영양학 연구의 생택학적 접근 (An Ecological Approach to Nutritional Research)

  • The article demonstrates a method of studying human health and nutrition by applying a multi-disciplinary approach and examines how humans developed and survived by adjusting to their environment. This process involves physiological, cultural and genetic adaptation both independently and interactively. This study postulates that a sound human health may be the result of balance between nutrition and environmental conditions. It is noted that there is a positive correlation between malaria and fava bean intake, and sickle cell anemia and cassava intake. It is also suggested that the difference in disease structure in soybean and non-soybean consumption cultures can be explained by an ecological approach to studying nutrition. This study further suggest that the relationship between nutrition and socio-cultural system. epidmiological study of nutrition and cultural environment nutrition and conceptual characteristics, nutrition and food intake pattern, nutrition and health sociological functions and the physioloical, cultural and genetic adaptation can all be stimulating research subjects to be studied form and ecological point of view. This article also includes the results from a series of ecological studies conducted by the author investigating the relationship between nutritional status of Korean breast-feeding mothers and the composition of the human milk and also the Vitamin D status of Korean and their lifestyle. Genomics, Proteomics and Nutrition : Applications to Obesity Research

  • Obesity is a major public health problem in western countries. Genetic and environmental factors, separately or in combination are major determinants of fat mass. Both central effectors (primarily hypothalamus) and peripheral tissues (such as adipose tissue) are implicated in the pathogenesis of obesity. A significant number of studies have documented potential contribution of adipose tissue -via its newly discovered secretory function- to the pathogenesis of obesity and co-morbid conditions including cardiovascular disease, diabetes and hypertension. Applications of analytical techniques such as genomics and proteomics have enabled better understanding of biological sciences in general and have only being applied recently to nutritional sciences including obesity research. Here, we review the recent progress in adipose tissue functional genomics and proteomics, and the importance of these studies in energy metabolism and obesity research.

Immunosecurity: immunomodulants enhance immune responses in chickens

  • The global population has increased with swift urbanization in developing countries, and it is likely to result in a high demand for animal-derived protein-rich foods. Animal farming has been constantly affected by various stressful conditions, which can be categorized into physical, environmental, nutritional, and biological factors. Such conditions could be exacerbated by banning on the use of antibiotics as a growth promoter together with a pandemic situation including, but not limited to, African swine fever, avian influenza, and foot-and-mouth disease. To alleviate these pervasive tension, various immunomodulants have been suggested as alternatives for antibiotics. Various studies have investigated how stressors (i.e., imbalanced nutrition, dysbiosis, and disease) could negatively affect nutritional physiology in chickens. Importantly, the immune system is critical for host protective activity against pathogens, but at the same time excessive immune responses negatively affect its productivity. Yet, comprehensive review articles addressing the impact of such stress factors on the immune system of chickens are scarce. In this review, we categorize these stressors and their effects on the immune system of chickens and attempt to provide immunomodulants which can be a solution to the aforementioned problems facing the chicken industry.

A review of canola meal as an alternative feed ingredient for ducks

  • This review provides an overview of the published data on the canola meal and its suitability for duck as an alternative plant-origin protein source to soybean meal. Canola meal is a legume origin protein source containing comparable amino acid profile to soybean meal and rich in essential minerals and vitamins. Nonetheless, it is known to contain less in energy content than soybean meal. Factors like field conditions and processing methods creates compositional variations among canola meal. Presence of anti-nutritional factors such as phenolic substances, phytate and glucosinolates which are known to reduce growth performance in livestock animals, are the major drawbacks for canola meal to be a competitive plant-origin protein source in the feed industry. This review is focused to address i) nutritional characteristics and feeding value of canola meal for ducks and ii) impacts of feeding canola meal on performances of ducks.

Production of red pigments by Monascus purpureus in solid-state culture

  • In this study various nutritional and environmental parameters such as, initial moisture content, pH. inoculum size, air rate, sample size and nutrient supplement that influence pigment production were evaluated in solid-state cultures. optimum initial moisture content and pH were determined to be 50% and 6.0, respectively. The supplement of the substrate with different carbon, nitrogen, and mineral source reveals a more inhibitive effect as the substrate concentration increase. optimum aeration rate was determined to be 2vvm in flask culture. The maximum amount of red pigment, 3500 OD/g dried fermented rice, was obtained in optimum conditions which is obtained in solid flask culture.

젖소 사육환경과 영양조성에 대한 마케팅 정보가 치즈 선호도에 미치는 영향 (Effect of Providing Marketing Information about the Nutritional Composition of Milk and Rearing System of Cows on the Overall Liking of Cheese)

  • The taste preference for cheese is primarily dependent on an individual's habitual experience, such as personal memories since childhood. Cheese is not a traditional food in Korea, and therefore, the liking of cheese is acquired mainly through the exposure to European natural cheese by frequent travels rather than habitual experience. Although Korean dairy farms started the production of European style natural cheese because of surplus milk undulation, yet its demand has been consistently increasing in the last decade. Most of the mountain cheese variety in Europe are produced during the summer season on mountain pastures, especially in countries surrounded by the Alps. Nevertheless, not only consumers but also mountain cheese producers cannot comprehensively explain the differences in the nutritional properties of the milk from cows that grazed on mountain pasture and cows that were raised indoors. As the demand for cheese consumption is steadily increasing in Korea, it is necessary to study the effects of providing marketing information regarding the health conditions and rearing system of dairy cows in relation to the nutritional composition of cheese. In addition to the marketing focus on health-promoting unsaturated fatty acid composition of milk and cheese, the relationship between providing the marketing information on the raising environments of cows and the overall liking of mountain cheese were also investigated.

