효모첨가에 의한 재래식 간장 제조공정 개선 (Improved Process for Preparation of Traditional Kanjang(Korean-Style Soy Sauce))

  • The traditional kanjang has been prepared by mixing meju and 18% saline solution, and fermenting for 60 days. The traditional kanjang is very salty and inferior in flavor and taste comparing with commercial fermented soy sauce. To improve the quality of traditional kanjang, Zygosaccharomyces rouxii H-62, a flavor-related mutant, was inoculated during fermentation. It was found that the addition of Z rouxii helped to improve the organoleptic quaity of traditional kanjang. The optimal condition for preparing traditional kanjang was to use 5L of 15.5% saline solution per meju. Meju must be cut into 12 pieces to get a proper total nitrogen and pure extract content. The optimal fermentatin temperature was 3$0^{\circ}C$. The prepared kanjang contained over 0.8% total nitrogen and 6.0% pure extract after 60 days of fermentation.

훈건 굴을 이용한 분말조미소재의 정미성분 및 활용 (Taste-active Components of Powdered Smoke-dried Oysters and Its Application)

  • The powdered boil-dried oyster (C), the powdered smoke-dried oyster (OS-1) and the powdered smoke-dried oyster scrap (OS-2) were examined for their taste-active components, quality characteristics for potential utilization as a natural flavoring substance. The free amino acid level of OS-l and OS-2 were 395.6 mg/100 g and 551.5 mg/100 g, respectively, and that of betaine of OS-1 and OS-2 were 164.6 mg/100 g and 214.9 mg/100 g, respectively. The contents of inorganic ions were rich in Na, K, P, Ca and Mg in that order. Major free amino acids were taurine, glutamic acid, proline, alanine and glycine. The extract condition of the OS-1 and OS-2 the instant soup was the most appropriate at $98^{\circ}C$ for 1-5 min. The hot water extract of OS-1 and OS-2 with additives such as salt, sugar, pepper and onion powder had a good organoleptic qualities compared with the conventional flavoring substances in a local market. We conclude that powdered smoke-dried oyster and its scrap can be commercialized.

김치의 발효 과정중 품질변화 (Some Quality Changes during Fermentation of Kimchi)

  • 김치의 발효 과정중 김치의 주요 품질의 변화를 알기 위하여 김치액의 pH와 총산도, 부피와 고형분의 양 그리고 색을 측정하였으며, 김치의 맛, 냄새, 텍스쳐에 대한 관능적 성질을 평가하였다. 김치의 발효는 배추를 소금물에 절인뒤 $4-35^{\circ}C$ 범위의 온도에서 발효시켰다. 그 결과 pH의 감소나 총산도의 증가는 변화 속도에 따라 초기, 중간, 최종 단계의 3단계로 구분할수 있었으며, 이들의 변화는 sigmoidal곡선을 보여 주었다. pH와 총산도가 가장 빠르게 변화하는 중간 발효 단계에서의 계산된 활성에너지는 각각 15.67 및 18.99Kcal/mole이었다. 발효중 배추 조직으로부터 나온 김치액은 발효초기에 빠르게 증가하다가 완만하여 졌으며 김치액의 총 고형분은 초기에 증가하였다가 감소하는 현상을 보였다. Hunter L값은 약간씩 증가하였고 김치액의 색은 연한녹청색으로 변화하였다. 김치의 관능적 성질은 pH 4.0부근에 도달할 때까지 상큼한 맛과 냄새 및 사각사각한 조직감이 증가하다가 발효 최종 단계에서 모두 감소하였으며 군덕내와 맛은 급격히 증가하였다.

개체동결 굴(Crassostrea gigas) 엑스분을 이용한 굴 풍미계 과립조미료의 제조 및 품질특성 (Processings and Quality Characteristics of the Oyster Crassostrea gigas Granular Flavor Seasoning from IQF Oyster Extract)

  • The pacific oyster Crassostrea gigas has a desirable taste and flavor that differs from those of other fish and shellfish. In order to develop a high value-added product from individually quick-frozen oyster extract (IQFOE), we prepared an oyster granular flavor seasoning (OGS) from IQFOE and characterized its qualities. The OGS was prepared by granular molding and fluidized bed drying with inosine monophosphate (IMP, 0.1%), yeast extract powder (1.4%), tangle extract powder (0.6%), monosodium glutamate (MSG, 5.0%), microcrystalline cellulose (0.6%), lactose (27.5%), salt (33.0%), spray-dried IQFOE (22.5%) as a powdered materials, and IQFOE ($Brix\;25^{\circ}$, 7.0%), soy sauce (0.4%) and water (1.7%) as a liquid materials. The moisture, crude protein, pH and salinity of the OGS were 3.4%, 12.5%, 6.50 and 32.0%, respectively. Especially, the OGS revealed very higher amino-N content (1,856.0 mg/100 g) than that (1,291.2-1,610.2 mg/100 g) of other commercial flavor seasonings. In taste-active compounds, free amino acid contents was 1,359.0 mg/100 g, and major ones were glutamic acid, taurine, hydroxyproline, glycine, lysine, phosphoserine, proline in order. And OGS showed good organoleptic qualities for taste, odor and general preference compared with commercial flavor seasonings on a local market.

