Comparative Assessment of Quality Changes in Refrigerated Foods Stored in Open-type and Door-type Refrigerators: Towards Developing Quality Indicators (냉장 중 품질변화 측정 지표 개발을 위한 냉장고 형태별(개방형 및 도어형) 저장 중 주요 냉장 식품의 품질변화 측정)

  • This study was conducted to investigate the impact of refrigerator type and temperature fluctuations on the quality changes of refrigerated foods. Phycochemical and sensory quality, as well as microbial growth, were measured for various foods stored in open- or door-type refrigerators set at 5℃ during storage. The average temperatures recorded were 11.50±1.14℃ in an open refrigerator, and 6.34±0.97℃ in a closed refrigerator. The average surface temperatures of the food items were 9.60±1.20 and 6.00±0.80℃ for open and closed refrigerators, respectively. Significant changes in color and appearance quality were observed in lettuce, mackerel, ground beef, and cut pineapples when stored in open refrigerators. Ready-to-Eat foods such as gimbap and sandwiches exhibited higher levels of microbiological proliferation when stored in open refrigerators compared to closed refrigerators. Processed foods, such as sterilized milk and packaged tofu, did not show significant differences in quality among various types of refrigerators. The installation of refrigerator doors can effectively minimize temperature fluctuations caused by external factors, thereby reducing variations in food quality. These findings provide essential insights into the quality changes associated with the implementation of refrigerator doors, serving as fundamental data for ensuring optimal food preservation.

A Study of Phthalate and Adipate Esters in Food Packaging and Packaged Foods (식품포장용 wrap 및 식품 종류에 따른 Phthalate 및 Adipate Esters에 대한 연구)

  • A study of the levels of phthalate and adipate esters, which are suspected as endocrine disruptors, in food packaging wraps and packaged foods were carried out. Among 11 wrap samples, 8 household wraps purchased at retail markets were polyvinyl chloride(PVC) and polyethylene(PE), while 3 commercial wraps at wholesale markets were PVC. All of 51 selected food samples, such as 12 samples of vegetable, 11 samples of fruit, 6 samples of bread and rice cake, 4 samples of meat and poultry, 4 samples of fish and 14 samples of side dish, packaged with commercial PVC wraps containing adipate esters were purchased at retail markets. The level of di-(2-ethylhexyl) adipate(DEHA) and diisononyl adipate(DINA) was from 2.2 to 17.9% and from 4.2 to 22.3% in household PVC wraps, respectively. In the commercial PVC wraps, the level of DEHA showed from 18.3 to 22.5%, while other phthalate esters were not detected. The phthalate and adipate esters were not detected in PE wraps. The level of DEHA in packaged foods, such as vegetable, fruit, bread and rice cake, meat and poultry, fish and side dish, were determined up to $8.2\;{\mu}g/cm^2,\;17.4\;{\mu}g/cm^2,\;31.0{\mu}g/cm^2,\;8.3\;{\mu}g/cm^2,\;2.1\;{\mu}g/cm^2$ and $92.3\;{\mu}g/cm^2$, respectively. The results suggested that migration levels of DEHA in foods were closely related to the fat content, wrapping condition of food and stroage time and temperature.

Food Utilization Status and Perceived Performance of food Management of School Food Service in the Kyunggi Area (경기지역의 학교 급식 식재료 사용 현황 및 관리 직무 수행도에 관한 연구)

