청주지역 중학생의 패스트푸드 섭취량에 대한 영양소 밀도 평가 (Nutrient Density of Fast-Food Consumed by the Middle School Students in Cheongju City)

  • The purpose of this study was to investigate fast-food consumption and it's nutrient density, and the correlation between subject's characteristics and consumption frequency of fast-foods among middle school students. The questionnaires were distributed to 150 male and 190 female students in Cheongju city. The data were analyzed using SAS and statistics used were percent of frequency, $X^2$-test, t-test, and pearson's correlation coefficient. The main reasons for using fast-food restaurants were 'good taste' and 'convenience'. The major concerns when the subjects choose fast-foods were 'taste ($65.9\%$), price ($20.3\%$) and 'nutrition'($6.0\%$). The consumption pattern of fast-foods go as follows: twice a month ($42.3\%$), once a week ($31.5\%$), and less than once a week. The number of fast food items that the subjects ate for one meal was two ($46.0\%$) or three ($33.2\%$). The most frequently chosen combination of foods for number of two choices was beefburger and cola. The mean average energy intake from fast foods for one meal was 620.7 kcal for male, 504.5 kcal for female. The energy ratio of carbohydrate : protein fat from fast foods was 49 : 14 : 43, which means fat intake is much higher than recommended level ($20\%$). Fiber was appeared to be the lowest on the nutrient density which was $17.7\%$ of the recommended level for Koreans, vitamin C was next ($22.8\%$ for male, $20.1\%$ for female). In mineral, iron was the lowest ($71.8\%$ for male, $67.1\%$ for female), and protein was over $100\%$ for both males and females. Frequency of fast food intake was positively correlated with eating frequency of the salty, the sweets, him, caffeine containing foods, instant noodles, and cookies. In conclusion, frequent consumption of fast foods can lead unbalanced nutrient intakes for middle school students, and those who consumed fast foods frequently showed undesirable food habits in their daily meal. Therefore, nutrition education for middle school students should be needed to encourage them to choose more nutritious food and have healthier dietary pattern.

초등학교급식에서 제공된 음식의 잔식량과 영양섭취 실태에 관한 연구 (A Study on Plate Waste and Nutrient Intake of School Lunches in Elementary School)

  • The purposes of this study were to (a) measure plate waste of school lunches, (b) evaluate the nutrients actually consumed by students in elementary school foodservice. The survey was conducted between May 11 and July 1, 1998 through the practical measurement and questionnaires. Statistical data analysis was completed using SAS program for descriptive analysis and T-test. The results were summarized as follows: 1. The mean plate waste of menu group were soup, vegetable side dishes, kimchi, and meat side dish in order. 2. There was little difference between estimation and weighing of plate waste. 3. The satisfaction of children with school lunches were significantly higher for boys(73.55%) than for girls(71.13%). The highest level of the satisfaction was meat side dishes among boys and girls. 4. The majority reasons for leaving leftover were 'too big portion' and 'food is not tasty'. 5. There was significant negative correlation between plate waste and student's satisfaction. In summary, increased satisfaction with school lunches in most menus resulted in decreased plate waste rate. 6. Comparison of $\frac{1}{3}$ RDA, energy, vitamin A and calcium were below recommended allowances for boys while energy vitamin A, calcium and iron were for girls. In general, the nutrient intake was more adequate for boys than girls because of the girl's lower allowances.

근로자의 근무유형별 건강상태와 영양섭취상태 비교 연구 (Health and Nutritional Status of Industrial Workers)

  • The study was curried out to collect information to establish a framework for nutrition education for the prevention of chronic degenerative disease. We analyzed differences in diet quality, food habits and health status of workers by work condition. Anthrometric parameters of height, weight and body fat were measured and biochemical parameters including glucose, total cholesterol, GOT, GPT and hemoglobin were determinded for 194 subjects. To assess the nutrient intake and diet quality of workers, dietary intake was measured by the day 24-hour recall method, Average daily nutrient intake, except for phos-phorous and vitamin C was lower than Korean RDA. The obesity related behavior score was significantly better in laborers than in office workers, while chronic degenerative diseases related to food habit score was significantly better in laborers than in office workers, while chronic degenerative diseases related to the food habit score was beet in offices workers than in laborers. Blood pressure, blood glucose levels were significantly higher in laborer than in office workers. Dietary variety score (DVS) food composition group score(FCGS), mean adequacy ratio(MAR) of office worker were better than those of labor workers. When diet quality was evaluated by FCGS(food composition group score) 16.0% of the subjects acquired 5 points and 14.4% of the subjects acquired 2 points. MAR and INQ showed a significantly positive correlation with DVS and FCGS . This results indicated that the onset possibility of hypertension and diabetes mellitus among chronic degenerative disease was higher in laborers than in office workers, while the onset possibility of obesity was higher in office workers than in laborers. In conclusion the overall diet quality of office workers is betters than that of laborers, therefore, nutrition education for prevention of chronic degenerative disease of industrial workers needs to be more focused on the improvement of the health status of laborers.

