여성의 우유음료 섭취 실태 및 이에 영향을 주는 요인에 관한 연구 (A Study on the Consumption of Dairy Beverage of Female and Factors affecting the Consumption Status)

  • This study was performed to investigate the frequency of dairy beverage consumption and factors which affect the dairy beverage consumption of women. The subjects were 1,012 females living in Seoul. They preferred milk, yakult. flavored milk, liquid yogurt, semi-solid yogurt, and low fat milk in order of frequency. The consumption of the dairy beverage was not related to season. The respondents knew that the dairy beverages were nutritious and good for their health. More than fifty percent of them answered that dairy beverages tasted good. The consumption of milk and yakult were related with their occupation, habitual aspect, and practical factors. The consumption of liquid yogurt was affected by their family income, habitual aspect, practical factors and familarity with that beverage. The consumption of semi-solid yogurt was affected by their family income, health status, habitual aspect, and practical factors. The consumption of most beverages were affected by the recognition of those beverages rather than by socio-demographic factors. In order to enough drink dairy beverage, nutritional education messages should encourage consumption of dairy beverages. Policies that make students access dairy beverages at school should be promoted.

경기지역 남녀 중국인 유학생의 식습관, 건강관련 생활습관, 음료의 기호도와 섭취에 관한 비교 연구 (A Study on the Dietary Habits, Life Habits, Drink Preference and Intake according to the Chinese Students Gender in Gyeonggi Province)

  • The purpose of this study was to investigate dietary habits, health lifestyle, preference and intake of beverages of Chinese students in Gyeonggi area. Therefore, we try to identify the factors that affect beverage consumption. According to the analysis of the demographic characteristics of male and female Chinese students, there were 155 male students (49.7%) and 157 female students (50.3%). There were statistically significant differences between the residence period and the time of coming to Korea according to sex (p<0.05), but there was no statistically significant difference between the education level, residence type and Korean ability (p>0.05). Analysis of the differences in health-related lifestyle among Chinese students of both sexes showed statistically significant difference in alcohol drinking, smoking, and exercise according to sex (p<0.05), but no statistically significant difference in computer use time (p>0.05). According to the analysis of the dietary habits of the Chinese students, there was a statistically significant difference in the number of meals per day, breakfast, lunch, dinner, snack frequency and number of midnight snacks, but no statistically significant difference in eating out frequency. As a result of the preference test for general beverages, 4.11 points of water, 3.81 points of milk, 3.64 points of fruit and vegetable juice, 3.58 points of tea, 3.25 points of coffee, 3.22 points of carbonated drinks, 2.92 points of functional drinks, respectively. Male students were more likely to prefer water, tea, and health functional drinks while female students had higher preference for fruit, vegetable juice and vinegar drinks (p<0.05). In general, consumption of regular drinks was 4.95 in water, 3.58 in milk, 3.03 in coffee, 2.92 in carbonated drink, 2.91 in fruit and vegetable juice, 2.63 in tea, 2.07 in functional drink, and 1.44 in vinegar appear. Male students had higher intake of water, tea, carbonated drinks, and health functional drinks while female students had higher intake of fruit and vegetable juice (p<0.05). The results of correlation analysis of factors affecting the general drinking of Chinese students are as follows. The intake of tea was related to the period of residence and dietary habits, the intake of milk for breakfast, the number of snacks and midnight snacks for carbonated drinks, and the fruit vegetable juice were related to dietary habits (p<0.01, p<0.05).

초등학생의 우유 및 유제품 섭취 양상과 소비 성향에 관한 조사 (Survey on the Intake and Consumption Patterns of Milk and Dairy Products by Elementary School Students)