  • The perceived performance of food management and the food utilization status of school food service managers in nine sectors of management in the Kyunggido area were evaluated[ED highlight - please ensure this is correct]. The results of this study revealed that 84.5% of the service managers used domestic food and $20{\sim}40%$ used organic food, with an average of 80% using one of these types of foods. In addition, the average use of pre-handling food varied widely when compared to other food items[ED highlight - very confusing, please ensure my changes do not alter your intended meaning] Additionally, most respondents used frozen food (72.0%), processed food (83.9%), and substitute food (53.4%), for the average of 20%,[ED highlight - I cannot infer your intended meaning here, what is an average of 20%? Additionally, the respondents most common reason for using processed food was its high acceptability (47.8%), while substitute foods were most often used due to non suitable foods beingreturned (75.3%). Among the varieties of food that were used, those that are easily obtained and cooked were used the most. Furthermore, the mean score for the perceived performance of food sanitary management was $4.51{\pm}0.425$ (based on the 5-point Likert scale). Effects of Ozone-Water Washing on the Quality of Melon (오존수 세척이 포장 참외의 품질에 미치는 영향)

  • For increasing shelf-life, melons with different washing and packaging were evaluated during storage at room temperature. Hardness and weight of melon was decreased during storage period and, after 12 days, severe rotten or decay appeared on melons except melon with ozone-water. Organoleptic test on color, appearance, taste and texture showed maximum values on melons eith ozone-water washing. Particularly, spots have been shown on all packaged melons in the later storage, except melons washed with ozone-water. According to these results, ozone-water washing was effective for keeping the high quality of melons.

Food Allergy, a Newly Emerging Food Epidemic: Is the Current Regulation Adequate?

  • Food allergy refers to an immunologically mediated adverse reaction to food, mainly to proteinaceous constituents. Health implications vary between those individuals who experience mild physical discomforts to those with fast-acting, life-threatening anaphylactic reactions. The prevalence of food allergy is higher in children than in adults, estimated around 4-8% and 1-2% respectively in developed countries. Food allergy has no effective cure at the present time and total avoidance of causative foods is the most reliable prophylactic method currently recommended by the medical community. To help food allergic patients to make informed choices of their foods, mandatory labeling of selected food allergens has been introduced in several countries. All food allergen labelling provisions specify a set of allergens common to the regulated countries. Policy divergence, however, exists between countries by inclusion of additional allergens unique to specific countries and enforcement of specific labelling requirements. Such variations in food allergen labelling regulations make it difficult to manage allergen labeling in imported pre-packaged food products. This paper addresses two current issues in food allergen regulation: 1) an urgent need to determine true prevalence of food allergy in the Asia-Pacific region. This will enable refinement to the food allergen regulation to be more country-specific rather than simply adopting CODEX recommendations. 2) There is an urgent need for harmonization of food allergen regulation in order to prevent food allergen regulation becoming a trade barrier.

Consumer Trends on Dietary and Food Purchasing Behaviors and Perception for the Convenience Foods (한국형 건강 편의식 개발 방향 도출을 위한 소비자의 식행동 및 인식 조사)

  • This study was attempted to identify emerging consumer trends on dietary and food purchasing behaviors and perception for the convenience foods. Self completed questionnaires were collected from 710 housewives in Seoul and Kyunggi province and analyzed statistically. A questionnaire consisted of 3 parts including demographic backgrounds, dietary and food purchasing behaviors, perception for the convenience foods. Among demographic variables age, occupation and lifestyle were the significant factors affecting consumers' behaviors and perception of dietary lives. Over half of housewives, who are the primary persons responsible for home meal preparation, confessed that they do not enjoy meal planning and preparation any more. An attitude toward in home food preparation was significantly different among age groups, working or non-working women and lifestyles. Most of the respondents go shopping for foods whenever they need to or 2-3 times a week. They also did not plan before going foods shopping and purchase decisions were made in-store. They considered quality of foods more important than price. Consumers were not willing to purchase pre-cut packaged vegetables or pre-cooked foods on the market. However, they showed strong desire and demand for the development of convenience korean foods coupled with high quality.

