  • The purpose of this study was to investigate the dietary intakes of preschool children in rural areas and to develop programs of nutrition education, offering the mothers an appropriate advice for the improvement of the dietary practices corresponding to the modernization of the agriculture. The daily food intakes of 118 preschool children, randomly selected from the farm household, were studied by means of three-day records during summer season of 1972. The results showed that the dietary intakes of food groups such as meats and fishes, beans and the products, milks and small fishes, fruits, fats and oils were below 50 per cent of the recommended level-especially in that of milk. Therefore, the diet was generally below the recommended dietary allowances for protein with good quality, fat, calcium, vitamin A, thiamine, reboflavin and ascorbic acid. The dietary data revealed that most of preschool children in rural areas consumed rice and barley, almost every day. Other foods eaten less frequently were soybean paste, gimchi, potatoes, flour, and summer squash. The use of cereals should be curtailed some what and the use of milks, fishes, poultry, meats and protein extenders should be increased.

한국 남성의 연령별 식품 및 영양소 섭취량 조사 (A Survey of Food and Nutrient Intakes of Korean Men by Age Groups)

  • A dietary survey was conducted using 24-hour recall method in 80 male elementary school children, 83 high school students, 87 adults and 98 elderly people over 65 years of age to discuss food and nutrient intakes among different age groups. In observing food intake by age groups, the percentage of plant foods to total food intake was significantly higher in the elderly than other groups and that of animal foods was the highest in the children. The children consumed significantly higher amounts of milk and dairy products. Carbohydrate energy percent in the elderly people was 68.0%, significantly higher than other age groups. All age groups consumed Ca below Korean RDA and especially, 65.1% of the adolescents and 68.4% of the elderly consumed below 75% of RDA. Nutrient adequacy ratio (NAR) of most nutrients was lowest in the elderly. Mean adequacy ratio (MAR), an index of overall dietary quality, was 0.94 for the children, 0.84 for the adolescents, 0.84 for the adults, and 0.73 for the elderly. The above results suggest that food and nutrient intakes have been differently affected with advancing age, and overall dietary quality of the elderly people is lower than that of other age groups. 성별에 따른 종합검진 영양상담자의 식이섭취 및 식습관에 관한 연구 (A Study on the Dietary Habits and Food intake Patterns by sex; base on the data of the nutrition counseling of comprehensive medical testing in Gyeonggi area)

  • The purpose of this study was to analyze the dietary behaviors and food intake patterns by sex, based on the data of nutrition counseling of health medical examination. The subjects were 5811(3258 males and 2553 females) of groups taken comprehensive medical testing in Gyeonggi area, and the total period was from January 1, 2005 through December 31, 2005. The subjects are composed of 56.1% male and 43.9% female. The results of this study show that of the females group were higher than those of the males in the case of dietary patterns. The averages intakes of milk products and beverages were significantly higher in male. Animal food intake ratio in the meal was significantly higher in male. In view of these facts, the relation factors of nutrients intakes may vary by sex. The averages of nutrients intakes were higher in male compared to female. Therefore, appropriate nutritional education should be conducted so that they have a healthy dietary habit.

  • The purpose of the present study is to collect information in terms of the frequency and amounts in frequently consumed foods. We conducted the secondary analysis from '93 Korean National Nutrition Survey. Mainly informations about 2-day food records were used to investigate food intakes and to compare different food patterns by area. Amounts and frequencies of food intakes are on the list by the order of contributing amounts and frequencies. Amounts of total daily intake of food per capita are 1,054g in nationwide, 1,076g in large city, 1,049g in small city, 1,017g in rural. The major foods consumed in large quantities were rice, kimchi, milk, in nationwide, large city, and small city and rice, kimchi, Korean radish in rural. The intake frequency of kimchi, rice, and basic seasonings as garlic, green onion, salts, soy sauce et al, were higher than other foods in all area. However, there are need for further researches to investigate individual dietary intake and seasonal variation of intakes. Also, food consumption patterns for different groups considering age, sex, area should be studied.

