학교급식비 관리의 효율적 개선을 위한 연구 - 공동조리 및 단독조리 급식학교의 비교 - (A study on the Efficient Improvement of Meal cost Management in Elementary School Foodservice - A comparison of commissary with conventional school foodservice systems -)

  • Commissary school foodservice system has been expanded rapidly in elementary foodservices in Korea. Therefore, it is essential that cost effectiveness should be assessed by comparing between alternative systems. The objectives of this study were to assess the effects on meal costs of foodservice systems and other school characteristics in terms of meal costs/day per 1 person ; to examine financial management practices and dietitians' perception concerning importance of school foodservices financial management. A total of 16 commissary schools in nationwide and 102 conventional schools at Chungnam province and Seoul were participated in this survey by mails. The results are as follows 1. Average meal costs per one person was 1,232.6 won evaluated on the standards of monthly budget basis on June, 1994. Average food costs per one person was 836.1 won(67.83%), average labor cost was 320.1 won(25.97 %) and operation costs was 76.3 won(6.2 %). 2. Average meal costs per one person did not show any significant difference between commissary and conventional foodservice schools. Meal costs of the island type and the rural type were significantly higher than those of the urban type. Meal costs of schools in Chungnam and other province were higher than schools in Seoul. The schools with less than 200 feeding numbers were higher than the schools more than 201 in meal costs per one person. 3. Food costs per one person were higher in the urban type, especially in Seoul, as the scale of feeding number increased. Labor costs and operational costs were increased in island type as well as in the schools of small feeding numbers. 4. Foodservice teachers, not dietitians were in charge of foodservice duties at the 75 % of satellites. Dietitians participated in the satellite foodservice duties were only averaged at 2.19 visits per month of 20 feeding days. 5. Items which influenced by food costs per person at the step of foodservice production were purchasing method, the perception of inventory, the distributor for foodservice, and usage of standardized recipes.

The Factors Affecting Sweet Taste Sensitivity and Preference of the Korean Middle-Aged Females

  • Sensory factors are important determinants of appetite and food choices but little is known about factors affecting taste acuity and preference of Koreans. Any factors causing deficits in sweet taste perception may lead to over consumption of simple sugar, which is related to several chronic diseases. This study was conducted to determine factors affecting sweet taste sensitivity and preference. Subjects were 30 government employees who were serving as school dietitians or in the area of public health while they were studying in the program for the qualification to become nutrition teachers. Sweet taste threshold and the optimally-preferred sweetness of omija jelly were determined by a sensory evaluation and general characteristics, health-related lifestyles, dietary habits and food preferences were determined using a self-administered questionnaire. For the subjects of this study, detection threshold concentration of sucrose solution was $0.184{\pm}0.06%$ and optimally-preferred sucrose concentration of omija jelly was $13.88{\pm}2.28%$ and there was no significant correlation between the sweet taste sensitivity and preference. Subjects who had higher(${\ge}4$ out of 10) physical or psychological stress and who had late getting-up time (after 7am) tended to have lower sweet taste threshold (higher sensitivity) than their counterpart. The sweet taste preference determined by optimally-preferred sucrose concentration of omija jelly tended to be lower in the subjects who eat slowly. Those who answered in the questionnaire to prefer sweet foods did have significantly higher optimally-preferred sucrose concentration of omija jelly. Further research is required to determine whether decreased sensitivity and increased preference for sweetness can increase the actual intake of simple sugar. 계층적 분석 과정을 이용한 학교급식 운영 품질 평가 분야의 중요도 분석 (Analytic Hierarchy Process Approach to Estimate Weights of Evaluation Categories for School Food Service Program in Korea)

  • The purposes of this study were to (1) identify the evaluation categories, areas, attributes, and criteria of the school food service program using both a qualitative and a quantitative analyses, (2) define the relative importance of the evaluation categories, areas, attributes, and criteria of the school food service program using analytic hierarchy process, (3) organize the evaluation system to improve quality of the school food service in Korea. A survey was conducted from August to October 2004 to collect data from 172 dietitians, 15 school food service officials at the educational board, 10 professionals of school food service. Statistical analyses were performed on the data utilizing the SPSS 12.0 for Windows and Excel, such as Descriptive statistics and analytic hierarchy process was performed. The result of the analytic hierarchy process indicated that relative importance of evaluation category was 0.4319 (food service manage ment), 0.2369 (nutrition education), 0.1455 (satisfaction) and 0.0912 (parent involvement program). 'Sanitation, safety and facility (0.1739)' was the most important area among the subcategories of food service management, followed by nutrition management (0.1581), procurement (0.1375), production (0.1345), organization and personnel management (0.0662), planning (0.0644), food service evaluation (0.0585), financial accountability (0.0555), and information management (0.0554). There existed a relative importance on the three areas of the nutrition program and satisfaction evaluation category: students (0.5281, 0.6221), parents (0.1812, 0.1491), and teachers (0.1838, 0.1618). In the parent involvement program evaluation category, relative importance of committee and monitoring management was 0.4658 and information communication was 0.3724. The quality of food and service to school children can be improved by the appropriate application of the developed evaluation tool for the school food service program.

