과일즙 및 발효 포도즙의 페놀성 화합물 함량과 항산화 활성 (Phenolic Components and Antioxidant Capacity of Some Selected Fruit Juices and Fermented Grape Juices)

  • Some selected fruit juices and fermented red grape juices were investigated to determine the phenolic components by the Folin-Ciocalteu method and antioxidant capacity using α, α-diphenyl-β-picrylhydrazyl(DPPH) method. Commercial red grape beverages and red wines were also analyzed as control groups. In the juice, kiwi fruit had the highest phenolic components followed by orange(summer), red grape(Cambell Early:Yonng-Chun), mandarin orange(autumn), apple(Hong-Ok), cherry tomato, tomato and water melon. Whereas, on the antioxidant efficiency, tomato showed the highest free radical scavenging effect followed by orange(summer), cherry tomato, mandarin orange(autumn), apple(Aori) red grape(Cambell Early:Sung-Ju), kiwi fruit and water melon. The amount of pheonlic components of red wine was 2 times of that of fermented sugar added grape juice, however, the antioxidant efficiency of fermented sugar added grape juice was almost the same as that of red wine. It was found that no clear relationship could be shown between the content of phenolic component and antioxidant capacity of fruit juices and fermented red grape juices. The fruit juices from tomato, orange, cherry tomato, mandarin orange, red grape and fermented sugar added red grape juice showed high free radical scavenging effect and should be regarded as a valuable source of antioxidant.

밀감양조주 생산용 효모의 선별, 동정 및 Citric Acid 분해 (Screening and Identification of the Yeasts for Orange Wine and Their Citric Acid Decomposition)

  • 제주산 온주밀감(Citrus unshiu)을 이용한 양조주를 제조하는데 적합한 효모를 선별하고, 밀감양조주의 품질에 직접적으로 연관된 효모의 citric acid 분해능에 대해서 기초조사를 실시하였다. 밀감양조주용으로 활용가능하다고 판단된 균주는 모두 11주이었다. 제주지역의 토양을 중심으로 5개의 효모균주를 분리, 선별하였는데, 그중 4개 주는 Saccharomyces cerevisiae, 나머지 1개 주는 S. ellipsoideus로 동정되었다. 한편 분양 균주 18주 중에서 선별된 균주는 6개 주로, S. cerevisiae 계통의 3개 주와 S. coreanus, S. uvarum, S. sake 각각 1개 주었다. 이중에서 S. cerevisiae 2개 균주의 citric acid 분해능을 조사하였다. Citric acid는 효모의 유일한 탄소원으로는 이용될 수 없었으나, citric acid가 glucose와 함께 탄소원으로 사용되었을 때, 배양액 중의 citric acid 농도는 감소하였으며, 정치배양 보다 진탕배양하였을 때 더 많이 감소하였다. 효모에 의한 citric acid의 이용은 ethanol 농도를 증가시키지 못하였으며, 오히려 citric acid는 효모의 생육을 부분적으로 저해하였다.

Physicochemical characteristics and antioxidant potential of paprika (Capsicum annuum L.) wine

  • Paprika (Capsicum annuum L.) contains various phytochemicals, including carotenoids, ascorbic acid, tocopherol, flavonoids, and phenolic compounds, as well as natural food colorants. Very little information is available regarding wine produced from different colored paprikas. The objectives of this study were to prepare wines from red, orange, and yellow paprika and evaluate their physicochemical characteristics. The alcohol concentration, pH, titratable acidity, and reducing sugar content were not significantly affected by the type of paprika. Hunter's color values varied with the color of paprika. The total mineral content and 2,2-diphenyl-1-picrylhydrazyl radical scavenging potential of red paprika wine were significantly higher; however, the total polyphenol content of yellow paprika wine was significantly higher than that of the other wine samples. This study suggested that paprika could be used to prepare wine and red paprika might be appropriate for producing good-quality wine.

Volatile Compounds of Orange Wines Produced with and without Peel Contact

  • The present study focused on the effects of peel contact on the volatile compounds of orange wines. The volatile compounds were analyzed by sensory and instrumental analyses. Solid-phase microextraction (SPME) was used for extraction of volatile compounds. A total of 19 and 27 volatile compounds were identified in without and with peel contact wines respectively. Esters were quantitatively the dominant group of volatile compounds in without peel contact wines, while terpenes were the most abundant compounds in peel contact wines. Totally 11 and 14 new formed compounds were found in without and with peel contact wines, mainly were esters, alcohols, and acids. According to sensory analysis, the peel contact wine showed a more citrus-like and fruity aroma than the wines without peel contact.

