Growth performance, carcass and meat quality of lambs supplemented different vegetable oils

  • Objective: The purpose of this study was to evaluate the effect of rapeseed and linseed oil supplementations on performance and meat quality of lambs. Methods: The experiment was conducted on 18 growing (100-day-old) lambs of $19.7{\pm}1.9kg$ live weight, assigned to 3 groups of 6 animals each. Control lambs were fed meadow hay and concentrate alone. Experimental animals additionally received rapeseed or linseed oils at a dose of 50 g/d. The lambs were slaughtered at an average body weight of $35.7{\pm}0.5kg$. Results: The dressing percentage was higher in lambs fed rapeseed oil. Total saturated fatty acids (SFA) and C15:0, C16:0, C17:0, C21:0, C24:0 were lower in longissimus dorsi muscle (MLD) in lambs fed linseed oil. Supplementation of diet with linseed oil decreased concentrations of total monounsaturated fatty acids and C16:1, C17:1, C18:1 cis-9 in MLD. The concentrations of n-3 polyunsaturated fatty acids (PUFA) and C18:3 n-3, C20:5 n-3 in MLD were higher in lambs fed linseed oil than in other groups. Oils supplementation to diets resulted in increased concentration of C22:6 n-3 in MLD. The inclusion of linseed oil into the diet increased the contents of total PUFA, n-3 PUFA and C18:3 n-3, C20:5 n-3, C22:6 n-3 in semitendinosus muscle in comparison to control. A tendency towards a lower n:6/n:3 ratio in MLD was observed when lambs were supplemented linseed oil. Conclusion: The supplementation of linseed oil to diets seems to reduce the concentration of SFA and increase the concentration of n-3 PUFA. The n-6/n-3 ratio is an important nutritional factor, and its value has been favorably decreased below 2, thereby achieving an important target related to human health. Due to these changes carcass fatty acid profile was improved, and so enhanced lamb meat healthy properties.

괴화(槐花)의 식품영양학적 접근 및 생리활성물질 함량분석 (Nutritional Characteristics and Bioactive Components Contents of Flos Sophora Japonica)

  • The purpose of this study is to determine the possibility of using Flos Sophora japonica as natural health food source. To accomplish this purpose, the contents of general and antioxidative nutrients of Flos Sophora japonica a were measured. The contents of carbohydrate, crude protein, crude lipid and ash are 67.76%, 19.87%, 4.61% and 7.76%. And the calories of Flos Sophora japonica Linne was 318.32 Kcal. Total dietary fiber was 25.35% of total carbohydrates. The percentages of water soluble dietary fiber to insoluble dietary fiber were 1.80 % and 23.56 %, respectively. The protein were contained total 18 different kinds of amino acids. The contents of non-essential and essential amino acids were 4,898.78mg and 5,953.51mg. The K was the largest mineral followed by Ca, P and Mg, which means Flos Sophora japonica Linne is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 29.69%, 34.93% and 35.38%. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of vitamin C in Flos Sophora japonica Linne was higher than that of any other plant, which suggest that it could increase blood elasticity. The content of rutin, which is responsible for capillary vessel permeability, was 22.60%. The contents of water soluble antioxidative materials in 1 mL of water-extracted Flos Sophora japonica Linne were 3.9 ${\mu}$g which is comparable to 1233.0 mmol of vitamin C in antioxidant effect. The general nutrients and other antioxidatant bioactive materials in Flos Sophora japonica Linne were also potential materials for good health food. It is expected that follow up study of Flos Sophora japonica Linne through developing processed food and evaluation of their functional properties would provide useful information as a source of medicinal foods.

갈화(葛花)의 함유성분 분석과 항산화 활성 (Component Analysis and Antioxidant Activity of Pueraria flos)