초등학교 5, 6학년 아동의 식습관과 교사의 식생활교육 실태 및 인식에 관한 연구 - 춘천지역 일부 초등학교를 중심으로 - (A Study on the Dietary Habits of 5th & 6th Grade Students and the Dietary Life Education by Teachers - Focused on the Elementary Schools in Chuncheon Area -)

  • 본 연구에서는 춘천 지역 초등학교 5, 6학년 아동들을 대상으로 식습관 및 영양지식 정도를 조사하고, 같은 초등학교의 교사들을 대상으로 식생활교육 실태 및 인식 정도를 조사하였다. 아침과 저녁 식사를 매일 먹는다고 응답한 학생들은 각각 54.1%와 80.3%였으며, '빵 및 과자류'(42.6%)와 '과일이나 주스'(39.3%)를 간식으로 주로 섭취하였다. 학생들의 57.4%만이 균형 잡힌 식사를 한다고 응답하였으며, 영양지식 측정에서 정답율은 59%, 식태도 측정에서 좋은 식태도를 보인 학생은 75%에 불과하였다. 교사들의 78%가 식생활 교육 경험이 있었으며, 교과 수업시간(38.9%)과 학교 급식 시간(35.2%)에 주로 식생활교육을 하였다. 교사들이 인식하는 초등학생들의 식생활 문제는 잘못된 식습관(37.7%)과 가공식품 및 인스턴트식품의 잦은 섭취(36.2%)였다. 교사들은 식생활교육이 필요하며(79.7%) 더 일찍 실시되어야 한다(87.0%)고 응답하였다. 한편 학교에서의 식생활교육의 주요 담당자에 대한 질문에는 영양교사(49.3%), 담임교사(34.8%)라고 응답하였고, 40세 이상의 교사들은 학교에서의 식생활교육의 주요 담당자로 교사인 본인 보다는 영양교사나 학부모의 역할이 더 중요하다고 생각하였다. 교과지도 뿐만 아니라 생활지도 측면에서 식생활 교육을 행하는데 있어서 적임자는 담임교사이므로 초등학교에서의 식생활 교육의 특성과 교사의 역할에 대한 재교육이 필요하다고 생각된다.

청주.청원 지역 일부 청소년의 기능성 식품 섭취 실태 및 관련 교육에 대한 태도 (Use of Functional Foods and Attitude on Related Education among Adolescents in Cheongju and Cheongwon Area)

  • This study was to investigate use of functional foods and attitude on related education among adolescents. Subjects of this study were a total of 826 students in middle and high schools of Cheongju and Cheongwon area. Among the subjects, 44.8% had an experience in consuming functional foods. Among the subjects that experienced side effects possibly by the consumption of functional foods, 13.0% ignored the symptom and continued to consume the foods. Approximately one third of the subject(30.7%) obtained information on functional foods from their parents; however, few subjects(2.2%) obtained the information from the nutrition teachers or dietitians of their schools. Only 9.4% of the subjects underwent education related with functional foods, and 35.1% of the subjects demanded education on functional foods. The present study suggests that an effective education is needed for both students and their parents in order to prevent adolescents from the misuse of functional foods.

Evaluation of educational school meal programs in Gyeonggi province, South Korea

  • Purpose: School meal programs should be part of the educational process to promote good eating habits for students. The purpose of this study was to develop an evaluation scale for educational school meal programs and evaluate the achievement level of educational school meal programs using the developed scale. Methods: The evaluation scale for educational school meal programs consisted of 23 items in eight categories and was developed using content validity ratio (CVR) analysis and analytic hierarchy process (AHP) by 15 related experts. The results of a survey on nutrition teachers or dietitians at 91 elementary, middle, and high schools in Gyeonggi province, South Korea were analyzed to evaluate the achievement levels of educational school meal programs. Results: Overall, total average score was 45.7 out of 100, with significant differences among schools (p = 0.005). Elementary schools (51.9) showed a higher average score than middle (41.5) and high schools (37.1). The score for the category of regular nutrition and dietary education was the lowest (5.7 out of 33.7). In addition, school meal environment (5 out of 10), educational activities through school meal time (9.2 out of 19), and extra-curricular experiential activities (3.5 out of 10) also showed inadequate levels. Conclusion: The results show that the overall level of educational school meal programs is not adequate and needs to be improved, especially at middle and high schools. Government support polices need to be implemented to encourage educational activities related to school meal programs.