The Effect of Hydrolysis Pre-Treatment by Flavourzyme on Meat Quality, Antioxidative Profiles, and Taste-Related Compounds in Samgyetang Breast Supplemented with Black Garlic

  • This study aimed to carefully investigate the effect of hydrolysis using Flavourzyme on meat quality, antioxidative status, and taste-related compounds in breast of Samgyetang that was supplemented with black garlic (BG). Four different treatment groups were compared: (1) conventional Samgyetang (control), (2) Samgyetang hydrolyzed with Flavourzyme (1%, v/w) (FS), (3) Samgyetang made with the BG extract without hydrolysis (NBG), and (4) BG samgyetang pre-treated with Flavourzyme (1%, v/w) in a water bath at 55℃ for 2.5 h and hydrolyzed before being processed (HBG). All the treatment groups were cooked by retorting at conditions 121℃ and 1.5 kg/cm2 for 1 h. Improved umami profiles through the increase of umami-related nucleotides (5c-GMP, 5'-IMP) and free amino acids-aspartic acid and glumtamic acid, in Samgyetang breast was recorded following hydrolysis. The HBG group tended to impart stronger scavenging activity toward free radicals compared with the other two groups, while not differing with NBG group regarding suppressing malondialdehyde. Textural properties were improved through hydrolysis, wherein the shear force value decreased from 2.29 kgf in the control to 1.19 and 1.25 kgf in the FS and HBG group. Moisture percentages were highly retained, with the redness score increasing and the lightness color decreasing following hydrolysis. In conclusion, the results of this study can be a preliminary information of the effect of hydrolysis pre-treatment for BG samgyetang. Further experiments are required to compare various enzymes along with its organoleptic acceptances.

한국 전통 간장의 숙성중 관능적 품질에 미치는 성분의 변화 -아미노산성질소, 아미노산 및 색도를 중심으로 (Changes of Components Affecting Organoleptic Quality during the Ripening of Korean Traditional Soy Sauce -Amino Nitrogen, Amino Acids, and Color)

  • This study was performed to investigate the changes of amino nitrogen, total amino acids, free amino acids, and color of Korean traditional soy sauce (kan-jang) during the ripening and storage for 12 months and the characteristics of the changes. All of the preparation methods for soy sauce followed the recommendations of the Korea Food Research Institute. The components of soy sauce were analyzed at 0,6, and 12 months. The contents of amino nitrogen of soy sauce were significantly higher than that of soybeans or meju (soybean cakes) at the initial stage of storage (p<0.05), and decreased during the storage. The content of total amino acids of soybean sauce was significantly lower than that of soybeans, and the content of free amino acids was higher than that of soybeans (p<0.05). The contents of total and free amino acids decreased in soy sauce after 12 months of storage (p<0.05). The composition of total and free amino acids and their ratios of soy sauce were changed during the storage. The ratios of free to total amino acids of soybeans, meju, and soy sauce were 0.8%, 17.3%, and 53.1-59.8%, respectively. Glutamic acid, which represents the savory taste, was detected the most abundantly in soy sauce during the storage. The ratios of free to total amino acids of glutamic acid were 42.9-59.5% in soy sauce. Lightness of Hunter color of soy sauce decreased over time (p<0.05). This study indicates that the ratios of free to total amino acids of soy sauce were much higher than those of soybeans, although its contents of total amino acids were much lower than those of soybeans. This study also indicates that this comes from the preparation and fermentation of meju. It was suspected that the organoleptic characteristics of soy sauce derived from the amino nitrogen, amino acids, and color might be inferior over 1 year of storage time. However, more detailed research should be conducted to interpretate this characteristics more accurately.

돼지감자 분말을 첨가한 스펀지케이크의 품질 특성 (Quality Characteristics of Sponge Cake Added with Helianthus tuberosus Powder)

  • This study was conducted to evaluate the quality characteristics of sponge cake consisting of 10%, 20%, 30%, 40% and 50% Helianthus tuberosus powder (HTP). With higher HTP contents in sponge cake, pH of sponge cake batter decreased significantly, whereas specific gravity was increased significantly (p<0.05). Meanwhile volume and symmetry indices of sponge cake were inversely proportional to HTP amounts. With higher HTP content in sponge cake, L value (brightness) of crumb significantly decreased (p<0.05), whereas a value (redness) significantly increased (p<0.05). b value (yellowness) of crumb in 40% and 50% HTP sponge cakes were significantly different from b value of crumb in 10%, 20% and 30% HTP sponge cakes. In 10~40% HTP sponge cake, L value, a value and b value all decreased significantly with higher HTP content in sponge cake. However in 40% and 50% HTP sponge cakes, there was no significant difference in any value. For texture characteristics, hardness of sponge cake significantly increased while cohesiveness decreased (p<0.05) with higher HTP content in sponge cake. On the other hand, springiness and gumminess of sponge cake did not change. Sponge cake containing 10% HTP showed the highest values for every organoleptic property. The results of this study suggest that sponge cake containing 10% HTP is the most appropriate for quality characteristics. This study also provides a way to increase the quality, texture characteristics, and organoleptic properties of sponge cake while reducing HTP content to less than 10% in order to qualify consumer taste.