제주도산(濟州道産) 감귤발효주(柑橘醱酵酒)의 양조특성(釀造特性) (Citrus Wine-making from Mandarin Orange Produced in Cheju Island)

  • 제주도산 온주밀감을 이용한 투명하고 방향성이 있는 과실주를 생산하기 위하여 원료의 화학분석과 처리방법, 우수균주의 선발, 발효중의 당의 변화, 발효주의 성분과 관능검사를 실시하였다. 원료 감귤의 껍질 부분은 25.6%였으며, 100 메쉬를 통과한 압착쥬스의 비율은 55.9%였다. 쥬스 중에는 총당 함량은 8.85%, 총산 함량은 1.43%, 휘발산 함량이 0.065%였다. 발효력시험, 과실주의 화학분석 및 관능검사를 통하여 Saccharomyces cerevisiae IAM 4274를 우수균주로 선정하였으며, 압착쥬스에 가당하여 $24^{\circ}\;Brix$로 조절한 다음 $20^{\circ}C$에서 발효를 시켰다. 일주일간의 주발효기간이 경과한 후 부유물이 서서히 침전하기 시작하였으며, 한달 후 투명한 과실주가 얻어졌다. 발효전에 효소를 처리한 경우는 발효액이 매우 투명하였고, 부유물의 침전이 빨리 일어나 과실주의 수율이 향상되었다. 발효주의 화학분석 결과 총가용성 고형물량은 $8^{\circ}\;Brix$였으며, 주정농도는 $13.3{\sim}14.4%$였고, 총산함량은 $0.78{\sim}1.11%$, 엑스분은 $2.25{\sim}3.29%$였다. 관능검사 결과 색, 향기 및 맛이 우수하여 상품성이 있는 것으로 판단되었다.

국산 시판 로제 와인의 품질 특성 (Quality Characteristics of Korean Domestic Commercial Rosé Wines)

  • To investigate the quality characteristics of domestic $ros{\acute{e}}$ wines marketed in Korea, 11 kinds of wines were purchased at the Korea Wine Festival in 2016. The color, physiological activity, aroma component and sensory evaluations were conducted. The hue value of $ros{\acute{e}}$ wines ranged from 0.592 to 1.990, with the Ro7 of Delaware having the highest value. The brightness of $ros{\acute{e}}$ wines ranged from 42.96 to 94.99, the redness from 3.20 to 59.37, and the yellowness from 8.43 to 24.83. Of the 11 $ros{\acute{e}}$ wines evaluated, 1 was a dry wine and 10 were sweet wines. The average sugar content of the sweet wines was 73.89 mg/mL. Among the organic acid contents, malic acid ranged from 0.214 to 2.903 mg/mL, and lactic acid content ranged from 0 to 3.423 mg/mL. Malolactic fermentation differed, depending on the source. The total polyphenol content of $ros{\acute{e}}$ wines ranged from 50.55 to 99.55 mg%, the anthocyanin content was 2.12 to 213.30 mg/L, and the DPPH radical scavenging activity of $ros{\acute{e}}$ wines was between 73.75 to 90.41%. A total of 41 volatile components were detected, including 7 alcohols, 22 esters, 4 terpenes, 3 acids and 5 other compounds. Of these, 9 compounds had odor activity value(OAV) greater than 1; these were identified as 1-propanol (alcohol, pungent), 3-methyl-1-butanol (harsh, nail polish), ethyl butanoate (strawberry, lactic), isopentyl acetate (fresh, banana), ethyl hexanoate (green apple, fruity), ethyl octanoate (pineapple, pear, floral), ethyl decanoate (fruity, fatty, pleasant), linalool (flower, lavender) and limonene (lemone, orange). As a result of the sensory evaluation, the Ro5 wine made from Campbell Early grape, and having a good color, flavor and taste, was the most preferred.