Dietary changes in Vietnamese marriage immigrant women: The KoGES follow-up study

  • BACKGROUND/OBJECTIVES: The immigrant population has grown considerably in South Korea since the early 1990s due to international marriages. Dietary changes in immigrants are an important issue, because they are related to health and disease patterns. This study was conducted to compare changes in dietary intake between baseline and follow-up periods. SUBJECTS/METHODS: Two hundreds thirty three Vietnamese female married immigrants. Baseline data were collected during 2006-2009, and the follow-up data were collected during 2008 and 2010. Food consumption was assessed using a 1-day 24-hour recall. RESULTS: The amount of the total food consumed (P < 0.001) including that of cereals (P = 0.004), vegetables (P = 0.003), and fruits (P = 0.002) decreased at follow-up compared to that at baseline, whereas consumption of milk and dairy products increased (P = 0.004). Accordingly, the overall energy and nutrient intake decreased at follow-up, including carbohydrates (P = 0.012), protein (P = 0.021), fiber (P = 0.008), iron (P = 0.009), zinc (P = 0.006), and folate (P = 0.002). Among various anthropometric and biochemical variables, mean skeletal muscle mass decreased (P = 0.012), plasma high density lipoprotein-cholesterol increased, (P = 0.020) and high sensitivity C-reactive protein decreased at follow-up (P < 0.001). CONCLUSIONS: A long-term follow-up study is needed to investigate the association between changes in food and nutrient intake and anthropometric and biochemical variables in these Vietnamese female marriage immigrants.

사회복지시설과 자택거주 저소득층 노인의 영양섭취상태와 식사의 질 평가 (Nutritional Status and Dietary Quality in the Low-income Elderly Residing at Home or in Health Care Facilities)

  • The principal objective of this study was to assess the nutritional status and dietary quality in low-income elderly individuals residing at home (LH) or in health care facilities (LHCF) with dietitian. This study was conducted via anthropometric measurements, questionnaire interviews, and dietary surveys using a 24 hr recall method with 120 low-income elderly individuals (LHCF=46, LH=74). The average ages of the LH and LHCF group were 76.3 years and 78.6 years, respectively. The LH group evidenced a significantly higher frequency of skipping meals than the LHCF group. The average energy intakes of the LHCF and LH group were 1921.0 kcal and 1443.9 kcal, with a significant difference (p<0.001). Most of the nutrient intake and intake rates for recommended intake were significantly higher among the LHCF group as compared with the LH group. The LHCF group showed significantly higher values for the nutrient adequacy ratio (NAR), the mean adequacy ratio (MAR), nutrient density (ND), and the index of nutritional quality (INQ) by dietary qualitative estimation than in the LH group. The Korean diet diversity scores (KDDS) were 3.66 for LH group and 4.93 for the LHCF group, thus were significantly higher in the LHCF group than in the LH group. The results of the present study demonstrate that the LH group appeared to experience more dietary problems than the LHCF group. It was suggested that nutritional education is needed for low-income elderly individuals living at home, in order for them to learn proper dietary management. This can be achieved via educational programs in social welfare institutions, incentives toward employment as a dietitian, and implementation of community-based support.

