The objective of this study was to evaluate the qualities of $Topokki$$Garaedduk$ by different moisture ratios (rice flour : water=1:0.3, 1:0.4, 1:0.5). $Topokki$$Garaedduk$ was investigated in terms of its moisture, texture, and sensory properties. The moisture content of $Topokki$$Garaedduk$ was increased. The hardness, chewiness, and cohesiveness of $Topokki$$Garaedduk$ significantly decreased with increased moisture ratios, however springiness and adhesiveness were not significantly changed. Water absorption of $Topokki$$Garaedduk$ was increased and solid content showed no significant differences with increasing moisture ratio. A sensory evaluation showed that the moistness of $Topokki$$Garaedduk$ increased, while hardness, and springiness decreased with increasing moisture ratios. The overall acceptability of $Topokki$$Garaedduk$ at the 1:0.4 ratio of rice flour : water scored highest at 6.92 among the samples (p<0.05). The correlation coefficient between sensory moistness and moisture content was significantly increased ($R^2$=0.91). As a result of this study, $Topokki$$Garaedduk$ with an additional 40% moisture content (rice flour : water=1:0.4) had the most suitable quality properties.
Recently, the number of elderly people in the rural area of Korea has increased remarkably and their food security has become deteriorated mainly due to the low economic status. To investigate the food security for the elderly people, relevant data were obtained by offering questionnaire to the rural elderly people who were engaging in traditional agricultural production for daily foods. The subjects of 1870 were collected in 9 provinces according to PPS(Probability Proportional to Size). Questionnaire contained the items of dietary habit, food cultivation, Production and Preservation, and the suey was conducted by trained interviewers. SAS (ver 8.1) was used for statistical analyses in which Chi-square tests and General Linear Models were made. Family of the elderly people was $45.4\%$ of the total and the characteristics of elderly families were that age of male head was 82.1 years and that of female was 67.7 years, and that $68.8\%$ of elderly women were working for family income or pocket money. The elderly families' food cultivation state was surveyed and they were pepper$(59.1\%)$, chinese cabbage$(61.91\%)$, and sesame$(48.6\%)$ for their own consumption. But, bean sprout$(6.5\%)$, tofu$(7.7\%)$ and egg$(5.1\%)$ showed low rate of cultivation for the family. The rate of cultivating chinese cabbage$(61.9\%)$, and sesame$(48.6\%)$ was significantly higher than that of middle aged family. At the status of fermented food production for the elderly family, Doenjang$(87.4\%)$ and Gochujang$(86.3\%)$ Kanjang$(84.0\%)$ Kimchi$(92.9\%)$ Jangachi$(27.6\%)$ and Meju$(91.61\%)$maintained higher rate than that of middle aged families' Food preservation of elderly families was low and there are just jam$(5.3\%)$ and bottled products$(1.4\%)$. A little higher rate was observed lot the preserved food such as alcohol$(9.9\%)$ and powder$(9.8\%)$. For the elderly family the score of food cultivation was 4.08/12 points and that of food preservation was 0.62/12 points. The score of fermented food production for elderly family was 10.24/12 points which was significantly different from that of middle aged family (9.58/12 points, p<0.001). This result suggests that for the elderly people food with more protein is needed for production.
Hot and spicy flavor grading in hot pepper powder for gochujang in various cultivars was studied using sensory and physicochemical characteristics. Chungyang, which had the highest capsaicin content had very low redness a value of 17.49 representing stronger red color does not relate to the stronger hot and spicy flavor. Sensory results showed that chungyang had significantly the highest value of hot and spicy aroma and flavor of 5.73 and 7.87, respectively(p<0.05). Although wurigun had the second highest capsaicin contents, it had relatively low hot and spicy aroma value as 3.87, some sweet flavor, and relatively low stingingness in the mouth value of 4.67, thus, comparatively weak hot and spicy flavor of 4.87 suggesting the difficulties in grading the hot and spicy flavor only by the capsaicin contents. Capsaicin content was highly positively correlated with the hot and spicy flavor, aftertaste and stinging flavor, and negatively correlated with the sweet flavor. In the principal component analysis, samples of chunyang, balita, and gumbit groups with greater hot and spicy aroma and flavor, were loaded in the first principal component. Classifying hot and spicy flavor of hot pepper powder for gochujang in various cultivars are suggested as 'very weak', 'weak', 'intermediate', 'strong', and 'very strong' with capsaicin contents under 40.00 mg/dL, 40~100 mg/dL, 100~150 mg/dL, 150~500 mg/dL, and those higher than 500 mg/dL, respectively. Since too many sample groups were located in the specific stages in the five stage grading, the nine staged classification is also suggested.
