Assessment of Need for Nutritional Education in Male Workers Living in Busan (부산지역 산업체 남성 근로자의 영양교육에 대한 요구도 분석)

  • The purpose of this study was to assess the need for nutritional education in male workers living in Busan, Korea. This study surveyed 310 industrial workers at five companies in Busan using a questionnaire. According to the results, need for nutritional education scored 3.60/5.00 points. The usage rate of mass media as a means of acquiring nutritional information was significantly higher (P<0.001) in subjects in their 50s compared to other age groups. Regarding scores on need for nutritional education according to theme, 'balanced eating habits' showed the highest score, followed by 'food safety', 'diet therapy related to a disease', and 'food hygiene and food poisoning prevention'. In terms of frequency of nutritional education, 29.0% of subjects considered 'biannually' to be desirable, whereas 25.8% and 21.0% considered 'annually' and 'quarterly' to be desirable, respectively. The results of this study suggest that nutritional education for industrial workers should be implemented in various ways in accordance with their characteristics. Furthermore, considering workers' low awareness levels of the need for nutritional education, employees are required to take the education in order to encouraged to improve their nutritional status and commit to a desirable diet.

A Study of the Dietary Habits, the Nutritional Knowledge and the Consumption Patterns of Convenience Foods of University Students in the Gwangju Area (광주지역 대학생의 식습관, 영양지식 및 편의식품 섭취 실태에 관한 연구)

  • The purpose of this study was to investigate the dietary habits, the nutritional knowledge and the consumption patterns of convenience foods of 618 university students located in the Gwangju area, from November twentieth to November thirtieth, 2002. The subjects included 301 males (48.7%) and 317 females (51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index (BMI) was 3.7, 88.0 and 8.3 far the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time (65.1%) of the cases. Self-reported eating habit problems were eating irregular meal (52.4%), overeating (21%), prejudiced meal (12.4%) and skipping meal (7.4%). The type of favorite snack was biscuit (31.9%) and cup Ramyon (31.9%). The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 28% respectively. Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students.   • The use of herbals has increased considerably while their efficacy and safety remain untested. This unsupported surge in demand has prompted a call for their clinical evaluation. One area in which evaluations are emerging is ginseng and diabetes. Growing evidence is accumulating from in vitro and animal models indicating that various ginseng species, American (Panax quinquefolius L), Asian (Panax ginseng C.A. Meyer), Korean Red, San-chi (Panax notoginseng [Burk.] P.R. Chen), and the non-panax species Siberian (Eleutherococcus senticossus) ginsing, and their fractions, saponins (ginsenosides) and peptidoglycans (panaxans for panax species and eleutehrans for Siberian ginseng), might affect carbohydrate metabolism and related signaling molecules. Recent human studies from our laboratory have also shown a blood glucose lowering effect of American ginseng (AG) and some other ginseng spices postprandially after acute administration and chronically after administration for 8-weeks in people with type 2 diabetes. Although generally encouraging, these data only indicate a need for more evaluations of ginsengs safety and efficacy. Because of poor industry standardization, it is not known whether all ginsengs will affect blood glucose. In this regards some ginseng batches have demonstrated null effects while others have even raised postprandial glycemia. Clinical research should therefore focus on components involved in its glucose lowering effects.

Comparison of the nutritional indicators of critically Ill patients on extracorporeal membrane oxygen (ECMO) (체외막산소화장치 (ECMO) 적용 중환자의 영양지표 비교)

