Amygdalin Contents in Peaches at Different Fruit Development Stages

  • Amygdalin contents of the seeds, endocarps, and mesocarps from three peach cultivars (i.e., Stone Peach, Hikawa Hakuho, and Bakhyang) were measured at three stages of fruit development (stone-hardening, fruit enlargement, and ripening). The peach samples were dried and defatted with a Soxhlet apparatus, reflux extracted with methanol, and analyzed using reverse phase high-performance liquid chromatography. During all fruit development stages, the amygdalin contents in the seeds were higher than those in the endocarps and mesocarps. The amygdalin contents of the Stone Peach were comparatively higher than the Hikawa Hakuho and Bakhyang (P<0.05). Further, the amygdalin contents during ripening were very low or not detected. Overall, the amygdalin contents of the three peach cultivar samples (seed, endocarp, and mesocarp) increased until the fruit enlargement stage and either remained constant or decreased during ripening.

Residue Patterns of Procymidone, Chlorpyrifos and Cypermethrin in Peaches During Cultivation and Storage Period (복숭아의 재배 및 저장기간 중 Procymidone, Chlorpyrifos 및 Cypermethrin의 잔류량 변화)

  • The residue patterns of procymidone, chlorpyrifos and cypermethrin in peaches were examined. The pesticides were sprayed at 15 days before harvest and then were determined the residue at 0, 1, 2, 3, 5, 7, 10 and 15 days after pesticide application and calculated their $DT_{50}$. Also, the degradation patterns at $4^{\circ}C$ and $20^{\circ}C$ during storage period were compared. Biological half-lives of procymidone, chlorpyrifos and cypermethrin in peaches during the cultivation period were 3.1, 7.2 and 10.4 days, respectively. The biological half -life of procymidone was shorter than the others. During the storage period, half-lives of procymidone, chlorpyrifos and cypermethrin were 16.0, 14.3 and 13.1 days at $4^{\circ}C$ and 4.6, 10.2 and 12.9 days at $20^{\circ}C$, respectively. The degradation rates of these three pesticides in storage period were slower than them in cultivation period. Removal rates were $22.2{\sim}82.9%$ by tap water, and $12.5{\sim}88.8%$ by detergent solution.

Comparison of Vitamin B1, B2, and Niacin Contents According to the Cultivars of Apple, Peach and Strawberry (사과, 복숭아, 딸기 품종에 따른 비타민 B1, B2 및 나이아신 함량 비교)

  • This study analyzes the content of niacin, B1, and B2, which are among the water-soluble vitamin B group, in cultivars of the commonly consumed agricultural products of apples, peaches, nectarines and strawberries to compare content differences and to use results as base material for the Korean Food Composition Table. While the vitamin B1 content of apples according to different cultivars was found to be within the ranges of 0.063-0.208 mg/100g, and the content of vitamin B2 was found to be within the value ranges of 0.006-0.031 mg/100g, no niacin was found. The vitamin B1 content of peaches and nectarines according to different cultivars was found to be within the value ranges of 0.014-0.276 mg/100g, the content of vitamin B2 was found to be within he value ranges of 0.019-0.042 mg/100g, and niacin content was found to be within the value ranges of 0.298-1.096 mg/100g. The vitamin B1 content of strawberries according to cultivars was found to be within the value ranges of 0.112-0.394 mg/100g, the content of vitamin B2 was found to within the value ranges of 0.001-0.027 mg/100g, and niacin content was found to be within the value ranges of 0.388-0.809 mg/100g. Therefore, when nutrient composition analysis databases for the fruits of apples, peaches, and strawberries are constructed, cultivar factors must be put into consideration. In addition, differences can be found according to fruit harvest times, cultivation methods, and environmental factors, so related additional is needed.

