Vinegar Production from subtropical Fruits (난지과실을 이용한 식초제조)

  • Optimum processing conditions for vinegar fermentation using fig, pear and persimmon were determined. Alcohol contents in the fermentatio broth of crushed fruits of fig, pear and persimmon were 7.5%, 5.1% and 6.8%, respectively. Alcohol contents increased up to 14.3~15.1% by adding 24% of sugar to the fruit juices. The total acidity of 7.04%, 3.30% and 3.66% were obtained for fig, pear and persimmon, respectively, through acetic acid fermentation of fruit juices containing 8% ethanol. Acetic acid yield increased by shaking during fermentation for pear and persimmon broth. Acetic acid yield increased 1.80~1.92 times by adding 0.5% of yeast extract to the fermentation broth of pear and persimmon. After fermentation, each fruit vinegar was clarified up to 93.1~97.4 of light transmittance by using 0.6% of kaki shibu for 4 days at 1$0^{\circ}C$. After aging for 60 days at 1$0^{\circ}C$, the acidity of fruit vinegar decreased slightly. Tannin content of persimmon vineger was remarkably higher than the other, while light absorbance of pear vinegar was higher than the other vinegars. Acetic acid was identified as the main volatile organic acid in the fruit vinegars, while propionic, isobutyric and isovaleric acids were identified as the minors. The content of non-volatile organic acids in the pear vinegar was higher than that in the persimmon vinegar. Sensory evaluation results indicate that the fig vinegar was preferred to the pear vinegar in the aspects of color, flavor and overall acceptability, but the fig vinegar had a strong background taste. Sensory scores of the persimmon vinegar increased significantly by pasteurization, but those of the fig and pear vinegars did not by pasteurization.

  • The effects of organic calcium compounds (ACa) tree-spray for late growing stage on the mineral nutrition concentration of fruit, russet and quality in 'Fuji' apple were investigated. Optimum spray concentration of leaves by ACa tree-spray during late growth stage were ranged 125 times among 1,000 times. Also, Optimum concentration of fruits was effected to 125 times. Optimum spray times of leaves effected by ACa 500 times tree-spray during late growth stage were effective in one times (Sept. 25) and three times (Sept. 25, Oct. 5, 15). Also, Optimum times concentration of fruit skin was effected to one times (Sept. 25) and fruit flesh was effected two times (Sept. 25, Oct. 5) and three times (Sept. 25, Oct. 5, 15). Phytotoxicity by tree-spray of ACa concentration and times different not occur to leaf and fruit.

Characteristics of Mulberry Fruit and Wine with Varieties (품종에 따른 오디와 오디발효주의 특성)

  • Various varieties of mulberry fruit and wines were investigated to determine their chemical properties and fermentation characteristics. Mulberry wines were manufactured with 'Cheongnosang', 'Cheonhyunosang', 'Deokcheonsang', 'Hwachosipmunja', 'Hwanyoupdaeyoup', 'Jasan', 'Mansaengbaeckpinosang', 'Palcheongsipyung', 'Sabangso' and 'Susungppong'. The factors for wine fermentation and quality such as soluble solids, polyphenol and organic acids were analyzed. The contents of soluble solid, reducing sugar and polyphenol, which were affected significantly by each other, were higher for 'Hwanyoupdaeyoup', 'Jasan' and 'Palcheongsipyung' mulberry than other varieties. Organic acids such as citric, malic, succinic and acetic acid were detected in the mulberry fruits. 'Palcheongsipyung' mulberry fruit had a higher content of souble solids $(14.6^{\circ}Brix)$ and polyphenol compounds (2.15 mg/ml). After fermentation, 'Palcheongsipyung' mulberry wine showed the lowest acetic acid in 3.23 mg/ml and the highest citric acid in 12.3 mg/ml. From these results, 'Palcheongsipyung' mulberry fruit was the most suitable for the fermentation of mulberry wine.

Stability of Anthocyanin Pigment Extracted from Mulberry Fruit (오디 색소의 안정성)

  • Effects of pH, sugars, organic acids, and metal ions on the stability of anthocyanin pigments extracted from mulberry (Morus alba L) fruit were studied. The pH had marked influences on the color of the anthocyanine pigment: i.e. the lower pH of the anthocyanin solution was, the more stable and intense of the pigment was. Among the sugars, sucrose was the most deleterious followed by fructose, glucose and maltose. Among the organic acids, maleic acid was found to be the most effective in stabilizing the pigment followed by acetic acid, citric acid and tartaric acid. Most metal ions except C $u^{+2}$ and F $e^{+3}$ were found to be effective in stabilizing the pigment.

