Application of Electron-Beam Irradiation Combined with Aging for Improvement of Microbiological and Physicochemical Quality of Beef Loin

  • The combined effects of irradiation and aging temperature on the microbial and chemical quality of beef loin were investigated. The samples were vacuum-packaged, irradiated at 0 or 2 kGy using electron-beam (EB), and stored for 10 d at different aging temperatures (2, 14, or 25℃). The microbial growth, shear values, meat color, and nucleotide-related flavor compounds of the samples were analyzed. The irradiation effect on inactivation of foodborne pathogens was also investigated. The population of Listeria monocytogenes and Escherhia coli O157:H7 inoculated in beef samples decreased in proportion to the irradiation dose. Irradiation reduced the total aerobic bacteria (TAB) over the storage, but higher aging temperature increased the TBA. Thus TAB increased sharply in non-irradiated and high temperature-aged (14, 25℃) beef samples after 5 d. With increasing aging temperature and aging time, shear force values decreased. Lipid oxidation could be reduced by short aging time at low aging temperature. The color a* values of the irradiated beef were lower than those of the non-irradiated throughout the aging period. As aging period and temperature increased, IMP decreased and hypoxanthine increased. Considering microbial and physicochemical properties, irradiation can be used for raw beef to be aged at relatively high temperature to shorten aging time and cost.

  • This study was performed to investigate the physical, chemical and microbial characteristics of Gwamegi to provide basic data for the standardization of marine processed foods and for the improvement of the quality of commercial Gwamegi. The acid values of commercial Gwamegi were 5.8, 5.3 and 5.2 mg KOH/g for fillet type (F-type), "two divide" type (T-type) and whole type (W-type), respectively, and the peroxide values were 51.6, 51.5 and 53.2 meq/kg for each. There was a positive correlation between the acid value and the peroxide value (r=0.555) at confidence intervals (CI) of 99%. Trimethylamine (TMA) content of F-type, T-type and W-type products were 2.9, 2.6 and 3.6 mg%, respectively, while volatile basic nitrogen (VBN) contents were 22.4, 21.5 and 21.8 mg%. There was a strong positive correlation between TMA and VBN (r=0.961) at a CI of 99%. The histamine content was detected to be as much as 122 mg/kg, with about 36 % of the samples exceeding the CODEX criteria for histamine of 100 mg/kg. The total microbial count of 4 products exceeded 5 Log CFU/g and coliform group of 11 products exceeded the criteria of less than 1 Log CFU/g. Staphylococcus aureus in 27% of the samples exceeded the criteria of less than 2 Log CFU/g.

포장 조건에 따른 피망의 저장 중 품질 특성 변화 (Changes in Quality Characteristics of Bell Pepper Packaged with Different Films)

  • 피망에 대한 MA 저장에 적합한 포장재를 선발하기 위하여 기체에 대한 투과도가 다른 cast polypropylene (CPP), low density polyethylene (LDPE), polyolefin (MPD), polyolefin(PD961) 및 Linear low density polyethylene (LLDPE) 포장재로 피망을 포장하고 1$0^{\circ}C$에서 저장하면서 품질 변화를 고찰하였다. 저장 기간 중 포장 내부의 산소 농도는 4주까지 대체적으로 감소하였으나 그 이후에는 급격하게 증가하였다. 기체에 대한 투과성이 낮은 CPP로 포장한 시험구는 저장 4주에 산소의 농도가 10.4%, 이산화탄소의 농도가 4.5%로 다른 시험구에 비하여 산소의 농도는 낮고, 이산화탄소의 농도는 높았다. 저장 기간 중 피망의 중량 감소율은 LLDPE로 포장한 시험구가 가장 현저하였으며 다른 포장재로 포장한 시험구는 저장 5주까지도 1.5% 미만이었다. 다른 시험구에 비하여 CPP로 포장한 시험구의 총균수, 효모 및 곰팡이수가 많았는데, 저장 3주 이후에 그 차이가 현저하였다. 피망의저장 중 황색도를 나타내는 b값은 대체적으로 증가하였으며, 저장 4주가지 PD961과 MPD로 포장한 시험구가 다른 시험구에 비하여 높은 값을 나타내었다.