Storage Trial of Preliminary Processed Peach (복숭아 일차가공품(一次加工品)의 저장성(貯藏性)에 관한 연구(硏究))

  • To enable off-season peach canning, peaches were halved and processed into solid packs. Following variables were compared in relation to storage stability of solid packs. First as pretreatment-dipping in citric and ascorbic solution after lye peeling; second as pasturization in pouch and hot fill process; third as packaging method-2 ply(PET/PE) and 3 ply(PET/Al/PE) plastic film pouch and metal container; fourth as storage condition $-20^{\circ}C\;and\;-5^{\circ}C$. After 25 weeks storage test, all peaches in different packs were processed into canned peaches just like commercial products, and then quality was organoleptically evaluated from the viewpoint of processing and storage variable of solid packs. The results are follows; 1. Ascorbic acid dipping in 3 ply pouch and citric acid dipping in 2 ply pouch had better quality retention effect than any other pretreatments in respective packing. 2. Pasteurization method gave great effect on the color and texture of the solid pack during storage, but not on the quality of the final canned peach. 3. Can and 3 ply packing were better than 2 ply pouch in storage of solid pack and quality of final canned peach. 4. The $5^{\circ}C$ storage gave better quality than $20^{\circ}C$.

The maximum limiting characteristic method-based land suitability assessment for peaches (Prunus persica) and grapes (Vitis vinifera L.) using rasterized data of soil and climate on agricultural land in South Korea (토양 및 기후정보 통합 최대저해인자법에 의한 복숭아와 포도의 적지 평가)

  • Land suitability assessments have been a crucial issue for enhancing productivity in agriculture and conserving agricultural lands. Based on soil and climate information, land suitability assessment for peaches (Prunus persica) and grapes (Vitis vinifera L.) were conducted using the maximum limiting characteristic method (MLCM) in South Korea. In peaches, S1 (highly suitable) exists on 2.21% of the land, S2 (moderately suitable) on 19.20%, N1 (currently not suitable) on 12.07%, and N2 (permanently not suitable) on the remaining 66.52%. In grapes, 3.65% of the land is classified as S1, 17.98% as S2, 11.85% as N1 and 66.52% as N2. In both fruit trees, the results acquired from soil and climatic information were similar to those from soil information alone. The data also suggest that the grades by soil information were relatively low over the land. With the assumption that the more suitable area a province has, the more will be cultivated for the fruit trees, we compared the percentages of area for peach and grape farming per province with the results by MLCM, and suggested that some provinces with a small percentage of farm can be encouraged to plant more in suitable areas as dictated by MLCM for the species. In the near future, we plan to use an advanced method such as analytic hierarchy process (AHP) to conduct similar tests, in which having reference data of yields or benefits per farm can efficiently increase the accuracy of the measurements.

A study on the Usefulness of Peach-juice as a Raw Material for Traditional Fermented Peach Vinegar (복숭아 전통발효식초 원료로서의 복숭아즙 유용성 연구)

  • To increase the added value of peaches and utilize overproduced peaches, it is necessary to develop peach raw materials in various forms. In this study, usefulness of juice as raw material for vinegar was investigated by comparing and analyzing the characteristics of the traditional fermented vinegar prepared with 4 types of juice (fresh, refrigerated, boiled and frozen puree). Sugar content (6.20~6.50°Brix), total acidity (5.25~5.61%), pH (3.42~3.74), and acetic acid content (48.81~54.29 mg/mL) of the vinegar were all similar to existing traditional fermented vinegar. However, contents of total phenol and flavonoid were higher in vinegar prepared from refrigerated and boiled juice. Therefore, it was confirmed that boiled and refrigerated juice are very suitable as raw materials for traditional fermented peach vinegar, in particular, it was confirmed that boiled juice with a high content of total phenol and flavonoid can be used as a high value-added functional material. These results are considered to be important guidelines for developing high value-added raw materials for peaches.

