Effects of Functional Properties of Soy Protein Isolate and Qualities of Soybean Curd upon Proteolytic Hydrolysis (효소처리가 대두단백질의 기능특성과 두부의 품질에 미치는 영향)

  • This study was to examine the effect of functional properties of soy protein isolate(SPI) and qualities of soybean curd upon proteolytic hydrolysis. SPI was hydrolyzed using proteolytic enzyme, bromelain. The protein content of SPI by microkjeldahl method was 84% and the degree of hydrolysis in modified soy protein isolate(MSPI) was 2.7%. The solubility of MSPI was higher than that of control at various pH tested and proteolytic hydrolysis was increased emulsion formation and foam expansion while decreased emulsion stability, foam stability and calcium precipitation. Modified soybean curdI, standard soybean milk: Modified soybean milk=3:1, was soft and springy soybean curd when the texture properties of soybean curd were tested by texture profile analysis using Instron and sensory evaluation. The rheological model of soybean curds was investigated by stress relaxation test. The analysis of relaxation curve revealed that the rheological behavior of soybean curds could be expressed by 7-element generalized Maxwell model. The equilibrium modulus and modulus of elasticity decreased as the ratio of modified soybean milk was increased.

Durability of Polymers for Cement Modifier in Autoclave Cure (오토클래이브양생에 의한 시멘트 혼화용 폴리머의 내구성)

  • The purpose of this study is to make clear the durability of the polymer films formed in the autoclaved polymer-modified mortars and concretes. The polymer films prepared with polymer dispersions such as a styrene-butadiene rubber (SBR) latex, a poly (ethylene-vinyl acetate)(EVA) emulsion and a polyacrylic ester (PAE) emulsion for polymeric admixtures are exposed to autoclaving at 18$0^{\circ}C$ in temperature and 1.01 MPa in vapor pressure, and subjected to tensile test and infrared spectroscopy. The durability of the polymer films is evaluated from the application of autoclaving to the polymer films under saturated Ca(OH)$_2$ solution immersion causes no degradation for SBR films and a significant degradation due to the saponification of the polymers for EVA and PAE films. Accordingly, in the application of autoclaving to polymer-modified mortars and concretes, it is suggested that SBR-modified mortars and concretes are hardly degraded but EVA- and PAE-modified mortars and concretes are markedly degraded by the saponification of the polymers.

Physical Properties of Polymer Modified Mortar Containing FRP Wastes Fine Powder (폐FRP 미분말을 사용한 폴리머 시멘트 모르타르의 물성)

  • In this research the physical properties of polymer modified mortar containing pulverized FRP(Fiber-Reinforced Plastics) wastes fine powder as a part of fine aggregate were investigated. Styrene-butadiene rubber(SBR) latex, polyacrylic ester(PAE) emulsion and ethylene-vinyl acetate(EVA) emulsion were used as Polymer modifier. Polymer modified mortars containing FRP wastes fine powder were prepared with various FRP wastes fine powder replacement(5∼30 wt%) for fine aggregate and polymer-cement ratios(5∼20 wt%). The water-cement ratio, water absorption rates and hot water immersion test, compressive and flexural strengths of polymer modified mortars were tested and the results compared to those of ordinary portland cement mortar. As the results, compressive and flexural strengths of polymer modified mortar containing FRP wastes fine powder depend on the contents of FRP wastes fine powder, type and additional amounts of polymer modifier. Some of them showed higher compressive and flexural strengths than those of ordinary portland cement mortar. Especially, SBR-modified mortar showed the highest strengths properties among three types of polymer modifier. Also water absorption rates, compressive and flexural strengths of SBR-modified mortar were more superior than those of PAE or EVA-modified mortar. The optimum mix proportions of SBR-modified mortar was 20 wt% of polymer-cement ratio and 20 wt% of FRP wastes fine powder replacement. Otherwise heat cured polymer modified mortar accelerated the improvement of early compressive and flexural strengths.

Development of Polymer-Modified Cementitious Self-Leveling Materials for Thin Coat

  • Recently, polymer-modified mortar has been studied for proposed use on industrial floors as top coat with thin thickness, typically 5~15mm. The purpose of this study is to evaluate basic properties of self-leveling materials using polymer dispersions as kinds of SBR, PAE, St/BA with thin coat (under 3mm). Superplasticizer and thickener have been included in the mixes to reduce bleeding and drying shrinkage as well as to facilitate the workability required. The self-leveling materials using four types of polymer dispersion are prepared with polymer-cement ratio which respectively range from 50% and 75%, and tested for basic characteristics such as unit weight, air content, flow, consistency change and adhesion in tension. From the test results, the self-leveling materials using PAE emulsion at curing age of 28days are almost equal to those of conventional floor using urethane and epoxy resin. The adhesion in tension of self-leveling mortars using SBR latex and PAE emulsion at curing age of 3days is over 17 kgf/cm$^2$(1.67MPa). Consistency change is strongly dependent on the type of polymer dispersion. It is concluded that the self-leveling materials using polymer dispersions can be used in the same manner as conventional floor using thermosetting resin in practical applications, in the selection of polymer dispersions.

