The most important task in Korean dairy industry is to keep the seasonal and annual balance of raw milk supply and demand. Too much surplus milk supply which causes dumping sale of market milk makes dairy industries get in trouble of management, and eventually affects to farmers and consumers economically. As balancing of supply and demand is so important in the fee economic market system, the adaption of the quota system of milk production and seasonal price differentiation has been recommended very often as a method of controlling the milk supply and demand. However, this recommendation did not go through successfully due to the strong objection of dairy farmers. Recently, the voice of consumer's requirement for safer and more hygienic, and high protein, low fat level dairy product is getting stronger. By knowledge of this kind changes, quality improvement in nutrients and hygiene is the most positive way to expand the volume of milk consumption. To meet the consumer's demand, therefore, it is necessary to revise the level of milk fat content and the hygienic grading system for the payment system of raw milk.
Seven day's menus consisting of the Korean traditional dietary patterns were prepared according to the Korean nutrition allowances per capital of whole population. After cooking foods one day's meal was collected, homogenized for one week. Nutrients in each day's meal were analysed. The results of this analysis are as follows ; Lipids contents were about 23% higher than the data obtained nationwide nutrition survey conducted in 1984. This suggests the increasing tendency of the fat the oil consumption . PUFA ratio in lipid was 35%, that the customary Korean cooking include high confirmiry amount of vegetable oils. Daily tocopherol intake was 8.3mg . This results is believed to as one reference to set up Korean R.D.A for tocopherol.
This paper reviews many aspects of ritual and traditional slaughter methods used to produce meat for human consumption in different countries. Undoubtedly, meat is an important source of nutrients that are essential for human health. The global meat market has become increasingly interested in Islamic halal and Jewish kosher slaughter, in particular because of potential market opportunities. The requirement for unstunned slaughter or reversible pre-slaughter stunning makes religiously-based methods of animal slaughter unique. This study suggests a simple framework for a halal and tayyib meat supply chain for the Muslim community that also maintains meat quality and wholesomeness from farm to table as a model for the religious slaughter of animals.
Processes that products we consume that contain dairy foods comprise planning → design → production → quality/suitability assessment → safety verification → launch → distribution → consumption. Analysis of nutrients and potential toxins at each stage in the production process is essential to verify food quality, suitability, and safety. Products display ingredient lists and nutrient content to help consumers choose healthy foods. These products should also be fully assessed for microbes and toxins before reaching consumers. Products require verification through test inspections. However, this step has reduced value from a food manufacturer's viewpoint, because it does not visibly impact real economic trends. The most important first step in determining the quality and suitability of products is the inspection capability of food companies.

To investigate the contribution of macroalgae to biogeochemical nutrients and carbon cycles, we measured the uptake rates of nutrients and $CO_2$ and characteristics of fluorescence of Saccharina japonica (Laminaria japonica Areschoug) using an incubation method in an acrylic chamber. From January to May 2011, S.japonica was sampled at Ilkwang, one of well-known macroalgae culture sites around Korea and ranged 46~288 cm long and 4.8~22.0 cm wide of whole thallus. The production rate of dissolved oxygen by S. japonica (n=25) was about $6.9{\pm}5.8{\mu}mol\;g^{-1}$ fresh weight(FW) $h^{-1}$. The uptake rate of total dissolved inorganic carbon ($TCO_2$), calculated by total alkalinity and pH, was $8.9{\pm}7.9{\mu}mol\;g^{-1}\;FW\;h^{-1}$. Mean nutrients uptake were $175.6{\pm}161.1\;nmol\;N\;g^{-1}\;FW\;h^{-1}$ and $12.7{\pm}10.1\;nmol\;P\;g^{-1}\;FW\;h^{-1}$. There were logarithmic relationships between thallus length and uptake rates of nutrients and $CO_2$, which suggested that younger specimens (<100-150 cm) were much more efficient at nutrients and $CO_2$ uptake than old specimens > 150 cm. There was a positive linear correlation ($r^2$=9.4) existed between the dissolved oxygen production rate and the $TCO_2$ uptake rate, suggesting that these two factors may serve as good indicators of S. japonica photosynthesis. There was also positive linear relationship between maximal quantum yield ($F_v/F_m$) and production/uptake rates of dissolved oxygen, $TCO_2$ and phosphate, suggested that $F_v/F_m$ could be used as a good indicator of photosynthetic ability and $TCO_2$ consumption of macroalgae. Maximum relative electron transport rate ($rETR_{max}$) of S. japonica increased as thallus grew and was high in distal part of thallus which may be resulted from the increase of photosynthetic cell density per area. The annual $TCO_2$ uptake by S. japonica in Gijang area was estimated about $1.0\sim1.7{\times}10^3C$ ton, which was about 0.02-0.03% of carbon dioxide emission in Busan City. Thus, more research should be focused on macroalgae-based biogeochemical cycles to evaluate the roles and contributions of macroalgae to the global carbon cycle.