The beneficial effect of glucose and phosphate ions in culture medium on the development of human embryos in vitro has not been fully elucidated. The purpose of this study was to evaluate the influence of fertilization and culture of embryos in glucose/phosphate-free m-TALP medium on pregnancy rates in IVF-ET program. The patients in 244 IVF-ET cycles received GnRH agonist + HMG regimens. A does of 10,000 IU HCG was administered when two or more dominent follicles reached 18mm in diameter. Thirty-six hours after HCG, oocytes were recovered transvaginally using ultrasound guidance. Aspirated oocytes were matured for 4 to 6 h in TCM-199 supplemented with 10% follicular fluid (FF). Insemination was carried out with 50,000 motile spermatozoa in TCM-199 + 10% FF or m-TALP + 5% FF + 5% fetal cord serum (FCS) according to experimental design. After 6 h, oocytes were washed 3 to 4 times and cultured in each fresh medium. After 20 h, oocytes were freed from cumulus/corona cells and examined for the presence of pronuclei. Fertilized oocytes were transferred into each co-culture drops and cultured for further incubation. On day 3, embryo transfer was performed with grade 1 and 2 embryos. Monolayers for co-culture of embryos were prepared by plating $1{\times}10^5$ cumulus cells/ml in 10ul drop of TCM-199 + 10% FF or m-TALP + 5% FF + 5% FCS media 24 h prior to the onset of co-culture. Development to 4 to 16 cell stage was observed at 70x magnification following two days of incubation. Pregnancy was confirmed by detecting increasing serum ${\beta}$-hCG concentrations for 11 days following embryo transfer. Data were analyzed by ${\chi}^2$-test. Oocytes from 244 IVF-ET cycles were randomized. The number of cycles and mean age of patients were 97 and 147, 31.3 yrs and 31.2 yrs for TCM-199 (control) and m-TALP groups, respectively. The mean number of retrieved oocytes/cycle, fertilization rates, number of embryos transferred/ET and pregnancy rates were 11.1 and 10.3, 65.1% and 67.3%, 4.1 and 4.7, 28.9% and 43.8% for TCM-199 and m-TALP groups, respectively. Differences in the pregnancy rates were found between control and m-TALP groups (p<0.05). The pregnancy rate of patients divided according to maternal age groups of ${\leq}30$, 31-35, $36{\leq}$ were 44.4% and 49.0%, 26.1% and 41.3%, 29.2% and 41.2% for control and m-TALP groups, respectively. These data indicate that culture of human embryos in glucose/phosphate-free m-TALP medium improves pregnancy rates.