  • This experimental was undertaken for the purpose to investigate the different chemical composition in developing fruit of Poncirus trifoiata. In the first place, the differences among the content of tannin and qualitative analysis of free sugars and organic acids in the fruit of Poncirus trifoiata fron Kwang-ju are to be investigated and chemical components are analyzed. 1) The differences of the content of tannin are investigated at the four periods of time and gradual decrease in the sample 2 (July 15) take place. 2) In sample 1 (June 20), xylose, mannose and rhamnose are not identified and later, as the fruit age, otehr three sorts of sugars with the former are founded and there is a conspicuous tendency to increase in the content and especially the increase in glucose and rhamnose seems to be related with the decomposition of tannin, while the decrease in the former from sample 2 to sample 4 with the formation of the latter. 3) Tartaric acid, succinic acid and citric acid are appeared and then in sample 1 (June 20( these are not founded and later all of them are identified and gradual increase in the content take place and especially citric acid and succinic acid seems to be increased in the content. These are related with the synthesis of organic materials in plant body.

  • The characcteristics of anthocyanin pigments from crab apple (Malus prunifolia Wild. Borkh. "red fruit") by ethanol extract were investigated at various condition of light temperature sugar, organic acid me-tal ion and pH. The pigments were stable(over the 60%) on the light irradiation throughout 20 days sto-rage period at room temperature and in the pesenc of Al-foil red blue green and yellow cover were rage period at room temperature and in the pesence of Al-foil red blue green and yellow cover were very stable. The pigments also showed high thermal stbility(over the 67% at 115$^{\circ}C$ 10min) at pH2.5 respectively. The pigments with added organic acid greatly increased thickness of red color. The pig-ments with added metal ions at pH 2.5 such as Na+ K+, Mg2+ Ca2+ and Mn2+ were stable throughout 20 days storage period at $25^{\circ}C$. But Cu2+ addition showed the rapidly degradation of the pigments and Al3+ addition induced the color conversion from red to redish violet. The thickness of the red color of anthocyanin pigments increased increased as the pH decreased. These results indicated that crab apple antho-cyanin pigments might be potental source of natural food colorant. colorant.

Policy measures and necessities for small scale organic farming in the EU

  • Most of European countries have certain support measures of small holder organic producers in their policy system but they need to be more positive with this issue. Recent EU regulations and any other governmental organic farming measures are hardly emphasising on small holders' issues except a few measures. In order to secure small producer organic farming, the extensive efforts are needed. Developing new logos and differential support system for small producer organic at every aspects from production, marketing and public procurement level will become more positive actions to take, for example.

Effects of Freezing Pretreatment on Juice Expression and Drying Characteristics of Prunus mume Fruit (동결 전처리가 매실의 착즙과 건조 특성에 미치는 영향)

  • The effects of pretreatment by freezing on juice expression and drying characteristics of Prunus mume fruit were investigated. Fresh fruit slices were frozen at $-20^{\circ}C$, thawed, and then either pressed (to yield juice) or dried. Fresh fruit slices were used as controls. Both juice yield and drying rate were higher when pre-frozen fruit was tested, compared to fresh fruit. The L and b color values were lower in the juice and dried powder of pre-frozen compared to fresh fruit. The a color value was higher in juice and powder prepared from pre-frozen fruit compared to fresh fruit. There was no significant difference in free sugar or organic acid content between juices and powders from pre-frozen and fresh fruit. None of soluble solid content, titratable acidity, or juice pH was affected by freezing pretreatment. The results suggest that such pretreatment may be useful to increase juice yield and drying rate. However, browning of juice and powder may be elevated.

  • Nutritional characteristics of mycelial growth and fruit-body formation of Flammulina velutipes in synthetic media were investigated. The results are summarized as follows: 1. Among sugar substances, mannitol gave rapid mycelial growth and formation of fruit-body with higher yield, and among organic acids only succinic acid showed the fruit-body but poorly. Ethyl alcohol and glycerol comparatively promoted the formation of the fruit-body with higher yield. 2. Among nitrogen sources, peptone resulted in rapid mycelial growth and fruit-body formation with higher yield. and among amino acids glycine gave fast fruit-body formation with higher yield. However. nitrite nitrogen, lysine and methionine showed no mycelial growth at all. 3. The concentration of substances tended to affect the fruit-body formation and yield. Lower concentration of mannitol and peptone prompted fruit-body formation but with low yields, and higher concentration delayed the fruit-body formation with increased yields.

  • This study probed into some characteristics of the urban household such as household income, number of the household, age distribution of the family members, their characteristics of shopping behavior such as the shopping place, types of the packaging and the characteristics of the time series, using consumer panel data of the Rural Development Administration (RDA). It further examined how the above factors affect fruit purchasing prices and then estimates the degree of the influence by each factor. The study looked at the purchase of apples, pears, tangerines, and oranges - the most favorite fruits in Korea. The results of this study can be utilized as the basic information for marketing strategies and/or for the establishment of future policy plans related to fruits consumption.
