Chemical Components and Antimicrobial Effects of Corni fructus (산수유의 영양성분과 항균효과)

  • The chemical components and antimicrobial effects were investigated to provide basic data that will predict the usefulness of Corni fructus as food materials. The carbohydrate, crude protein, lipid and ash contents of Corni fructus were 87.7, 3.2, 4.5 and 4.6% in dry basis, respectively. Total amino acid content of Corni fructus was 2,470 mg%. Major amino acids of Corni fructus were aspartic acid (523 mg%) and glutamic acid (247 mg%). The compositions of total saturated and unsaturated fatty acids of Corni fructus were 30.8% and 69.2%, respectively. Major fatty acids of Corni fructus were linolic acid (33.3%), palmitic acid (25.1%), linolenic acid (21.6%) and olcic acid (13.2%). The mineral contents of Corni fructus were 2067.5 mg% of K, 372.9 mg% of Ca and 98.4 mg% of Mg in dry basis. The organic acid contents of Corni fructus were 19,478 mg% of formic acid, 18,167 mg% of succinic acid, 14,487 mg% of malonic acid and 13,018 mg% of malic acid. Naengmyon yuksu (beef stock for cold noodles) were prepared with the addition of Corni fructus. Corni fructus added to Naengmyon yuksu inactivated microorganism and inhibited the growth of microorganism during storage at $10^{\circ}C$. Naengmyon yuksu added 1.5 g of Corni fructus showed the highest sensory scores.

The Amount of Sodium in the Processed Foods, the Use of Sodium Information on the Nutrition Label and the Acceptance of Sodium Reduced Ramen in the Female College Students (가공식품의 나트륨함량과 일부 여대생의 나트륨 영양표시 이용 및 저염 라면에 대한 수용도)

  • The amount of sodium in the processed foods was evaluated by the information on the nutrition label. One-meal type foods as Ramen, Woodong, Naengmyon provide the most sodium reaching 30 - 70% DV per serving size. In Ramen not much difference was observed for the sodium content by food companies though each company provides various amount of sodium reducing as much as 25% DV. The proportion of female college students who read the nutrition information reached 62% but it remained 32% on the sodium information. They purchase low sodium foods rarely however their intention to buy low sodium foods increased up to 40% in condition that sodium information is given on the food label. Nevertheless 50% of them would not buy low sodium food if the taste is undesirable. Low sodium ramen cooked with 80% soup-base was acceptable by the subjects. Majority of them responded the soup was rather salty indicating the reduction of sodium in ramyeon is possible.

A Survey on the Sodium Chloride Content of Common Restaurant Meals in Seoul Area (서울시내 대중식사중 식염함량에 대한 조사연구)

  • This survey was conducted to Investigate the NaCl contents of meals taken from common restaurants in Seoul area and further to estimate the total dietary intake of salt from the meals. The samples included Seoleung-tang (beef and rice soup)/Galbitang (beef-rib soup), Yeukkye-jang (spicy beef soup), Doenjangchigye-bab (boiled rice with soy paste stew), Bibim-bab (boiled rice with assorted mixtures) and Bibim-naengmyon (buck wheat vermicelli with assorted mixtures). The average content of NaCl for each sample was determined by saltmeter and its daily intake level was estimated. Doenjangchigye-bab was shown the highest concentration of NaCl Doen-jangchigye-bab was separated into drained residue and fluid, and the average NaCl content in the fluid was higher than that in the residue. In comparision of northern and southern region of Seoul divided by Han river, there was no significant difference in the content of NaCl. The average content of NaCl per meal was 10.6g, and from these data, the daily dietary intake of salt for adults was estimated to be 28.5g.

Assessment of Total Dietary Intake of Some Heavy Metals from Common Restaurant Meals in Seoul Area (서울시내 대중식사(大衆食事)로 부터 중금속의 총섭취량(總攝取量) 평가(評價))

  • This study was conducted to investigate the contamination level of some heavy metals for common restaurant meals in Seoul area and further to estimate the total dietary intake of heavy metals from the meals. The samples included seolong-tang (beef and rice soup) or galbi-tang (beef-rib soup), yeukkye-jang (spicy beef soup), doenjang-chigye-bab (boiled rice with soy paste stew), bibim-bab (boiled rice with assorted mixtures), and bibim-naengmyon (buckwheat vermicelli with assorted mixtures), which were separated into drained residues and fluids and determined for their heavy metal contents by atomic absorption spectrophotometry. The average concentrations of heavy metals in drained residues and fluids of 105 meal samples were 0.034 ppm, 0.017 ppm in Cd, 0.179 ppm, 0.073 ppm in Pb, 0.491 ppm, 0.308 ppm in Cu and 4.624 ppm, 1.403 ppm in Zn, respectively. The total amount of heavy metals per meal was $28\;{\mu}g\;Cd$, $145\;{\mu}g\;Pb$, $416\;{\mu}g\;Cu$ and $3654\;{\mu}g\;Zn$. The total dietary intake per day was estimated to give $84\;{\mu}g\;Cd$, $434\;{\mu}g\;Pb$, $1247\;{\mu}g\;Cu$ and $10960\;{\mu}g\;Zn$. Intake levels of Cd and Pb were higher than the daily intake limit established by FAO/WHO.

Survey on Korean Food Preference of College Students in Seoul - Focused on the Staple Food and Snack - (서울지역 남녀 대학생의 한식 선호도 조사 (I) - 주식과 후식을 중심으로 -)

  • This study was carried out to know the food preferences of college students in Seoul. The subject was 403 students (197 males and 206 females), using questionnaires during June 2004. Regarding preference of the staple foods, it was shown that both male and female students had the highest preferences for boiled rice, chicken porridge, naengmyon, boiled rice with assorted meat and vegetable mixtures, and Kimchi with fried rice but the lowest preferences for boiled rice mixed with beans and sesame porridge (p<0,05). Male students preferred boiled rice, boiled rice mixed with beans, boiled rice mixed with millet, boiled rice mixed with barley, rice porridge, abalone porridge, pine nut porridge, red-bean porridge, pumpkin porridge, vegetable porridge, sesame porridge, ramyon, noodles with assorted vegetable mixtures, udong noodles, noodles with black-bean sauce, chinese-style hotchpotch noodle with vegetables and seafood, blackish bean sauce with rice, curry with rice, omelette rice and lice cake and dumpling soup more than female students (p<0.05). For the preference of snacks, honeyed rice-cake was preferred the most by both of them and male students had higher preferences for cake made from glutinous rice and songpyon than female students (p<0.05). Male students liked strawberry and pear and female students liked strawberry the most. Preferences for apple. pear, banana, persimmon, and musk melon were higher in male students than female students (p<0.05).
