  • This study empirically examined the actual level of elementary school children's knowledge of nutrition and the extent of current nutrition education for the children through the use of textbooks. Two or three classes were sampled from each of six schools, respectively, in Gangneung; of the 562 questionnaires that were distributed, 537 were returned and used for analysis. Respondents were all sixth-graders, on average boys and girls were 153.02$\pm$8.19㎝ and 152.79$\pm$7.15㎝ in height and 45.27$\pm$10.32㎏ and 43.33$\pm$7.46㎏ in weight, respectively, which was consistent with others' research. Most children had two siblings and a working mother, considered that they were well off, and their mother prepared meals. Children regularly had breakfast and dinner, although more children had dinner than breakfast. As a whole, their knowledge of the main nutrients contained in foods was lower than their general knowledge of nutrition. There were significant differences in knowledge of the main nutrients contained in foods, with girls showing more knowledge than boys (p<0.01). Most of them learned about nutrition at school, followed by home. At school, Practical Technology classes taught them the most about nutrition. Although Physical Education classes were expected to teach about nutrition in a quantitative way, they accounted for just 4.7% of the overall knowledge. As for the children's understanding of nutrition education through use of a textbook at school, just 19% of the students gained a very good understanding. As for interest in nutrition education at school, 22.2% of the students had no interest, while girls were more likely to have their interest in nutrition education at school affected by knowledge of nutrition than boys. For both boys and girls, the most desired method of education was cooking practice. More research across subjects is necessary so that nutrition education concentrated on the curriculum for fifth-graders can be provided by stages from the lower grades. Since cooking practice or games were preferred, it is necessary to develop nutrition education methods to incite active interest rather than passive education.

  • The purpose of the study was to implement and evaluate a nutrition education program for preschool children. Applying the PRECEDE-PROCEED model, the nutrition education program was developed and focused on changing beliefs, increasing nutrition knowledge and consumption of vegetables & fruits (V/F) and dairy foods. Subjects were children attending a childcare center in Seoulwho were grouped into education (n = 33) and control group (n = 32). Education group received four sessions of nutrition education during 2011 fall. Both groups completed the questionnaire at pretest and posttest, measuring nutrition knowledge, beliefs, and preferences of V/F and eating behaviors. Compared to control group, education group made significant gains in total score of nutrition knowledge after the education (p < 0.05). In addition, the pretest-posttest changes in total score of beliefs regarding V/F consumption and eating behaviors were higher in the education group than in the control group (p < 0.05). Two groups were significantly different in the pretest-posttest changes in specific beliefs regarding the benefits of V/F consumption and some eating behavior. However, there were no changes in the preferences of vegetables or fruits between the two groups after the education. The consumption of V/F and dairy foods was not significantly different after the education. This study revealed that nutrition education for preschoolers was effective in improving nutrition knowledge and perceived benefits regarding V/F consumption and specific eating behavior. This study suggested that more intensive education is needed to induce changes in eating behaviors. This program can be used in nutrition education of children at the childcare centers or kindergartens.

  • With the increase of elderly people, educators have begun designing experiences to prepare students to work with elderly group. The purpose of this study is to evaluate the knowledge and attitude of students majoring in food and nutrition for the elderly and their intentions to provide services for the elderly. The knowledge level of the students was in a medium range, and no relationship was found between knowledge and attitudes using Pearson correlation. The knowledge did not significantly differ across gender and academic level when compared using t-test and ANOVA, but knowledge level was significantly different based on residential experiences with elderly over 65 years of age (p < 0.05). Students had neutral attitudes toward working with elderly employees and working for elderly. Students had positive intentions to work with elderly employees, seek employment in an organization for elderly clients/customers, and seek opportunities for positive social interaction with the elderly. However, students do not have positive work preference with elderly employees. As a result of multiple regression analysis, it was found that knowledge was not a predictor of intentions to provide services to the elderly. However, attitudes toward working with elderly employees, attitudes toward elderly, residential experiences with elderly > 65 years have been predicted the intentions to work with elderly employees. Attitudes working with elderly employees and attitudes toward elderly influenced the intentions to work in the organizations to provide services to elderly. This study can be identified the need for additional didactic preparation and experiences to prepare students to work with elder aging population.