Although flounder is one of the most important marine fish for aquaculture in Korea, feeding the flounder in commercial farms depends mainly on moist pellet in which over 70% frozen fishes (e.g. frozen horse mackerel) are incorporated in its formulation. Therefore, for further expansion of flounder farming, it is essential to employ practical formulated feeds that can support reasonable growth. Development of nutritionally balanced and cost-effective feeds is dependant on the information about nutritional requirement and feed utilization of the species. Nutrient and energy source in feed are needed for the growth and maintenance of fish. Protein is probably the most important nutrient affecting fish growth and feed cost. Therefore, it is essential to determine the optimum dietary protein level for the growth of fish, both its high proportion in the feed and because it is the main factor in determining feed cost. Dietary energy level is also critical because protein source in the feed is utilized as an energy source when the feed deficient in energy is fed to fish, whereas when the feed excess in energy is fed to fish, feed consumption decreased and resulted in growth reduction due to lack of other necessary nutrients for normal growth. Improper dietary protein, energy levels and/or their ratio will lead to an increase of fish production cost and deterioration of water quality resulting from wasted feed; thus, they are important in formulating commercial feed. Dietary lipids play important roles in providing energy and essential fatty acid for normal growth and survival of fish. Although carbohydrates are not essential nutrients for carnivorous fish, these compounds play important roles as a low-cost energy source for protein sparing and also as a feed binder. Nutrition researches for flounder have identified its requirements of protein, lipid and essential fatty acid, vitamin, and minerals for normal growth. Other studies have also been carried out to investigate the utilization of the protein, lipid and carbohydrate sources. Based on these nutritional information obtained, practical feed formulations have been studied for improve aquaculture production of flounder. The results of the researches on utilization of dietary protein, lipid and carbohydrate by flounder are discussed in this review.
Two experiments were conducted to determine the effect of feeding levels on intake and nutrient utilization of oat (Avena sativa) hay (OH) by goats and potential feeding value of leftovers from high levels of offer in sheep. In experiment 1, the goats (15) were offered OH at three levels of feeding to give leftovers of about 20% (T-1), 35% (T-2) and 50% (T-3) of DM offered. A marked effect of refusal rate of OH on intake and digestibility of nutrients was evident. Allowing selective consumption at higher levels (T-2 and T-3), the intake of DCP and TDN from OH was found not only to meet the maintenance requirement but provided surplus nutrients for moderate production. In experiment 2, Sheep (3) were offered one of the three dietary treatments viz OH, refusals left uneaten by goats in T-2 and T-3 (OHR) and 3% urea treated oat hay refusals (UTR) in a $3{\times}3$ latin square design. Though the potential feeding value of leftovers (OHR and UTR) was lower than OH, the results confirm the possibility of their effective use. It was concluded that feeding above the conventional ad libitum level could be an alternative to improve the performance of ruminants fed feeds like oat hay. The potential impact of the strategy would, however, depend on the effective reutilization of leftovers for feeding other animals.

