An experiment was performed to evaluate different methods for preserving shrimp by-products and to determine their chemical composition. In the first experiment three ratios of shrimp by-product (SBP) to molasses (6:1, 4:1 and 3:1, wet weight), and to cassava root meal (3:1, 2:1 and 1:1, wet weight of shrimp by-product and air-dry weight of cassava root meal) were investigated. The pH of the SBP ensiled with molasses at a ratio of 3:1, and with cassava root meal at a ratio of 1:1, decreased during the first week to below 4.5 and remained low up to day 56 of ensiling, whereas the pH of the mixtures with higher ratios of SBP remained above 7.0, and the material deteriorated rapidly. The dry matter decreased initially in all treatments but then increased slightly from day 28 in the treatment where shrimp by-product was ensiled with cassava root meal at a ratio of 1:1. The crude protein (CP) and ammonia-N $(NH_3-N)$ contents of the preserved shrimp by-product material ensiled with molasses at a ratio of 3:1 increased significantly one week after ensiling. The CP content then remained constant, while the $NH_3-N$ concentration continued to increase up to 56 days after ensiling. When SBP was ensiled with cassava root meal at a ratio of 1:1 the CP content of the silage increased significantly up to 21 days after ensiling and then decreased back to the original level after 56 days, whereas $NH_3-N$ increased markedly up to 14 days and then remained fairly constant up to 56 days. However, the $NH_3-N$ content was significantly higher when SBP was ensiled with cassava root meal than with molasses. A balance experiment was carried out, arranged as a double Latin-square and including 6 F1 (Large White ${\times}$ Mong Cai) castrates fed randomly one of three diets based on cassava root meal, rice bran, and fish meal (FM) or shrimp by-product ensiled with molasses (SBEMO) or with cassava root meal (SBECA) as the main protein source. Apparent organic matter and CP digestibilities were significantly (p<0.001) higher for the fish meal diet than for the two shrimp by-product diets, although CP digestibility in SBEMO and SBECA was similar (p>0.05). N-retention was significantly higher for the fish meal diet than for the SBEMO diet, which in turn was significantly higher than for the SBECA diet (p<0.01). It can be concluded that shrimp by-product can be preserved by ensiling with molasses at a ratio of 3:1 or with cassava root meal at a ratio of 1:1. Nutrient digestibility and N-retention of diets based on these shrimp by-product silages were lower than for similar diets based on fish meal, probably due to their high chitin content and inferior amino acid balance.
Although the Dongjin Au-Ag-Cu mine had been abandoned since about forty years ago, the results of this study on the dispersion patterns and contamination level of heavy metals in the hydrologic system flowing via the waste rump show that the environmental impacts from the mine wastes are still significant. The stream water in the vicinity of the waste rump is severely acidified (pH 3.8 to 4.4) and highly enriched in various dissolved heavy metals. The heavy metal contents of the stream water and stream sediments are systematically attenuated with increasing distance from the mine area. However, it is worth to note that continuous attenuation of heavy metal contents in both media were reenriched in downstream area more than 800 m apart from the mine because it can be acted as a secondary source of heavy metal pollution. The heavy metals, especially Cd, Cu and Zn of polluted downstream sediments mainly occur in Fe-Mn oxides and organic materials, which indicates that these elements are the main pollutants from the waste rump of the Dongjin mine. The heavy metal contents of crops, such as sesame, perilla, red Pepper and brown rice, collected from the polluted farm land in the downstream area are lower than those of land plants from stream sides, but significantly higher in Cd, Cr, Cu and Zn than those from the unpolluted farm land. Especially, almost all of the crops in polluted farm land have been severly contaminated by Cd (>0.4 ppm). On the other hand, the heavy metal contents of the crops collected from refreshed farm land by means of a soil addition method shows significantly lowered level comparing with those of polluted area, which indicates that a soil addition method was effective for the refreshment of polluted farm land by toxic metallic pollutants. Wormwoods from this area showed very high contents in a11 the heavy metals even in unpolluted area (Cd > 1 ppm, Cr > 1 ppm, Cu > 11 ppm, Pb> 4 ppm, Zn > 55 ppm), indicating that a special caution must be payed when one takes ingest them.