  • Microporous polypropylene (PP) membranes have the high chemical and corrosion resistance, the good mechanical properties and the thermal stability under high temperatures, but its application is restricted within narrow limits due to hydrophobicity of membranes. In order to impart permanent hydrophilicity to the PP microfiltration membrane, the radiation-induced graft of 2-hydroxyethyl methacrylate (HEMA) and acrylic acid (AAc) containing hydrophilic functional group onto the membrane has been studied. The effect of graft conditions such as reaction time, total radiation dose, reaction temperatures, acid compositions on graft yield was investigated. Modified PP membranes were shown to cause an increase in the gas flux. Oil emulsion permeation flux of both original PP membrane and modified PP membrane was examined.

  • Graft polymers of alginic acid-PMMA, different in composition and Mv of branched PMMA, were prepared by emulsion graft polymerization at various MMA concentrations. In aqueous dispersion solution, the adsorption of graft polymer on the montmorillonite was carried out to modify the surface property of powder, and the adsorption of PMMA in organic solvents (acetone, benzene) on the modified surface of powder were observed. The results obtained were as follows. 1. In emulsion graft polymerization of MMA on the sodium alginate in aqueous solution, SA conversion, MMA conversion and % grafting were increased with increasing MMA concentration where as graft efficiency was decreased. 2. The adsorption amount of graft polymer was increased with the elevation of temperature and the increased of dispersion concentration and with the increase of branched PMMA composition of graft polymer. 3. In organic solvent, the adsorption of PMMA on the surface modified particle was proceeded by the orientation along the stretched branched PMMA of adsorbed graft polymer which is in radial direction to the particle surface. 4. The adsorbed amount of PMMA was increased as the temperature and concentration of PMMA solution, the branching of adsorbed graft polymer and the solvency of solvent were increased.

  • In this work, the surface of hydrophilic cellulose nanofibrils (CNFs) was modified precisely by varying amounts of cetyltrimethylammonium bromide (CTAB) to produce CNF-based particle surfactants. We found that a critical CTAB density was required to generate amphiphilic CTAB-grafted CNF (CNF-CTAB). Compared to pristine CNF, CNF-CTAB was highly efficient at stabilizing oil-in-water Pickering emulsions. To evaluate their effectiveness as particle surfactants, the surface coverage of oil-in-water emulsion droplets was determined by changing the CNF-CTAB concentration in the aqueous phase. Furthermore, styrene-in-water stabilized by CNF-CTAB surfactants was thermally polymerized to produce CNF-stabilized polystyrene (PS) particles, offering a great potential for various applications including pharmaceuticals, cosmetics, and petrochemicals.

  • The separation of benzene-cyclohexane mixture using (O/W)/O emulsion liquid membrane was studied. The operating parameters which can affect the selectivity, benzene yield, and emulsion size distribution were examined and determined by the batch type operation. The unsteady state and steady state extraction behavior in continuous pulse stirred reactor(CPSR) were verified. The optimum conditions for benzene selectivity and yield in batch operation were as follows; emulsion mixing intensity 4000 rpm, Tween 80 concentration 0.4%, volume ratio of membrane phase to internal phase 0.75, volume ratio of dispersed phase to continuous phase 0.5, and permeation time 10 minutes, As impeller speed increased and the microdrop holdup decreased, the Sauter mean diameter decreased. Turbulence damping parameter of modified Calabrease correlation considering microdrop holdup was 2.28. The optimum conditions of continuous operation were as follows; agitation speed 300 rpm, pulse frequence 2 times/sec, flow rate of continuous phase 30ml/min, and flow rate of emulsion phase 12.0ml/min.

Phagocytic Uptake of Surface modified PLGA Microspheres Using Dendritic Cell

  • The purpose of this study was to evaluate the phagocytic uptake of surface modified PLGA microspheres containing ovalbumin (OVA) into dendritic cell. In order to find the most suitable formulation for targeted delivery to antigen presenting cells (APC), OVA was encapsulated by a double emulsion solvent evaporation method with three PLGA microspheres (PLGA 50:50, PLGA 75:25 and PLGA 85:15) and two surface modified microspheres by chitosan and sodium dodecyl sulfate (SDS). Physicochemical properties were evaluated in terms of size, zeta potential, encapsulation efficiency, different scanning calorimeter (DSC), x-ray diffraction, morphology, and OVA release test from microspheres. Phagocytic activity was estimated using dendritic cells and analyzed by fluorescence activated cell sorter (FACS). The result showed that zeta potential of PLGA particles was changed to positive by the chitosan modification. The release profile of chitosan modified PLGA microspheres exhibited sustained release after initial burst. The chitosan modified microspheres had higher phagocytic uptake than the other microspheres. Such physicochemical properties and phagocytic uptake studies lead us to conclude that chitosan modified microspheres is more suitable formulation for the targeted delivery of antigens to APC compared with the other microspheres.

Functional Properties of Enzymatically Modified Egg Yolk Powder Produced by Phospholipase $A_2$ Treatment

  • Fresh egg yolk (EY) was enzymatically modified using phospholipase $A_2$ ($PLA_2$) to produce an enzymatically modified-egg yolk powder (EM-EYP). The EM-EYP offered significantly higher emulsifying activity, emulsion stability, protein solubility, and mayonnaise stability than the control EYP. By employing $PLA_2$ in the enzymatic modification process, structural changes occurred in the phospholipids and lipoproteins of the yolk, and cleavage of apo-high density lipoprotein (HDL) components (Mw 105 kDa) was detected by sodium dodecyl sulfate-polyaerylamide gel electrophoresis (SDS-PAGE). Based on its functional properties, EM-EYP has great potential as a replacement for fresh EY in the production of processed food products such as mayonnaise.