  • We conducted a study to investigate milk and dairy products consumption among elementary school students to identify ways to increase their intake of milk and dairy products. We asked 518 students in Seoul to fill out questionnaire. Only 55.6% of the subjects consumed milk daily, and 43.7% of them drank at least 1 cup per day. The frequency and quantity of milk consumption were higher in male students than female students. The majority of the subjects consumed whole milk, and most students(59.5%) preferred flavored milk to whole milk. The reasons given for drinking milk included 'wanting to be tall'(66.1%) and 'for good health'(47.1%), while the main reason given for not drinking milk was stomach pain (68.4%). Records of having an unpleasant experience and upset stomach after drinking milk occurred at a higher rate for those who did not drink milk(84.2%) than for those who did(53.3%). Of the students questioned, 36.9% consumed dairy products other than milk 3~4 times per week, and liquid-type yoghurt(43.8%) and ice cream(35.4%) were the preferred dairy products among students. The reasons given for consuming dairy products were 'good taste'(56.6%), 'good to eat'(46.6%), 'wanting to be tall'(32.4%), and 'for good health' (25.4%). Among those students who did not consumed dairy products, the major reason given was 'family does not eat at home'(33.3%). After consuming the dairy products, 71.4% of participants thought that dairy products did not result in physical improvement. Most students had experienced purchasing milk and dairy products by themselves. When they bought milk or dairy products, the reasons given for making a particular selection were 'shelf-life'(61.6%) for milk, and 'favorite dairy products'(54.1%) for dairy products. According to participants, the factors that need to be considered for milk and dairy product consumption among elementary school students are 'higher nutrition' (60.8%), 'better sanitation'(57.3%), and 'better quality and taste'(55.2%).

한국 사춘기 소녀들의 골밀도와 환경요인들과의 관계(I) (The Relationship Between Bone Mineral Density and The Environmental Factors in Korean Pubescent Girls)

  • The relationship between bone mineral density and the environmental factors were investigated from the view point of preventing osteoporosis in Korean pubescent girls. The effects of calcium, nutrient intake, physical activity on total bone mineral density, lumbar spine and femoral bone mineral density and total bone mineral content were evaluated 33 healthy pubescent girls aged 14∼16y. A convenient method was used to assess nutritional and energy intake and calcium index was used together. Calcium intake in childhood was estimated by asking whether subjects usually drank milk as children. Eating habits data and history of menstruation were obtained by questionnaire and interview. Average energy expenditure was calculated. Bone mineral density and content were measured by dual energy x-ray absorptiometry using a Lunar DPX+Scanner (Lunar, Madison, WI). The lumbar spine(L2∼L4) and three sites in the proximal femur (femoral neck, trochanteric region, and Ward's triangle)were measured. Height and weight were measured, and the body mass index(BMI) was derived from the formula : BMI=kg/㎡ Statistical analysis was performed by simple correlation using the SAS package. The mean calcium intake (736mg) was below the RDA of 800mg/d. Twelve percent of the total subjects did not drink milk at all because they did not like the taste. Skipping meals, low calcium intake and low energy intake were significantly correlated with the low BMD. Also the data indicate that girls who reported drinking milk with every meal during childhood had significantly higher bone densities than girls who reported drinking milk less frequently. The results suggest that milk consumption in childhood appears to be needed not only for growth and development, but possibly also to assure an optimal peak of bone mass and thus greater latitude for the maintenance or skeletal integrity in the face of bone losses. There was a highly significant correlation between the total BMD and overall level of physical activity. Body weight was a better predictor of total BMD than was and other factor. Simple mechanical loading may explain why body weight, but total BMC was positively relatd to height. Conclusively, increasing calcium intake and physical activity in the pubescent girls could influence BMD.

한국 유가공업의 발전과 전망 - 발효유 (Development of Korean Dairy Industry - Fermented milk products -)

  • Lactic acid bacteria had been widely utilized in fermented foods such as fermented dairy products, traditional sauces, kimchi, fermented sausages, medicines or probiotic feed additives for a long time. LAB are also widely distributed in the mammalian gastrointestinal tracts, oral cavity, vagina, and various foods or soils. The most familiar examples of using LAB would be the fermented milk products, and those had become one of the favorite foods in Korea f3r more than 34 years of history. The main benefits of the fermented milk products were originally the improvement of the balance of intestinal flora to control diarrhea and congestion disorders, and gradually, they were chosen by the consumer preference of the taste. The very beginning of the fermented milk products in Korea was the Yakult type products in 1971, and it was the commencement of the solid foundation of the dairy industry and the understanding beneficial effect of probiotic yogurt. After middle of 80's, stirred type fermented milk products had been firstly produced, and it was the time that the domestic dairy industry took root in Korea. From 90's, functional fermented milk products were produced, and drink type yogurt sales a mount increased drastically, and these products began to be chosen not only with the values of nutrition but also with physiological functions. The health claims are classified into intestinal health, gastric health and hepatic health. The prospects for the Korean market are as follows; The majority of leading products would be the premium functional yogurt products as it was last year. It is because the sales of lower cost products shows slow-down, and industries tend to increase the commercial advertisements of premium functional yogurt products through mass media. These tendencies would make the market situation become more competitive.

