  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.

  • The purpose of this study was to evaluate a nutrition education program designed to reduce sugar intake in preschool children. The nutritional knowledge, dietary attitude, dietary behavior, and food intake with a sweet taste in preschool children were tested before and after 4 weeks of nutrition education from March 8 to April 1, 2016. The preschool children were recruited in Dobong-gu, Seoul. The subjects were divided into two groups; educated (N=59) and non-educated group (N=40). Statistical analyseis were performed using SPSS 22. The nutritional knowledge about sweet tasting food was significantly increased (P<0.01) in the educated group and significantly decreased (P<0.01) in the non-educated group. The dietary attitude toward sweet tasting food was significantly decreased (P<0.05) in the educated group but not significantly changed in the non-educated group. The dietary behavior toward sweet tasting food was significantly decreased (P<0.05) in the educated group and significantly decreased (P<0.01) in the non-educated group. The major food sources of sugar intake were not significantly changed in either groups. The major food sources of sugar intake in the 5 years old children were yogurt products>sweetened breads>cookies/biscuits>chocolate>cereals>beverages>sweetened milk>sweet spicy chicken>Tteokbokki. Although there are some limitations in this study, due to the short length of the nutrition education and lack of active participation by the parents, the results suggest that effective nutrition education on sweet tasting food can bring about changes in nutritional knowledge as well as dietary attitude.

Using questionnaires, results were gathered and analyzed. Dietary behavior, food group intake and the needs of nutrition education were scored by a five-point Likert scale. Chi-square and student t-test were done for significant gender difference. The correlation between the needs of nutrition education with dietary behavior and food group intake was obtained by Pearson's r. The dietary attitude of 'try to eat first' and 'eating fast' were higher score in boys than in girls(p<0.05). Most of the students thought they didn't have any nutritional problems(71.8%). Nutrition education was considered necessary(54.9%) for proper growth and development(53.0%) in middle school. But 45.1% of students did not suggest by the reasons of 'short time to change'(28.2%), 'more effective in home'(27.4%). The appropriate time of nutrition education was pre-school(28.2%) or elementary school(27.4%), once a week(boys 51%, girls 71.3%) in frequency(p<0.001), and the information acquired by TV/Radio(30.0%) and internet(26.6%). Students(46.0%) wanted to know about 'growth and nutrition'. They were to learn information on the 'healthy growth'(4.10) and 'adolescent nutrition'(4.03). The vegetables group consumption and the thought of dietary attitude 'try to modify bad eating habits' were correlated with almost all categories of desired nutrition education. • This study was implemented to understand the motivation factors for $2^{nd}$ grade schoolchildren that effect on their preference for the sweet taste. The subjects included were 118 children (59 boys and 59 girls) and 118 children's guardians, from one elementary school. Children participated in sweet preference test and questionnaire survey with researcher's guidance provided in the school. Children's guardians were asked to fill out the questionnaire via home-letters. The results were as follows: 59% of the children preferred the cocoa beverage with the highest concentration of sugar among five cocoa beverages (0%, 2.5%, 5%, 7.5%, and 10% of sucrose/milk volume). The variables consisted of affective attitude, cognitive attitude, self-efficacy, parenting style, and sweets frequency. According to the analysis, sweet preferences were correlated with children's affective attitude (r=-0.207, p<0.01), self-efficacy (r=-0.288, p<0.01), frequency of drinking carbonated beverage (r=0.272, p<0.01), preference for yogurt (r=0.184, p<0.05), and preference for sweet bread (r=0.226, p<0.05). These results indicated that children can be more affected by affective attitude than cognitive attitude, and self-efficacy can be an important motivation factor to control the eating behavior related to sweets. Therefore, nutrition educators need to focus on developing various methods related to increasing self-efficacy for encouraging and motivating healthy eating behavior in children.

Then this research estimate each group's nutritional knowledge, nutritional attitude, dietary behavior, balance of three meals, and health checking their clinical symptom to investigate the effects of the SLP. This research applied anthropometric data, questionnaires and food intake data using 24 hours recall method. Each group's age average was same as 14.0 years old respectively. The average score of nutritional knowledge and condition of balance of lunch were significantly higher in SLP group than those of non-SLP group, although, there were no significant differences in the scores of nutritional attitude, dietary behavior, and balance of breakfast and dinner within both groups. This research showed that SLP had positive role on nutritional knowledge and balanced lunch. However, current SLP is not sufficient to cause change the nutritional attitude and dietary behavior. To make more applicable and effective result of SLP leading nutritional attitude changes and development of appropriate dietary behavior, certain level of nutritional education to the student may be important.

  • This study investigated the body image, body stress, eating attitude, and dietary quality in middle school girls. Questionnaires were administered to one hundred fifty seven middle school girls in Seoul area. The subjects were categorized into the five groups according to their body mass index (BMI); 1) severely under-weight (BMI < 16.5 $kg/m^2$), 2) under-weight (16.5 $\leq$ BMI < 18.5 $kg/m^2$), 3) normal weight (18.5 $\leq$ BM I < 23.0 $kg/m^2$), 4) overweight (23.0 $\leq$ BMI < 25.0 $kg/m^2$), and 5) obese (BMI $\geq$ 25 $kg/m^2$). 7.0%, 14.6%, 58.9%, 10.2%, and 10.2% of the subjects were classified as severely under-weight, under-weight, normal weight, overweight and obese groups, respectively. Regardless of the BMI, the subjects had disturbed body image, body stress, and poor eating attitude. The actual BMIs of the normal weight, overweight and obese subjects were significantly different from their desired BMI and perceived BMI, representing these subjects dissatisfied their body shape. Almost all subjects tried to lose their body weight even in the severely under-weight and under-weight groups. There were significant correlations of BMI with body image disturbance (p < 0.05), body stress (p < 0.01) and eating attitude (p < 0.05). These results indicated that middle school girls who have higher BMI seemed to have more body image distortion, body stress and risk of eating disorder. However, any significant difference in dietary quality among the five groups was not observed even though their dietary patterns were not balanced. As a conclusion, it is required that middle school girls should correct their distorted body image and body stress. Also, efforts to improve eating attitude, dietary pattern and nutritional status in the middle school girls are needed.

  • This study was made to find out the relationship between the eating attitude influenced by an eating disorder and nutritional knowledge among 441 female college students. A self-report questionnaire was used, and the summary of the results are as follows : Almost all of the surveyed female college students were in criteria of standard weight, however they regard themselves more obese than what their actual body shape normally shows. The correlation between perceived body shape and the eating attitude influenced by an eating disorder turned out to be high(p<0.001). The significant level of correlation between the perceived body shape and the eating attitude test-26(EAT-26) scores showed much higher than that obtained between actual shape, degree of obesity and eating attitude test-26(EAT 26) scores(p<0.001). There was no significant level of correlation between the defree of obesity and the average score of nutritional knowledge obtained out of the total questionnaire, however it showed significant level of correlation between macronutrient and roughage(p<0.05), fat and calorie requirement(p<0.01). There was significant correlation among perceived body shape, actual weight and eating attitude influenced. by an eating disorder. Thus the correct perception of body shape turned out to be an important factor in obtaining the desirable eating attitude and adequate nutritional knowldege.
