홍화종실분말 첨가 유과의 관능적.기계적 특성 (Sensory and Mechanical Characteristics of Yukwa Added Safflower Seed Powder)

  • 유과의 팽화도는 홍화종실 분말 첨가량이 증가할수록 감소하였으나, 기름흡수율은 반면에 홍화종실 분말 첨가량이 많을수록 높아졌다. 유과의 수분함량은 홍화종실 분말 5% 첨가군이 가장 높게 나타나 흥화종실 분말의 섬유소가 유과의 이화학적 특성에 영향을 미치는 것으로 나타났다. 관능검사의 기호도 측정에서 외관의 기호도와 맛의 기호도는 홍화종실 분말 1% 첨가군이 가장 좋다고 평가하였으며, 첨가량이 증가할수록 낮게 평가되었다. 전반적인 기호도는 홍화분말 1% 첨가군을 가장 선호하는 경향을 보였으며, 대조군이 그 다음 순으로 나타났다. 색도측정 결과 명도 L값은 홍화종실 분말 첨가량이 증가할수록 감소한 반면 적 색도 a값과 황색도 b값은 증가하였다. 조직감 측정에서 경도는 첨가량이 증가할수록 낮아졌으며, 응집성은 1% 첨가군이 가장 높았다. 관능검사와 기계적 검사의 상관관계에서 경도와 부서짐성이 높을수록 기호도가 높게 나타났다. 이화학적 검사와 기계적 검사의 상관관계에서는 팽화도가 높을수록 응집성과 탄력성이 높았고. 지방흡수율과 수분함량이 높을수록 껌성이 높게 나타났다. 이상의 결과 흥화분말 1% 첨가군의 품질특성이 가장 높게 평가되어 유과 제조시 홍화종실 분말의 첨가량은 1%정도가 적당하다고 사료된다.

  • 혼합(混合) 조미료(調味料)의 부원료(副原料)로 사용되고 있는 마늘분말(粉末)의 효과적(效果的)인 살균법(殺菌法) 개발(開發)을 목표((目標)로 $\gamma$-선(線) 조사후(照射後) $30{\pm}1^{\circ}C$에서 3개월간(個月間) 저장(貯藏)하면서 미생물(微生物)의 생육상태(生育狀態)와 몇가지 이화학적(理化學的) 대성(待性)에 대한 실험(實驗)을 수행(遂行)하였다. 마늘 분말(粉末)의 일반세균(一般細菌)과 대장균군(大腸菌群)은 g당(當) $4.7{\times}10^{4}$$5.0{\times}10^{3}$으로 각각 나타났으며, 대장균군(大腸菌群)은 5kGy, 일반세균(一般細菌)은 7kGy조사(照射)로서 완전(完全) 사멸(死滅)되어 저장(貯藏) 3개월후(個月候)에도 미생물(微生物)은 전혀 생육(生育)되지 않았으며, 세균(細菌)의 $D_{10}$값은 3.34로 나타났다. 살균선량(殺舊線量)에서 시료(試料)의 수분(水分), 당(糖), pH 및 색도(色度)는 거의 변화(變化)되지 않았고. pyruvic acid는 조사(照射)에 의해 거의 영향을 받지 않았으나 저장기간(貯藏期間)의 경과로 모든구(區)에서 점차 감소(減少)되었다.

Capillary Flow in Different Cells of Thuja orientalis, Gmelina arborea, Phellodendron amurense

  • A study was carried out to observe the 1% aqueous safranine solution flow speed in longitudinal and radial directions of softwood Thuja orientalis L., diffuse-porous wood Gmelina arborea Roxb., and ring-porous wood Phellodendron amurense Rupr., Longitudinal flow was considered from bottom to top while the radial flow was considered from bark to pith directions. In radial direction, ray cells and in longitudinal direction tracheids, vessel and wood fiber were considered for the measurement of liquid penetration speed at less than 12% moisture contents(MC). The variation of penetration speed for different species was observed and the reasons behind for this variation were explored. The highest radial penetration depth was found in ray parenchyma of T. orientalis but the lowest one was found in ray parenchyma of P. amurense. The average liquid penetration depth in longitudinal trachied of T. orientalis was found the highest among all the other cells. The penetration depth in fiber of G. arborea was found the lowest among the other longitudinal cells. It was found that cell dimension and also meniscus angle of safranine solution with cell walls were the prime factors for the variation of liquid flow speed in wood. Vessel was found to facilitate prime role in longitudinal penetration for hardwood species. The penetration depth in vessel of G. arborea was found highest among all vessels. Anatomical features like ray parenchyma cell length and diameter, end-wall pits number were found also responsible fluid flow differences. Initially liquid penetration speed was high and the nit gradually decreased in an uneven rate. Liquid flow was captured via video and the penetration depths in those cells were measured. It was found that even in presence of abundant rays in hardwood species, penetration depth of liquid in radial direction of softwood species was found high. Herein the ray length, lumen area, end wall pit diameter determined the radial permeability. On the other hand, vessel and fiber structure affected the longitudinal flow of liquids. Following a go-stop-go cycle, the penetration speed of a liquid decreased over time.

