Paprika is known to contain polyphenolic compounds that have good antioxidant properties. This study was conducted to investigate the benefits of adding paprika juice of different colors to yogurt and to determine how paprika affects the quality characteristics of yogurt. Stirred yogurt samples supplemented with different levels of red, orange, or yellow paprika juice were inoculated with mixes of Streptococcus thermophilus and Lactobacillus delbrueckii ssp. bulgaricus. Paprika addition decreased the pH but increased titratable acidity, lactic acid bacteria (LAB) counts, total polyphenol content (TPC), levels of vitamin A and C, and antioxidant activity. Proteolysis and viscosity of paprika-containing yogurts were significantly higher than those of the control yogurt without paprika juice (p<0.05). In particular, the viscosity of red paprika yogurt was significantly higher than that of yogurts containing 5% orange and yellow paprika juices (each p<0.05). The antioxidant activity of the methanol extract of the yogurt containing 2.5% orange paprika juice was the highest. Storage at 4℃ for 15 days only slightly altered LAB counts, antioxidant activity, and TPC of paprika yogurt. These results indicate that paprika could be used as a natural food additive for the development of functional yogurts.

The fresh fruit juice powder of Coccinia indica W.&A., (Cucurbitaceae, CJP) was studied for the possible activities of antiinflammatory and antinociceptive to rationalize the folkloric use of the plant juice as rasayana. CJP at the doses of 50-200 mg/kg caused a significant (P<0.05 to P<0.001) inhibition of paw edema induced by ${\lambda}$ carrageenin (1%) and histamine $(10^{-3}\;g/ml,\;0.1\;ml)$ in rats. The effect was comparable to the standard cycloxygenase inhibitor brufen at 100 mg/kg and protective percentages were 63.41% and 65.78% respectively. Administration of CJP (50-200 mg/kg) exhibited a moderate increase of the pain threshold on analgesy-meter induced mechanical pain. However CJP significantly prevented the writhing induced by acetic acid in mice and the percentages of inhibitions were 16.98%-35.47%, which is equivalent to 36.67% produced by brufen. These data indicate that the fruit juice of Coccinia indica rationalizes the traditional system of medicine.
The objectives of the present study were to investigate the protective effects of Angelica keiskei juice and Oenanthe javanica juice against oxidative damage in LLC-$PK_1$ renal epithelial cells and to evaluate their free radical-scavenging activities. Both A. keiskei juice and O. javanica juice showed a strong in vitro antioxidant activities such as ${\alpha}$, ${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl (DPPH), nitric oxide (NO), $O_2{^-}$, and ${\cdot}OH$ radical-scavenging activities. The LLC-$PK_1$ cells showed significant lipid peroxidation and cell death due to oxidative stress when it was induced by 2, 2'-azobis (2-amidinopropane) dihydrochloride (AAPH), sodium nitroprusside (SNP), pyrogallol, and 3-morpholinosydnonimine (SIN-1). Treatment with both A. keiskei juice and O. javanica juice significantly increased cell viability and inhibited lipid peroxidation. These results suggest that A. keiskei juice and O. javanica juice are potential natural antioxidants.
To develop a functional beverage from Korean cherry (Prunus tomentosa Thunberg), inhibition effect of ethanol extract and juice of the korean cherry on melanin systhesis and tyrosinase activity in vitro was investigated. Inhibition ratio of tyrosinase activity increased as the concentration of solid of korean cherry juice increased, and inhibition affect was high in initiation step of enzyme reaction and then gradually decreased. Inhibition ratio of tyrosinase activity was high in the 70% (v/v) ethanol extract of the cherry and the highest in the ethyl acetate fraction of the 70% (v/v) ethanol extract. Ultimatly, the amounts of functional matter (melanin synthesis inhibitor) in the cherry was highest in ethyl acetate fraction of the ethanol extract.

Oysters are a highly consumed seafood throughout Korea, but they have a short shelf life because they support rapid microbial growth due to their of high moisture content and fragile muscle tissue. We examined natural food additives including lactic acid bacteria fermentation powder, rosemary extract, and lemon juice for their ability to preserve raw oyster Crassostrea gigas quality. Samples were stored at 4℃, and microbiological and physicochemical analyses were conducted. Among the natural additives tested, lemon juice was the most effective. Lemon juice was thus applied at different concentrations (50-300 ppm) to quantitatively assess its effect on total viable cell count, pH, glycogen, soluble protein, and turbidity. 200 ppm was confirmed to be optimal, and is projected to extend shelf life by 2 days compared to the control group.
The purpose of this study is to develop knitwear design expressed not also Green but also LOHAS using natural yarns(wool and cotton) dyed with various natural sources(sappanwood, indigo plant, turmeric, cochineal, coffee, gallnut, and persimmon juice). This researcher tried to suggest solution scheme through the development of knitwear designs to break from the cottage industry and the limitation of design in Jeju and to preserve of traditional dye with persimmon juice simultaneously. Knitting is the formation of a fabric by the interlooping of one or more sets of yarns with hand knitting or industrial knitting. In hand-knitting, the two fundamental stitches are described as knit depending on the direction of the loop formation, front to back or back to front. In machine-knitting, the direction of loop formation is fixed, unless the stitch is mechanically transferred from front to back needle bed or vice versa. Industrial knitting technology can be divided into two main areas - weft knitting and warp knitting. Each has a different principle of construction. The majority of knitted fabrics for clothing are weft-knitted, and so this study is used weft-knitting and hand knitting technology. To achieve this purpose, researcher tried to present a lot of knitwear designs using yarns dyed with various natural sources focusing on Modern & Sophisticated Image and Elegance & Romantic Image to satisfy adult and missy consumer needs.