  • 본 연구는 갈화를 대상으로 약이성 음식으로의 활용을 위한 가능성을 타진하고자 계획 수행되었다. 따라서 갈화의 영양성분 분석을 통한 식품영양학적 접근, 생리활성 기능을 기대할 수 있는 관련 물질 함량의 분석하였다. 식품영양학적 접근에서의 갈화의 일반성분은 건량기준으로 당질 69.2%, 조단백질 19.9%, 조지방 2.2% 및 조회분 8.9%이었고 갈화 100 g의 함유 열량은 340.4 kcal로 분석되었으며, 총 식이섬유소 함량은 건량기준으로 총 당질 중 85.1%이었고 수용성 및 불용성 식이섬유소 함량은 각각 12.0%, 46.7%로 나타났다. 또한, 총 18종의 아미노산으로 구성되었으며 필수아미노산과 비필수아미노산 함량은 각각 5.0 g, 6.7 g이었고, 무기질 중 칼슘의 함유량이 가장 높았고 그 다음이 칼륨, 마그네슘, 인 순으로 나타나 알칼리성 재료임을 알 수 있었으며, 지방산 함량의 경우 총 포화지방산 25.37%, 단일불포화지방산 33.61% 및 다가불포화지방산 35.68%로 구성되어 있어 다른 식물류에 비해 불포화지방산의 함량이 높은 것으로 나타났다. 갈화 70% 에탄올, 헥산, 클로로포름, 에틸아세테이트, 부탄올과 물 추출물에서 DPPH 라디칼 소거능의 항산화 효과 결과는 $RC_{50}$값이 217.3, 134.5, 116.7, 109.9, 129.8, 473.5 ${\mu}g$으로 나타나, 에틸아세테이트 분획물에서 가장 높은 항산화 효과를 나타내었다.

한우, 앵거스 및 화우 교잡종의 등심내 콜레스테롤 함량 및 지방산 조성 비교 (Comparison of Cholesterol Contents and Fatty Acid Composition in M. longissimus of Hanwoo, Angus and Wagyu Crossbred Steers)

  • 쇠고기는 고품질의 단백질과 함께 비타민과 광물질을 공급해 주지만, 포화지방산과 콜레스테롤 때문에 일부 소비자들은 부정적인 이미지를 지니고 있다. 쇠고기내 과다한 지방, 특히 콜레스테롤,은 사람의 건강과 불가분의 관계를 지니며, 심장병과 고혈압을 비롯한 각종 대사성 질환의 주요 원인이다. 그러나, 한우 쇠고기내 콜레스테롤 함량에 관한 기초자료는 매우 제한되어 있다. 따라서, 본 연구는 한우, 앵거스, 및 화우 교잡종의 등심내 콜레스테롤 함량과 지방산 조성에 대한 비교 자료를 제공하고자, 61두의 한우와 각 15두의 앵거스 및 화우 교잡종 거세우로부터 등심을 채취하여 콜레스테롤 함량과 지방산 조성을 분석하였다. 한우의 등심내 콜레스테롤 함량은 32.36mg/100g 부터 75.42mg/100g까지 개체별로 광범위한 분포를 나타내었으며, 근내지방도가 “1”에서 “8”로 증가함에 따라 콜레스테롤 함량이 평균 42.76±1.41mg/100g에서 51.43±6.12mg/100g으로 증가하였다. 앵거스 거세우의 경우, 근내지방도가 가장 낮은 “Practically devoid”의 경우 56.84 mg/100g, 근내지방도가 가장 높은 “Abundant”의 경우 72.85 mg/100g을 나타내어, 근내지방도가 증가할수록 콜레스테롤 함량이 증가함을 알 수 있었다. 화우 교잡종 거세우의 경우, “Practically devoid”는 69.23mg/100g, “Moderately Abundant”는 78.93 mg/100g을 나타내어 전체적으로 앵거스 거세우와 하였다. 한우, 앵거스 및 화우 교잡종의 등심내 불포화지방산:포화지방산 및 단가불포화지방산:포화지방산의 비율이 각각 1.48, 1.08 및 1.17과 1.41, 1.03 및 1.10을 나타내어, 한우 거세우에서 현저하게(각각 P< 0.0135 및 P<0.0379) 높게 나타났다. 이상의 결과를 종합해 보면, 한우 거세우는 앵거스나 화우 교잡종 거세우 등심에 비하여 콜레스테롤 함량과 포화지방산의 비율이 현저하게 낮은 반면, 불포화지방산의 비율은 유의하게 높았다. 그러나, 향후 이들 육우의 유전적 배경, 사양 조건, 출하월령, 출하두수 및 샘플링 부위 등을 종합적으로 고려한 후속 연구가 필요한 것으로 판단된다.