Quality Assessment of Cook/chilled Soy Sauce Glazed Soybean Curd Packaged with Different Methods for the Development of Health-oriented Convenience Foods (한국형 건강편의식 개발을 위한 두부조림의 Cook/Chill 생산 및 포장방법에 따른 품질 평가)

  • The purpose of this study was to assess the qualities of cook/chilled soy sauce-glazed soybean curd with various packaging conditions as a trial to develop health-oriented convenience foods. The effects of three packaging methods, linear low density-polyethylene (LLD-PE), top sealing, and modified atmosphere packaging(MAP) on the shelf-life of HACCP-based cook/chilled soy sauce-glazed soybean curd were evaluated during 20 days of chilled storage in terms of time-temperature, microbiological (total aerobic plate count, psychrotrophic plate count, coliform, and fecal coliform count), chemical(pH and peroxide value(POV)), and sensory evaluation. The results of microbiological and chemical analyses were within the limits of the microbial and chemical standards for all phases after cooking. No significant differences were detected in microbial counts of the samples for all three packaging methods. However, sensory evaluation indicated that the top sealing and MAP methods showed a longer shelf-life than LLD-PE packaging. Recommended shelf-life of the product was 12 days for LLD-PE packaging, and 16 days for both top sealing and MAP. In conclusion, MAP was considered as the most effective packaging method for assuring microbial and sensory quality of this cook/chilled product.

Characteristics of food purchasing depending on socio-demographic factors -Focusing on metropolitan area in South Korea-

  • Demographic transition drives changes in consumer demand for food products. This study examines how rising incomes and population trends affect spending on food purchased for home. The objective of this study is to characterize the relationships between selected socio-demographic factors and food selection among South Korean households. Panel data from Rural Development Administration (RDA) in South Korea in 2010 was used (n=971). Household food purchases were classified into one of the five food groups from Composition of Foods of RDA. Multiple regression analysis was used to analyze the effects of household size and income based on the expenditure share on each food group. All statistical analyses were performed using SAS/ PC version 9.3. Results show that household socio- demographic characteristics have a strong influence on food purchasing, with the purchase of vegetables and fruit, and processed food and pre-packaged being particularly sensitive.

Simulation of Quality Changes and Prediction of Shelf-life in Dried Laver Packaged with Plastic Films (플라스틱 필름 포장 김의 품질 변화 simulation과 shelf-life 예측)

  • In order to develop a rapid predicting method of the shelf-life of moisture sensitive foods and establish their proper packaging methods, the qualify changes and shelf-life of dired laver as a model food were studied by the computer simulation. A mathematical model of the relationship between the rate constants of chlorophyll a and water activity was established at $10^{\circ}C,\;25^{\circ}C$ and $40^{\circ}C$. Computer simulation to predict water activity and chlorophyll a was developed by considering the simultaneous influence of storage conditions such as water content of products, storage temperature and relative humidity, packaging materials. Simulated quality changes of dried laver was in good agreement with the experiment data. Chlorophyll a and sensory score decreased as the water activity increased. And correlation coefficient between the sensory scores and the contents of chlorophyll a was very high as 0.991. The critical water activity by sensory evaluation was around 0.55. The shelf-life of dried laver packaged with plastic films could be predicted from the above results in various storage conditions.

Antimicrobial Activity and Food Storage of LDPE Silica Film Containing Antimicrodial Compounds (항균성물질이 함유된 Silica LDPE필름의 항균효과 및 식품 저장성)

  • Low density polyethylene(LDPE) film was fabricated with the addition of benzoic acid, or/and JP which contained water-soluble silica adsorbed a natural antimicrobial compounds. The used antimicrobial compounds were isolated from culture broths of methylotropic actinomycetes strains MO-16 and MO-17 which was newly isolated from soils. An antimicrobial compound retained antimicrobial activity after heat treatment at 121$^{\circ}C$ for 5 min. JP, which obtained from Japan as a antimicrobial agent, showed antimicrobial activity in the concentration of 100 mg/mL. The silica LDPE film revealed the growth inhibition of total aerobic bacteria in packaged minced pork compared with commercial film and of E. coil on a contained agar plate. In the storage testing of various packaged foods at room temperature for 30 days, the film showed excellent preservation compared with commercial film in case of small tomato and Agaricus bisporus.
