인천지역 유통 계란의 신선도 및 영양성분 함량 조사 (Investigation for freshness and nutritive components of the eggs sold in Incheon)

  • This study was performed to investigate the freshness and nutritive components of eggs from Incheon area. The eggs of 64 brands collected from 7 hypermarkets and 6 brands collected from farms were examined to test the Haugh unit (HU), egg yolk index and specific gravity. HU and specific gravity were higher in farm eggs than in hypermarket eggs (P<0.05), and there was no difference in the egg yolk index. Among hypermarket eggs, HU and egg yolk index were higher in the graded eggs than in non-graded eggs (P<0.05), and specific gravity was not different between them. HU and egg yolk index of the eggs collected in March were higher than those in August (P<0.05). To monitor the bacterial contamination, total coliforms, total bacterial counts (TBC) and Salmonella enteritidis were examined. Salmonella enteritidis and total coliforms were not detected from all eggs. TBC of farm eggs were less than $10^1$ CFU/mL in all samples and TBC of hypermarket eggs were less than $10^1$ CFU/mL in 187 samples, $10^1{\sim}10^2$ CFU/mL in 3 samples and $10^3{\sim}10^4$ CFU/mL in 2 samples, respectively. Antimicrobial residues were not detected from all eggs tested. The vitamin E contents in the vitamin E enriched eggs from 6 brands hypermarket were 1.98~22.96 mg/yolk100 g ($14.04{\pm}8.81$ mg/yolk100g), and those of 5 brands among them were higher than the average of ordinary eggs. In one brand egg, vitamin E content was lower than the average of ordinary eggs. The vitamin E contents of ordinary eggs were 1.75~16.36 mg/yolk100 g (average $5.57{\pm}2.76$ mg/yolk100 g) and there were no price differences between vitamin E enriched eggs and ordinary eggs. In the contents of vitamin E, docosahexaenoic acid (DHA) and cholesterol, there were no significant differences according to the price. These results suggests that egg production, distribution, and management system should be improved for supplying fresh eggs to consumers at reasonable prices.

초고압균질 가공에 의해 제조된 초미세 비지 현탁액의 영양성분 및 항산화성 (Antioxidant capacity and nutritive components from biji sub-micron suspension by ultra-high pressure homogenization process)

  • 본 연구는 산업 폐기물인 비지를 활용하여 부가 가치가 높은 가공식품을 개발하기 위한 일환으로 수행되었다. 즉 대두 가공 부산물인 비지를 활용하여 죽류, 음료류 및 유동식 등의 제품으로 개발하기 위해, 초고압균질 가공 기술을 활용하여 초미세 비지 현탁액을 제조하고 추출수율, 영양성분 및 항산화성을 확인하였다. 비지 분산액을 homogenizer를 이용하여 1,0000 rpm에서 5분 분쇄한 후 1,000bar, 1,500bar 및 2,000bar의 압력을 가해 고압균질 가공 처리하였다. 고압균질 가공처리한 모든 실험구가 대조군에 비하여 추출수율이 유의적으로 증가하였다(p<0.05). 초고압균질 처리 후 총당, 환원당 및 가용성 식이섬유의 함량은 유의적으로 증가하였으며, 불용성 식이섬유는 유의적으로 감소하였다(p<0.05). 단백질 함량과 유리아미노산 함량은 대조군보다 높은 경향을 나타내었다. 총 폴리페놀 함량은 처리 압력이 높아질수록 유의적으로 증가하였으며, ABTS 라디칼 소거능도 유의적으로 증대되었다(p<0.05). 초고압균질 가공 기술은 비지의 영양성분과 항산화성을 증가시키는 매우 효과적인 가공방법이며, 비지의 영양성분을 효율적으로 활용하여 가공식품을 제조할 수 있음을 확인하였다.