  • Purpose: This study aimed at investigating the nutritional status, nutritional support, and nutritional indicators of critically ill patients on extracorporeal membrane oxygen (ECMO) in intensive care units (ICU). Methods: This descriptive study obtained data from the medical records of 37 patients who were treated using ECMO at a university hospital in Korea. The patients were admitted to the Korea University Anam Hospital ICU with acute or serious damage to vital organs from January 1, 2014 to June 30, 2016. Results: Although 32 patients (86.5%) were at a high risk of malnutrition, 26 patients (70.3%) were considered normal in terms of nutritional status by the nutritionist at the beginning of their ICU stay. However, after two weeks, nine patients had passed away and only one patient maintained normal status. Parenteral nutrition was started first but took 4.25 ± 6.95 days till initiation. Only eight patients (21.6%) were able to meet their requirement for both calories and protein. The group provided with adequate calorie and protein showed significantly longer use of the ECMO and respirator and longer ICU and total hospital stay than their counterparts. Normal levels of serum albumin and protein of the group at low-risk for malnutrition on the day of initiation of ECMO, which were significantly higher than the high-risk group, declined by the last day of ECMO leading to a lack of significant differences between the two groups. Conclusion: Considering that the nutritional indicators of patients deteriorated as the days on ECMO increased, more aggressive nutritional management to ensure adequate nutritional support should be emphasized from the beginning and throughout the ICU stay.

Validity of Weight and Height as a Nutritional Status Measurement for Adults in Kuri City

  • Anthropometric measurements, particularly weight and height, are the most commonly employed measures of nutritional status in epidemiologic studies because of their simplicity and ease of collection. However, the usefulness of the anthropometric indicator is controversial. The aim of this study was to evaluate the usefulness of the anthropometric indicator to represent the nutritional status of individual adult in epidemiologic studies. In order to evaluate the usefulness of the anthropometric indicator to represent the nutritional status of individual, the validity in terms of sensitivity and specificity of anthropometric indicators was estimated by comparing the biochemical indicators to the reference indicators. The relative validity of dietary intake indicators was also measured for comparison between the three indicators of biochemistry, anthropometry and dietary assessment. The results showed that sensitivity of weight and height and dietary indicators were 16.7 an 50.5, respectively comparing the reference value of 100 as biochemical indicator in identifying anemic adults. Whereas the sensitivity of weight and height and dietary indicators were 63.6 and 36.4, respectively comparing reference value of 100 in identifying hyperlipidemic individuals(obesity). In conclusion, the validity of weight and height is much lower than that of biochemical indicator, burt weight and height still has some usefulness in identifying anemic individuals. Especially, it is more useful in identifying hyperlipidemic individual adults thant in identifying anemic individuals.

Nutritional Status and Risk Factors for Malnutrition in Low-income Urban Elders (도시 빈곤노인의 영양상태와 영양불량 위험 요인)

  • Purpose: The purpose of this study was to evaluate the nutritional status of low-income urban elders by diversified ways, and to analyze the risk factors for malnutrition. Methods: The participants in this study were 183 low-income elders registered at a visiting healthcare facility in a public health center. Data were collected using anthropometric measurements, and a questionnaire survey. For data analysis, descriptive statistics, ${\chi}^2$-test, t-test, Fisher's exact test, multiple logistic regression analysis were performed using SPSS 20.0. Results: Regarding the nutritional status of low-income elders as measured by the Mini Nutritional Assessment (MNA), 10.4% of the elders were classified as malnourished; 57.4% as at high risk for malnutrition; and 32.2% as having normal nutrition levels. The main factors affecting malnutrition for low-income elders were loss of appetite (OR=3.34, 95% CI: 1.16~9.56) and difficulties in meal preparation (OR=2.35, 95% CI: 1.13~4.88). Conclusion: In order to effectively improve nutrition in low-income urban elders, it is necessary to develop individual intervention strategies to manage factors that increase the risk of malnutrition and to use systematic approach strategies in local communities in terms of a nutrition support system.