대학생의 거주형태에 따른 영양섭취실태 및 식습관에 관한 연구 (Study on the Food Habits of College Students by Residences)

  • This study was carried out with 1030 students of Seoul National University to investigate the relationship between residences and food habits of college students. The results obtained were as follows. 1) Food habit scores of the students living in dormitories and in boarding homes with cooking facilities were significantly lower than those of other students, especially with regards to the balance of five basic food groups and skipping breakfast. 2) Energy intake of students living in the boarding homes with meals were low. Students in the boarding home also showed low intake of calcium and iron, whether meals were provided or they had cooking facilities. 3) Cafeteria meals on campus showed better nutritional values than meals at home, or restaurants around the campus. But students were not satisfied with campus cafeterias, because the food items were monotonous, they had long waiting service lines, preferred foods were limited, dishes were not clean, and stated of hygiene did not seem satisfactory. Nutrition education for college students is needed, and menus of campus cafeterias should be developed to meet the various needs of students. (Korean J Community Nutrition 1(2) : 189~200, 1996)

요양시설 거주 노인의 에너지와 영양소 섭취 실태 및 식품선호도 조사 (Study on Energy and Nutrient Intake and Food Preference of the Elderly in Care Facilities)

  • Objectives: The purpose of this study was to assess energy and nutritional intake and investigate the preference for food and cooking methods of the residents in elderly care facilities. Methods: Data were collected from 72 residents (10 males and 62 females) aged ${\geq}70$ years in elderly care facilities using questionnaires, food photographs for estimating dietary intake and records for daily physical activity. Results: Average age of the study participants was 85.0 years and 41, 36 and 8 had dementia, hypertension and diabetes mellitus, respectively. 15%, 65% and 19% of subjects were physically mobile, enervated, and immobile, respectively. Daily energy intake was 1360.2 kcal in men and 1378.0 kcal in women, which were 68.0% and 86.1% of the estimated energy requirement (EER) of dietary reference intake for Koreans (KDRI) for ${\geq}75$ year old individuals, respectively. Estimated energy expenditure (EEE) of subjects calculated using formula from KDRI was 1361.9 kcal and EER calculated using estimated daily physical activity (EDPA) was 1232.9 kcal. Energy intake and EEE from KDRI were higher than EER from EDPA. Dietary intake of dietary fiber, calcium, potassium, zinc, vitamin $B_2$, niacin, vitamin C were lower, and protein, phosphorous, iron, sodium, vitamin A, vitamin $B_1$, vitamin $B_6$, vitamin E were higher than the corresponding ones of KDRI. Subjects liked meats, fishes and shellfish, and fruits, while subjects disliked milk, seaweeds and salted fish and salted vegetables. Cooked rice, soybean paste soup, beef, cooked sliced radish strip, and yogurt were favorite foods, with steam being a favorite cooking method. Subjects considered nutrition as the most important factor for improving food service quality. Conclusions: Results of this study could be utilized for improving food-service for the residents in elderly care facilities, and provide a basis for setting reference intake of energy and nutrients of the elderly having very low activity levels.

Cross-Sectional Study on Iron Status of Asan Residents and Regional Comparison

  • Iron deficiency and anemia are severe nutrition problems in most of Korea. Iron intake, especially iron with better bioavailability is insufficient over a total age group. Recent changes in diet and life style of Koreans have been repeatedly suggested problems caused by excess nutrient intake rather than under intake. Despite the changes in diet patterns, iron deficient anemia is still prevalent in many parts of Korea. Eight hundred and fifty subjects (323 male and 527 female subjects) in Asan were recruited from farming, factory and urban area. Each subject was interviewed to assess nutrients intakes according to a 24hr-recall method. Twelve hour fasting blood samples were collected to vacutainer with EDTA for hemoglobin (Hb) and separate the tubes for serum iron (SI) and total iron binding capacity (TIBC). The mean serum iron value of female subjects in the factory area was significantly higher (p < 0.05) than that of the female subjects in the urban area although subjects in urban area showed significantly higher the dietary iron intake for both the men and woman (p < 0.05). Dietary iron intake for the younger women was lowest in the farming area and those in the urban area showed the highest dietary iron intake (p < 0.05). When the dietary iron intake was compared by different the age groups, dietary iron intake of the older women from animal sources was less than that of younger women in the urban area (p < 0.05). Dietary iron intake of Asan residents was not sufficient regardless of age, sex and regions and intake of heme iron was especially lower than nonheme iron. (J Community Nutrition 5(1) : 37∼43, 2003)

중.고등학생의 가족식사에 대한 태도와 혼자 식사와의 영양소 섭취 비교 (Attitudes Toward Family Meals and Comparisons of Dietary Quality Between Family Meals and Meals Eaten Alone in Middle and High School Students)