Weed is one of the problems in the crop land as well as in uncultivated land, raising the farm management costs. Therefore, the weed control is essential for effective agricultural management. The cost for weed control in Korea occupies on the average 27.6% of the total labor cost required. Agricultural policies since 1960 were transferring from yield increase due to land productivities to increase of income due to labor productivities. Therefore, the weed control by hand is also changed to weed control by chemicals. The weed control by chemicals has also brought about some side-effects and needs better, improved weed control methods. The present weed control situation and related problems were studied to present new approaches for agricultural development in the future. There were 458 species of weeds in 82 families which were growing in the crop land. The weeds to control, however, are 12 in paddy field and 9 in upland. So far weeds in paddy field are well under control, while weeds in upland are poorly controlled due to change in chemical efficiency and chemical damage in the upland. The administration, research and extension work for the efficient use of agricultural chemicals have been done by various institutions, such as Office of Rural Development, Office of Forestry, and chemical companies. The courses for agricultural chemicals were offered in the agricultural colleges. However, the efficiency of chemicals could not be maximized due to the poor relationships among related institutes. The newly established Agricultural Chemical Research Center at the Office of Rural Development and the Korean Weed Science Association are expected to contribute toward improving weed control in Korea. The Korean agriculture in the future will eventually be mechanized and the varieties resistant to high nitrogen application and to high plant density will be required for high yields. The rice will be transplanted earlier and the whole growing period will be extended. The application of organic matter will be increased for increasing soil fertility, and the use of agricultural chemicals will be continued. Under such a condition, the studies on the weed occurrence and its integrated control measures will be needed. Also weed controls in the newly exclaimed land, crop varieties, horticultural varieties, forage crops, and forests are also needed to study. Basic and practical researches for the weed control to improve the labor productivity will be also needed. In order to meet the all requirements for efficient weed control, weed control systems including all the academics, research and extension workers, administratives, farmers and companies should be established. Also securing researchers and education of personnels are pre-required and research funds for the chemical studies should be provided efficiently and timely.
Six study sites in Gumi, Goryeong in Gyeongbuk province and Naju in Jeonnam province were selected to investigate soil properties of poorly drained horizons in paddy soils. The horizons were re-established layers which were parent material layers originated from fluvial deposits. Topsoil layers were differentiated from piled parent materials while soil structure of the topsoil layer was massive with striated microstructure. Compaction at soil re-establishment and a lack of structure and aggregate development in these soils may cause the limitation of vertical water movement and result in poorly drained horizons. Soil samples were taken from paddy fields with top soils of sandy loam, silt loam and silty clay loam and re-established soils of coarse and fine texture. The samples were taken from each horizon for the analyses of soil chemical and mineral properties. Soils with re-established soils of coarse texture had greater amounts of sands from top soil texture distributions, while soils with fine texture had greater amounts of silts. Chemical properties of top soils were analyzed from rice cultivated soils at the time of re-establishments and one year after the re-establishments. The coarse texture of the re-established horizons decreased in EC values from 0.23 to $0.11(dS\;m^{-1})$, available phosphate values from 112 to $54(mg\;kg^{-1})$, and exchangeable Ca values from 6.6 to $4.9(cmol_c\;kg^{-1})$. On the other hand, soils with fine texture showed decrease only in pH and exchangeable Ca values. Especially, organic matter and available phosphate contents showed heterogeneous distributions from each horizon. This result may be caused by mixture of plough layer and subsurface layer during and consolidation. Hydraulic conductivity values were low at the boundaries of top soil and parent material layers except SL/coarse soil. Soil microstructure was massive structure without soil clods or pores and showed striated structure. Therefore, re-established paddy fields with fluvial deposits as parent material layers showed limited vertical movements of soil water because of occurrence of compacted layers and less-development of soil clods and aggregates.
This study was carried out to obtain the basic data for artificial culture of Grifola umbellata. The optimal condition for the mycelial growth was obtained at $20^{\circ}C$ and pH 4, respectively. G. umbellata showed the most favorable growth on the Hoppkins media. Carbon sources such as glucose, fluctose and manitol were favorable for stimulating a mycelial growth of G. umbellata. Valine, one of nitrogen sources also appeared to be favorable to a mycelial growth. The optimum C/N ratio was about 30:1 in case that 1% glucose as carbon source was mixed with the basal media. Lactic acid as organic acid was most favorable to the mycelial growth. Also, thiamine-Hcl as vitamin source was favorable. The mineral nutrient of $FeSO_4$ or $MgSO_4$ was most favorable to G. umbellata, and its optimal concentration was about 0.01% in $FeSO_4$ and 0.1 % in $MgSO_4$ respectively. Among 4 different cereal extract media, polished rice extract medium which was mixed with silkworm pupae was most suitable for a favorable growth of G. umbellata.
An animal experiment was performed to investigate the effects of dietary cadmium on growth rates and cadmium accumulations in internal organic tissues and blood by feeding mice with dietary $cdcl_2$ additives and/or brown rice with high cadmium content as during a 12-week feeding period. The results were as follows : Mice weights decreased with increasing levels of dietary cadmium at the end of a 9-week feeding period. The weights of mice organs in the cadmium-free feeding group were higher than in the cadmium-added groups, and the weights of mice organs did not show any significant differences among feeding groups with different levels of dietary cadmium. The concentrations of cadmium in kidney and liver were much higher than in other internal organs and blood, and the next higher concentration was in the heart. The cadmium accumulation in all internal organs and blood increased with increasing dietary cadmium levels, respectively. The ratios of cadmium accumulation in organ tissues and total blood of cadmium-added groups increased with decreasing dietary cadmium levels.