Relationship between Single Nucleotide Polymorphisms in the Peroxisome Proliferator-Activated Receptor Gamma Gene and Fatty Acid Composition in Korean Native Cattle

  • The peroxisome proliferator-activated receptor gamma ($PPAR{\gamma}$) gene plays an important role in the biosynthesis process controlled by a number of fatty acid transcription factors. This study investigates the relationships between 130 single-nucleotide polymorphisms (SNPs) in the $PPAR{\gamma}$ gene and the fatty acid composition of muscle fat in the commercial population of Korean native cattle. We identified 38 SNPs and verified relationships between 3 SNPs (g.1159-71208 A>G, g.42555-29812 G>A, and g.72362 G>T) and the fatty acid composition of commercial Korean native cattle (n = 513). Cattle with the AA genotype of g.1159-71208 A>G and the GG genotype of g.42555-29812 G>A and g.72362 G>T had higher levels of monounsaturated fatty acids and carcass traits (p<0.05). The results revealed that the 3 identified SNPs in the $PPAR{\gamma}$ gene affected fatty acid composition and carcass traits, suggesting that these 3 SNPs may improve the flavor and quality of beef in commercial Korean native cattle.

Quality traits of pork from cross-bred local pigs reared under free-range and semi-intensive systems

  • This study was conducted to evaluate meat quality traits, proximate composition, fatty acid profile and sensory attributes of pork produced under free-range and semi-intensive pig rearing systems. Longissimus dorsi muscles from pork carcasses were taken just after the slaughtering of finishing pigs reared under semi-intensive and free-range systems to test the meat quality parameters (pH, color, water holding capacity, and cooking loss), proximate composition (moisture, protein, fat, and ash) and fatty acid profile. Furthermore, the organoleptic properties were evaluated using 30 untrained panelists. The results revealed that the system of rearing did not affect (p > 0.05) the proximate composition, water holding capacity, color, pH and cooking loss of pork along with the fatty acid composition except for vaccenic acid (p < 0.05). The monounsaturated fatty acid (MUFA) content was affected (p < 0.05) by the rearing system while no effects were observed on the unsaturated fatty acid: saturated fatty acid ratio and omega-six to omega-three fatty acids ratios (p > 0.05). No difference was observed (p > 0.05) concerning the sensory attributes although pork obtained from the free-range system had the highest scores. In conclusion, the system of rearing did not show a significant effect on the meat quality parameters, composition and sensory attributes of pork obtained from cross-bred pigs.

Dietary intake of fats and fatty acids in the Korean population: Korea National Health and Nutrition Examination Survey, 2013

  • BACKGROUND/OBJECTIVES: The aim of this study was to estimate average total fat and fatty acid intakes as well as identify major food sources using data from the Korea National Health and Nutrition Examination Survey (KNHANES) VI-1 (2013). SUBJECTS/METHODS: Total fat and fatty acid intakes were estimated using 24-hour dietary recall data on 7,048 participants aged ${\geq}3years$ from the KNHANES VI-1 (2013). Data included total fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), n-3 fatty acid (n-3 FA), and n-6 fatty acid (n-6 FA) levels. Population means and standard errors of the mean were weighted in order to produce national estimates and separated based on sex, age, income, as well as residential region. Major food sources of fat, SFA, MUFA, PUFA, n-3 FA, and n-6 FA were identified based on mean consumption amounts of fat and fatty acids in each food. RESULTS: The mean intake of total fat was 48.0 g while mean intakes of SFA, MUFA, PUFA, n-3 FA, and n-6 FA were 14.4 g, 15.3 g, 11.6 g, 1.6 g, and 10.1 g, respectively. Intakes of MUFA and SFA were each higher than that of PUFA in all age groups. Pork was the major source of total fat, SFA, and MUFA, and soybean oil was the major source of PUFA. Milk and pork were major sources of SFA in subjects aged 3-11 years and ${\geq}12years$, respectively. Perilla seed oil and soybean oil were main sources of n-3 FA in subjects aged ${\geq}50years$ and aged < 50 years, respectively. CONCLUSIONS: Estimation of mean fatty acid intakes of this study using nationally represented samples of the Korean population could be useful for developing and evaluating national nutritional policies.

