Enterobacter sakazakii is implicated in severe forms of neonatal infections such as meningitis and sepsis. This organism has been isolated from a wide range of foods, including cheese, vegetables, grains, herbs, and spices, but its primary environment is still unknown. Generally, dried infant milk formula has been epidemiologically identified as the source of E. sakazakii. Sunsik (a powdered mixture of roasted grains and other foodstuffs) is widely consumed in Korea as a side dish or energy supplement. Sunsik is consumed without heat treatment; thus, lacking an additional opportunity to inactivate foodborne pathogens. Therefore, its microbiological safety should be guaranteed. In this study, the prevalence of E. sakazakii was monitored in 23 different sunsik component flours, using FDA recommended methods; but E. sakazakii medium (Neogen) and Chromogenic E. sakazakii medium (Oxoid) were used as the selective media. In total, presumptive E. sakazakii strains were isolated from 8 different sunsik powders. Subsequently, an API 20E test was conducted, and 15 strains from 5 different sunsik flours (sea tangle, brown rice, non-glutinous rice, cheonggukjang, dried anchovy) were confirmed as E. sakazakii. Fifteen strains were again confirmed by PCR amplification, using three different primer sets (tDNA sequence, ITS sequence, 16S rRNA sequence), and compared to ATCC strains (12868, 29004, 29544, 51329). They were once again confirmed by their enzyme production profiles using an API ZYM kit. Finally, RAPD (random amplified polymorphic DNA)-genotyping was carried out as a monitoring tool to determine the contamination route of E. sakazakii during processing.
'Jungmo1001' is an early maturing intermediate breeding line developed from a cross between Cheolweon52 and SR14694-57-4-2-1-3-2-2 by the rice breeding team of National Institute of Crop Science, Rural Development Administration (RDA) in 1994. 'Jungmo1001' has about 107 days duration from seeding to heading in mid-northern inland plain, southern alpine area and north-eastern coastal areas. It has about 73 cm in culm length with semi-erect plant type and good canopy architecture. This variety has 13 tillers per hill and 90 spikelets per panicle. Its 1,000 grain-weight of brown rice is 21.2 g which is less than 26.3 g of 'Odaebyeo'. Milled kernels are translucent with non-glutinous endosperm, low amylose content (18.1%) compared with 'Odaebyeo' palatability of cooked rice is very good. This variety shows strong resistance to cold treatment, lodging, premature heading and wilting. This variety shows moderately resistant to blast disease but susceptible to bacterial blight, stripe virus and insect pests. The milled rice yield performance of this variety is about 5.45 MT/ha by ordinary culture in local adaptability test for three years. This variety may be highly adaptable to the mid-northern inland plain, southern alpine area and north-eastern coastal areas of Korea.
Hwangeumnodeul is a new japonica rice cultivar developed from a cross between Milyang165 and HR15151-B-21-3 at Honam Agricultural Research Institute (HARI), NICS, RDA, in 2007. This cultivar has short grains and about 139 days of growth duration from direct seeding to harvesting in the southern plain areas. Culm length of this cultivar is 78 cm and the number of spikelet per panicle is similar to that of the check cultivar, Nampyeongbyeo, while filled grain rate is lower than the check variety. This cultivar is moderately resistant to leaf blast, bacterial blight pathogens of $K_1$, $K_2$ and $K_3$ and stripe virus but susceptible to major virus diseases and insect pests. Milled kernel of Hwanggeumnodeul is translucent with non-glutinous endosperm. This cultivar has about 5.7% and 18.6% of protein and amylose contents, respectively. Palatability of cooked rice of Hwanggeumnodeul is similar to Nampyeongbyeo. Its milling recovery and head rice were 75.6% and 90.0%, respectively. Hwanggeumnodeul yielded 5.69 and 5.61 MT/ha in milled rice at the under wet-direct and dry-direct seeding conditions, respectively which are 17% and 12% higher than the check variety, Juanbyeo. It yielded 5.86 MT/ha, 8% higher than Nampyeongbyeo at the standard fertilizer level of the ordinary transplanting cultivation. "Hwanggeumnodeul" would be adaptable for ordinary transplanting as well as direct seeding in the southern plain including Chungcheong province.
'Cheongdam' is a japonica rice variety developed from a cross between SR19200-HB826-34, a line of good germination ability and shoot emergence at low temperature and Juanbyeo, good quality and direct-seeding adaptable cultivar by the rice breeding team of National Institute of Crop Science, RDA in 2006. This variety has 153 days of total growth duration from seeding to maturity in direct-seeding, and 160 days of growth duration from seeding to maturity in transplanting. This is erect plant type with culm length of 74 cm, thick culm, and green leaves. It has large panicle shape with 126 and 140 spikelets per panicle in direct-seeding and transplanting, respectively. Milled rice is transluscent and medium in grain size of non-glutinous endosperm. This variety is susceptible to leaf and neck blast, bacterial blight, stripe virus disease and brown planthopper. The yield potential of 'Cheongdam' is 5.84 MT/ha at ordinary transplanting culture and 5.62 MT/ha and 5.89 MT/ha at wet direct-seeding and dry direct-seeding cultures, respectively in the local adaptability test for three years. 'Cheongdam' would be adaptable to middle and southern plain of Korea for direct-seeding culture and transplanting rice culture.