  • This research is to establish the basic data of the nutritive value and improve our diet. In the part of the leaf and stem of the wild and cultivated horned rampion (Phyteuma japonicum Mig), the components such as chemical compositon, vitamin C, free sugar, mineral, nucleotide and its related compounds, composition and free amino acid were analyzed one after another. Content of the crude lipids and proteins was determined much higher in its wildness than in its cultivated horned rampion; while, that of carbohydrates was higher in the former than in the latter. The content of vitamin C was retained higher in the leaf than in the stem horned rampion. And the content of calcium among the detected minerals was outstanding in all of the samples collected, and potassium and magnesium was the next ones in its order. The main components of free sugars in both the wild and cultivated horned rampion were glucose and fructose, and their content was higher in the stem than in the leaf. Nucleotide and its related compounds were identified with 5 kinds of nucieotides such as CMP, UMP, IMP, AMP and hypoxanthine (Hx), and the content of Hx and AMP was the highest I the wild and cultivated samples, respectively. In the composition amino acid of the wild horned rampion, glutamic acid, aspartic acid and phenylalanine was outstandingly abundant; while, such amino acid as methinone and proline was small and besides cysteine couldn't be detected in the stem. Total amounts of composition amino acid in the leaf was 2118.0 and 1120.1mg% in the wild and cultivated sample, respectively. In the free amino acid of horned rampion, the total amount ranged from 8.5 to 50.1mg.%, which were lower level than that of composition amino acid. But the number of free amino acid was 29 kinds, which was bigger in its number than that of composition amino acid detected 17 kinds.

미나리의 단백질의 및 아미노산 조성 (Protein and Amino Acid Composition of Water Cress Oenanthe stolonifera DC)

  • This study was attempted to compare the nutritive value of leaf with stem of the water cress Oenanthe stolonifera DC. in order to improve the eating habits and as a part of studying on the effective curing nutrients for the damaged liver. The contents of moisture crude proteinon the effective curing nutrients for the damaged liver. The contents of moisture crude protein crude fat and crude ash were 90.40% 2.85%, 0.42% and 0.74% in leaf while the contents of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09%, and 0.64% of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09% and 0.64% in stem respectively. The quantitative fractionation of proteini of both leaf and stem ranked albumin the highest content followed globulin prolamin and glutelin in order. It has been sh-own by SDS-polyacrylamide gel electrophoresis that water extractable protein of leaf 11 bands but those of stem were not detected. The scope of molecular weight for the main protein of water extractable protein of leaf was between 34.700 and 45,000. The amounts of extractive-nitrogen from leaf and stem of the water cress were 241.02mg% and 271.67mg% respec-tively. The amounts of free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid composition of both leaf and stem the major components were aspartic acid and glutamic acid. In total amino acid composition of water cress leaf aspartic and glutamic acid were the major components. Whereas alanine and thr-eonine were the major components in stem The assessment of water cress leaf and stem with chemical score. EAAl Rl showed that the values of stem were lower tendancy than those of leaf. Limiting amino acid of leaf was tryptophan while that of stem was lysine.

How to develop strategies to use insects as animal feed: digestibility, functionality, safety, and regulation

  • Various insects have emerged as novel feed resources due to their economical, eco-friendly, and nutritive characteristics. Fish, poultry, and pigs are livestock that can feed on insects. The digestibility of insect-containing meals were presented by the species, life stage, nutritional component, and processing methods. Several studies have shown a reduced apparent digestibility coefficient (ADC) when insects were supplied as a replacement for commercial meals related to chitin. Although the expression of chitinase mRNA was present in several livestock, indigestible components in insects, such as chitin or fiber, could be a reason for the reduced ADC. However, various components can positively affect livestock health. Although the bio-functional properties of these components have been verified in vitro, they show positive health-promoting effects owing to their functional expression when directly applied to animal diets. Changes in the intestinal microbiota of animals, enhancement of immunity, and enhancement of antibacterial activity were confirmed as positive effects that can be obtained through insect diets. However, there are some issues with the safety of insects as feed. To increase the utility of insects as feed, microbial hazards, chemical hazards, and allergens should be regulated. The European Union, North America, East Asia, Australia, and Nigeria have established regulations regarding insect feed, which could enhance the utility of insects as novel feed resources for the future.

한국산(韓國産) SAUSAGE에 관(關)한 연구(硏究) (시판(市販) SAUSAGE의 영양성분(營養成分)과 외국(外國) SAUSAGE와의 비교(比較)) (Studies of Sausages in Korea -Comparison of Nutritive Components of Korean Commercial Sausages and Foreign Sausages-)

