Analysis of Phenolic Compounds in Sorghum, Foxtail Millet and Common Millet

  • The cereal grain crops have strong flexibility against adverse environment and they have various functional compounds. The objective of the present study was to screen phenolic compounds in sorghum [Sorghum bicolor (L.) Moench], foxtail millet (Setaria italica), common millet (Panicum miliaceum L.) by high performance liquid chromatography (HPLC) with photodiode array (PDA) detector. Sorghum contained the highest amount of phenolic compounds among three different crops (sorghum, foxtail millet, common millet). Especially Moktaksusu showed the highest amount of phenolic compounds concentrations and biggest regional differences. The comparison of average phenolic compounds in sorghums by regions showed order to Milyang ($963.3\;{\mu}g{\cdot}g^{-1}$), Yeongyang ($923.1\;{\mu}g{\cdot}g^{-1}$), Gijang ($831.3\;{\mu}g{\cdot}g^{-1}$) and Bonghwa ($735.6\;{\mu}g{\cdot}g^{-1}$). Among the sorghum cultivars, Moktaksusu ($1407.9\;{\mu}g{\cdot}g^{-1}$) had the highest concentration of phenolic compounds. The average phenolic compounds of foxtail millets showed similar amount among Milyang ($319.0\;{\mu}g{\cdot}g^{-1}$), Gijang ($288.1\;{\mu}g{\cdot}g^{-1}$) and Bonghwa ($281.9\;{\mu}g{\cdot}g^{-1}$) areas. The phenolic compounds of Yeongyang ($246.6\;{\mu}g{\cdot}g^{-1}$) slightly low and that showed similar concentrations among three different regions. The concentration of phenolic compounds in foxtail millets, Chungchajo ($335.6\;{\mu}g{\cdot}g^{-1}$) showed the highest concentrations. The average phenolic compounds of common millets showed the highest concentrations in Milyang ($305.5\;{\mu}g{\cdot}g^{-1}$), Bonghwa ($262.0\;{\mu}g{\cdot}g^{-1}$), Gijang ($195.1\;{\mu}g{\cdot}g^{-1}$), Yeongyang ($237.2\;{\mu}g{\cdot}g^{-1}$) in decreasing order. The concentration of phenolic compounds of common millets was the highest in the Norangchalgijang ($337.0\;{\mu}g{\cdot}g^{-1}$), Hwanggumgijang ($250.0\;{\mu}g{\cdot}g^{-1}$) was also relatively higher than others. The results of this study will provide basic information for breeding sorghums, foxtail millets and common millets with higher phenolic compound concentrations.

파종방법에 따른 기장과 조의 생육 및 수량 (Effects of Different Sowing Methods on Growth and Yield of Proso Millet (Panicum miliaceum L.) and Foxtail Millet (Setaria italica L.))

  • 기장과 조의 생산량과 자급률 향상을 위하여 기장과 조의 기계화에 적합한 파종방법을 알아보기 위해서 지금까지 개발된 기장과 조의 기계화 파종방법에 따른 생육특성 및 수량특성을 알아보았다. 시험처리는 인력점파, 높은이랑 기계점파, 기계산파, 넓은이랑 줄뿌림 파종방법으로 실시하였다. 노동투입시간에서의 기장의 산파는 인력점파 대비 $16.07hr10a^{-1}$ 절감되었고, 조에서도 인력점파 대비 산파에서 $14.23hr10a^{-1}$ 절감되었다. 간장은 기장에서 2 및 3년차에서 산파 처리구에서 가장 큰 138, 125 cm가 조사되었으며, 조에서는 3년 모두 줄뿌림과 산파 처리구에서 가장 큰 것으로 나타났다. 간경에서는 기장과 조에서 3년 모두 가장 굵은 것으로 나타났다. 종실수는 인력점파 처리구에서 많은 것으로 조사되었다. 수량에서는 기장의 경우 대조구인 인력점파 대비 산파에서 15~32% 증수되었다. 조의 경우에서도 대조구인 인력점파 비해 산파에서 9.1~28% 증수되었다. 따라서 기장과 조의 기계화 파종시 산파하여 재배할 경우 노동효율 및 수량증대에 유리할 것으로 생각된다.

곡류 및 잡곡류를 이용한 팽화과자의 생리 활성 비교연구 (A Comparative Study on the Physiological Activities of Puffed Snack using Miscellaneous Cereals and Grain Crops)

  • This study was performed to compare the physiological effects of puffed snack on diabetic and geriatric diseases using miscellaneous cereals and grain crops. The puffed snacks were prepared with different amounts of miscellaneous cereals and grain crops (in ratios of 10%, 20%, and 30% of brown rice). Changes in the water soluble index, water absorption index, color, antioxidant activity, total polyphenol content acidity, ${\alpha}$-glucosidase inhibition activity, and sensory evaluation were also determined. As the cereal and crop contents increased, the value of the water soluble index increased while the water absorption index decreased, with the exception of glutinous foxtail and barnyard millets. With respect to color, lightness and yellowness decreased in concert with increases in the cereal and crop contents, whereas redness increased. Furthermore, the antioxidant activity and total polyphenol content as well as ${\alpha}$-glucosidase inhibition activity increased remarkably with increasing concentrations of sorghum. There was no significant difference in the physiological activities depending on the addition of millet, barley and barnyard millets. In sensory evaluation, the puffed snacks containing sorghum, millet, and glutinous foxtail millet received higher values than other samples. Altogether, our results indicate that puffed snacks containing 10~20% sorghum could be suitable as ingredients for improving sensory and physiological activities in diabetic and geriatric diseases.