Damage at the Peach Due to Vibrational Stress During Transportation Simulation Test (모의수송 중 진동피로에 의한 복숭아의 손상)

  • Post-Harvest processing engineering is a field that studies prevention of the quality change of agricultural products during sorting, packaging, storage, and distribution after harvested. In distribution steps, agricultural products could be damaged by physical force, it is the main reason of low quality and they lost value of commodities. This study was performed to find the vibration characteristics of the peach, and to find the extent of the damage on the peach by fatigue stress. The vibration data was obtained on expressway and the vibration characteristics of peach was used to find the damage on the peach. To analyze the vibration characteristics of peach, the resonance frequency and vibration transmissibility were measured. The resonance frequency of the peach was 167.98 Hz and the transmissibility was 4.06 at resonance point. It was 150 ~ 250 Hz that the transmissibility was more than 1. And the transmissibility in simulated test was measured. When the trasmissibility was more than 1, the range was 15 ~ 65 Hz, and when it was less than 1, the range was 65 ~ 175 Hz. When the transmissibility was about 1, the range was 5 ~ 15 Hz. The damage and the vibration cycle numbers of peaches were compared with input frequency and acceleration. More damage and less cycle number happened in 30 Hz than in 62.5 Hz. The reason was that the transmissibility of 30 Hz was higher and the vibration displacement in lower frequency was more. The more acceleration and cycle number increased, the more the bruising volume of peaches increased. The bruising volume ratio for vibration fatigue was measured according to input acceleration and cycle number. Using measured data, regression models for bruising volume ratio(BVR) was developed as a function of the acceleration(A) and cycle number(CN) as follows. BVR = a * $A^b*$ $(CN)^c$

  • The study was carried out to investigate the pesticide residual characteristics in peaches, pear and grape. Pesticide residue patterns were remarkably different because of major factors affecting the pesticide residue patterns such as ratios of surface to weight, surface matrices, cultivations, sizes, increase rate of weight, and varieties of fruits, etc.. Pesticide residue levels in grape appeared higher than those in peaches and pear, because the pesticide solution sprayed was infiltrated and accumulated between grape granules. The matrices composing of fruit surface and the ratios of surface area to weight on fruits seemed to playa key role for determining the pesticide residual characteristics in fruits.

Determination of Free Sugars in Some Fruits by Liquid Chromatography (고속액체크로마토그래피에 의한 시판(市販) 수종과실류(數種果實類)의 유리당정량(遊離糖定量))

  • In order to estimate the basic data for the processing suitability of fruits, the contents of free sugars in citrus fruits(14 varieties) cultured in Jeju island, and peaches(4), grapes(4), pears(3) and apples(6) obtained from a local market were investigated by HPLC. The sucrose was the most abundant sugar in citrus fruits and peaches, and followed by fructose and glucose in order. The sugar contents in citru fruits was a wide difference according to the variety. In citrus fruit, the sucrose content was about 53 to 65% to total free sugars and the ratio of fructose to glucose was 1.0/0.8-1.1. The sugars present in grapes and pears were fructose of most abundance, glucose and sucrose in order. Jangshiprang pear showed 2 times higher fructose content than other variety. The free sugar in Taeyang and Hongok(Jonathan) apples were fructose, glucose and sucrose in order of abundance which fructose, sucrose and glucose in Golden Fuji and Mutsu.

Causes of Can Swelling of Commercially Canned Fruits (과일 통조림의 팽창원인에 관한 연구)

  • Seventy nine swollen commercially canned grapes and peaches were collected from wholesale and retail outlets in Seoul area for the investigation of the causes of their swell. Hydrogen generation and microbial spoilage were the only two common causes of can swelling. Nevertheless, the spoilage profile of the two products was different. Seventeen out of twenty one canned peaches were spoiled by microorganisms, while the rest of five were swollen due to hydrogen generation. In contrast, fifty one out of fifty eight canned grapes were swollen due to hydrogen generation, while the rest of seven were spoiled by microorganisms. Seventeen yeast and five bacterial strains were isolated and only the yeasts were identified to their genera and species. Saccharomyces cerevisiae was the most frequently isolated spoilage yeast, closely followed by Torulopsis stellata. Candida parapsilosis, Pichia kluyveri, Pichia membranaefaciens, Torulopsis globosa and Torulopsis lactis-condensi were also isolated but with lower frequencies.