  • 국민소득(國民所得)의 향상(向上)과 아울러 식생활(食生活)의 변천(變遷)으로 특(特)히 sausage와 같이 식생활(食生活)을 간편화(簡便化) 시킬 수 있는 외국식품(外國食品)의 모방품(模倣品)이 우리나라에도 공업적(工業的)으로 대량생산(大量生産)되고 있다. 본고(本稿)는 sausage에 관(關)한 법적규제(法的規制)와 실험결과(實驗結果)로서 한국(韓國) sausage의 품질(品質)을 알아 보고자 하였다. 1. 실험재료(實驗材料)로서는 시판(市販) sausage, Beef, Hamburger Frank, Hotdog 등(等)을 제조원(製造元)에 따라 각각(各各) 3종류(種類)씩 택(擇)하여 일반성분(一般性分), 첨가물(添加物), 무기질(無機質) 등(等)을 분석(分析)하였다. 2. 일반성분(一般性分) 분석결과(分析結果)에 의(依)하면 우리나라 sausage의 영양성분(營養成分)은 일반적(一般的)으로 손색이 없다고 보며 법적(法的)으로 위배(違背)됨이 없었다. 3. 외국(外國) sausage와 비교(比較)해 볼 때 Beef sausage의 단백질함량(蛋白質含量)이 $19{\sim}23%$로 높은 값을 보이며 수분함량(水分含量)은 Hotdog$(63{\sim}69%)$를 선두로 Beef와 Hamburger 등(等)이 60%이상(以上)으로 높은 값을 나타내고 있으나, Bruhwurst(찐 sausage)류(類)의 테두리에서 벗어나지는 않는다고 본다. 그러나 지방함량(脂肪含量)은 Frank(26.5%)를 제외(除外)하고는 $4{\sim}20%$로 매우 낮은 값을 보여주어 우리나라 sausage의 타박타박한 맛이 여기에 근거하지 않는가 생각된다. 4. 결체조직(結締組織)속의 Collagen 함량(含量)을 추구하는 Hydroxyproline 측정법(測定法)을 통(通)해 얻은 결과(結果)로서는 우리나라 sausage 단백질중(蛋白質中) Collagen함량비율(含量比率)이 $2.1{\sim}15%$로 외국(外國) sausage $20{\sim}35%$에 비(比)하여 매우 낮다. 이 실험(實驗)의 결과(結果)로서는 한국시판 sausage 재료속의 육함량(肉含量)이 매우 적음을 시사해 준다. 5. 육류이외(肉類以外)의 전분등(澱粉等) 이물질(異物質)사용을 억제(抑制) 하고 있는 독일(獨逸)의 Bruhwurst(cooked sausage) 및 fresh sausage 등(等)과 생식육(生食肉)의 일반성분(一般性分)을 대조(對照)하여 그 수분(水分)/단백질지수(蛋白質指數), 지방(脂肪)/단백질지수(蛋白質指數), 건물등(乾物等)에 의(依)한 평가법(評價法)을 적용(適用)했을 때, 우리나라 sausage는 아주 색다른 비율(比率)을 나타내고 있어 수육함량(獸肉含量)이 매우 적고 대부분(大部分)이 이물단백질(異物蛋白質), 전분(澱粉), 결착보조제(結着補助劑) 등(等)을 많이 첨가(添加)하여 제조(製造)된 것을 암시(暗示)해 준다. 6. 실험(實驗)한 sausage중(中) Frank sausage의 품질(品質)이 가장 양호(良好)한 편이나 아직 외국(外國) sausage의 품질(品質)을 따르지 못 하고 있음은 그 육함량(肉含量)의 차(差)에 기인한다고 본다.

Fibrolytic Rumen Bacteria: Their Ecology and Functions

  • Among rumen microbes, bacteria play important roles in the biological degradation of plant fiber due to their large biomass and high activity. To maximize the utilization of fiber components such as cellulose and hemicellulose by ruminant animals, the ecology and functions of rumen bacteria should be understood in detail. Recent genome sequencing analyses of representative fibrolytic bacterial species revealed that the number and variety of enzymes for plant fiber digestion clearly differ between Fibrobacter succinogenes and Ruminococcus flavefaciens. Therefore, the mechanism of plant fiber digestion is also thought to differ between these two species. Ecology of individual fibrolytic bacterial species has been investigated using pure cultures and electron microscopy. Recent advances in molecular biology techniques complement the disadvantages of conventional techniques and allow accurate evaluation of the ecology of specific bacteria in mixed culture, even in situ and in vivo. Molecular monitoring of fibrolytic bacterial species in the rumen indicated the predominance of F. succinogenes. Nutritive interactions between fibrolytic and non-fibrolytic bacteria are important in maintaining and promoting fibrolytic activity, mainly in terms of crossfeeding of metabolites. Recent 16S rDNA-based analyses suggest that presently recognized fibrolytic species such as F. succinogenes and two Ruminococcus species with fibrolytic activity may represent only a small proportion of the total fibrolytic population and that uncultured bacteria may be responsible for fiber digestion in the rumen. Therefore, characterization of these unidentified bacteria is important to fully understand the physiology and ecology of fiber digestion. To achieve this, a combination of conventional and modern techniques could be useful.