유전율 측정을 통한 아스팔트 콘크리트의 공극률 추정 연구 (Evaluation and Determination of Air Void for Asphalt Concrete using a dielectric constant measurement)

  • 본 연구는 아스팔트 콘크리트의 유전율과 공극률의 상관성을 평가하기 위해 수행되었다. 이를 위해 다양한 범위 $(0%{\sim}20%)$의 공극률을 갖는 아스팔트 콘크리트 시편을 제작하였고, 저주파 유전율 측정법인 parallel plate법을 사용하여 아스팔트 콘크리트 시편의 유전율을 측정하였다. 아스팔트 콘크리트 시편의 경우 주파수가 증가함에 따라 유전율은 감소하는 경향을 나타내었고, 사용한 아스팔트 바인더의 종류에 따라 그 감소폭이 다르게 나타났다. 또한 공극률 $0%{\sim}20%$ 사이에서 공극률이 증가함에 따라 유전율 값은 선형적으로 감소하는 경향을 보였다. 더불어 아스팔트 콘크리트 시편의 유전율에 대한 온도 및 함수량 영향을 보정하여 유전율에 따른 공극률의 상관식을 제시하였다. 본 연구를 통해 제시된 아스팔트 콘크리트의 유전율과 공극률의 상관식은 현재 국내외에서 사용하고 있는 유전율을 활용한 비파괴 밀도 측정장비의 보정모델로 활용 가능하며, 향후 국내에서 개발하고자 하는 아스팔트 포장 비파괴 밀도 측정장비의 기본적인 알고리즘으로 활용이 가능할 것이다.

스테비아 잎 분말 첨가 오미자편의 품질 특성 및 항산화 특성 (Quality Characteristics and Antioxidant Properties of Omija-pyun (Schisandra chinensis Jelly) added with Stevia Leaf Powder)

  • This study added stevia leaf powder at ratios of 0.5, 1.0, 1.5, and 2.0 percent to Omija-pyun (Schisandra chinensis Jelly) as a natural low-calorie sweetener instead of sugar which is added to Omija-pyun in considerable amounts to evaluate quality characteristics and antioxidant activities compared to the control group with the addition of sugar. Moisture content of Omija-pyun expanded by increasing the measurement of stevia leaf powder (p<0.001), pH (p<0.01) and sugar content (p<0.001) decreased. L-values and b-values revealed a tendency to increase by adding more stevia leaf powder, but a-value revealed a tendency to decrease (p<0.001). Hardness (p<0.001) and chewiness (p<0.05) decreased by adding more stevia leaf powder. Based on the consumer preference evaluation, Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of color and flavor (p<0.001). The control group and Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of taste and texture (p<0.001). There were significant differences in the organoleptic properties except hardness between the samples by quantitative descriptive analysis. The control group revealed the highest preference in terms of redness and transparency, and redness and transparency tended to decrease by adding more stevia leaf powder (p<0.001). Organoleptic properties on bitterness and sourness were enhanced by adding more stevia leaf powder in the principal component analysis (PCA). Regarding antioxidant properties, total phenol compounds and flavonoid contents of Omija-pyun increased by adding more stevia leaf powder, and DPPH radical scavenging capacity also increased (p<0.001). Based on results, it is preferable to serve Omija-pyun with the addition of 1.0 percent stevia leaf powder instead of sugar within the context of quality and antioxidant activity.

Measurement of Nitrous Oxide Emissions on the Cultivation of Soybean by No-Tillage and Conventional-Tillage in Upland Soil

  • The impact of 1 pound of nitrous oxide ($N_2O$) on warming the atmosphere is almost 310 times that of 1 pound of carbon dioxide. Agricultural soil management is the largest source of $N_2O$ emissions, accounting for about 73% of total $N_2O$ emissions. This study was conducted to evaluate the nitrous oxide emission in the cultivation of soybean during the first year of No-tillage (NT) and Conventional-tillage (CT) practices, under the various conditions such as different kinds of fertilizers, soil temperature, and moisture level. In the experiment, we set CT and NT treatments into 4 different groups - control treatments (no fertilization), green manure treatments, chemical fertilizer treatments and organic manure treatments. In the case of chemical fertilizer treatments, $N_2O$ emission of NT treatment was 7.78 to 22.59% lower than CT treatment. In organic manure treatment, $N_2O$ emission of NT treatment was 6.62% higher than CT treatment in August. But In July and September, $N_2O$ emission of NT treatment was 9.50% 28.38% lower than CT treatment, respectively. Soil temperature was correlated with $N_2O$ emission positively. In the future, continued long-term research on influence of various environmental factors on the generation of $N_2O$ and the economic value of no-till farming is required.