전해산화수로 세척한 절임 배추의 저장중 품질 특성 (Quality Characteristics of Salted Chinese Cabbage Treated with Electrolyzed-Acid Water during Storage)

  • 절임 배추의 저장 기간을 연장하기 위하여 배추를 절인 다음 전해산화수로 세척하고 저장하면서 품질 특성의 변화를 측정한 결과는 다음과 같았다. 즉 절임 배추를 전해산화수로 세척한 처리구가 대조구보다 낮은 pH를 보였으며, 저장 8일까지는 대조구에 비하여 낮은 pH를 나타내었다. 적정산도는 저장기간 동안 0.11-0.15%로 큰 변화를 나타내지 않았으며, 대도구와 처리구간에도 큰 차이가 없었다. 절임 배추를 전해산화수로 세척한 직후에는 대조구에 비하여 총균수가 $10^3\;CFU/mL$ 정도 낮았으나 처리구의 총균수는 저장 6일에 대조구와 비슷하였다. 유산균수도 세척 직후에는 처리구가 대조구보다 낮았으며, 저장 4일에는 대조구와 처리구의 차이가 가장 현저하였다. 저장 2일까지는 국물의 밝은 정도(L)에 있어서 대조구와 처리구간에 차이가 없었으나 그 이후에는 처리구가 대조구보다 높은 값을 나타내었다.

냉장 닭고기의 저장성 연장에 관한 연구 1. Potassium Sorbate와 Ascorbic Acid 처리가 닭고기의 미생물 및 관능적 품질에 미치는 영향 (Studies on Extending the Shelf-life of Refrigerated Chicken 1. Effects of Potassium Sorbate and/or Ascorbic Acid Dip on Microbial and Sensory Quality of Refrigerated Chicken)

  • 닭고기를 $4^{\circ}C$에서 냉장 보관할 경우 7.5% Potassium sorbate와 1% ascorbic acid에의 침지 처리가 닭고기의 표면 미생물 및 관능적 품질에 미치는 영향을 검토한 결과는 다음과 같다. 1% ascorbic acid 처리육의 경우 저장 8일째 이취가 발생하였으며 12일째에는 부패가 일어났으므로 미생물적으로 대조구에 비해 큰 차이가 없었다. 7.5% potassium sorbate의 처리는 저장중 중온성균 및 저온성균의 억제효과가 있었으며 Enterobacteriaceae의 성장억제에 특히 커다란 효과가 인정되었다. 대장균군은 저장 전기간을 통해 거의 검출되지 않았으며 21일 저장 후에도 부패가 일어나지 않았다. 7.5% potassium sorbate와 1% ascorbic acid의 혼합처리는 중온성균과 저온성균의 성장 억제효과가 있었으며 특히 Enterobacteriaceae와 대장균군의 성장 억제효과가 크게 나타났다. 관능검사 결과 21일간의 전 저장기간을 통하여 부패가 일어나지 않았으며 potassium sorbate 단독처리에 비해ascorbic acid의 부가효과가 인정되었다. 결과적으로 닭고기를 $4^{\circ}C$에서 저장할 경우 ascorbic acid 단독처리에 의해서는 미생물 및 관능적 품질에 큰 영향을 미치지 못하였으나 potassium sorbate 단독처리 혹은 potassium sorbate와 ascorbic acid 혼합처리에 의해서는 미생물의 성장을 억제하였고 관능적으로도 21일 동안 부패 현상이 발생하지 많아 그 효과가 크게 인정되었다.

Saccharomyces cerevisiae HS-1와 Streptococcus thermophiles HS-2 함유 복합 미생물비료 처리 후 크리핑 벤트그래스의 생육 (Growth of Creeping Bentgrass after Application of Microbial Fertilizer Containing Saccharomyces cerevisiae HS-1 and Streptococcus thermophiles HS-2)

  • This study was conducted to evaluate the effects of soil microbial fertilizer (SMF) containing Saccharomyces cerevisiae HS-1 and Streptococcus thermophiles HS-2 on the growth of creeping bentgrass. For the pot experiment, the treatments were as follows: no fertilizer (NF), control (3 N g/m2/month), SMF-1 (control+SMF 2 mL/m2/time), and SMF-2 (control+SMF 4 mL/m2/time). For the plot experiment, the treatments were as follows: NF, control, SMFp-1 (control+SMF 1 mL/m2/time), SMFp-2 (control+SMF 2 mL/m2/time), and SMFp-3 (control+SMF 4 mL/m2/time). In the pot experiment, visual turfgrass quality and the uptake amount of nitrogen (N) and potassium (K) were increased under the SMF treatments, whereas the content of chlorophyll (a, b, and a+b) and clipping yield were not considerably different compared with the control. In the pot experiment, the amount of SMF positively correlated with visual turfgrass quality and uptake amount of N and K. In the plot experiment, turfgrass density was increased by 12.9-19.2% under SMFp treatments compared with the control. These results indicated that the application of SMF containing Sa. cerevisiae HS-1 and St. thermophiles HS-2 improved the quality, density, and growth of creeping bentgrass via prompting the uptake of N and K.