This study was performed to provide information for improving the quality characteristics of tangerine peel Soksungjang. Tangerine peel Soksungjangs were prepared with 10% tangerine peel powder by addition of different koji such as Rhizopus oligosporus (RS, RTS) and Aspergillus oryzae (AS, ATS). As a result, the moisture content was not changed and crude protein content decreased during fermentation in all samples. The pH of RS (Soksungjang manufactured with Rhizopus oligosporus koji) and RTS (Soksungjang manufactured with Rhizopus oligosporus koji and 10% tangerine peel powder) was not changed, whereas pH of AS (Soksungjang manufactured with Aspergillus oryzae) and ATS (Soksungjang manufactured with Aspergillus oryzae koji and 10% tangerine peel powder) decreased rapidly after 10 days of fermentation. The acidity values of all the samples increased during fermentation. The major free sugars were glucose, fructose, and maltose; while, the major organic acids were citric acid, succinic acid, acetic acid, and lactic acid in all the samples. The amino nitrogen content and protease activity were highest in the AS and ATS. Conversely, the reducing sugar content and ${\alpha}$-amylase activity were highest in the RS and RTS. The major free amino acids in all samples were glutamic acid, lysine, leucine, and arginine. Sixty kinds of volatile flavor compounds were identified from all samples; the majority of which were 21 alcohols, 14 hydrocarbons, 5 esters, and others identifies as acids, ketones, and aldehydes.
Certain Fungi Including Aspergillus flavus produce low molecular secondary metabolite that is toxic to human and animals, which have been termed mycotoxin. Given the proper humidity and temperature like summer in Korea, are capable of growing of those hazard fungi and elaborating mycotoxin on almost any organic substrate such as traditional foodstuffs and their raw materials including rice, barley, corn, meju, doenjang and gochujang etc. Until now, some people have examined to isolate various fungi such as Aspergillus sp., Penicillium sp. and Fusarium sp. from traditional foodstuffs and raw materials, and have screened various mycotoxin producing strains. Some mycotoxin contamination such as aflatoxin, ochratoxin, deoxynivalenol (DON) and zearalenone etc. also have been confirmed from similar above samples. But these data are different each other and inconsistent in experimental conditions and methods. Especially, almost experiments have been finished for one time. So more consistent experimental method and data are necessary to evaluate objectiely the safety of traditional foodstuffs subjected to the mycotoxin. For this purpose, we have to apply a new advanced technology to develop more simple and rapid methods for determination of mycotoxin and also have to concentrate our efforts on activation of research and accumulation of technology nth sustaining investment of financial support and enlargement of research installation. With those harmonious efforts, it should be possible to examine continuously nd systematically the mycotoxin contamination in our traditional foodstuffs and to assure the safety of them. Then we can maintain and develop the better traditional foodstuffs suited to internationalization.
The quality characteristics of Hwanggeumju (a type of traditional Korean rice wine), which has been described in an ancient document (Sangayorok), were investigated. During its fermentation, its pH gradually decreased from 4.23 to 3.96); and after four days of fermentation, its sugar content significantly decreased. After seven days, its alcohol content rapidly increased to 15.8 percent. Its major organic acid is lactic acid, but malic, succinic, citric and acetic acid were also detected in it. The free amino acid analysis showed relatively high alanine, arginine, asparagine, glutamic acid and leucine contents. The sensory evaluation resulted in high scores for color, turbidity and taste.

This experiment was conducted to develop and design a product that is convenient and helpful to both patients and ordinary people who want to maintain their health. In this experimentation, the experimental rat have been given with high fat food to induce Diabetes. Organic brown rice was given as their main energy source and natural complex food, most of materials were freeze-dried, was given to observe its effects on their glucose amount in the plasma. The results are as follows. During 28 days of basal diets, as observing their weight variations, normal group gained weights, but the natural complex food(NCF) groups lost their weights. As comparing the amount of neutral fat levels in the plasma between the diabetes group who just had basal group and one who had NCF, group with NCF groups' level was much lower than the other group who just had basal food. As comparing total cholesterol levels in the plasma, with diabetes group with basal food, $50\%$ and $100\%$ NCF groups' levels were lowered than that group. Regarding HDL-cholesterol level, all NCE groups had around 30mg/dl and there were not much fluctuation among groups. As for LDL-cholesterol level, the $100\%$ NCF group had the lowest level and showed almost the same as the normal group. The amounts of the glucose in the plasma were lowered in all NCF groups. Among those NCE groups, $100\%$ NCF group had 120mg/dl to reach almost the same as the normal group.