We developed a novel water-soluble camptothecin analobue, CKD602, and evaluated the inhibition of topoisomerase I and the antitumor activities against mammalian tumor cells and human tumor xenografts. CKD602 was a nanomolar inhibitor of the topoisomerase I enzyme in the cleavable complex assay. CKD602 was found to be 3 times and slightly more potent than topotecan and camptothecin as inhibitors of topoisomerase, respecitively. In tumor cell cytotoxicity, CKD602 was more potent than topotecan in 14 out of 26 human cancer cell lines tested, while it was comparable to camptothecin. CKD602 was tested for the in vivo antitumor activity against the human tumor xenograft models. CKD602 was able to imduce regression of established HT-29, WIDR and CX-1 colon tumors, LX-1 lung tumor, MX-1 breast tumor and SKOV-3 ovarian tumor as much as 80, 94, 76, 67, 87% and 88%, respectively, with comparable body weight changes to those of topotecan. Also the therapeutic margin (R/Emax: maximum tolerance dose/$ED-{58}$) of CKD602 was significantly higher than that of topotecan by 4 times. Efficacy was determined at the maximal tolerated dose levels using schedule dependent i.p. administration in mice bearing L1210 leukemia. On a Q4dx4 (every 4 day for 4 doses) schedule, the maximum tolerated dose (MTD) was 25 mg/kg per administration, which caused great weight loss and lethality in <5% tumor bearing mouse. this schedule brought significant increase in life span (ILS), 212%, with 33% of long-term survivals. The ex vivo antitumor activity of CKD602 was compared with that of topotecan and the mean antitumor index (ATI) values recorded for CKD602 were significantly higher than that noted for topotecan. From these results, CKD602 warrants further clinical investigations as a potent inhibitor of topoisomerase I.
Objectives : Sypsun-points are located at the tips of all fingers, 0.1 chon(寸) from the finger nails, totaling 10 points on both hands. These points have been used for emergency care, fainting, epilepsy, cerebrovascular accidents, hypertension, unconsciousness, high fever etc. in oriental medicine. The most common technique is bleeding with a needle at these points. We investigated whether Venesection at the Sybsun-points has effects on blood pressure and body temperature and pulse rate in humans aged from 20 to 30 who had no specific past history and whose vital signs are in normal range. Methods : 67 persons were studied from March to June 2008. They were composed of Sample group(n=36) and Normal group(n=31). Both two groups kept a steady state an hour before venesection. In both group, we checked blood pressure and body temperature and pulse rates 6 times( 30min. before and just before treatment, and just after, 30, 60, 90min after treatment). All study environments were same between sample and normal group. But only, normal group didn't carry out venesection at the Sybsun-points. Results : In a comparison of before and after venesection at the Sybsun-points, any Statistical significance was not evaluated. Though pulse rate in sample group was significantly decreased after venesection(p<0.05), it has no statistical significance because normal group's pulse rate was also significantly decreased and between two groups had no statistical difference. Conclusions : Though further study is needed, our findings suggest that venesection at the Sybsun-points has no significant effect on blood pressure and body temperature, and pulse rate in humans who had no specific past history and whose vital signs are in normal range. Also in that case, we may know that pain and tension result from venesection at the Sybsun-points have no significant effect on blood pressure and body temperature and pulse rate.
The purpose of this study was to evaluate the tobacco cessation activities of the dental staffs in Wonju city. All 137 subjects were surveyed by structured questionnaire with convenience sampling. The distribution and correlation of attitude, behavior, and intervention were evaluated by both frequency test and ANOVA test. 75.2% of total subjects responded that the dental staff should give a model through prohibition of smoking and 66.5% responded that tobacco cessation activities should be responsibility of the dental staff. Tobacco cessation counsel was performed by little but with positive attitude. Advice method of tobacco cessation was used to counsel on tobacco cessation (68.6%). The dentists (48.2%) and dental hygienists (23.4%) were responded adequate for the tobacco cessation counselor, however, it was shown that the dentist had lower level of attitude about tobacco cessation than dental hygienist (p<0.01). The dental staff needs to participate in the tobacco cessation counseling program more regularly and actively. In order for the dental staffs gets the counsel effectively and intervene with tobacco cessation, it is essential that the education of tobacco cessation is integrated in dental school. Furthermore, it is necessary for the dental staffs to take continuing education for more effective understanding of tobacco cessation.
