This study was conducted to show one case model for a community nutrition program as a part of the public health systems. The purpose of this study is to evaluate the effect of the nutrition education through the Knowledge(K), Attitude(A), and Practice of the nutrition that is the Behavior-Diagnosis(Be-D). The Nutrition Education was done for 33 housewives whom live in Sudong-Myeun, Namyangju-Kun, Kyungki-Do. It had been performed eight times during April 3rd through May 30th, 1991. We investigated actual conditions of objects about K, A, Be-D in the nutrition, and the Food Environment(En) separately before and after the nutrition education by questionnaire and interview. The results of the research turned out as follows ; 1. The comparison of the scores before and after nutrition education showed significant increase in the knowledge and attitude. 2. The scores of the Be-D were also significantly higher after education, especially in the number of foods taken per day, the balanced diet, the general food habits for adult, and amounts of intake of nutrients showed significant increase of lipid, calcium, Vit. A, $Vit B_2$, Vit. C after nutrition education. 3. Multiple regression analysis showed that the scores of the Knowledge and En were significantly associated with the number of food taken per day for condition of adjusting socio-demografic factor and A effect. Also, En was important variable in explanation of the balanced diet and A, En were important in the general food habits for adult.
The number of school lunch-supported children who belong to low-income families has been rapidly increased in Korea. This study was aimed at evaluation of nutritional status of school lunch-supported elementary school children. One hundred school lunch-supported children and 119 non-supported children of fourth to sixth year class in 3 elementary schools in Gyeongbuk rural area were selected, and surveys were conducted twice, i.e., once during school term and once during summer vacation in 2006. Food consumption survey during school term was carried out through an interview by dieticians at school-lunch time using a 24-hour recall method, and the survey during summer vacation conducted by recording food intakes for three days by children. Nutrient intakes were calculated using CAN-Pro 3.0 program. School lunch-supported children showed higher rate of skipping breakfast and rather irregular meal time as compared to non-supported students. Eating alone was more frequent in school lunch-supported children than in nonsupported children. The average nutrient intakes and nutrient adequacy ratios were lower in supported children than in non-supported children. During term, percentages of nutrient intakes provided by school-lunch were higher in supported children than in non-supported children. Intakes of energy nutrients were within acceptable macronutrient distribution ranges, but proportion of carbohydrate intake increased during vacation. Analysis of patterns of food intakes based on major food groups (dairy, meat, grain, fruit, vegetable) indicated that meals during term were more balanced as compared to meals during vacation. In conclusion, food behaviors and nutrient intakes of school lunchsupported children were inferior to those of non-supported children during term and during summer vacation. They were provided with more nutrient intakes from school lunch during term as compared to non-supported children. Therefore, it is necessary not only to keep meal support program during vacation but also to provide a proper nutrition education as a part of school lunch program to improve nutritional status and food behaviors of school lunch-supported children.
This study was carried out to evaluate the usefulness and the effectiveness of the nutrition education website 'ifood(http://ifood.or.kr)', for children. A total of 262 children (5th and 6th graders) participated in the self-education program using the website which consisted of 4 sessions every two weeks. In each session, they were asked to answer some questions on the comprehensiveness of each topic while navigating the website. Nutrition knowledge (20 items), dietary attitudes (7 items), and dietary behaviors (10 items) were evaluated using questionnaires before and after the education. After the education, the usefulness and readability of the website was also evaluated. Most (97.2%) of the responders reported that the education using this website was helpful, 97.3% thought that the contents were reliable, 90.1% responded that the contents were easy to understand, and 88.8% answered that they would revisit 'ifood'. The menus they liked best were 'Interesting games' for 35.8%, 'How can I cook?' for 17.8%, 'How can I become slim' for 16.4%. This website might be more attractive by providing a 'greater variety of contents in detail', 'more music, motion pictures and images', 'more interesting games'. After the education, there was a significant increase in nutrition knowledge scores from 10.9 to 13.1. Although the total scores of dietary attitudes and dietary behaviors did not improve, there was a significant increase in each of some questions. These results showed that 'ifood', a nutritional education website, was desirable in reliability, aesthetics and enjoyability, and was effective in improving nutrition knowledge and some of dietary attitudes and behaviors in children.
