Effect of Maternal Selenium Nutrition on pulmonary Selenium, Glutathione Peroxidase, and Phospholipid Levels in Neonatal Rats

  • The present study was designed to determine if prenatal and postnatal Se nutriture affects Se concentration, glutathione peroxidase(GSHPx) activity and phospholipid distribution of the neonatal rat lung. Female SD rats were bred and fed a semipurified Se-deficient(0.04ppm, Se-) or a Se-adequate(0.5ppm, Se+) diet through pregnancy and lactation. On d 2 of lactation, maternal dietary Se had no significant effect on pulmonary Se concentration of pups. On d 16 of lactation, mean milk Se concentration in Se- dams was significantly lower than that in Se+ dams. Milk Se concentration was reflected on lung Se concentration and GSHPx activity of d 16 pups, which were dramatically decreased in Se- pups. In addition, pulmonary disaturated phosphatidyl choline/total phosphatidyl choline ratio was also significantly decreased in Se- pups, implying impaired function of pulmonary surfactant. These data indicate that adequate Se nutrition is important in the maturation of neonatal rat lungs.

Health-related Factors, Nutrition Knowledge and Dietary Habits among Nursing and Allied Health College Students (간호보건계열 대학생의 건강 관련요인, 영양지식 및 식생활 태도)

  • Purpose: This study compares the differences in health-related factors, nutrition knowledge and dietary habits between nursing and allied health college students. Methods: Nursing students(n=499) and allied health college students(n=402) were surveyed on their health-related factors, nutrition knowledge and dietary habits. Data were collected from two universities in A city, Korea. Data were analyzed through descriptive statistics, $x^2$ distribution and t-test, $x^2$-test and Pearson correlation coefficient using SPSS 21.0. Results: The level of nutrition knowledge was higher among nursing students than students majoring in other fields. Scores regarding dietary habits were not significantly different between nursing students and other students. Conclusion: Nutritional education for college students is needed in order to improve their health. Nutritional education programs should be tailored to meet various needs of these students.

Effect of web-based personalized nutrition management on gut microbiota in Korean patients with irritable bowel syndrome aged between 20 and 30 years

  • Purpose: Dietary habits are strongly related to the symptoms of people with irritable bowel syndrome (IBS). Therefore, personalized nutrition management can help reduce symptoms and improve the quality of life of people with IBS. This study assessed the effectiveness of a personalized web-based nutrition management based on the types of food that trigger IBS symptoms. Methods: Sixty Korean adults with IBS according to Rome IV criteria in their 20s and 30s were enrolled in this study. The data from the final 49 patients who completed a three-month personalized nutrition intervention were analyzed. The general information, anthropometry, dietary intake survey, and gut microbiota were examined pre and post-intervention. The gut microbiota analysis included the relative abundance and the Shannon index. The food intake was recorded for two days for personalized nutrition education, followed by three months of personalized nutrition intervention. Statistical analysis was performed using the Wilcoxon signed-rank test in SPSS 26.0, with the significance set to p < 0.05. Results: The relative abundance of the gut microbiota changed after personalized nutrition management, with a significant decrease in the presence of Veillonella (p = 0.048). Furthermore, when the gut microbiota was analyzed according to the type of food that triggers symptoms, the diversity was increased significantly in the high fermentable oligosaccharides, disaccharides, monosaccharides, and polyols (FODMAPs) type (p = 0.031) and FODMAPs-containing gluten-type personalized nutrition intervention types (p < 0.001). Conclusions: Gut microbial diversity and gut microbiota distribution changed after using web-based personalized nutrition management. Hence, personalized nutrition management that considers trigger foods may improve IBS symptoms.

