Stability of the Oil-in-water Type Triacylglycerol Emulsions

  • Lipid emulsions with saturated triacylglycerols (TAGs) with 4 to 10 carbons in each acyl chain were prepared to study how the oil component alters the stability of the lipid emul-sions when phosphatidylcholines were used as emulsifiers. The average droplet size of the emul-sions became smaller as the chain length of the TAG increased. For a given oil emulsion with smaller droplets was formed with an emulsifier having higher HLB value. The influence of HLB values on the droplet size was biggest for the tributyrin (C4) emulsion. For the tricaprylin(C8) emulsions, droplet size was identical at given emulsifier concentrations regardless of HLB values. The HLB value and the concentration of the emulsifiers also affect the droplet size of the emul-sions. The emulsions with smaller average droplet size were more stable than with bigger size for 20 days. The oil and water (o/w) interfacial tension in inversely proportional to the initial droplet size of the emulsion.

Improving the Microbial Safety of Fresh-Cut Endive with a Combined Treatment of Cinnamon Leaf Oil Emulsion Containing Cationic Surfactants and Ultrasound

  • Endive is widely consumed in a fresh-cut form owing to its rich nutritional content. However, fresh-cut vegetables are susceptible to contamination by pathogenic bacteria. This study investigated the antibacterial activities of the combined treatment of cinnamon leaf oil emulsion containing cetylpyridinium chloride or benzalkonium chloride (CLC and CLB, respectively) as a cationic surfactant and ultrasound (US) against Listeria monocytogenes and Escherichia coli O157:H7 on endive. The combined treatment of CLC or CLB with US reduced the population of L. monocytogenes by 1.58 and 1.47 log colony forming units (CFU)/g, respectively, and that of E. coli O157:H7 by 1.60 and 1.46 log CFU/g, respectively, as compared with water washing treatment. The reduction levels of both pathogens were higher than those observed with 0.2 mg/ml sodium hypochlorite. In addition, the combined treatment showed no effect on the quality of the fresh-cut endive (FCE). In particular, the degree of browning in FCE was less for the treatment group than for the control and water washing treatment groups. Thus, cationic surfactant-based cinnamon leaf oil emulsions combined with US may be an effective washing treatment for the microbial safety of FCE.

  • The elementary experiment was performed to develop the emulsified fuel production system using pressure injection nozzle in this study.   • The Lubricational characteristics of O/W Emulsions of beef tallow and mineral oil based lubricants are studied in a roller on disk apparatus. It is revealed that the coefficients of friction with both emulsion lubricants exhibit essentially similar behavior; that is, they rapidly decrease to 0.1% concentration and after they constants with increasing oil concentration, and that, with oil in water emulsions of a concentrations as low as 5wt% practically forms a elastohydrodynamic film. One hand, surface temperature effect on lubricants has virtually no severe, and that, the minimum EHL film chickness estimated that it begins to increase at a concentration of several percent; the effect of particle diameter becomes maked there after.

  • 원자력 분야를 포함하는 다양한 산업에서 발생하고 있는 오일 함유 폐액의 처리에 있어서 전기여과막 공정의 적용성을 평가할 목적으로 폴리프로필렌 정밀여과막을 사용한 모의 오일 에멀젼 폐액의 막 여과 실험을 수행하였다. 이때 투과 플럭스에 대한 전기장의 효과 및 투과 플럭스에 영향을 주는 주요 인자들로써 막간 차압, 교차흐름 유속 및 오일 에멀젼 농도의 영향을 고찰하였다. 전기장을 가해주는 전기정밀여과 공정은 기존의 전기장을 사용하지 않는 막 여과 공정에 비해서 막 오염 문제를 현저히 개선함으로써 투과 플럭스가 크게 향상되었으며 장기간의 조업시에도 상당한 투과 플럭스의 유지가 가능함을 보였다.

  • Water-in-Oil (W/O) emulsions are widely used in cosmetics. However, O/W (Oil-in-Water) emulsions are generally superior to W/O emulsions in terms of stability. In this study, we investigated the changes of viscosity, the size of emulsion droplets, and rheological properties of emulsions prepared using distearyldimonium chloride (DDC), magnesium aluminum silicate (MAS) and quaternium-18 hectorite (QH). In addition to the changes of the composition, we tested the condition of homogenization including rotation per minute of the mixer and the mixing time. The viscosity of emulsions with DDC and AMS were not changed with time and the stability of emulsions was stable during the storage time. However, the fluidity of emulsions were low due to the forming gel network in the emulsions. The gelling power of the emulsions with QH was rather weaker than that of the emulsions with DDC and MAS. The viscosity of emulsions with QH was gradually reduced and the phase separation of emulsions with high concentration of oil was observed throughout the storage time, however, the stability of emulsions with DDC, MAS and QH was excellent, the fluidity of emulsions was enhanced, and the viscosity of emulsions was sustained for a long time after setting of emulsions.