Contents of Phytic Acid of Various Cereal Crops Produced in Korea

  • The main objective of the study was to investigate the phytic acid contents of various cereals and legumes produced in Korea. The results showed that the phytic acid contents of buckwheat, foxtail millets, sorghum, millet, barley, jobs' tears, yellow corn and wheat flour (Urimil) were in a range of 0.13 to 2.27%. The contents of the phytic acid ranged from 1.03 to 1.16% for legumes including red Indian bean, black Indian bean, mung bean, and black soybean. The phytic acid content of brown rice was five times higher than those of 100% polished rice. The polishing process of the rice decreased significantly the content of the phytic acid. We estimate that the daily phytic acid intake from rice was changed from 653 mg/day in 1995 to 430 mg/day in 2005 based on the results of a national nutrition survey.

답리작 적응 조사료용 피의 생육특성 및 제초제 반응 (Agronomic Characteristics and Herbicidal Response of Barnyard Millet Strains Under Paddy Rice)

  • 본 시험은 몇몇 사료용 피들의 생육특성과 논에서 잡초화 방지를 위하여 국내 논에서 사용량이 많은 제초제들에 대한 반응을 조사하기 위하여 실시되었다. 겨울철 유리 온실 내의 대형 콘크리트 폿트에서 사료 가능성이 높은 피 8계통들의 생육을 조사한 결과 IT170609, IT196421 그리고 EV2012 계통들이 건물중 생산성이 상대적으로 높았다. 출수기에 따른 품종적 특성은 IT170609 계통은 중만생종, IT196421 및 EV2012 계통들은 만생종으로 나타났다. 선발된 사료용 피 3계통에 대한 발아율은 재래종인 강피 보다 높았고, 20 및 $25^{\circ}C$에서 뚜렷하였다. 논에서 사료용 피들의 잡초화 방지를 위한 제초제 시험에서 토양처리제인 imazosulfuron+benzobicyclone+penoxsulam 액상수화제는 사료용 피 3계통에 대하여 90% 이상의 효과를 보였다. 경엽처리 제초제들인 cyhalofop-butyl 유제, penoxsulam 액상수화제, metamifop 유제는 사료용 피 6~7엽기까지 매우 높은 효과를 보였다.

식용피의 영양성분과 생리활성 (Nutritional Components and Biological Activities of Barnyard Millets(Echinochloa spp.))

  • The edible barnyard millets(Echinochloa spp.) which have essentially vanished in the farmhouses environment and in agricultural germplasm were evaluated with the aim of restoration as a crop. The proximate components and mineral elements of milled millet were nutritionally similar or better than brown rice, and the vitamin contents of $B_1$ and $B_2$ exceeded those of rice by 1.3 times and 2.3 times, respectively. ${\beta}$-Carotene which is absent from brown rice was detected at levels ranging from 15~31 ${\mu}g$ in millet samples. Nine essential amino acids, including histidine and arginine and eight non-essential amino acids, such as aspartic acid were detected. The sum of all amino acids was determined to be IEC518>525>510 in the range of 69~106 mg/g. Analysis of physiological active substances via their electron donating ability(EDA) revealed values ranging from 3.4~8.2%, with the total polyphenol component being 51.1~69.4 mg/g and ${\alpha}$-glucosidase inhibition ability determined as 8.3~10.9%. In terms of agronomical characteristics and yields of barnyard millet, three millet varieties(IEC510, 518, and 525) were suitable as edible crops. IEC525 was selected as optimum variety for cultivation on the basis of nutritional ingredients, physiological active substances, and yield.

잡곡의 품질개량 육종 성과와 전망 (Quality Breeding Outcome and Outlook in Coarse Grain Crops)

  • Coarse grain crops including maize, sorghum, buckwheat, fox-tail millet, pearl millet, proso millet and barnyard millet have been used as health food, feed and industrial materials in Korea for a long time. Korean ancestors thought and treated them as the very important good crops for human health and the crops have served as a dish made with all the grains, particularly in January 15 of the lunar month in korea because the grains make the five viscera of heart, liver, spleen, lungs and kidneys and the six entrails of gall bladder, stomach, small and large intestines, the paunch, the bladder, and the bowels strong and build healthy body. Thus, the objectives of the paper were to review and summarize the results obtained from the quality breeding and functional researches worldwide on nutrition, utilization and medical action of the coarse grain crops. Maize grain, fresh ear and green fodder yields have increased since 1960s in Korea. Agronomic traits improvements also occurred for cold tolerance, disease and insect resistance, resistance to barrenness, resistance to loding, pollen production, grain and seed yields, and eating quality. For buckwheat, improved summer buckwheat varieties produced more rutin for vegetable and grain than autumn varieties in Korea

1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰 (A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.

Genotyping Based on Polymerase Chain Reaction of Enterobacter sakazakii Isolates from Powdered Infant Foods

  • This study was undertaken to classify Enterobacter sakazakii isolates from 13 powdered infant formula products, 25 powdered weaning diet products, and 33 weaning diet ingredients on polymerse chain reaction (PCR) methods. The numbers of the isolates from 1 powdered infant formula product, 7 powdered weaning diet products, and 6 weaning diet ingredients were 1, 14, and 8, respectively. The contaminated ingredients were 1 rice powder, 2 millet powders, 2 vegetable powders, and 1 fruit and vegetable premix. PCR with the primer of repetitive extragenic palindromic element (REP-PCR) and random amplification of polymorphic DNA(RAPD) were effective in discriminating among the isolates, but tRNA-PCR and PCR with the primer of l6S-23S internal transcribed spacer (ITS-PCR) were not. Some of E. sakazakii isolates from vegetable powders, fruit and vegetable premix, and millets powders were classified into the clonal groups based on the DNA patterns in the REP-PCR and RAPD analysis. A close genetic relationship among the isolates from some of the powdered weaning diet products and the rice powder was also detected in the cluster analysis based on the DNA patterns in RAPD.
