Physicochemical Composition of Baked Garlic (구운 마늘의 이화학적 성분)

  • This study was conducted to investigate the major chemical components of dried baked garlic powder. The proximate compositions of baked garlic powder as a dry-matter basis were 5.30% moisture, 36.89% crude protein, 12.60% crude fat, 4.36% crude ash, 2.88% dietary tiber, and 37.97% carbohydrate, respectively. The major free sugars were identified as fructose and galactose. In the analysis of the total amino acids, 18 kinds of components were isolated from baked garlic powder. The essential amino acid contained in baked garlic powder accounted for 36.60% of total amino acids, while the non-essential amino acids accounted for 63.40%. The major unsaturated fatty acids of total lipids were linoleic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids (P/S ratio) was 5.77. Oxalic acid was the major organic acids. The contents of vitamin A, C, and E were 0.064, 1.452, and 0.037 mg%, respectively. The mineral contents of baked garlic powder were greater, in order of K>Mg>Ca>Na>Zn>Fe. The total polyphenol, flavonoids and thiosulfates contents of baked-garlic ethanol extract were $2.85{\pm}0.05$ mg/100 g, $0.97{\pm}0.04$ mg/100 g and $0.61{\pm}0.02$ OD/g, respectively.

  • Freeze-dried silkworm powder has been approved as a functional ingredients for blood glucose control since 2009. Proximate and nutrient compositions of silkworm powder was summerized as bellow. Silkworm powder contained 4.7% moisture, 57.7% crude protein, 9.5% crude fat, 5.4% crude fiber, and 9.3% ash. The larval protein contained 18 known amino acid including glutamic acid and aspartic acid. Fat is composed of 3:7 ratio of saturated fatty acid to unsaturated fatty acid including various essential fatty acids. It contained 34.7 linolenic acid, 24.4% oleic acid, 20.2% palmitic acid, 9.2% stearic acid, and 7.7% linoleic acid. Five minerals, K, P, Ca, Mg, S were abundant in the silkworm powder with other minerals such as Cu, Mn, Fe, and Zn.

  • The microencapsulation of sodium naproxen with Eudragit. RS was studied by coacrtvation/phase separation process using Span 80 in mineral oil/acetone system. Various factors which affect the mciroencapsulation, e.g., stirring speed, and surfactant concentraction, Eudagit RS concentration and loading drug amounts were examined. For the evaluation of the prepared microcapsules, release rate, particle size distribution and surface appearance as well as in vivo test were carried out. The addition of n-hexane and freezing of microcapsules accelerated the hardening of microcapsules. The optimum concentration of Span 80 ti prepare the smallest microcapsules was the same value with the CMC of Span 80 in solvent system. When 1.5% (w/w) Span 80 was used, the smallest microcapsules were formed $(30.02\pm5.05\mu$ in diameter) belonging to the powder category showing smooth, round and uniform surface. The release of sodium naproxen was retarded by microencapsulation with Eudragit RS. The Eudragit RS microcapsules showed significantly increased AUC and MRT and deceased Cl/F in rabbits.

  • Since MTA has many beneficial properties such as biocompatibility, great sealing capacity, antibacterial effects, low cytotoxicity, and stimulation of formation of mineralized tissue, it has been widely used as the material of choice in root-end filling, apexification, pulpotomy, perforation repair and so on. However, despite its favorable characteristics, MTA presents working properties which are less than ideal. The resulting cement from the mixing of powder and water is difficult to manipulate, and its setting time has been reported to be 2 h 45 min whereas the working time is <4 minutes. Additional moisture is also required to activate the setting of the cement. Moreover, according to recent studies, the physical properties of MT A may be hampered by acidic environment or blood contamination. Therefore, practitioners may have surprisingly worse results than they expected when they are not fully acquainted with the characteristics and manipulation method of MTA.