더덕 추출물이 마크로파지 활성과 발효 중 젖산균 성장에 미치는 영향 (Effect of Extracts of Codonopsis lanceolata on Macrophage Activity and on the Growth of Lactic Starter Culture during Fermentation)

  • 더덕의 마크로파지 활성 효과를 평가하고, 발효유에 첨가 할 경우 젖산균 성장에 미치는 영향에 대하여 실시하였다. NO 분비능과 $IL-1{\alpha}$는 더덕 열수 추출물을 $1,000\;{\mu}g/mL$ 첨가하였을 때 유의성 있게 증가하였다. $TNF-{\alpha}$는 더덕 열수추출물 및 알콜 추출물 공히 $1,000\;{\mu}g/mL$ 첨가하였을 때 유의성 있게 증가하였다. 마크로파지 활성은 더덕 알콜 추출물 보다 열수 추출물이 더 높았다. 더덕 열수 추출물이 젖산균에 미치는 영향을 조사한 결과, 더덕 첨가량이 증가할수록 젖산균 성장이 억제되었고, pH는 완만히 감소됨에 따라 발효유에 더덕 열수 추출물을 첨가할 경우 Set type보다는 Stirred type이나 Drink type으로 해야 발효유 제조에 적합할 것으로 보인다.

Meal Behavior and Food Preferences by Different Body Types of $6^{th}$ Grade Elementary School Children Residing in Anyang City

  • The purpose of this study was to investigate meal behavior and food preferences of children with different body types. This survey was conducted using a questionnaire for 274 boys and 257 girls in the 6th grade of elementary school in Anyang city. A questionnaire method was used. Food preferences of 14 food groups were tested with 5 likert scale points. Body types were divided with weight-length index(WLI) calculated by height and weight. The cut-off point for the underweight children was 90, and that of the overweight children was 100. The mean weight of the underweight children(26.2%) was 31.9$\pm$4.0kg, and that of the overweight children(26.9%) was 49.4$\pm$6.3kg. The average BMI of overweight children and underweight children was 21.0kg/$m^2$ and 15.5kg/$m^2$respectively. Perceived health status was different based on body types, and more of the overweight children answered they are healthy compared to the underweight children, Body types were not significantly different based on parent's education and occupation. Only 56.7% of the children ate breakfast at a regular time, 60% and 42.9% of the children had their lunch and dinner at regular time, respectively. Higher percentage of overweight children had irregular breakfast(20.1%) and skipped their breakfast and dinner compared to the other groups, however only dinner was statistically significant. The most frequently answered reasons for skipping meals were 'no time to eat'(50%) and 'bad side-dishes'(17.0%). Food preference was not different among the body type groups, however rice-cake was preferred in the underweight group, as well as milk and lettuce were preferred in overweight group. The preferences for milk and grain powdered drink(misitgaru) were same as or a carbonated soft drink. Focusing pubericant, it is necessary to have a regular breakfast. With regard to the importance of nutrition and health for children, the nutrition education for meal behavior and food preference to achieve a balanced diet should be considered.

청소년의 식이행태와 알레르기 질환과의 관계: 제15차 청소년 건강행태 온라인조사 자료 이용 (Relationship between adolescents' dietary behavior and allergic diseases: An analysis using data from the 15th Korea Youth Risk Behavior Survey 2019)