Objectives: According to preceding studies, many people with mental disability have unbalanced dietary habits or excessive intake of calories. Most of them are overweight or obese due to lack of self-control for food consumption, swallowing with inadequate chewing and physical inactivity. Therefore, this study aimed to assess the nutritional intake, including carotenoid, in mentally disabled people and find out a possible solution for nutritional improvement. Methods: People with intellectual disability (N=28), emotional disability (N=44) participated in this study. The disorder grades were from I to III and ages were between 20 and 65 years. Assessments included anthropometry, daily intake of nutrients, including carotenoid, ROMA III questionnaire for assessing bowel movement. Results: The average BMI of intellectually disabled people and emotionally disabled people was in the range of overweight and obesity respectively ($23.7{\pm}6.3kg/m^2$, $25.8{\pm}4.1kg/m^2$). Overall, the frequencies of vegetable and dairy product intakes were lower in this population. When compared with Recommended Nutrient Intake (RNI) from Dietary Reference Intakes for Koreans 2010, the intakes of vitamin $B_1$, vitamin $B_2$ and calcium were insufficient in both groups. Also, lycopene intakes of carotenoid were low, compared with traditional Korean diet of the non-disabled people from the second year 2008 of the 4th National Health and Nutrition Survey. In addition, emotionally disabled people also had lower intake of cryptoxanthin. Conclusions: The mentally disabled people in this study showed lower intakes of vitamin $B_1$, vitamin $B_2$, calcium and carotenoids. Based on these findings, we recommend that it is important to encourage mentally disabled people to consume sufficient amounts of such nutrients in order to promote nutritional status.

Objective: Dietary nutrients may play a significant role in depressive disorders. However, sufficient evidences in epidemiological studies are limited. We investigated the cross-sectional association between dietary nutrients and the prevalence of depressive disorder in Korean adults using representative Korean data. Methods: Participants were 2,938 adults aged 19 ~ 64 years from the Korea National Health and Nutrition Examination Survey (KNHANES) conducted in 2014. Dietary intakes were assessed using 24-h recall method. Depressive disorder was assessed using Patients Health Questionnaire-9 (PHQ-9, self-depression test) as applied in 2014 KNHANES only. We defined depressive disorder as having a PHQ-9 score of ${\geq}10$, which was characterized as moderate depression and more. A multivariate logistic regression analysis was performed to estimate the adjusted odd ratios (ORs) and 95% confidence interval (CIs) of depressive disorder. Results: Among the 2,938 subjects, 170 were identified as having depressive disorder. The multivariate-adjusted regression analysis demonstrated that the risk of depression was significantly associated with riboflavin (OR = 0.44, 95% CI: 0.24-0.85, p for trend = 0.018), thiamin (OR = 0.48, 95% CI: 0.23-0.99, p for trend = 0.045), and vitamin C (OR = 0.57, 95% CI: 0.34-0.95, p for trend = 0.025) in the highest versus lowest tertiles of intake. Conclusion: The high consumption of riboflavin, thiamin, and vitamin C was associated with the low prevalence of depressive disorder in Korean adults.
This study was performed to compare the anthropometric and the food and nutrient intake of the adolescents between urban areas and islands in south Kyungnam and to identify their nutritional problems. A questionnaire survey was distributed among 383 middle school students for the food and nutrient consumption and other nutritional attitudes including socioecomonic status. The height and weight of the students were measured as well. Socioeconomic status, such as income, educational level, and jobs of the urban students parents was better than that of the island students. There was no significant difference in height between the students of both areas, but the body weight of the urban male students was far heavier than that of the other group. It is very interesting to note that the energy intake of the urban male students was much lower than that of the island male students. The students of the two areas consumed more protein, Vit B$_1$, Vit B$_2$, niacin and Vit C than the recommended daily allowances(RDA) but the intake of Ca, Fe, Vit A was less. As to the sources of animal fat, the urban males consumed much more. Regarding the taste preference, the study shows that urban male students are more likely to choose sweet, salty and soft tastes than island male students. In the case of female students, although island students prefer a rather hot taste, urban students are more likely to prefer sweet and soft tastes. The favorite foods of urban students are meat products, fastfoods, chocolate, cheese and milkshakes, while foods like cooked rice with assorted vegetable are the favorite of the island students. In general, the preference degree for meat products and fruits rates higher than for vegetables. Conclusively the urban students had a tendency of being obese and the intake of all nutrients by the urban adolescents was much lower than that of the islanders. In this study, the cause can be found in significant differences in consuming animal fat, of taste preference and of choosing favorite food. Accordingly a nutritional intervention or educational program is required to adjust the imbalanced intake of some nutrients for the adolescents in this province.