서귀포시 지역과 남제주군 지역 여성의 영아영양법에 관한 실태조사 (A Study n Infant Feeding Practices in Seogypo Area and South Chejukun Area)

  • This study was conducted to survey the feeding methods in Seogypo city and south Chejukun area. A random sample for this study a total of 355 mothers having babies under the age of 3 were surveyed. were boys. 45.5% were girls. infants' colostrum intakes in Seogypo sith and south Chejukun area were 69.9% and 63.1% respectability. Nother's education level affected colostrum intakes significantly. Baby's sex birth weight and mother's job affected the infants' feeding methods. The case of girl normal birth weight and mother's employment showed high percentage of bottle feeding. Bottle feeding was higher in Seogypo small city than in south Chejugun the country. Most of reasons for bottle feeding or mixed feeding was the lack of breast milk. The highest percentage of recommenders for breast feeding were baby's mother in Seogypo city area and were baby's grandmother in south Chejugun area. In Seogypo city area mother's education level did not affect the infant's feeding methods but in south Chjukun area mother's education level affected significantly.

Effect of choline chloride supplementation on milk production and milk composition of Etawah grade goats

  • Background: The effect of choline chloride supplementation through forced drinking combined with concentrate diets containing Ca-fish oil on milk production and milk composition of Etawah Grade goats was evaluated. Choline chloride is an essential component in ruminant diets as it is required for fat metabolism. Method: The experiment was conducted in a completely randomized block design with three types of treatments and eight replications. The trial had two successive experimental periods; the first, during the eight weeks of late pregnancy, and the second, during the first 12 weeks of lactation. Twenty-four Etawah Grade does in the second gestation period were divided into three treatment groups. Commercial choline chloride 60 % in corncobs-based powder was used as a source of choline chloride. The treatments were no supplementation (control) and supplemented with either 4 g or 8 g/2days of choline chloride. Choline chloride was given to the animals through a forced drinking technique, after dissolving it in 60 ml drinking water. The initial body weight of does was $38.81{\pm}3.66kg$. The does were penned individually, and were given fresh chopped King Grass ad libitum and 700 g/day of concentrate diets containing Ca-fish oil, starting eight weeks prior to expecting kidding and continuing for 12 weeks of parturition. Results: All nutrient intakes were not significantly different (p > 0.05) among the treatments during the late pregnancy and the lactation periods. Supplementation did not affect (p > 0.05) the average daily gains and feed conversion ratio during pregnancy but gave effects (p < 0.05) on the average daily gains, feed conversion ratio and income over feed cost during lactation. The highest average daily milk yields and 4 % fat corrected milk yields were found in goats supplemented with 4 g/2days of choline chloride and increased by 17.00 % and 24.67 %, respectively, compared to the control. Moreover, milk composition percentage and milk constituent yields improved significantly (p < 0.05) in those supplemented with 4 g/2days of choline chloride. Conclusion: The supplementation of 4 g/2days of choline chloride through forced drinking increased milk yields, the 4 % fat corrected milk yields, milk composition, milk constituent yields, and improved feed conversion ratio and income over feed cost of Etawah Grade goats.

The Effect of Milk Supplementation on Bone Density and Iron Status of Elderly

  • This study was performed to investigate how milk supplementation can benefit the elderly by increasing bone density but possibly harming the iron status concomitantly. Forty one elderly subjects over 65 years of age(male : 9, female : 32) participated. All subjects were apparently healthy, home staying and attending meal service for lunch at the welfare center. They were from low income area of Puchon city. One cup of milk per day was served for 10 months. The mean intake of calcium was significantly increased for females after milk supplementation. Males showed significantly increased means of triceps skinfold thickness, suprailiac skinfold thickness and waist circumference. Females showed significantly increased measurements fo three kinds of skinfold thickness, waist circumference, and hip circumference. There were no significant change in the mean bone density of lumbar spine$(L_2~L_4)$, femoral neck, ward's triangle and torchanter, but the proportion of osteopenia estimated by the T score of lumbar spine bone density was lowered from 50.0% to 34.6% for females. The mean Hb level was significantly for males. The proportion of anemia estimated by Hb(<12g/dl), Hct(<36%) and serum ferritin(<15mg/ml) were increased from 17.2% to 51.7%, from 20.7% to 44.8% and from 10.3% to 17.2%, respectively for females. It looks like milk supplementation can effect the intakes of several nutrients considered to be commonly deficient in the Korean diet fo elderly people, increase some anthropometric measurements, and decrease the proportion of osteopenia. However it can have adverse effects on iron status of females.