To develope natural dyeing materials from the unused plant materials, we had several dyeing experiments to investigate the optimum conditions of dyeing fabrics with the waste grape juice. Dyeing experiments were done under different dyeing conditions of dyeing time, dyeing temperature, pH and concentration of dyebath and mordants which were treated after dyeing. Experimental fabrics were silk, cotton, ramie and hemp. Color difference(${\Delta}E$) and Munsell's HV/C of the dyed fabrics and color fastness of silk dyed fabrics to dry cleaning, washing, rubbing, perspiration and light were measured. The color differences of dyed experimental fabrics were very slightly increased with dyeing time and the color of dyed silk was light purple and the cotton, ramie and hemp was light red purple. The color differences of dyed experimental fabrics were decreased and the color became lighter with dyeing temperature increased. The color differences of dyed experimental fabrics were decreased and the color changed from light purple to blue with the pH of dyebath increased. The color differences of dyed experimental fabrics were slightly increased with the concentration of dyebath increased. The color of dyed fabric changed with the mordant treatment and were different among the experimental fabrics. On the whole, blue tone increased with the Al and Fe mordant and green tone increased with the Cu mordant. The color fastness of dyed silk fabrics to light, washing (change) and perspiration (change) was bad and color fastness to dry cleaning and rubbing were good.
The purpose of this research is to analyze the effects of persimmon juice and hibiscus flowers extract to perform combination dyeing of silk fabrics, with respect to color changes, fastness, and functionality. The optimal conditions as a result, were shown at 100% of dye concentration, $40^{\circ}C$ of dyeing temperature and 30 minutes of dyeing time while in terms of dye uptake depending on the kind of mordants and methods. The highest K/S value was recorded at pH 3, pre-mordants of $CuSO_4$, and $SnCl_2$, post-mordanting. After repeated dyeing and post-mordanting, various color change occurred with mordant treatments. Color fastness of dyed fabrics with hibiscus flowers extract was improve considerably by combination dyeing with persimmon juice extract. In aspects of functional properties, it showed excellent results of 99% deodorization rate, 99.9% Staphylococcus aureus rate and 99.9% Klebsiella pneumoniae.
It is not clear to assume the history of dyeing by persimmon juice without an early knowledge of an accurate record. However, the beginning of persimmon dyeing in Korea is estimated to be around the $13^th$-$14^th$ century, even though there are no supporting records. On the other hand, there are definite records of persimmon dyeing in Japan from around the 17th century. Persimmon juice was originally used for fishing tools in both Korea and Japan, but upon entering the Modern Era it eventually transfigured into a dye for fabric. In Korea, persimmon-dyed fabrics were used for traditional clothing until it also became a popular choice for modern clothes in the 1990s. In Japan, persimmon juice was originally used for varnishing surfaces of household items, but it recently became a material for arts, crafts, and even apparels. The main difference between persimmon dyeing of the two countries is the presence and absence of the fermentation process. In Korea, persimmons are picked and water is immediately added to its juice to produce the dye. In contrast, Japan produces a fermented persimmon dye. As a result, in Korea the dye can not be preserved for long periods, whilst in Japan it is matured in the storage for 2-3 years. Today's pursuit of eco-friendliness and wellness has prompted an inclination towards natural material clothes. Therefore, it is necessary for both countries to push scientific research into improving the storage methods and colorfastness of persimmon-dyed products for the increase of use consumption in other areas of persimmon and arrowroot dyed fabrics, and the development of environment friendly materials.
Citrus juice, a concentrate manufactured by the Jeju Provincial Corporation, was converted into vinegar orderly by alcohol and acetate fermentation. The juice with a 6-fold dilution by distilled water was used as the sole nutrient source throughout the experiments. The diluted juice contained 12.96Brix of total sugar, $0.632\%$ of total acid and $20.23{\mu}g/ml$ of hesperidin. Naringin was not detected from the juice. Citrus wine having $5.6\~6.3\%$ alcohol was produced from the diluted juice after 3 days of fermentation at $28^{\circ}C$. A kind of citrus-malomelo-yeast CMY-28 was used for the wine fermentation. The wine was successfully fermented for 8 days at $30^{\circ}C$ after inoculation of seed vinegar which contained active cells of acid producing bacteria CV1. The inoculum size of the seed vinegar was controlled to $10\%$(v/v) of the citrus wine. The wine was converted into vinegar by the fermentation process. Citrus vinegar, the final fermentation product, was colored with very thin, radish-yellow and was transparent. It's acidity ranged between $5.8\~6.2\%$ of that of acetic acid. The vinegar attained the best score by sensory test among several natural fruit vinegars. It was clear from the results that high quality citrus vinegar could be produced from concentrated citrus juice. However, the fermentation conditions should be improved to reduce the amount of reducing alcohol.