  • This study was conducted to examine the nutritional knowledge and dietary habits by gender and a mother's employment status for middle school students. The subjects consisted of 423 students (212 boys and 211 girls). As for mother's employment status, 61.7% of the mothers were working, and 38.3% were housewives. The results from the analysis on differences of nutritional knowledge and dietary habits showed that girls tended to have a higher nutritional knowledge than boys (p<0.01). In terms of dietary habits, boys appeared to have more desirable eating habits than girls. As for the mother's employment status, only students whose mothers were doing housework tended to have higher nutrition knowledge and more positive dietary habits than students whose mothers were working. The influence of nutritional knowledge was found to have a significant effect on dietary habits (p<0.001). In addition, nutritional knowledge (B=0.168, p<0.01) turned out to have an influence on dietary habits, where a higher nutritional knowledge produced more positive dietary habits. Considering the results described above, nutritional knowledge appears to have a significant influence on dietary habits. Therefore, instructions on the importance of nutritionally well balanced meals must to be reinforced in nutritional education.

  • With recent increases in demand for women's social participation, children have tended to favor western-style foods and dislike vegetables (Veg.). The objective of this study was to evaluate dietary behavior and Veg. intake in 612 elementary school children (339 boys; 273 girls) in Gyeonggi-do. 66.5% of the subjects reported that they liked Veg. The most frequent reason given for this preference in Veg. liking group was that vegetables were 'delicious' (35.6%), followed by 'nutritious' and 'frequent intake'. The most frequent reason given for disliking Veg. in the Veg. disliking group was that vegetables are 'not delicious' (94.6%). Approximately half of the subjects had correct knowledge about vegetables. The total score of general nutrition knowledge was 7.7 points (a perfect score is 10 points) and the majority of students generally had good dietary behaviors. The Veg. liking group scored higher on knowledge about Veg., general nutritional knowledge, dietary behavior, and Veg. preference than did the members of the Veg. disliking group (p<0.001). The 'active' group had the highest score for dietary behavior (p<0.001), and the scores for dietary behavior and Veg. preference increased with increasing self-rated health status (p<0.001). The score of normal BMI group for nutritional knowledge about Veg. was higher than that of the underweight group (p<0.05). The higher self-rated academic score group showed higher on knowledge about Veg., general nutrition knowledge, dietary behavior (p<0.001) and Veg. preference (p<0.05). Dietary behavior and preference of Veg. were positively correlated with nutritional knowledge. To improve health by increasing Veg. intake, education about the nutritional importance of Veg. should be needed, and continuous nutritional education is recommended to foster good food habits and Veg. preferences in children.

  • This study was to investigate the effect of the education about general nutrition knowledge on the acceptance of TV food advertisements in adolescents. Twenty hours of nutrition related education in home economics classes were done during 3 months, to conveniently selected 784 first grade middle school students living in large and small cities and rural areas of Chungnam Province. The education effects were evaluated through questionnaire surveys before and after the education and their comparative analysis. Average TV watching time was $29.2\pm1.16$ hours per day, which was about one hour longer on weekends. Nearly half of the subjects watched TV mainly after 9 PM. After nutrition education, nutrition knowledge scores of total subjects were significantly increased from $7.73\pm2.16$ to $10.25\pm2.51$ with a full score of 16. Food attitude and food habit scores also significantly increased from $32.45\pm4.65$ (full score 50) to $33.93\pm4.68$ and from $36.20\pm5.70$ to $37.29\pm5.87$, respectively. The general acceptance of TV food advertisements scored $25.25\pm4.44$ (full score 40) before education and $26.90\pm4.55$ after education, which was significantly raised by the education. Acceptance scores of TV food advertisements showed significant positive relationships with the scores of nutrition knowledge, food attitudes, and food habits. In addition, TV watching time had negative relationships with nutrition knowledge, food attitudes, and food habits scores, but not with acceptance score of TV food advertisements. The above results suggested that school-based nutrition education improved slightly but significantly the attitude of accepting TV food advertisements maybe through increasing nutrition knowledge and making food attitudes and habits better. Nutrition education focused on the evaluation and acceptance of food advertisements are further needed to improve the TV food advertisement acceptance of adolescents.