Meal skipping relates to food choice, understanding of nutrition labeling, and prevalence of obesity in Korean fifth grade children

  • This study was performed to investigate the differences in food choice, nutrition labeling perceptions, and prevalence of obesity due to meal skipping in Korean elementary school children. A national survey was performed in 2010 to collect data on food intake frequency, understanding of nutrition labeling, and body mass index from 2,335 fifth grade students in 118 elementary schools selected from 16 metropolitan local governments by stratified cluster sampling. The data were analyzed using the SAS 9.1 and SUDAAN 10.0 packages. Students who consumed three meals for 6-7 days during the past week were classified into the regular meal eating (RM) group (n = 1,476) and those who did not were placed into the meal skipping (MS) group (n = 859). The daily intake frequency of fruits, vegetables, kimchi, and milk was significantly lower in the MS group compared to that in the RM group (P < 0.001), whereas the daily intake frequency of soft drinks and instant noodles (ramyeon) was significantly higher in the MS group than that in the RM group (P < 0.05). The MS group demonstrated a significantly lower degree of understanding with regard to nutrition labeling and high calorie foods containing low nutritional value than that in the RM group. The distribution of obesity based on the percentile criteria using the Korean growth chart was different between the MS and RM groups. The MS group (8.97%) had a higher percentage of obese subjects than that in the RM group (5.38%). In conclusion, meal skipping was related to poor food choice, low perception of nutrition labeling, and a high prevalence of obesity in Korean fifth grade children.

Physicochemical Characteristic of Korean Wheat Semolina (우리밀 Semolina의 이화학적 특성)

  • The physicochemical properties of coarse semolina (CS), medium semolina (MS) and fine semolina (FS) were investigated to research method applied in noodles processing of Korean wheat semolina. Large particle (>250 ${\mu}m$) was over 75% in all semolinas, except for FS, and the particle distribution of MS and durum semolina (DS) was similar. Crude protein and crude ash were the highest in DS followed by CS>MS>FS. Crude lipid of DS was the lowest among samples and CS, MS and FS were not significantly different. L value was high in semolina with small particle distribution and starch damage was the lowest in DS followed by FS>MS. Amylose content was high in DS (29.80%) and FS (29.08%) with small particle distribution. Water binding capacity was the highest in DS, and FS showed the highest water binding capacity among Korean wheat samples. Solubility and swelling power were noticeably high in FS with low starch damage and small particle distribution. In scanning electron microscope (SEM), FS and MS showed distribution of separated fine particles of flours. From these results, the physicochemical properties of semolina showed many differences by grinding methods. FS should be applied in noodles processing through additional examination about characteristic of noodle making.

A Comparison on Dietary Habit and Foodservice Satisfaction of High School Students in Urban and Rural Areas (도시·농촌 고등학생의 식습관과 급식만족도 비교)

  • This survey was conducted to compare food habit and food service satisfaction of high school students in urban and rural areas. The questionnaires were collected from 130 students in Daejeon and 140 in Geumsan. 19.8% of students skipped breakfast because of no time(48.7%), just habit(28.2%), no appetite(20.5%), for weight control(2.6%). The dietary behavior of rural students was better than city in taking snacks and light meal(p<0.05). For health they concerned highly about nutrition label expiration date of processed foods(72.3%) and least in considering nutrition than taste & price(37.9%). The satisfaction of food served was highest in nutrition(3.31), and taste(3.28), smell (3.23), color(3.03), temperature(3.02). The food service satisfaction of rural students was higher than city in proper temperature(p<0.001), nutrition(p<0.01), color(p<0.001). The satisfaction of rural students was higher than city in quantity of bap & side dishes, quality of food materials(p<0.001). The satisfaction of rural students was higher than city in convenience of dining hall, rapidity of food distribution, offer of nutrition information, sanitation of utensils & meals(p<0.001). It is suggested that school dietitian in city should be more concerned about sanitary food service based on students' dietary life & preference.

  • This study aimed at elementary, middle, and high school dietitians who purchase ingredients for school meals. Therefore, for the study, the awareness and usage of nutritional information by 108 teachers and dieticians on 5 hazard-free meals using multivariate analysis of variance were investigated during May 18~21, 2021. Among the five questions that asked the general perceptions of school meal dietitians of 5 hazard-free meals, the perception that the "5 hazard-free foods can be easily distinguished" was the lowest. Problems were associated with using the 5 hazard-free meals such as "expensive price," "no variety in items," "disruption in the supply and demand," "inconsistent quality," and "lack of taste," in that order. Therefore, to improve 5 hazard-free school meal service, it is necessary to not only lower the price burden by providing subsidies to schools but also improve the development and distribution structure of various 5 hazard-free foods.