매실(Prunus mume) 착즙액이 항균성과 생면의 저장성에 미치는 영향 (Effect of Maesil(Prunus mume) Juice on Antimicrobial Activity and Shelf-Life of Wet Noodle)

  • The effect of addition with maesil(Prunus mume) juice for extending the shelf-life of wet noodle was investigated by measuring quality changes such as total microbial count and pH. The Prunus mume juice showed antimicrobial activities against Salmonella enteritidis, Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes, and Escherichia coli. When the wet noodles containing Prunus mume juice were kept at $4^{\circ}C$ for 20 days, it was showed that the drop of pH was not significantly occurred during the storage. Total microbial counts for control exceeded the initial putrefactive criterion level of $1.0{\times}10^6\;cfu/g$ at 16 days of storage at $4^{\circ}C$. However, total microbial count of wet noodles with the addition of 10%, 20% and 30% Prunus mume juice were $3.0{\times}10^2\;cfu/g,\;3.0{\times}10^2\;cfu/g,\;and\;1.5{\times}10^2\;cfu/g$, respectively, and these bacterial counts were still less than the criterion level ever at 20 days of storage. The addition of Prunus mume juice extended the shelf-life of wet noodle appreciably.

하폐수처리에서 질소 제거를 위한 미생물 전기화학 기술의 동향 (Trends of microbial electrochemical technologies for nitrogen removal in wastewater treatment)

  • The removal of organic carbon and nutrients (i.e. N and P) from wastewater is essential for the protection of the water environment. Especially, nitrogen compounds cause eutrophication in the water environment, resulting in bad water quality. Conventional nitrogen removal systems require high aeration costs and additional organic carbon. Microbial electrochemical system (MES) is a sustainable environmental system that treats wastewater and produces energy or valuable chemicals by using microbial electrochemical reaction. Innovative and cost-effective nitrogen removal is feasible by using MESs and increasing attention has been given to the MES development. In this review, recent trends of MESs for nitrogen removal and their mechanism were conclusively reviewed and future research outlooks were also introduced.

Efficacy of Sodium Hypochlorite and Acidified Sodium Chlorite in Preventing Browning and Microbial Growth on Fresh-Cut Produce

  • The use of suitable sanitizers can increase the quality of fresh-cut produce and reduce the risk of foodborne illnesses. The objective of this study was to compare the washing effects of 100 mg/L sodium hypochlorite (SH) and 500 mg/L acidified sodium chlorite (ASC) on the prevention of enzymatic browning and the growth of microbial populations, including aerobic plate counts, E. coli, and coliforms, throughout storage at $4^{\circ}C$ and $10^{\circ}C$. Fresh-cut zucchini, cucumbers, green bell peppers, and root vegetables such as potatoes, sweet potatoes, carrots, and radishes were used. Compared to SH washing, ASC washing significantly (p<0.05) reduced microbial contamination on the fresh-cut produce and prevented browning of fresh-cut potatoes and sweet potatoes during storage. More effective inhibition of aerobic plate counts and coliforms growth was observed on fresh-cut produce treated with ASC during storage at $10^{\circ}C$. Polyphenol oxidase (PPO) activity of fresh-cut potatoes and sweet potatoes was more effectively inhibited after washing with ASC. The use of 500 mg/L ASC can provide effective antimicrobial and anti-browning treatments of fresh-cut produce, including processed root vegetables.

Effect of Aqueous Chlorine Dioxide Treatment on the Microbial Growth and Qualities of Iceberg Lettuce during Storage

  • Effects of aqueous chlorine dioxide ($ClO_2$) treatment on the microbial growth and the quality of iceberg lettuce during storage were examined. Lettuce samples were treated with 0, 5, 10, and 50 ppm of $ClO_2$ solution and stored at $4^{\circ}C$. Aqueous $ClO_2$ treatment significantly decreased the populations of total aerobic bacteria, yeasts and molds, and coliforms on the shredded lettuce. Fifty ppm $ClO_2$ treatment reduced the initial populations of total aerobic bacteria, yeasts and molds, and coliforms by 1.77, 1.34, 1.10 log CFU/g, respectively. Aqueous $ClO_2$ treatment caused negligible changes in the Hunter color L, a, and b values during storage. Sensory evaluations exhibited that there were no significant changes among treatments. These results indicate that the aqueous $ClO_2$ treatment can be useful in improving the microbial safety of the iceberg lettuce during storage and extending the shelf life.