'Onnuri' is a japonica rice cultivar developed from the cross between 'Milyang 165' and HR14732-B-67-2-3 at Honam Agricultural Research Institute (HARI), NICS, RDA, in 2005. This cultivar has a short grain shape and about 121 days growth duration from transplanting to harvesting in Korean climate condition. In reaction to biotic and abiotic stresses, it shows resistance to blast, bacterial blight pathogen from $K_1$ to $K_3$ and stripe virus, but susceptible to other major diseases and insect pests. The milled kernel of 'Onnuri' is translucent with non-glutinous endosperm. It has about 18.6% of amylose content and better palatability of cooked rice compared with 'Chucheongbyeo' cultivated in Kyunggi province. The milled rice yield of 'Onnuri' is about 5.94 MT/ha under the standard fertilizer level of the ordinary transplanting cultivation. 'Onnuri' would be adaptable to southern plain of Cheonan, middle-northern plain, and southern mid-mountainous of Korea.
"Cheongcheongjinmi" is a new japonica rice variety developed from a cross between Iri401 and Ilpumbyeo by the rice breeding team of National Institute of Crop Science, RDA. This variety is suitable for ordinary season culture of low level nitrogen application. Heading date of "Cheongcheongjinmi" is August 17, 4 days later than that of Sobibyeo in plain areas. It has culm length of 82 cm, and relatively semi-erect pubescent leaf blade and slightly tough culm tolerant to lodging with good canopy architecture. This variety has 13 tillers per hill, 126 spikelets per panicle and 90.2% of ripened grains. "Cheongcheongjinmi" showed lower spikelet fertility than Sobibyeo when exposed to cold stress. This variety showed slower leaf senescence and lower viviparous germination compared to Sobibyeo during the ripening stage. "Cheongcheongjinmi" is susceptible to blast disease, bacterial blight, virus diseases and planthoppers. The dried plant weight, total nitrogen and RuBisCO activity of "Cheongcheongjinmi" were higher than those of Sobibyeo in low level nitrogen application. The milled rice of "Cheongcheongjinmi" exhibits translucent, clear non-glutinous endosperm and medium short grain. It shows lower protein and amylose contents than those of Sobibyeo, and better palatability of cooked rice compared to Hwaseongbyeo. Physicochemical characteristics of traditional kochujang fermented for 6 months and commercial kochujang were compared. Tested kochujang included 18 kinds of Sunchang kochujang prepared with glutinous rice, 10 kinds of Boeun kochujang prepared with barley and 17 kinds of Sachun kochujang prepared with wheat, and 10 kinds of commercial kochujang. Major free sugar was found to be glucose both in traditional and commercial kochujang. Fructose, maltose, and sucrose were also detected in small amounts. The contents of free sugars in traditional kochujang was approximately one fourth of those presented in commercial kochujang. Commercial kochujang showed the highest level of total free amino acids followed in decreasing order by Sachun, Sunchang, and Boeun kochujang. The most abundant free amino acid was serine in Sunchang kochujang and aspartic acid both in Boeun and Sachun kochujang. On the other hand, glutamic acid was the most abundant amino acid in commercial kochujang. Volatile organic acids in various kochujang were determined and acetic, propionic, butyric, and 3-methyl butanoic acids were found in traditional kochujang. However, 3-methyl butanoic arid was not found in commercial kochujang. The most abundant volatile acid was acetic acid in both tradtional and commercial kochujang. Analysis of non-volatile organic acids showed that large amounts of lactic, oxalic, and succinic acids were found in traditional and commercial kochujang. In addition to these, small amounts of itaconic, malic, malonic, and pyroglutamic acids were found in commercial kochujang.

The objective of this study was to evaluate the effects of low temperature-adapted Saccharomyces cerevisiae Y297 and fermentation temperatures on the quality of Yakju brewed. Physicochemical properties of Yakju brewed were compared pH, total acidity, ethanol, free amino acid, organic acid contents, and volatile flavor compounds in S. cerevisiae Y297 with control treatment. Cooked non-glutinous rice and saccharogenic amylase in koji were mixed with ethanol-producing yeasts and then fermented at $15^{\circ}C$, $20^{\circ}C$, and $25^{\circ}C$ for 20 days. Yakju brewed using the Y297 treatment showed the highest ethanol yield (17.9%) at $20^{\circ}C$. Expression of heat shock protein (HSP) 104 was evaluated by immunoblotting as an indication of adaptation to low temperatures ($15^{\circ}C$); levels of the HSP104 protein were higher in the Y297 treatment than in the control. Organic acid analysis showed that the lactic acid content of Yakju brewed using the control was the highest at $25^{\circ}C$. Finally, free amino acid analysis showed that the Y297 treatment had a higher proportion of essential amino acids than the control. Overall, these results indicate that S. cerevisiae Y297 could be used as a suitable yeast for Yakju brewed under low temperature ($15^{\circ}C$) condition.
In order to study the processing adaptability of naked barley, SEDOHADAKA variety produced in Cheolanam-do(1971) was milled after polishing and examined with respect to its proximate principles, amino acid composition, viscosity, raising power, and amylose content, alkali number, blue value and X-ray diffraction pattern of its starch. The results are summarized as fllows: 1) Crude fiber content of naked barley which was milled at 81.6% (A), 79.2% (B) and 74.1% (C) was $2.48{\sim}2.36%$, indicating higher level than wheat flour. 2) Whereas the initial gelatinization temperature of naked barley flour was similar to that of wheat flour, the value of naked barley starch was $89.5^{\circ}C$, higher than that of wheat starch, Amylose content of naked barley starch was 28.5%, similar to wheat starch. 3) Raising power of naked barley starch was generally lower than that common cereal starches. 4) According to the X-ray diffraction pattern diagram, the degree of crystallization was lower in naked barley starch than in non-glutinous rice starch.
