Control of Microbial Shelf Life of Perishable Food by Real-Time Monitoring of $CO_2$ Concentration of its Package (변패성 식품의 포장 내 $CO_2$ 농도의 실시간적 측정에 의한 미생물적 저장수명 제어)

  • Real time control logic of microbial shelf life of a perishable food, seasoned pork meat has been formulated which exploits monitoring of $CO_2$ concentration of the package. The potential of the proposed logic was examined for storage at dynamic temperature conditions. The start of increase in $CO_2$ production rate from the food or rate of package $CO_2$ concentration change was found to coincide with the point of microbial quality limit and could be used as an index of microbial shelf life determination. This also corresponded to lag time of $CO_2$ concentration change or time for the $CO_2$ concentration to reach a certain value. The application potential of the proposed logic was confirmed for a sensor system to measure on real time and transmit the $CO_2$ concentration wireless to the computer system.

  • The concept of revenue management (RM) has been used widely in the air-transportation industry, and proven as a good system for managing perishable assets. While the airlines are the oldest and most sophisticated users of RM, these practices have been an enormously important innovation in other service industries such as the travel, the railway, the internet and the manufacturing industries. In this paper, reviewing several studies on RM, we introduce the fundamental concepts and the major models of RM covering seat allocation with multiple fare classes and overbooking. Future research directions also are suggested.

Yield Management Models for Two Substitutable Products (두 대체품에 대한 수익관리 모형 연구)

  • Yield management, which originated from the U.S. service industry, uses pricing techniques and information systems to make demand management decisions. Demand uncertainty is an important factor in the area of demand management. A key strategy to reduce the effects of demand uncertainty is substitution. The most generally known type of substitution is inventory-driven substitution, in which consumers substitute an out-of-stock product by buying a similar or other type of product. Another type of substitution is the price-driven substitution, which occurs as a result of price changes. In this research, we consider two market segments that have unique perishable products. We develop yield management optimization models with stochastic demand based on the newsvendor model where inventory-driven and price-driven substitutions are allowed between products in the two market segments. The most significant contribution of this research is that it develops analytical procedures to determine optimal solutions and considers both types of substitution. We also provide detailed theoretical analysis and numerical examples.

  • Revenue management is a new approach method to solve the problem of supply and demand, and one of fields which is diffused quickly at the service enterprise to use perishable-asset like the transportation business. It is based on multiple fare policy that discount charge reservation should be received if the benefit value of current discount fare is more than expected profit of the normal fare reservation it will be able to occur in future when suitable goods is sold to the customers at discount fare, at the time they want, and at assigned seat by controlling supply and demand from market. In this research, I will review on initial operation case for special class goods that the seat which is limited is assigned at some of train and portion of KTX for demand dispersion and new demand creation at peak time, put a limit in purchase conditions, and provides discounted fare. I will also try to find implication for strategic operation.

  • Recently, the humidity adjustment of indoor air is of great importance in air conditioning system as a applied, in buildings, vehicles, and containers for storage and transport of perishable products. Membrane dehumidification or air is potentially attractive because it offers low capital and operating costs, along with low energy consumption. And membrane dehumidification process attracted the attention of the public instead of the other dehumidification processes, such as adsorption, absorption, and refrigeration cycles and so on. In this study, the prepared hydrophilic inorganic membrane-based dehumidifiers(membrane air dehumidification) examined the performance of dehumidification. The surface-modified inorganic membrane prepared in this study showed high dehumidification efficiency(over 80%). The membrane might be very useful for dehumidification industries.

  • The concept of revenue management have been used widely In the hotel and all transportation industries, and considered as a good system for managing a perishable asset. Recently, its' application area is being increasingly expanded to service industries such as the travel, the railway, the Internet and the sport industries. Internet business can be classified into several groups according to the characteristics of the individual business. One of groups is Internet Access Servoce business which connects each users to the internet. In this paper, since internet Access Services (IAS) business has a similar property to the service Industry, we will apply a revenue management concept to It. With some modification of existing model developed by Subramanian et.al. for airlines, we suggest the revenue management model being applied to IAS business. Computational experiment shows that the Increase of the revenue Is up to 7% by appluing our model. It means our model has a potential to manage IAS business effectively.

  • Fermented fish (jeotkal) has been used as a method of preserving perishable fish and marine products. Recently, however, high salted jeotkal (20% and more) has avoided from consumer by reasons of organoleptic quality (high salinity), health value (degenerative chronic disease), and hygienic safety. Among these jeotkals, meanwhile, sikhae (lactic acid fermented fishes) has been traditionally favored in the eastern coastal area of Korea, which contain below 10% of salt content with acidic range (pH4∼5).   • This paper deals with the problem of Customs trying to stop a Smuggler attempting to ship a cargo of perishable contraband(or information) across a strait within the limited period. The papers concerning these fields referred by Thomas, Baston et al, and Garnaev, have treated games dealing with one, two, and three patrol boats against one smuggler ship respectively. In this paper the author proposed a game model dealing with N patrol ships against one smuggler ship with the N boats being identical. The strategies for the gamers where games are conducted between them are shown in tables 3.3-1 and the game values thereof are in table 3.2-3. The author has exhaustively filled up the assumptions and conditions in the paper to justify the above-mentioned results so that they may not loose the generality.

Development of Convenient Software for Online Shelf-life Decisions for Korean Prepared Side Dishes Based on Microbial Spoilage

  • User-friendly software was developed to determine the shelf-life of perishable Korean seasoned side dishes in real time based on growth models of spoilage and pathogenic microorganisms. In the program algorithm, the primary spoilage and fastest-growing pathogenic organisms are selected according to the product characteristics, and their growth is simulated based on the previously monitored or recorded temperature history. To predict the growth of spoilage organisms with confidence limits, kinetic models for aerobic bacteria or molds/yeasts from published works are used. Growth models of pathogenic bacteria were obtained from the literature or derived with regression of their growth rate data estimated from established software packages. These models are also used to check whether the risk of pathogenic bacterial growth exceeds that of food spoilage organisms. Many example simulations showed that the shelf-lives of the examined foods are predominantly limited by the growth of spoilage organism rather than by pathogenic bacterial growth.

A Determination of the Optimal Blood-Issuing Polices (최적 혈액 유출 정책의 결정)

  • Human blood is a perishable product : it has a legal lifetime of 21 days from collection, during which it can be used for transfusion to a Patient of the same type, and after which it has to be discarded. Therefore, blood must be supplied safely and effectively because it is one of the medical resources which keep humanlife. In this study, the effects of blood issuing policies on average inventory levels and average age of blood at transfusion are determined by simulation applied the theory of absorbing Markov chains. And as a practical study, the daily demand distribution of blood is estimated by using the data of B General Hospital. The distribution estimated follows poisson distribution and the estimator of parameter estimated from the poisson distribution is 0.762. Simulation is done by using the parameter. The most important problem when control blood is the amount of outdata. So we compared random policy with Modified LIFO and Modified FIFO by using outdata. As a results it is shown that Modified LIFO and Modified FIFO by using outdata. As a results it Is shown that Modified LIFO and Modified FIFO present better issuing policy than Random Policy.