전북지역 초중고등학교 학교급식소의 내부시설 및 위생관리 실태 조사 (Survey on Internal Facilities and Sanitary Management of Elementary, Middle, and High School Foodservice in Chonbuk Area of Korea)

  • This study was conducted to investigate the situation of internal facilities and sanitary management of elementary, middle, and high school foodservice in Chonbuk area. Self administered questionnaires were collected from 252 nutrition teachers and school dietitians. Statistical data analysis was completed using a SPSS 11.5 program. The results are summarized as follows: Approximately 99.2% of the subjects were women and those who were married accounted for 76.6%. Those in their 30s to 40s accounted for over 87%, those with more than 11 years experience accounted for 56.8%, and those 69.0% were regular nutrition teachers. Among the 280 school foodservice systems, 51.6% of the schools were located in urban areas and 48.0% in rural areas. About 68% of the schools prepared meals the conventional way and 32.3% prepared them the commissary way. The number of employees accounted for in the schools was 37.7% with 1 to 3 employees, 27.8% with 4 to 6 employees, and 25.4% with 7 to 9 employees. About 54% of schools have an expectance of school meal service for more than 11 years. However 67.5% of their facilities had not been remodeled since the implementation of the foodservice. As a result of the conditions of the school foodservice facilities, there were significant differences between elementary and middle & high schools; preparation room (p<0.01), toilet (p<0.01), and boiler room (p<0.01). About 62% of the nutrition teachers responded that they were dissatisfied with the situation of the facilities (e.g. size and materials of the kitchen, heating and cooling systems). The washing and disinfection methods in elementary, middle and high schools were very different, because they had no sanitizers and disinfectant guidelines. Therefore the governmental regulating agencies must review and approve of the plans prior to new construction or extensive remodeling of the school foodservice facilities. In addition, we suggest that it is necessary to provide practical sanitizers and disinfectant guidelines and other useful education.

대구시 영양(교)사의 학교급식 당류 저감화 인식도와 실천도 및 영양교육 실태 (Awareness and Practice of Sugar Reduction in School Foodservice and the Practice of Nutrition Education in Daegu)

  • 본 연구는 대구지역 학교급식의 당류 저감화 인식도와 실천도 및 영양교육 실태를 파악하기 위하여 초등학교와 중·고등학교 영양(교)사를 대상으로 2019년 11월 18일부터 12월 13일까지 온라인 설문조사를 실시하였고 응답자는 101명이었으며, 그 결과는 다음과 같다. 1. 대구지역 초중고 영양(교)사들은 한국인의 식생활에서 당류 줄이기 노력의 필요성(4.12점)을 높이 인식하였고, 중고등학교 영양(교)사가 초등학교 영양(교)사에 비하여 학교급식에서 당류 저감화가 더 필요한 것으로 인식하였으며(P = 0.034), 초등학교 영양(교)사가 중·고등학교 영양(교)사보다 국가적 차원에서 당류 저감화 정책을 시행하고 있는 것에 대하여 더 많이 인지하고 있는 것으로 나타났다(P = 0.002). 2. 국가 차원의 당류 줄이기 정책 중 학교(주변)에서 당류 함량 높은 제품의 판매 제한 및 자제 유도(4.26점)에 대한 필요성이 높았고, 다음은 외식용 당류를 줄일 수 있는 조리법과 메뉴 개발 및 지원(4.22점), 학교에서 어린이·청소년 대상 당류 줄이기 교육 강화(4.20점) 등의 순이었다. 3. 대구지역 학교급식 당류 저감화 실천도를 급식단계별로 분석한 결과, 식단작성단계(3.90점), 구매단계(3.86점), 조리단계(3.74점)에서 배식단계(3.54점)에 비하여 당류 저감화 실천도가 높은 것으로 나타났다(P < 0.05). 세부 항목별로는 초등학교에서는 후식은 가공식품보다는 덜 달게 먹을 수 있는 식품으로 대체하기(4.29점), 중·고등학교에서는 단맛을 잘 느낄 수 있는 적정 온도로 배식하기(4.05점)에 대한 실천도가 높았다. 4. 대구지역 학교급식 당류 저감화를 위해 가장 개선되어야 할 사항으로는 급식대상자(학생, 교사)들의 단맛 기호도 변화(4.41점)와 이들의 당류 저감화에 대한 필요성 인식(4.37점)인 것으로 나타났다. 5. 대구지역 영양(교)사들은 당류 저감화 교육 또는 연수경험이 60.4%, 당류 저감화 교육의 유익성은 68.9%, 당류 저감화를 위한 교육자료 및 정보의 불충분성은 59.4%로 나타났다. 학생 대상 당류 저감화 교육은 35.6%가 실시하였고, 교육은 주로 가정통신문 발송(80.6%)과 학교 홈페이지 교육자료 게시(77.8%)의 형태로 이루어졌다. 학교급식 당류 저감화를 보다 활성화하기 위해서는 급식 대상자(학생, 교사)들의 단맛 기호도 변화와 더불어 당류 저감화 필요성에 대한 인식을 높일 수 있도록 지속해서 이들에 대한 당류 저감화 교육과 홍보가 필요하다. 또한 영양(교)사들이 활용할 수 있는 당류 저감화 교육자료 개발 및 이들을 위한 연수 또는 교육의 기회도 확대되어야 할 것이다. 더불어 학생 대상 당류 저감화 교육은 현행 가정통신문 교육보다는 효과적인 교육이 이루어질 수 있도록 교육부에서 실제적인 영양교육 시수 확보 등의 제도적 장치를 마련하는 것이 필요할 것으로 사료된다.