  • 본 연구는 청소년의 식이행태를 파악하고, 식이행태에 따른 알레르기 질환과의 관련성을 확인하여 추후 알레르기 질환 관리를 위한 기초자료를 제공하고자 함이다. 연구방법은 제15차 청소년건강행태조사 빅데이터를 이차분석하였으며, SPSS 25 프로그램을 이용하여 복합표본 빈도분석, 복합표본 교차분석을 시행하였다. 연구 결과 천식을 진단받은 청소년은 아침식사 빈도, 과일 섭취빈도, 탄산음료 섭취빈도, 에너지음료 섭취빈도, 단맛 나는 음료 섭취빈도, 패스트푸드 섭취빈도, 채소 섭취빈도, 편의점 식사 경험과 관련성이 있는 것으로 나타났다. 알레르기 비염을 진단받은 청소년은 아침식사 빈도, 과일 섭취빈도, 탄산음료 섭취빈도, 에너지음료 섭취빈도, 단맛 나는 음료 섭취빈도, 채소 섭취빈도, 우유 섭취빈도와 관련성을 있음을 보였다. 아토피피부염을 진단받은 청소년은 탄산음료 섭취빈도, 채소 섭취빈도, 우유 섭취 빈도, 편의점 식사경험과 관련성이 있었다. 따라서 알레르기 질환을 가진 청소년의 경우 올바른 식이행태를 교육하여 습관을 형성해 나갈 수 있도록 하는 것이 필요하다.

한.일 중학생의 식생활 비교연구 (A Comparative Study on Eating Habits Between Middle School Students of Korea and Japan)

  • The purpose of this study was to investigate eating habits. nutritional knowledge and the active use of information from the eating habits chapter of the textbook by middle school students of Korea and Japan. 9th grade students of 7 middle schools residing in Gyeongju and Hukuoka. Japan (592 Korean students. 546 Japanese students) participated in this study. Research data were collected by means of questionnaires and analyzed by such means as frequency, percentage. means. standard deviation. $\chi$$^2$-test, t-test, F-test and Pearson's correlation analysis employing SPSS Program. The results of this study were summarized as follows: 1. In terms of the physical features of middle school students, the height of Korean students tend to be taller than Japanese students. The weight of Korean students are on the average heavier than Japanese students. Research also proves that Japanese families have more family members. Korea has more full time housewives as well. Regarding their health. Korea has more people who consider themselves healthy than Japan does. 2. More students in Japan tend to eat breakfast and dinner everyday compared with Korea. Students eat snacks at night more in Korea than Japan. The average meal takes less than 20 minutes in Korea. It takes less than 30 minutes in Japan. Dinner is considered to be most important meal by the students of Korea and Japan. Meat. noodles. bread and cake are highly enjoyed by the students of both nations. 3. There was a little difference between Korean and Japanese students. concerning the necessity of nutrition education because they both study home economics. 4. The use of information from the textbook shows. most students eat green vegetable almost everyday but Korean students tested as eating more. Japanese students more often say they drink more than a cup of milk everyday The Japanese students have higher rates of using information from the textbooks. drink milk everyday. eat bean paste soup. eat a lot of meat and fish. 5. It turns out that students who have more nutritional knowledge have a low late of eating convenience food and student who utilize the chapter in the textbook in everyday life have low rates of eating convenience food.

가시오가피 추출물이 마크로파지 활성과 우유의 발효 중 젖산균 성장에 미치는 영향 (Effects of Acanthopanax senticosus Extract on Macrophage Activity and the Growth of Lactic Starter Culture during Fermentation)

  • 가시오가피의 마크로파지 활성 효과를 평가하고, 발효유에 첨가할 경우 젖산균 성장에 미치는 영향에 대하여 실시하였다. 가시오가피 추출물 농도가 증가할수록 마크로파지 활성은 증가하였고, 특히 $1,000\;{\mu}g/mL$ 첨가하였을 때 유의성 있게 증가하였다. 열수추출물은 70% 알콜추출물보다 NO 분비능이 더 높은 반면, $IL-1{\alpha}$$TNF-{\alpha}$는 알콜추출물이 더 높은 활성을 보였다. 가시오가피 열수추출물이 젖산균에 미치는 영향을 조사한 결과, 가시오가피 첨가량이 증가할수록 젖산균 성장이 억제되었고, pH는 완만히 감소됨에 따라 발효유에 가시오가피열수추출물을 첨가할 경우 Set type보다는 Stirred type 이나 Drink type으로 해야 발효유 제조에 적합할 것으로 보인다.