The aim of this study was to determine whether Nutrition Quotient (NQ) for children, which has been developed from data on urban children, can be applied to children in rural areas. A total of 200 children (108 boys and 92 girls) in fifth and sixth grade at three elementary schools in rural areas of Gyeongbuk participated in the survey conducted during June 2012. Questionnaires consisted of items on food intake frequency and dietary behavior. Food intake data were obtained using the 24-hour recall method, and nutrient intake was calculated using the CAN-Pro 4.0 Program. Percentages of children who took less than the estimated average requirement were 76.5%, 49.5%, 45.5%, 33.5%, and 26.0% for calcium, vitamin C, iron, vitamin A, and folate, respectively. Significant associations were observed between intake frequencies of vegetables, kimchi, and fruits, and intake of vitamin C, folate, and dietary fiber. White milk and legumes showed positive correlation with intake of calcium and vitamin A. Eating breakfast, meal regularity, and diverse side dishes showed positive correlation with intake of folate and calcium. The 19 food checklist items could be categorized according to five factors. The mean NQ score of the subjects was 62.0, which was similar to that of urban children, 64.4. NQ score and factor scores for balance, regularity, and practice were significantly lower in children with lower socioeconomic level as compared to those with higher socioeconomic level. Higher NQ score showed an association with increased intake of vitamin B2, folate, vitamin C, and calcium. In conclusion, NQ offers a valuable instrument for evaluation of food habit and dietary quality of rural children as well as urban children, and children with low socioeconomic status should be monitored by testing with NQ checklist before implementation of nutrition programs.
본 연구는 웹기반 영양상담 프로그램을 이용하여 당뇨병 환자들을 대상으로 8주 동안 6회의 영양상담을 실시한 후 웹기반 영양상담이 당뇨병 환자의 식행동 및 식품섭취양상의 변화에 미치는 영향과 영양상담 프로그램을 평가하였다 웹 기반 영양상담 프로그램은 식사관리, 영 양상담, 영양평가, 추후관리 프로그램으로 구성되었다. 추후관리 프로그램은 혈당수첩, 식습관 조사, 식품섭취빈도 조사, 온라인 상담파일로 구성되었으며 온라인 상담파일에 대화방을 두어 환자와 실시간으로 상담할 수 있도록 하였다 웹기반 영양상담후 운동습관은 상당히 개선되었으며 음주와 흡연은 상담 전 이미 그 빈도가 매우 낮음에 기인하여 큰 차이를 보이지 않았다. 식사요법에 대한 지식의 변화는 모든 항목에서 식사요법 지식이 향상되었으며 전체적으로도 비합병증군과 합병증군 두군 모두에서 유의 (p<0.001)하게 높아졌다. 식 행동 변화는 영앙상담 후 두군 모두에서 유의(p<0.001)하게 개선됨으로서, 8주 동안의 지속적인 영양상담이 환자 스스로 올바른 식행동 형성의 의지를 갖게 함으로서 당뇨병 관리의 가능성을 보여주었다. 식품섭취빈도의 변화는 두군 모두에서 어패류, 채소류, 해조류의 섭취 빈도가 영양상담후에 유의하게 높아졌으며 당류, 가공식품, 감자류, 빵류의 섭취빈도가 낮아져 환자들의 식품섭취패턴이 바람직하게 개선되었다. 웹기반 프로그램 및 영양상담에 대한 평가점수는 연령이 낮을 수록 평가점수가 높게 나타났으며, 컴류터 사용이 익숙하지 않아 보호자의 도움을 필요로 하고 있는 60대 이상에서는 상대적으로 낮은 점수를 보였다. 따라서 본 연구의 결과는 웹상에서의 영양상담을 통하여 지속적이고 반복적인 추후 관리를 하는 것이 당뇨병 환자의 바람직한 식품섭취양상 및 식행동 변화를 정착시켜 질병을 관리하는데 기여 할수 있음을 제시한다. 또한 웹을 이용한 프로그램 및 상담에 대한 평가결과도 연령에 따라 차이는 있지만 긍정적으로 나타남으로서 정보화시대에 맞는 새로운 영양상담 매체로서의 인터넷의 가능성을 제시한다.
The purpose of this study was to investigate self-perception and practices of health and appearance, health-related lifestyles and dietary behaviors of college students(137 male, 115 female) attending web class via the Internet. This cross-sectional survey was conducted by a self-administered questionnaire and data was analyzed by SPSS program. The average height, weight and BMI of the male and female college students were 174.4cm, 67.8kg, 22.3kg/㎡ and 162.3cm, 52.1kg, 19.8kg/㎡, respectively. Male collage students perceived their health statuses significantly better compared to female students. As for self-evaluation of anemia, female college students perceived significantly more anemia symptoms compared to male college students. Female college students perceived their body image to be obese compared to male college students. Underweight college students perceived significantly less healthy statuses, more anemia symptoms, and worse hair conditions compared to other college students. The rate of male students who exercise was significantly higher compared to that of female students. Male students reported significantly more smoking and drinking of alcohol compared to female students. The rate of female college students skipping meals was significantly higher than that of male college students. Frequency of eating out in female college students was significantly higher compared to that in male students. These results may provide some basic information in developing a nutrition education program for Korean college students using Internet.