Fatty Acid Composition of 35 Species of Marine Invertebrates

  • Fatty acid compositions of 35 species of marine invertebrates (13 species of Bivalvia, 10 species of Gastropoda, 4 species of Cephalopoda, 4 species of Crustacea, 2 species of Ascidacea, 2 species of Holothuroidea) were studied using gas-liquid chromatography. Total lipids in all samples were very low, ranging from $0.24\%$ to $1.96\%$. The prominent fatty acids were 16:0, 20:5 (n-3), 22:6 (n-3), 18:0, 16:1 (n-7), 20:4 (n-6), 18:1 (n-9) and 18:1 (n-7) in the majority of marine invertebrates. Polyunsaturated fatty acid (PUFA) was the richest fatty acid group in all invertebrates, accounting for $55.3\pm6.70\%$ of total fatty acids (TFA), followed by saturated $(26.2\pm4.33\%)$ and monounsaturated fatty acid $(18.5\pm5.87\% )$. No correlation was found between total lipid content and each fatty acid group. Cephalopoda contained the highest level of n-3 PUFA $(54.6\pm5.17\%)$, while Holothuroidea and Gastropoda contained the lowest level of n-3 PUFA, accounting for $26.5\pm4.44\%$ and $28.4\pm4.04\%$, respectively. Bivalvia and Ascidacea are plankton feeders, which were rich in 20:5 (n-3) and 22:6 (n-3). Carnivorous species of Cephalopoda were prominently rich in 22:6 (n-3), ranging from $26.7\%$ to $46.1\%$ of the TFA. However, some species of Gastropoda are seaweed feeder (herbivorous), which contained high level of 20:4 (n-6) compared to plankton feeder and carnivorous species. In addition, blue and red colored sea cucumbers, and turban shells with and without apophyses belong to the same species, but they live in different habitats. These organisms were found to have different fatty acid compositions. Therefore, fatty acid compositions of these invertebrates might be affected by their different environments, particularly their diet.

Partial replacement of soybean meal by white lupine seeds in the diet of dairy cows

  • Objective: An experiment was conducted to determine the effect of partial replacement of soybean meal (SBM) by white lupine seeds (WLS) on milk yield and quality, feed efficiency and rumen fermentation of high-yielding dairy cows. Methods: Thirty multiparous cows of two breeds (20 Holstein and 10 Czech Pied cows) in early mid-lactation received three diets (treatments) in a 3×3 Latin square design with a 28-d period. The dietary treatments were as follows: CON (control total mixed ration with SBM, no WLS), WLS30 (30% of the SBM was replaced, on a dry matter basis, by WLS), and WLS50 (50% of the SBM was replaced by WLS). Results: Feed intake by the cows was not affected (p = 0.331) by the diets. Milk production decreased with increasing proportions of WLS in the diet. Cows fed WLS50 yielded approximately 1 kg/d (p<0.001) less milk than cows fed the CON diet. The proportions of milk fat (p = 0.640), protein (p = 0.507), and lactose (p = 0.709) were not altered by the diet. For milk fat, feeding with WLS50 reduced the proportion of total saturated fatty acids (p<0.001) and increased the proportion of total monounsaturated fatty acids (p<0.001), mainly through oleic acid (p<0.001). No differences were found in feed efficiency, body weight, and blood plasma metabolites between groups. Rumen ammonia-N levels tended (p = 0.087) to increase with increasing proportions of WLS in the diet, whereas no effect of diet on rumen pH was found (p = 0.558). Conclusion: We did not identify the safe range within which raw WLS can efficiently replace SBM in the diet of high-producing dairy cows. In contrast, even partial replacement of SBM by WLS favorably changed the milk fatty acid profile.

Influence of Probiotics-Friendly Pig Production on Meat Quality and Physicochemical Characteristics

  • In this study, the dietary effects of probiotics with a liquid application system on meat quality and physicochemical characteristics of pigs were evaluated. A total of 80 Landrace${\times}$Yorkshire${\times}$Duroc (LYD) 3-way crossbred pigs (average age $175{\pm}5d$) were assigned to a conventional farm and a probiotics farm equipped with a liquid probiotics application system (40 pigs in each farm). The two treatments were: CON (diet without probiotics) and PRO (diet with probiotics). Dietary probiotics decreased shear force in the longissimus muscle compared to the control group (p<0.05). The treatment diet did not affect backfat thickness, carcass weight, meat color, cooking loss, water holding capacity (WHC), and drip loss. Dietary probiotics significantly reduced ash, salinity, and pH (at 5 and 15 d) (p<0.05). There was no significant effect on thiobarbituric acid reactive substance (TBARS) values. Polyunsaturated fatty acid (PUFA) and omega fatty acids (${\omega}3$ and ${\omega}6$) were significantly (p<0.05) higher in the PRO group, whereas monounsaturated fatty acid (MUFA) was decreased. The free amino acid composition, serine, lysine, histidine, and arginine levels were significantly lower in the PRO than in the control group. The treatment group exhibited higher nucleotide compounds (hypoxanthine, inosine, GMP, IMP) than the controls. Also, levels of ascorbic acid and thiamin were significantly different (p<0.05), while minerals were not significantly different between the groups. In conclusion, feeding of probiotics had effects on shear force, ash, salinity, pH, PUFA, and some amino acids which related to taste and flavor without any negative effects on the pigs' carcass traits.