  • Koryo(918-1352) made a certain progress in her culture and agriculture except the latter part of the era when the development in social economy were retarded due to military dictatorship and Mongol invasion. Despite of these external conditions, cultivations and kinds of horticulture foods were expanded With the help Of many king's agriculture first policy and the advancement in cultivating method . Among the horticulture foods, fruits such as peach, plum, Japanese apricot, apricot, cherry, pear, persimmon, pomegranate, crab apple, Jujube, grape, Chinese quince, walnut, orange, yuzu, chestnut, ginkgo nut(silvernut), pine nut, nutmeg nut, and fiat were crowed, and vegetables such as Chinese cabbage, turnip, radish, garlic, welsh onion, gynmigit, scallion, taro, malva, cucumber, white gourd, bottle gourd, water melon, eggplant, Japanese ginger, ginger and litchi were cultivated, while semi, water shieled and bamboo sprouts were taken in natural. Fruits were taken in natural or through dry, and particularly grapes were used to make wine, Flowers of Japanese apricots, some fruit trees, and chrysanthemum were also made into wine. Certain fruits were used as medicine owing to its medicinal nature. Vegetables were used to make Kimchi or to boil soup, sometimes they were dried to be kept in storage to be used in rare season and also used as medicine Increase in kinds of horticulture foods does not have any direct relation with the reform of social economy, but the fact that so many kinds of horticulture foods were cultivated and used in Koryo era shows that they elevated people's life and dietary culture.

의학콘텐츠로서의 단방요법 활용화 방안 (The Practical Application of Folk Remedies to the Contents of Medicine)

  • Folk Remedies symbolize the medical art of the common people, and contain their special emotion and colloquial expressions. They are medical treatments in which the medical history and the tradition and the soul of a people are incorporated. They are handed down in various ways. This study introduces some of folk remedies. For example, powder of tigers' bones heals neuralgia. Rice wine brewing up with ginger is effective in a cold. Water boiling with safflower does good in neuralgia. Pasting herba houttuyniae takes effect in skin disease. To Decoct and drink old hardy orange is effective in urticaria. Water boiling with fructus corni alleviates a fever. Camellia oil or rhizoma cnidii or iris is used for the extermination of vermin and the antiseptic. In the end, the practical application of these remedies to the resources of industry and education will be discussed.

PMFs Analysis of Krachaidum Products by HPLC and GC

  • Polymethoxyflavones (PMFs) are a group of polymethoxylated bioactive flavones with diverse biological activities, including anticancer, anti-inflammatory, antibacterial, and antiviral activities. PMFs are found from various plants such as orange, tangerine, and krachaidum. To establish the simple quantitative analytical methods for PMFs, chromatographic analysis was applied to the selected krachaidum foods because krachaidum contains diverse PMFs compared to other PMF-containing foods. Krachaidum is the rhizome of Kaempferia parviflora, and many commercial krachaidum products, such as tea, juice and wine, are commercially available and consumed as health functional foods in Asian countries. Apart from the claimed health promoting benefits, reliable quality assurance and legal guideline for the registration of these products are not available yet. Twelve PMFs were analyzed from the commercial krachaidum foods by GC-FID and HPLC-DAD. No single chromatographic method could not analyze 12 PMFs simultaneously. HPLC-DAD method was found more sensitive to detect PMFs. Based on our analysis data, we proposed 5,7-dimethoxyflaone and 5,7,4'-trimethoxyflavone as index components for the food products.

  • This study defines attributes of the Korean costume culture, focussed on hair, shoes and accessories which express sex-roles, encapsulated in the term, “be like...”. A group of 362 male and female university students from Seoul and Gyeonggi area was surveyed for the study. The statistical analysis of SPSS 10.0 was applied for analyzing the data, and the significant variances were reviewed by the basic statistics and t-test. The results are as follows; First, short hair is perceived as the typical hair style that symbolizes male, both from male and female university students. Hair colors in warm color such as brown, wine, purple, lemon and orange, and the style of hair such as bobbed, long, and perm are perceived as definite clues that symbolized female. Second, when it concerns the types of shoes, both male and female university students cited oxford as the typical clue that symbolizes male, whereas pumps and sandal were cited for female. Third, in terms of types of accessories, both male and female university students perceived necklace, earring, bracelet, hair pin and band, scarf, and muffler as very feminine. Among these, hair pin and band, and scarf are evaluated as the typical clues that signify the role of females. Necktie is perceived as the typical clue that signify male role.