Purpose: The purpose of this study was to develop a comprehensive health promotion program for North Korean young adult defectors in South Korea. Methods: The comprehensive health promotion program consisted of nutrition, mental healthcare, physical activity and sexual behavior was developed on the basis of need assessment results. For the evaluation of the program, 70 North Korean young adults who were attending two alternative schools for North Korean defectors were recruited. The program had taken place once a week for 13 or 19 weeks. Effectiveness of the health promotion program was evaluated using anthropometric measurement, 3-day food records and a questionnaires that comprised the Hospital Anxiety and Depression Scale (HADS), the Short Form with 36 questions (SF-36) and health behaviors. The surveys were proceeded at the beginning and after the program. Results: After health promotion program, participants' height was significantly increased (p=0.004) and body fat mass (0=0.004) and percentage of body fat mass (p=0.003) were significantly decreased. The number of subjects who ate breakfast alone was decreased whereas the number of subjects who ate breakfast with friends was increased (p<0.001). There were no significant changes in dietary intakes, mental health status and quality of life. North Korean young adult defectors' willingness to participate and interests in the health promotion program were high, however the practice rate was low. Conclusion: The health promotion program could induce interests and willingness to participate, but bring about limited effects on the health behaviors. These results imply that a health promotion program for North Korean young adult defectors should have a long-term strategy as well as short-term plan. Furthermore, it should be based on their health problems, health related behaviors, academic performance and daily life matters.
The purposes of this study were to evaluate on the importance about the possible remedies for improvement of sanitation management by foodservice manager and to compare dietitians' opinion and that of administrators about theirs. A questionnaire survey was performed by 282 dietitians and 56 administrators, who were involved at foodservice facilities in Daegu and Gyeongbuk from March 7 to March 9 in 2007. According to the results of the importance evaluation analysis about the remedies for improvement of sanitation management, there were significant differences between dietitians and administrators in the means of 6 items such as "remodeling of hygiene equipment and facilities", "improvement of dietitians' food safety knowledge", "self-operated management of foodservice operation", "enforcement of cooperation between the CEO or administrators and dietitians", "development of food safety education program for foodservice workers", "increasing of foodservice operating budget". In all of them, the dietitians' evaluation scores were significantly higher than that of administrators. In addition, four factors were extracted by exploratory factor analysis. According to the results of one-way ANOVA, operating, education, and policy support sector showed that significant differences across type of foodservice, frequency of meals served, number of meals served per day, dietitians' education level and career. On the other hand, supervision sector showed that significant differences across number of meals served per day and dietitians' employment type. In conclusion, in order to increase the quality of sanitation in the foodservice operation, we should increase sanitation performance and enforce the food-safety education for foodservice workers. In addition, government should increase the policy support.
Sustainable practices of school foodservices are gaining more attentions. The study aimed to investigate dietitians' performance levels of sustainable practices in school foodservice settings in Gyeonggi Provinces. Using a survey method was used, and data were collected from 358 participants (response rate 59.7%) to be analyzed using the SPSS program. The evaluation tool for sustainable practices of school foodservices consisted of four sections and 34 criteria with 100 points. Employment status of the respondents was as follows: nutrition teachers 40.9%, dietitians (permanent) 45.1%, and temporary position dietitians 13.2%. Dietitians' performance for sustainable practices marked 65.67 points out of 100 (performance rate 66%) and were in the following order by section: sustainable foodservice management criteria (69%), support activities (69%), planning and evaluation (68%), and outcome management (52%). Regarding sub-sections, criteria that acquired higher performance rates were labelling of food origin (99%), use of seasonal vegetables and fruits (98%), food waste management by contract dealer (98%), and planning for reducing of food waste and solid waste (91%). Meanwhile, criteria that showed the lowest scores were installing water conservation devices on equipment (19%), operating food donation programs for communities (21%), use of sensor lights for electricity conservation (24%), planning for annual energy conservation (40%), and implementation of education programs for foodservice workers on sustainable activities (42%). Performance scores differed according to school levels and working experience of dietitians, indicating that dietitians at elementary school foodservices or with work experience of 15 to 20 years showed higher performance than those at high schools or with less than 5 years of work experience (P<0.001, P<0.05). Based on the results, action plans for improvement were suggested.
The purpose of this study was to analyze evaluation variables of service quality of Korean restaurant especially focused on cold noodle restaurants(CNR). The data were analyzed about customer’s expectation of food service quality, service quality was improved by employee’s service in restaurant and employee education in the focus on CNR. The survey was carried out 423 customers and 50 employees in Seoul and Kyunggi province. All statistical data analyses were conducted using the Statistical Package for the Social Science(SPSS version 10.0). The consumer’s evaluation score of service quality were significantly different by consumer’s characteristics. The well planned service at CNR must be developed according to consumer variables such as sex and age group. The evaluation score of service quality were not significantly different by seasonal variation and consumer’s menu selection. The evaluation score of service qualities in CNR were significantly different between customer variables with employees variables. All of the evaluation points of service quality in employees were significantly higher than customers. This result was show that well-trained employees were important factors in consumer satisfaction. Through the employee education program, consumer oriented service mind mort be to developed in employees and employees’ recognition about the importance of service increased the satisfaction of customer using CNR.