유아의 우유군의 섭취가 식이의 다양성과 영양소 섭취의 적정도에 미치는 영향 (The Effects of Milk Group Intake to Dietary Diversity Score and Nutrient Adequacy Ratio among Toddler)

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. ${\cdot}$${\cdot}$고등학교급식식단에서 우유의 영양보충효과 (The supplementary effect of milk in elementeary, middle & high school meal program)

  • 전국 각지에 소재한 초·중·고등학교 중 우유급식 시행교 52학교와, 우유급식 비시행교 37학교를 지역별로 랜덤으로 선정하여 1 개월 동안 제공된 식단의 영양 평균치를 분석한 결과, 우유급식 시행교가 에너지, 동물성 단백질, 동물성 지질, 당질, 동물성 칼슘, 인, 동물성 철분, 칼륨, 비타민A, 콜레스테롤 등의 섭취량이 높았으며, 특히 동물성 단백질(p<0.01), 동물성 칼슘(p<0.001), 인(p<0.001) 등은 우유급식 시행교가 우유급식 비시행교보다 섭취량이 유의적으로 높은 결과를 보였다. 특히 점심급식에서의 칼슘 섭취량은 우유 급식시행교가 우유급식 비시행교보다 약 1.5배가량 높았으며, 권장량에 대한 칼슘섭취량의 평균 백분율은 우유급식 비시행교의 경우 $24{\sim}28%$를 충족하고, 우유급식 시행교의 경우 $43{\sim}51%$를 제공하고 있어, 우유급식을 하지 않을 경우 점심급식으로 제공되는 칼슘섭취량이 매우 낮은 것으로 조사되었다. 전체적으로 우유음용으로 한식이 주인 학교급식식단의 영양공급상의 문제점을 상당량 보충시키는 것으로 조사되었다. 특히 평균 15~20%의 잔반량을 고려할 경우 우유음용에 따른 영양섭취량의 차이는 더욱 클 것으로 추정되어 학교우유급식의 확대가 시급히 요구됨을 확인할 수 있었다.

영양표시에 나타난 각종 시판음료의 영양 및 건강${\cdot}$기능성 성분평가 (The Evaluation of Nutrients and Health${\cdot}$Functional Elements Presented at Nutrition Labels of Various Beverages in the Market)

  • On the basis of the increasing interest for the selection of beverages, this study aimed to evaluate the contents of nutrients and health ${\cdot}$ functional elements in the beverages. Total 161 beverages that bear nutrition lable (NL) as nutrition table and health ${\cdot}$ functional elements information were collected and classified to 8 groups. The evaluated nutrients that are obligatory for NL in Korea were total calorie, carbohydrate, protein, fat, and sodium. Presented values showed that milk & yogurt and soy milk are the most wholesome beverages while the total caloric contents also were higher among 8 groups. Sodium contents in soy milk were higher than any other groups. The caloric contents of other beverage groups come mainly from carbohydrate presumably simple sugar. The caloric content of sports drinks is the lowest but the sodium content is variable among products showing the range of 0 - 100 mg/100 ml. Nonobligatory nutrients for NL frequently expressed are Ca, Fe, vitamin C, folate, and dietary fiber. Their content per serving size does not exceed the tolerable upper intake level, however, habitual multiple intakes of certain product require attention for the prevention of overintakes. Many health ${\cdot}$ functional elements as catechin, carnitine, polyphenol, and nucleic acids etc were listed in NL without presenting the content and their functions appear to be exaggerated compared to the known scientific evidence.