콩나물 재배방법에 따른 생장 특성 비교 (Comparison of Growth Characteristics of Soybean Sprouts Cultivated by Three Methods)

  • 1994년도산 백태 준자리콩을 이용하여 고온 다습한 조건에서 거꾸로 뒤집은 상태(방법 1)및 정상적인 방법 (방법 2)으로 5일간 재배한 콩나물과 일반적 인 방법(방법 3)으로 9일 재배한 콩나물과의 외형적인 특징, 수율, 부패율 등을 비교하였고, 관능경가를 통하여 품질을 비교 평가하였다. 고온($23{\sim}29^{\circ}C$) 다습(RH 85-96%)한 상태에서 주기적(8회/1일)으로 정온($17^{\circ}C$)의 지하수를 살수하민서 5일 등안 거꾸로 재배한 콩나물이 정상적 방법(방법 2)으로 재배한 콩나물에 비해 개체의 무게는 떨어지나 수율, 부패율 및 수분함량에서는 유의적인 차이를 보이지 않았다. 방법 1로 재배한 콩나물의 수율($699{\pm}8.14%$)이 방법 3($771{\pm}11.8$)에 비하여 떨어지고 있으나 부패율($0.83{\pm}0.070$)에서는 차이가 없었다. 고온 다습한 상태에서 거꾸로 속성 재배한 콩나물의 품질은 색택, 향 및 종합적인 맛에서 일반적인 방법으로 장기간 재배한 콩나물(방법 3)보다 유의적으로 우수하여 생장촉진제나 살균제를 처리하지 않고서도 우수한 청정 콩나물을 재배할 수 있었다.

올방개(Eleocharis tuberosa Roem. et Shult) 가공을 위한 몇가지 성분 분석 (Some Components Analysis for Chinese Water Chestnut Processing)

  • 본 연구에서는 새로운 작물인 올방개를 이용한 가공식품 개발시 필요하고 참고가 될만한 몇가지 식품학적인 기초 성분들을 분석한 자료를 신속하게 제공하고자 하였다. 일반성분은 수분함량 79.40%, 조단백 1.74%, 조지방 0.06%, 조회분 1.10% 조섬유 0.60%, 탄수화물 17.71% 이었다. 유리당 조성은 sucrose가 8.58%, glucose가 1.64%, fructose가 1.58%로서 3가지 주요당이 올방개 착즙액의 고형분량중 약 66.0%를 차지하였으며, maltose도 미량 검출되었다. 칼륨의 함량이 408.57 mg%로 높게 나타났으며, 철분 및 망간은 각각 0.21 mg%, 0.08 mg%로 매우 적게 함유되어 있었다. 비타민 $B_1$$31.2\;{\mu}g/100\;g$ 정도 함유되어 있었고, 비타민 C는 미량이 검출되었다. 관능적인 특성은 향긋한 과일향과 단맛이 주된 풍미였으며, $100^{\circ}C$에서 20분 정도 끓여도 생시료와 거의 비슷한 정도의 아삭아삭함을 유지하였다.

Ethanol 및 Polylysine 첨가가 김치의 저장성에 미치는 효과 (Effect of Ethanol and Polylysine Addition on Storage Stability of Kimchi)

  • 김치 제조시 위생적 품질 개선을 위하여 ethanol과 천연항균물질인 polylysine의 복합 첨가를 검토하였다. Ethanol 농도를 0.3, 0.6 및 0.9%로 첨가하여 김치를 제조한 후 1$0^{\circ}C$에 저장하면서 3일 간격으로 총균수, 대장균군, 젖산균, 곰팡이 및 효모 등을 비교 측정한 결과, ethanol의 첨가는 대장균군과 젖산균의 생육 억제에 있어 보다 효과적인 것으로 나타났으며, ethanol 농도 0.6% 첨가시부터 미생물 생육 억제 효과가 뚜렷하게 나타났다. 또한 ethanol 0.6%를 첨가하여 담근 김치는 저장중 pH 저하 및 산도 상승에 대한 지연효과를 보여주었고, 저장중 관능특성의 변화에서도 신냄새, 이취, 신맛, 이미, 조직감 및 종합적 기호도의 모든 항목에서 가장 우수한 것으로 평가되었다. Polylysine은 단일 사용시보다는 0.6% ethanol과 복합 첨가했을 경우 미생물 생육 억제에 상승효과를 보였으나 관능평가에서 이미 및 이취를 느끼는 것으로 평가되어 0.6% ethanol 단일 첨가가 미생물 증식 억제 및 발효 지연에 가장 효과적인 것으로 나타났다.