PURPOSE. The purpose of this study was to determine accurately the part of the tragus to be used to form the Ala-Tragal line or Camper's line in orthognathic profile patients. MATERIALS AND METHODS. 150 dentate subjects with age of 18-40 years with orthognathic profile were sampled. Life-size lateral digital photographs of the face with fox plane were taken in natural head position. Different angles between Eye-Ear plane and occlusal plane ($OT_1$-OP), Eye-Ear plane and ala-superior border of tragus ($OT_1-AT_1$), Eye-Ear plane and ala-middle border of tragus ($OT_1-AT_2$) and Eye-Ear plane and ala-inferior border of tragus ($OT_1-AT_3$) were calculated using computer software package, AutoCAD 2004. From the three angles formed by the Eye-ear plane ($OT_1$ or FH plane) and the ala-tragal lines, the one closest to the angle formed between Eye-Ear plane ($OT_1$) and occlusal plane (OP) was used to determine the occlusal plane of orientation. The obtained results were subjected to ANOVA F test, Tukey's Honestly significant difference test, followed by Karl Pearson coefficient of correlation test. P values of less than 0.05 were taken as statistically significant. RESULTS. The mean of base line angle i.e. $OT_1$-OP angle ($11.96{\pm}4.36$) was found to be close to $OT_1-AT_2$ angle ($13.67{\pm}1.93$) and $OT_1-AT_3$ angle ($10.31{\pm}2.03$), but $OT_1$-OP angle was found to be more closer to $OT_1-AT_3$ angle. Comparison of mean angles showed that $OT_1$-OP angle in both males (11.68) and females (12.51) is close to $OT_1-AT_3$ angle (males- 11.01, females- 11.95). CONCLUSION. The line joining from ala to the lower border of the tragus was parallel to the occlusal plane in 53.3% of the subjects. There was no influence of the sex on the level of occlusal plane.

For the purpose of investigating the continuous fluoride releasing from acrylic resin using removable appliances by incorporating fluoride into polymethylmethacrylate during the construction of the appliances, two kinds of fluoride were blended with acrylic powder and devided into five groups as follows. Group 1 : no fluoride (control) Group 2 : NaF 5 wt% Group 3 : NaF 10 wt% Group 4 : $CaF_2$ 5 wt% Group 5 : $CaF_2$ 10 wt% Resin specimens were tested in vitro for fluoride release with fluoride electrode and flexural strength with Instron. The results were as follows ; 1. After 24 hrs, released fluoride concentration(ppm) was the most in group 3($126.5{\pm}14.15$) then, next, group 2($49.5{\pm}4.92$), group 5($2.67{\pm}1.08$), group 4($0.81{\pm}0.30$), group 1($0.03{\pm}0.01$) in order, but after 28 days, group 3($3.37{\pm}0.31$), group 5($1.25{\pm}0.25$), group 4($0.74{\pm}0.19$), group 2($0.68{\pm}0.07$), group 1($0.03{\pm}0.01$). 2. Fluoride releasing of NaF groups were faster and more amount than $CaF_2$ groups initially but decreased significantly, later. 3. Flexural strength ($kg/cm^2$) was the biggest in group 1($602.90{\pm}69.32$), and then group 4($568.98{\pm}20.16$), group 5($556.19{\pm}5.26$), group 2($536.12{\pm}30.35$), group 3($508.44{\pm}26.16$) in order, the differences between control group and NaF groups were statistically significant (p<0.05).
The purpose of this study is to investigate the quality and sensory characteristics of Jiangachi produced with king mushrooms. The moisture content of Jiangachi made from king mushrooms was 72.80% for CON, which was highest, while J4 was 64.46%, which was lowest. In color value results, CON showed the highest L value of 72.80 and J4 showed the lowest value of 31.71. However, the amount of a and b value showed the reverse results. CON showed the lowest sugar content and salinity, whereas J4 showed the highest among the two of them. For PH result, CON and J1 showed the lowest value while J4 showed the highest value of 3.87. According to the results of QDA, J4 showed the strongest brown color intensity, soy sauce flavor, salty taste, and CON showed the weakest of them. CON showed the strongest sweet flavor and sweet taste, whereas J4 showed the weakest. According to the result of acceptance test, CON showed the lowest scent, and for appearance, taste, texture, and overall quality, J3 that contains 25% of soy sauce showed the best results. In conclusion, Jiangachi made with king mushrooms got a high preference when added with soy sauce, and the preference has increased with 25% of soy sauce.