대구지역 학교급식 나트륨 저감화 실태 및 나트륨 저감화 방법에 대한 중요도-수행도 분석 (Sodium Reduction Practice and Importance-Performance Analysis of Sodium Reduction Methods in School Foodservice in Daegu)

  • Objectives: The aim of this study was to investigate sodium reduction practices in school foodservice in Daegu. Methods: The survey included 199 nutrition teachers and dietitians working at elementary, middle and high schools in Daegu. The survey topics included the following: the frequency of salinity measurement, workers in charge of the measurement, average salinity of the soup and stew served, frequency and difficulties of offering low-sodium meals, Importance-Performance Analysis (IPA) of sodium reduction methods in school foodservice and the need for political support in encouraging sodium reduction. Results: The mean salinity of the soup and stew was higher in high school foodservice than in elementary and middle school foodservice. Middle and high schools have difficulties in offering low-sodium meals due to concerns of decreasing satisfaction for the meals. The results of the IPA of programs to reduce sodium in school meals showed that most of the items in the cooking and serving stages were in the 2nd quadrant (Keep up the good work), and all purchasing and menu planning stages occupied the 3rd quadrant (Low priority). To reduce sodium in school meals, government support is required in developing low-sodium recipes for school foodservice, encouraging education on sodium reduction for school foodservice officials and developing low-sodium food for institutional foodservice. Conclusions: To encourage sodium reduction in school meals, the priority is to make low-sodium recipes available. Also, it is necessary to develop a program that calculates the sodium content in menus and processed foods through National Education Information System and to establish standards for sodium levels in school foodservice.

광주지역 초등학교의 비만실태 및 식습관에 관한 조사 연구 (Prevalence of Obesity and Eating Habits of Elementary School Students in Kwangju)

  • The purpose of this study was to determine the prevalence of obesity and to examine the eating habits of elementary school students in Kwangju. The study was carried out on 931 students(male : 454, female : 477) in September and October of 1996. The results are summarized as follows ; Obesity was defined as body mass index(BMI) that exceeds 20. The rate of obesity was 10.0%(male 4.7$\%$, female 5.3$\%$) in subjects. Subjects were divided into 3 groups : normal group(BMI〈20), mildly obese group(20〈BMI〈25), and moderatly obese group(25〈BMI〈30), respectively. With regard to frequency of skipping breakfast, 9.1$\%$ of normal children and 17.5$\%$ of mildly obese children and 33.3$\%$ of moderately obese children had skipping every morning(p$\ll$0.001). With regard to the regularity of meal time, 62.1$\%$ of normal children had ‘regular meals’but 58.0$\%$ of mild obese children and 50.0$\%$ of moderate obese children had‘irregular meals’(p$\ll$0.05). With regard to meal volume, obese children consumed much more meal volume than normal children(breakfast p$\ll$0.001, lunch p〈0.005, dinner p$\ll$0.001). With regard to try to lose weight, 22.9$\%$ of normal children and 55.6$\%$ of mild obese children and 83.3$\%$ of moderated obese children indicated they had attempted(p$\ll$0.001). The results of this study showed that the prevalence of obesity in elementary school students in Kwangju has a tendency to be increased. Obese children need to correct their eating habits. This reasserts the importance of nutrition education in children through teachers, parents and dietitians.