폴리카보실란 에멀젼의 동결건조를 이용한 다공체 SiC 제조 (Preparation of Porous SiC by Freeze Drying of Polycarbosilane Emulsion)

  • Porous SiC beads were prepared by freeze-drying a polycarbosilane (PCS) emulsion. The water-in-oil (w/o) emulsion, which was composed of water, PCS dissolved p-xylene, and sodium xylenesulfonate (SXS) as an emulsifier, was frozen by dropping it onto a liquid $N_2$ bath; this process resulted in 1~2 mm sized beads. Beads were cured at $200^{\circ}C$ for 1 h in air and heat-treated at $800^{\circ}C$ and $1400^{\circ}C$ for 1 h in an Ar gas flow. Two types of pores, lamella-shaped and spherical pores, were observed. Lamellar-shaped pores were found to develop during the freezing of the xylene solvent. Water droplets in the w/o emulsion were changed into spherical pores under freeze-drying. At $1400^{\circ}C$ of heat-treatment, porous SiC was synthesized with a low level of impurities.

Phenol성 물질이 첨가된 Corn Oil-in-Water Emulsion의 산화에 미치는 Surfactant Micelle의 영향 (Effect of Surfactant Micelle on Lipid Oxidation in Corn Oil-in-Water Emulsion with Phenol Compounds)

  • 5% corn oil과 17 mM Brji 700으로 제조한 oil-in-water emulsion(O/W)에서 과량의 잉여 surfactant가 phenol이 첨가된 O/W의 산화에 미치는 영향을 알아보기 위하여 Brji 700을 $0{\sim}2%$의 농도로 O/W에 첨가한 경우, 첨가된 surfactant의 양이 증가할수록 droplet의 particle size는 커지는 경향을 나타내었다. 또한 continuous phase의 surfactant 농도도 높아지며 phenol 함량도 상대적으로 높아지는 것을 알 수 있었다. Phenol류가 100 ppm의 농도로 첨가된 O/W에 과량의 surfactant$(0{\sim}2%)$를 첨가하고 30일간 저장 기간별 hydroperoxide의 생성량을 측정한 결과, 대조구에 비해 낮은 hydroperoxide 함량을 보여 surfactant를 첨가하지 않은 실험구와 유사한 경향을 보였으나, hydroperoxide 함량은 surfactant를 추가하지 않은 실험구 보다 더 낮은 값을 나타내었다. 또한 phenol 종류 및 surfactant 농도별 hydroperoxide 생성억제 효과와 headspace aldehyde 생성 억제 효과는 BHT>procyanidin B3-3-O-gallate>(+)-gallocatechin>(+)-catechin 및 2%>1%>0% surfactant 첨가의 순서로 나타났다. 이러한 결과는 phenol성 물질과 과량의 surfactant micelle에 의해 emulsion으로부터 continuous phase로 hydroperoxide의 physical location 변화가 발생하는 것을 나타낸다.

  • Water-in-oil emulsion (W/O) and oil-in-water emulsion (O/W) types biodegradable polymer emulsions prepared to PLA and PBS. The optimal mixing ratio of polymer : solvent : OA : TEA : water was found be 10 : 40 : 4 : 6 : 30(g) when preparing emulsions. Biodegradability was most retained after preparation of polymer emulsions. Particle size of PLA and PBS emulsions were 2-3 ${\mu}m$ and 3-4 ${\mu}m$, respectively. Molecular weight of PLA and PBS emulsions were 108,000 and 92,000, respectively. And molecular weight of PLA and PBS emulsions became slightly lower than those of pellets.

  • 한외여과분리의 중요한 응용분야의 하나인 oil/water 에멀젼의 분리에 대하여 연구하였다. Oil/water 에멀젼의 한외여과분리 원리를 제안하고, 상용되고 있는 하나의 절삭유를 대상으로 분리가능성을 조사하였다. 사용된 한외여과분리 모듈은 상업적으로 이용되고 있는 IRIS 3042 분리막이 장착된 평판형이었다. 한외여과 실험에서 공급압력, 공급유량, 공급에멀젼의 oil농도등을 변화시키면서 투과액의 oil농도, 투과속도등을 측정하여 분리성능을 조사하였다.