위성신호 반사계측(GNSS-R) 기술 현황과 해양 응용분야 (State of the Art on GNSS Reflectometry and Marine Applications)

  • 위성신호 반사계측(GNSS-Reflectometry) 기술은 위성으로부터 전송되는 신호의 지표면 혹은 해수면에 반사되는 신호를 측정하여 분석하는 기법으로서, 해수면 높이측정, 태풍 및 기상이변, 그리고 토양의 수분 및 적설량 측정 등에 활용되고 있다. 본 논문에서는 GNSS-R 기술의 해양 활용확대와 그 가능성을 살펴보기 위하여, 위성신호의 신호대잡음비를 이용하는 GNSS-R 기술의 개념과 측정원리에 대해 설명하고, 국제적인 활용 사례를 조사하여 제시하였다. 특히 GNSS-R 기술을 기존 DGNSS 기준국 및 상시관측소 인프라를 이용하여 해양안전 및 환경 모니터링에 활용 가능할 뿐만 아니라, 지상 및 해양기준국, 위성기반, 해상선박 탑재 측면에서의 해양 응용 가능분야를 조사하여 제안하였다.

식용 제비집으로부터 비극성 비드기술을 활용한 시알산의 분리정제방법에 관한 연구 (A Study on Purification Process of Sialic Acid from Edible Bird's Nest Using Affinity Bead Technology)

  • Sialic acid, which is contained in about 60-160 mg/kg in the edible bird's nest (EBN), is known to facilitate in the proper formation of synapses and improve memory function. The objective of this study is to extract effectively the sialic acid from edible bird's nest using affinity bead technology (ABT). After preparing the non-polar polymeric bead "KJM-278-28A" having a porous network structure, and then desorbed sialic acid was concentrated and dried. The analysis of the physicochemical properties of bead "KJM-278-28A" showed that the particle size was 400-700 ㎛, the moisture holding capacity was 67-70%, the surface area (BET) was 705-900 ㎡/g, and the average pore diameter 70-87 Å. The adsorption capacity of the bead "KJM-278-28A" for sialic acid was shown a strong physical force to bind sialic acid to the bead surface of 400 mg/L. In addition, as a result of analyzing the adsorption and desorption effects of sialic acid on water, ethanol, and 10% ethanol on the bead, it was confirmed that desorption effectively occurs from the beads when only ethanol is used. As a result of HPLC measurement of the separated sialic acid solution, a total of four sialic acid peaks of N-acetyl-neuraminic acid (Neu5Ac), α,β-anomer of Neu5Ac and N-glycoly-neuraminic acid were identified. Through these results, it was confirmed that it is possible to separate sialic acid from EBN extract with efficient and high yield when using ABT.

한국 여성의 연령에 따른 피부 측정 데이터 기반 20대 ~ 40대 피부 나이 예측 모형 개발 및 적용 (Development and Application of Skin Age Prediction Model Based on Skin Measurement Data According to Age of 20's to 40's ages of Korean Women)

  • 본 연구에서는 20 대 ~ 40 대 한국 여성을 대상으로 피부 수분량, 피부 멜라닌, 피부 붉은기, 피부 비틀림 탄력을 측정하여 기초 피부 특성 데이터를 수집하고, 이를 나이와 상관성 분석을 진행하여 피부 지수를 만들고 이에 기반 하여 4 개의 군집으로 분류하여 그 특성을 확인하였다. 그 후 시제품 2 종을 2 주간 사용하여 피부 수분량, 피부 붉은기, 피부 각질량 감소에 대한 개선 효과를 확인한 후, 해당 시험자 중 피부 특성시험에 참여했던 피험자들을 대상으로 어느 군집에서 어떤 제품이 더 효과적이었는지 분석하였다. 이를 통해 피부 지수와 군집분석결과를 제품 효능평가에 반영하여 맞춤형 화장품 시장에 대비할 수 있는 가능성을 확인하였다.

Clarification the Current Situation of Deterioration and Its Causes of Modernization Heritage Built with Bricks in Japan: A Case Study of Long-Term Monitoring Investigation at Sarushima Battery, Yokosuka, Japan

  • A long-term monitoring investigation at Sarushima Battery (Kanagawa, Japan), which is one of the modernization heritages was conducted from 2017.06 to 2020.12. The investigation of the temperature and relative humidity (RH), measurement of the amount of brick decay, and X-ray diffraction analysis of the brick decay was conducted to understand in detail the environment in which the historical brick structure, the state of deterioration, identify the factors of deterioration. Furthermore, it was discussed whether the suitability of these investigation methods for assessing the status, identifying the level of deterioration and the factors that led to deterioration at the historical brick heritages. It was found that the brick deterioration at the site progressed especially in two periods: in April, and from June to August. These periods coincided with the period when the RH inside the structure decreased, and the Toyo-gumi bricks were in the process of absorbing moisture. Several different types of salts were detected in brick decay, especially thenardite, which is considered highly hazardous and destructive during periods when the amount of brick decay increased. Therefore, the RH in the structure and the salts present in the bricks were identified as one of the factors in the deterioration of the bricks at the site. The methods used in this study are appropriate as the initial survey methods for investigating the current conditions and identifying the causes of deterioration because it is possible to understand the environment within the modernization heritages, grasp the details of deterioration progression, and identify the characteristics of deterioration progression and its factors through long-term investigation using the simple methods.