Blood Pressure Distribution of Adolescents in Taejon City and its Relationship with Obese Index and Several Environmental Factors (대전지역 중학생의 혈압 분포와 비만지수 및 일부 환경인자와의 관계)

  • Blood pressure distribution of adolescents and its several related factors including obesity were investigated through blood pressure measuring by automated oscillometric method, anthropometry, and questionnaire. Subjects were 480 female and 480 male middle school students living in Taejon. Mean values of systolic(SBP)/diastolic(DNP) blood pressure of male and female students were 118.4$\pm$11.0/69.5$\pm$9.6 mmHg and 116.9$\pm$10.4/69.5$\pm$8.6 mmHg, respectively. Their blood pressures, particularly SBP, increased with age and showed higher value in the males than in the females. All frequency distributions of SBP and DBP, by sex and age, showed normal curves and their 50th, 90th, and 95th percentiles were presented. As obese index increased, both SBP and DBP were elevated and the prevalence of hypertension which was classified by Task Force Report(1987) increased, particularly in male students. Body weight and BMI were positively correlated with both SBP and DBP, and hight was also positively correlated with SBP or DBP. Our data inicated that blood pressure and hypertension prevalence of adolescents tended to increase and various internal and external environmental factors affected them. It was emphasized that blood pressure measurement should be done in every medical examination of adolescents and the nationwide Korean standard of blood pressure for adolescents have to be prepared. The Survey on the Foodservice Management System of the Child Care Centers in Ansan (안산시 보육 시설의 급식 관리 실태 조사)

  • This study was carried out to investigate foodservice management of child care centers in Ansan and to suggest the basic data for foodservice management improvement. A questionnaire survey of 48 child care centers in Ansan was undertaken. Child care centers were categorized large (children eve. 100) and small(children less than 100) by size and public and private by type. Survey questionnaires consisted of general background, employee, food inspection and storage, kitchen, cooking facilities, food distribution and hygiene utensils. The results of this study are summarized as follows: because 46.9% to 56.3% of the centers took a dietitian in employment, foodservices in most of centers were not managed by professionals. The average of employee were 0.77 persons in smalll centers and 1.65 persons in large centers. The average space of kitchen were 3.86 pyung in smalll center, 6.06 pyung (1 pyung=$3.3058m^2$) in large centers. According to the data analyzed from Food inspection and storage, kitchen, cooking facilities, food distribution and hygiene utensils, the results indicate that the foodservice management of child care centers were in a relatively poor state. The director in child care centers should recognize the importance of the sanitation management and pay more attention to food service facilities. To improve foodservice performance at child care centers, it is required fur the Ministry of Gender Equality and Family to develop both the kitchen facility model based on the general sanitation standards and guidelines for child care centers.

Job Analysis of Food Safety Specialist Based on the Developing A Curriculum(DACUM) Method (DACUM(Developing A Curriculum)을 이용한 식품 안전 전문가 직무 분석)

  • The purpose of this study was to define the job description for food safety specialist, and to describe the duties and tasks of the job based on the detailed analysis of specific food safety work performed by dietitians. The job analysis was 8 professional panels and a Developing A Curriculum(DACUM) facilitator. The research was done in order to fully define the task element, process, and sequence of a food specialist and was completed by DACUM analysis. The job definition of food safety specialist is one who manages food safety through analysis, safety evaluation, inspection, and hazard blocking in all processes related to the purchase, distribution, storage, manufacture, and marketing of foods and food materials. The job description on the DACUM research chart for food safety specialist contained 7 duties and 79 tasks. Its duties were defined as the specific and independent work of a food safety specialist, and were composed of 7 duties, i.e. hazard analysis of foods and related affairs, safety evaluation of purchased food materials, safety management of food/food materials distribution/storage, safety management of food manufacture, safety examination of food marketing, administration affairs on food safety, and self-development. For the future, this study suggests a curriculum, that shall be basis of program planning and food safety operation for subjects within many schools.