  • In order to clarify the originality of several Alisma Rhizomes, we investigated the differences of their morphological, anatomical and physiochemical characteristics. Morphological observation shows the variability of Alisma shape and quality. The diversities in morphological shapes and qualities of tuber were observed among different origins. Chinese product looked like corm shape, but korean's irregular shape. The microscopic observation of korean Alisma revealed the presence of irregular vascular bundle which was scattered transversely and longitudinaly, which was different from that of the rhizome. This facts suggest that the portion of crude drug in Alisma should be the corm rather than the rhizome. In the physicochemical differences, chinese Alisma contains larger amount of mineral elements such as K, Na and Ca than korean Alisma. On the contrary, protein contents in lyophilized powder of aqueous extracts in korean Alisma rhizome was significantly higher than chinese Alisma rhizome. The leaves and stems contained larger amount of Ca and Na than tuber, and may be used as the osmotic diuretics for chinese traditional medicine.

Synthesis and Photoluminescence Studies on Sr1-xBaxAl2O4 : Eu2+, Dy3+

  • Strontium-substituted $Sr_{1-x}Ba_xAl_2O_4:Eu^{2+},\;Dy^{3+}$ compositions were prepared by the solid state synthesis method. These compositions were characterized for their phase, crystallinity and morphology using powder x-ray diffraction (XRD) and scanning electron microscopy (SEM) techniques. Photoluminescence properties were investigated by measuring excitation spectra, emission spectra and decay time for varying Ba/Sr concentrations. Photoluminescence results show higher luminescence and long decay time for $Sr_{1-x}Ba_xAl_2O_4:Eu^{2+},\;Dy^{3+}$(x=0). This is probably due to the influence of the 5d electron states of $Eu^{2+}$ in the crystal field. Long persistence was observed for these compositions due to $Dy^{3+}$ co-doping.

  • Wollastonite-type glass ceramics were prepared by milling and firing at various temperatures using an automobile waste glass and waste shell as starting materials. Powder mixture ground by disk-type ball mill for 3 hours was pressed into a disk. The pressed specimen was fired at $850^{\circ}C$,$950^{\circ}C$ and $1050^{\circ}C$ for 1 hour in air. From FE-SEM observation, with an increase of the firing temperature from $850^{\circ}C$ to $1050^{\circ}C$, whisker-type phase was grown to about 10 $\mu\textrm{m}$ in length. Specimen fired at $1050^{\circ}C$ showed the formation of well-crystallized whisker-type wollastonite grains and the highest compressive strength.

  • Shiitake mushroom contained numerous nutrients, special flavor (lenthionine) and taste. In Asia, they are thought to have numerous medical properties f3r several diseases such as diabetes, anemia, tumors. Phosphates are known to increase hydration and water binding, stabilize meat emulsions, improve juiciness and tenderness, provide mineral supplementation, and maintain flavor of processed meat products.   • Ag-coated Cu particles were prepared by dropping method of coating agent and were evaluated by scanning electron microscope and color difference meter. The shape of Cu particles having obvious crystal plan and edge was changed spherically according to the increase of Ag coating amount. When the Ag coating amount was 50 wt% to Cu particles, the whiteness of Ag-coated Cu particles was almost similar to that of pure Ag particles. Adding $NH_4$OH in reductant solution could increase effectively the whiteness of the Ag-coated particles. The Ag-coated particles having the highest whiteness was obtained when the content of hydrazine in reductant solution was 0.48 M.

  • Composite films were prepared with soy protein isolate (SPI) and various clay minerals by casting from polymer and clay water suspension. Effects of clay minerals on film thickness, moisture content (MC), tensile strength (TS), elongation at break (E), water vapor permeability (WVP), and water solubility (WS) were tested. Properties including thickness, surface smoothness, and homogeneity of films prepared with organically modified montmorillonite (O-MMT), Wamok clay (W-clay), bentonite, talc powder, and zeolite were comparable to those of control SPI films. TS increased significantly (p<0.05) in films prepared with O-MMT and bentonite, while WVP decreased significantly (p<0.05) in bentonite-added films. WS of most nanocomposite films decreased significantly (p<0.05).