사상인의 운동요법 적용에 관한 연구 (A Study of Application of Exercise Treatments according to Sasangin)

  • Sasang Constitutional Medicine (SCM) is based on the theory of Sasang (Taeyang, Soyang, Taeum, Soeum) in Traditional Korean Medicine (TKM). It is hypothesized that all of the things in the material world can be divided into the four categories of SCM. We made a new attempt to combine nutritive components, and patterns in physical activities with SCM. At first, we hypothetically divided the nutrients into 4 compartments according to SCM theory, and human body composition as well. These factors could be basically related to Sasangin Exercise Treatment (SET). Therefore, we applied sasangin theory to exercise prescription. As a research method, we hypothesized that human beings' types can be distinguished by mind and body. Mind was focused on exercise psychological aspects, and body also handled by nutrients, body compositions, body shapes, and exercise physiological aspects. For application of sasang theory to the exercise prescriptions, Taeumin as a sample sasangin was selected in this study. We concluded that in perspective of general traits, Taeumin have to reduce their carbohydrate intake volume, but greatly increase their intake of vitamins, minerals, and water in daily diet. They are also recommended exercises that can increase cardiorespiratory function and make them sweat, like endurance running, hiking, swimming, cycling, etc.

조사료자원의 처리가공 기술개발에 관한 연구 - 산 또는 당류처리에 의한 화본과목초의 사료가치 증진시험 (Approach to Develop the New Treatment Methodologies of Grass Silage to Enhance the Feed Nutritive value by Ruminant)

  • The overall objective of this research was to evaluate the effects of spraying sulfuric acid solution, and adding corn meal or molasses to reed canarygrass silage on digestibility of dry matter (DM) and fibrous components in ruminant. DM content of molasses or corn meal treated silages were higher than control. Whereas, sulfuric acid treated silage showed lower DM content compared with untreated control. Acid detergent fiber content was similar among treatments, but neutral detergent fiber (NDF) and hemicellulose concentration were higher in treated silages than those of control. Organic acids content were also increased in treated silages. In contrast, silage pH were lower in treated silages. Treated silages increased both rate and extent of DM and NDF in situ digestibility compared to control at all incubation times. Especially, 7 % molasses and 0.4 % sulfuric acid treated silages increased DM and NDF digestibility significantly after 12 hours of incubation compared with control. In nitro DM and NDF digestibility showed similar trend to in situ incubation. Also treated silages(mo1asses or sulfuric acid treated) incubated in situ had higher particle-associated carboxymethylcellulase activity throughout the incubation except 72 hours.

Chemical Composition of Leaves, Stem bark and Fruit Essential Oil from Premna foetida Linn

  • Premna foetida is a woody plant with short and twisted trunk. P. foetida is a scandent, erect shrub or small tree, thorny on the trunk and large branches. Leaves are opposite or whorled and entire or serrate. Premna foetida is a wild plant locally known as "Daun Sebuas". P. foetida is used for it nutritive and as traditional treatment. The fruit and leaves of P. foetida are prepared for salad. The study aimed at the hydrodistillation and antioxidant activity of leaves, stem-bark and fruits essential oil from Premna foetida Linn, they were analysed by capillary GC and GC-MS. Ninety eight compounds representing 81.68±0.02, 37.31±0.05 and 93.45±0.03 of the isolates of leaves, stem-bark and fruits respectively were identified, the most abundant were α -Duprezianene (77.27±0.03, leaves, α-Gurjunene (36.06±0.05) fruits and Hinesol acetate (77.19±0.03) stem-bark. Components among which sesquiterpenoids dominated. The total volatiles were assayed for antioxidant potentials using 2, 2-diphenyl-1-picrylhydrazyl (DPPH). The total volatiles showed strong activity with IC50 of 11.74±0.82㎍/ml, 9.63±0.34 ㎍/ml and 49.73±1.12 ㎍/ml for leaves fruits and stem-bark respectively.