  • This study investigated attitudes and behaviors related to family meals among middle and high school students. Furthermore, it evaluated the dietary quality of family meals as compared to meals eaten alone. The data were collected between March and May, 2006, from 353 male and female students attending middle and high schools in Seoul and Gyeonggi-do, using pre-tested self-administered questionnaires. The following results were obtained. In terms of family meal frequency, 44.0% of the middle school students ate with their family 'more than once per day', and 19.3% participated in family meals 1 or 2 times per day. However, only 16.4% of the high school students had family meals 'more than once per day', and 32.9% participated in family meals '1 or 2 times per a week', showing a significant difference between the groups (p<0.001). Fifty-nine percent of the middle school students answered they ate with their family everyday or on week days, whereas 67.8% of the high school students had family meals only on holidays (p<0.001). The nutrient intakes of those participating in family meals were compared to the intakes of those who ate meals alone. For both males and females, calorie intake was higher for those who ate family meals. Animal protein intake was significantly different (p<0.001) between groups, with the results showing a two-fold higher intake for those eating family meals as compared to meals alone. In addition, the intake of animal fat was significantly higher in the family meal group (p<0.001); however, plant-based fat intake was higher in the meal alone group.

제 2형 당뇨병 환자의 영양섭취 및 혈당에 웹기반 영양상담이 미치는 영향 (Effects of Web-Based Nutrition Counseling on Nutrient Intake and Blood Glucose in Type II Diabetic Patients)

  • 웹기반 영양상담 프로그램은 당뇨병 환자를 위한 영양상담 프로그램에 환자들의 추후관리를 위해 추후관리 프로그램을 개발하여 삽입하였다. 개발된 추후관리 프로그램은 혈당수첩, 식품섭취빈도 조사, 식습관 평가 및 대화방으로 구성되었다. 8주간의 인터넷을 이용한 영양상담 후 체질량지수는 비합병증군과 합병증군 모두에서 약간은 감소하였으나 유의한 차이가 없었다. 허리/엉덩이 둘레비 역시 두 군 모두에서 조금씩 감소하였으나 유의한 차이가 없었다. 영양상담 후 공복혈당은 비합병증군(p<0.05)과 합병증군(p<0.01) 모두에서 유의하게 감소하였고, 당화혈색소는 비합병증군에서는 감소하였으나 유의한 차이가 없는데 반하여 합병증군(p<0.01)에서는 유의하게 감소하였다. 혈청 지질은 비 합병증군에서는 총콜레스테롤과 LDL-콜레스테롤은 영양상담후 감소하여 유의(p<0.05)한 차이를 보인 반면에 HDL-콜레스테롤은 약간 증가하고, 중성지방은 감소하였으나 유의한 변화는 없었다. 합병증군에서는 총콜레스테롤, LDL-콜레스테롤, 중성 지방은 영양상담 후 각각 유의 (p<0.05)하게 감소하였고, HDL-콜레스테롤은 증가하였다. 영양소 섭취의 변화는 두 군 모두에서 영양상담 후 열량 섭취량이 감소하였으며, 당질 및 지방의 섭취수준은 감소한 반면에 단백질의 섭취는 증가하여 환자들의 열량영양소의 섭취비가 권장되는 비율로 변하고 있음을 알 수 있었다. 또한 1,000 kcal 당 영양소 섭취량을 비교하여 보면 비타민 $B_2$, 비타민 $B_6$, 비타민C, 엽산, 칼슘, 아연의 섭취량은 영양상담 후 오히려 높아져 영양상담 후 두 군 모두에서 환자들은 열량은 낮으면서 영양소 밀도가 높은 식품을 선택하였다. 본 연구의 결과로 웹기반을 이용한 영양상담이 당뇨병 환자의 열량 및 영양소 섭취상태를 개선하고 혈당 및 혈청지질에 긍정적인 효과를 나타냄으로서 정보화 시대에 맞는 새로운 상담매체로서의 인터넷의 가능성과 영양상담의 추후관리를 위한 대안이 제시되었다고 할 수 있다. 그러나 대상자의 연령이나 학력 등에 따라 웹기반 영양상담 프로그램에 대한 반응이 다르게 나타났기에, 이러한 개인별 차이점을 고려한 맞춤형 영양상담 프로그램의 형태로 좀 더 다양화된 상담 프로그램 이 개발될 필요성이 있었다. 또한 본 연구는 영양상담 기간이 8주간의 단기였기에 그 효과를 나타내는데 미흡한 점이 있었으므로 추후 장기간의 영양상담에 따른 추가 연구도 필요할 것 같다.
