In plastic film house soils, bulk density and hardness of topsoil were $1.42g\;cm^{-3}$ and 14.4 mm and those of subsoil were $1.40g\;cm^{-3}$ and 18.5 mm, respectively. The penetration hardness was higher than 3 MPa below soil depth 20 cm, and it is impossible to measure below soil depth 50 cm. As these results, in agricultural anthropogenic soils dredged from river basins, the pH, amount of organic matter and exchangeable cations decreased and soil physical properties also deteriorated with time. Therefore, it is needed to apply more organic matters and suitable amount of fertilizer and improve the soil physical properties by cultivating green manure crops, deep tillage, and reversal of deep soils.

Physico-Chemical and Sensory Properties of Commercial Korean Traditional Soy Sauce of Mass-Produced vs. Small Scale Farm Produced in the Gyeonggi Area (한식 간장의 이화학 및 관능적 특성 - 대기업 시판 제품과 경기지역 소규모 농가 생산 제품의 비교 -)

  • The core ingredient of traditional Korean style soy sauce is soy bean without any wheat or rice incorporated. National brands as well as regional micro-brewed companies constitute the soy sauce market in Korea. The present study investigated the physico-chemical and sensory properties of soy sauces produced by small-scale or mass-production. Additionally, the key physico-chemical parameters sufficiently representing the critical sensory characteristics have been identified. Ten types of soy sauce brewed by the Korean traditional method were selected for the study. Among these samples, seven types were brewed in small-scales in the Gyeonggi-do region whereas the other 3 types were mass-production products of major national brands. The total solid, reducing sugar, salinity, sugar content, amino nitrogen, CIELAB, acidity, and pH of soy sauce samples were measured for the physico-chemical analysis. A generic descriptive analysis was conducted to analyze the sensory characteristics of the samples using six trained panelists. The descriptive panel developed 21 sensory attributes. The data were statistically analyzed using ANOVA, PCA and PLSR. Overall, the micro-brewed products showed significantly higher value of salinity and acidity but lower content of reducing sugar than the mass-production products. The micro-brewed soy sauces elicited stronger fermented flavor, sourness, and bitterness whereas the national brand products elicited stronger alcoholic odor, sweetness and umami taste. Sugar content, acidity, and amino nitrogen showed strong relationships with fish sauce flavor, umami taste, and rich flavor. Salinity was closely related to the overall flavor intensity.

Dewatering Characteristics for Physico-chemical Properties with Sewage Sludge (하수슬러지의 물리화학적인 조건에 따른 탈수 특성)

  • In this study, we found that dewatering properties were related with physico-chemical properties such as sludge concentration, pH, and zeta potential with sewage sludge, Ionic contents in digested sludge were in the order of $Ca^{2+}$ (14.2 mg/g) > $Mg^{2+}$ (1.9 mg/g) > $Na^+$ (1.4 mg/g) > $K^+$ (1.0 mg/g). Divalent ion more than monovalent have influenced on physico-chemical and dewatering properties. Floc size distribution in activated (AS) and digested sludge (DS) increased on lower pH range to be near isoelectric point and than specific resistance to filtration (SRF) decreased. A linear increase in SRF ($5.25\times10^{13}\sim2.86\times10^{14}$ m/kg in AS and $6.89\times10^{14}\sim1.09\times10^{15}$ m/kg in DS) was observed throughout low concentration range of 1230~9960 mg/L in AS and 2700~5400 mg/L in DS.

Improvement on the Functional Properties of Gelatin Prepared from the Yellowfin Sole Skin by Precipitation with Ethanol (알코올처리에 의한 각시가자미껍질 젤라틴의 기능성 개선)

  • With a view to utilizing effectively fish skin wastes from marine manufactory, a gelatin solution extracted from yellowfin sole skin was fractionated by precipitation with ethanol, and then the functional and physico-chemical properties for the fractionated gelatin were determined. Ethanol was added up to 50% of ethanol content to a gelatin solution extracted from yellowfin sole skin, then the mixture was left to stand at $0^{\circ}C$ for 12 hours. Finally, the precipitates were dried by hot-air ($40^{\circ}C$). The gel strength and melting point of a 10% gel of gelatin prepared from yellowfin sole skin by precipitation with ethanol has 322.4g and $23.3^{\circ}C$, respectively. The physico-chemical properties of the ethanol treated fish skin gelatin were superior to those of fish skin gelatin prepared without ethanol treatment. Besides, the functional properties of the ethanol treated gelatin were lower in solubility and higher in water holding capacity, oil binding capacity, emulsifying activity, emulsifying stability, foam expansion and foam stability than those of pork skin gelatin sold on market as well as gelatin prepared without ethanol treatment. It may be concluded, from these results, that the fish skin gelatin prepared by precipitation with ethanol can be effectively utilized as a human food by improving the functional properties.

  • Anatomical and physico-chemical properties of some nutrient and tonic crude drugs have been estimated and compared. Resin duct and druse crystal were observed more in Acanthopanax Cortex than in Ginseng Radix. Bast fiber bundle and solitary crystals were abandantly present in Glycyrrhizae Radix. Mucilage crude drugs contained mucilage ducts and bundles of raphides as common components and their arrangements of vascular bundles were different. TLC analysis showed different patterns of saponin, flavonoid, ${\gamma}-aminobutyric$ acid and sitosterols.

  • Purpose To investigate the physico-chemical properties of CB-ph [2-benzoyloxycinnamaldehyde], an anticancer drug obtained from Cinnamomum cassia using methylenechloride. and its stability in various aqueous solutions. Results CB-ph was rarely soluble in water but soluble in methanol and very soluble in ether. Kinetic salt effect on degradation of CB-ph in buffer solutions at pH 4.0 and 6$0^{\circ}C$ showed a linear relationship having a positive slope that means reactions between hydronium ions and protonated substrates.   • The bulk curing experiment to improve the quality of flue-cured leaves were carried out to evaluate relationship between the modified(3 step-up) drying and conventional drying method in bulk curing process. Modified drying method was somewhat higher values in yellowing color index of cured leaves, and less brittle than those in conventional drying program. As to the chemical properties, there was no difference in chemical component levels in cured leaves between the modified and the conventional methods, while the major chemical compounds in relation to aromatic essential oil of cured leaves showed mostly higher level in the modified method than that in conventional drying method. Additionally 3 step-up drying method increased the tobacco quality by 2 % in price per kg compared with conventional drying method.