염분과 미량원소가 Heterosigma akashiwo (Raphidophyceae) 성장률에 미치는 영향 (Effect of Salinity and Micronutrients on the Growth Rate of Bloom from Heterosigma akashiwo (Raphidophyceae))

  • Heterosigma akashiwo의 대발생 기작을 규명하기 위하여 환경 요인들에 따른 성장률을 각각 비교하였다. 환경요인, 염분, N:P ratio, 철 (Fe), 셀레늄 (Se)을 대상으로 국내 배양주 2종과 국외 배양주 1종의 성장 특성을 확인하였다. 그 결과, H. akashiwo 배양주는 염분과 철의 농도에 따른 최대 성장률의 특성을 기반으로 지리학적 특이성을 찾기는 힘들었으나, 염분에 대한 내성은 강하여 10 psu에서 40 psu에서 생존이 가능한 것으로 나타났다. N:P ratio와 셀레늄은 국내 배양주와 국외 배양주의 차이를 보였다. 이와 같은 생리학적 특성에 대한 결과를 보았을 때, H. akashiwo가 염분에 대한 높은 내성을 기반으로 우점할 수 있으며, 풍부한 영양염을 이용하여 더욱 빠른 성장으로 대발생을 가능하게 할 수 있을 것이라고 판단된다.

Biosynthesis and Control of Keratinase in Recalcitrant Feather-Degrading Bacillus megaterium F7-1

  • This study was performed to investigate the nutritional conditions controlling keratinase activity in Bacillus megaterium F7-1. B. megaterium F7-1 produced keratinase using chicken feather as a sole source of carbon, nitrogen and sulfur. Addition of the feather medium with glucose enhanced keratinase production (68.9 U/ml), compared to control without glucose (63.2 U/ml). The synthesis of keratinase was repressed by addition of $NH_4Cl$ in B. megaterium F7-1. The highest keratinase production (70.9 U/ml) was obtained with the feather medium containing glucose and $MgSO_4{\cdot}7H_2O$. Keratinase was produced in the absence of feather (4.9 U/ml), indicating its constitutive synthesis. Feather degradation resulted in free SH group formation. B. megaterium F7-1 effectively degraded chicken feather meal (86%), whereas duck feather, human nail, human hair and sheep wool displayed relatively low degradation rates (8-34%).

Effects of Carbon and Nitrogen Sources on Fatty Acid Contents and Composition in the Green Microalga, Chlorella sp. 227

  • In order to investigate and generalize the effects of carbon and nitrogen sources on the growth of and lipid production in Chlorella sp. 227, several nutritional combinations consisting of different carbon and nitrogen sources and concentrations were given to the media for cultivation of Chlorella sp. 227, respectively. The growth rate and lipid content were affected largely by concentration rather than by sources. The maximum specific growth was negatively affected by low concentrations of carbon and nitrogen. There is a maximum allowable inorganic carbon concentration (less than 500~1,000 mM bicarbonate) in autotrophic culture, but the maximum lipid content per gram dry cell weight (g DCW) was little affected by the concentration of inorganic carbon within the concentration. The lipid content per g DCW was increased when the microalga was cultured with the addition of glucose and bicarbonate (mixotrophic) at a fixed nitrogen concentration and with the lowest nitrogen concentration (0.2 mM), relatively. Considering that lipid contents per g DCW increased in those conditions, it suggests that a high ratio of carbon to nitrogen in culture media promotes lipid accumulation in the cells. Interestingly, a significant increase of the oleic acid amount to total fatty acids was observed in those conditions. These results showed the possibility to induce lipid production of high quality and content per g DCW by modifying the cultivation conditions.

Zooshikella sp. JE-34가 생산하는 Prodigiosin계 색소의 분리 및 최적 배양조건 (Isolation and Optimal Culture Conditions of Prodigiosin-like Pigment Produced by Zooshikella sp. JE-34)

  • 본 연구는 해양유래의 특이색소미생물을 선발하여 미생물의 특성 및 이차대사산물의 생리활성 탐색을 통해 새로운 생물자원개발을 위해 수행되었다. 본 연구에 사용된 prodigiosin 유사 색소를 생산하는 균주 JE-34는 동중국해 퇴적층으로부터 분리되었으며 Zooshikella sp. JE-34으로 명명하였다. Zooshikella sp. JE-34는 적색색소를 다량 생산하였으며 대표적인 prodigiosin 생산균주인 Serratia marcscens의 색소추출액과 분광학적 특성 및 HPLC 분석을 통해 JE-34가 생산하는 색소가 prodigiosin 유사색소로 판단되었다. JE-34 균주의 배지조성에 따른 생육도 및 pigment 생합성의 변화를 알아보기 위해 탄소원, 질소원, 무기염류를 첨가하며 배양한 결과 탄소원으로는 soluble starch, 질 소원으로는 malt extract, 무기염류로는 $Na_2HPO_4$에서 최적의 pigment를 생산하였다. Zooshikella sp. JE-34는 prodigiosin의 생합성에 있어 대표적인 생산자인 Serratia marcscens와 마찬가지로 우수한 pigment 생합성량을 보여 prodigiosin의 생합성의 생물자원으로서 의의가 있다고 사료된다.