Evaluations of the Elderly Nutrition Improvement Program in the community health center : Effects of nutrition counseling and education program on elderly dietary behavior (보건소 노인 영양 개선 사업의 효과 평가 : 영양 상담 및 영양 교육 프로그램의 효과 분석)

  • Low energy intakes, poor nutritional quality, and low food diversity are among the factors affecting the nutritional status of elderly in Korea. Therefore, a nutrition counseling and education program was conducted to promote dietary change and to improve nutritional status of elderly. The 7 step program consisted of a individual nutrition counseling and weekly or biweekly group nutrition education programs. Pre- and post-test measurings of dietary behaviors, attitudes, nutrition knowledge, and 24-hour dietary recall data were collected. Positive changes in the attitude related to diet were noted, whereas nutritional knowledge scores were not improved. Significant increases were noted in the frequency of vegetable consumption in female and diversity of food consumption in male. The densities of vitamin C(male & female), $B_1$, $B_2$, and niacin, calculated using the INQ(Index of Nutritional Quality), were significantly improved by nutrition counseling and education programs. These results suggest the appropriateness of nutrition intervention programs for the improvement of elderly nutrition.

  • In this study, Artemisia capillaris, which has been used in oriental medicine and folks remedy, was investigated to characterize the nutritional composition (protein, lipid, ash, fiber, amino acids, fatty acids, Na, K, P, Mg, Ca and Fe) and effective substance (scopoletin). Artemisia capillaris has often been cited in medical literature for its medicinal effects. The Korean Food and Drug Administration allowed Artemisia capillaris as a food stuff and indicated as In-Jin-Sook. From the view point of the subjects who eat In-Jin-Sook products, most of them ingested it for a certain pharmacological efficacy rather than as a beverage or a food. Therefore, we need to develop functional foods using In-Jin-Sook. Artemisia capillaris was superior in protein, crude fiber, amino acid and fatty acid compositions to wild greens according to Korean Nutritional Composition Table. Also scopoletin, blown for blood vessel relaxation and hypotensive effect, was detected at the level of 326.13 $\mu\textrm{g}$/g. These results demonstrated that Artemisia capillaris has both pharmaceutical effects and balanced nutritional contents. Artemisia capillaris has sufficient values to use as a food stuff for functional foods.

Nutritional Intake and Timing of Initial Enteral Nutrition in Intensive Care Patients: A Pilot Study (중환자실 환자의 경관영양 공급시기에 따른 영양섭취양상: 예비연구)

  • Purpose: The purpose of this study was to describe the differences between early and delayed enteral nutrition on nutritional intake. Methods: A pilot cohort study was conducted with 45 critically ill adult patients who had a primary medical diagnosis. Energy prescribed and received were collected during the four days after initiation of enteral nutrition. Adequate feeding was defined as the energy intake more than 90% of required energy. Results: A total of 23 patients (52%) were received early enteral nutrition (within 48 hours of admission). Energy intake of early enteral nutrition was less than intake of delayed enteral nutrition during the four days of the study. Although the difference on day one was significantly greater than the differences on day two, the differences on day two were not different from days three or four. No statistical differences in the adequacy of nutritional intake were found between patients in the early and the delayed group. Conclusion: In critically ill patients receiving early enteral nutrition, more aggressive administration from the beginning will improve the nutritional intake. Additional studies including a large multi-centre, randomized clinical trial are recommended.

A Study on the Nutritional Knowledge, Food Habits, Food Preferences and Nutrient Intakes of Housewives Living in Urban Area and Rural Area (경상북도 도시 및 농촌 거주 주부의 영양지식, 식습관, 식품기호도 및 영양소 섭취실태에 관한 조사연구)

  • This nutritional survey was conducted from January to March 1994, in order to investigate the nutirtional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in urban area and rural area. The subjects of this survey were 164 urban housewives living in Daegu and Pohang area and 170 rural housewives living in Andong area. The results obtained are summarized as follows ; The subjects had a high level of perceived knowledge(81.2%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.3%. Most of the urban housewives belong to "Fair" or "Good" food habit group, while rural housewives belonged to "Fair" or "Poor" food habit group. The correlation between nutritional knowledge score and food habit score was low. And the correlation between nutritional attitude score and food habit score was low, too. Food perferences for kimchi, cooked rice, potato, milk were high in both group. Most of the nutrient intakes of the urban and rural housewives were not significantly different each otehr at p<0.05.ficantly different each otehr at p<0.05.
