호텔 고객의 뷔페 메뉴품질 만족도에 관한 연구 (A Study on the Satisfaction of the Buffet Menu Quality of the Hotel Customers)

  • This study aims at providing useful information to establish subdivided marketing direction by deriving factors of significant extent and practicable extent of buffet users toward menu quality among super deluxe hotels in Gyeongju, and furthermore aims at presenting implications for efficient management result and sales increase of buffet in the future. The result of positive analysis is as follows. Firstly, in result of analyzing difference between importance and performance of hotel buffet in Gyungju area, importance is much higher than performance. Secondly, respondents consider that the most important menu of hotel buffet is main dish such as hot food and instant food rather than menu such as beverage, soup and salad. When it comes to attribute of menu quality, it appeared that respondents put highly significant extent on sanitariness of food, freshness of food, flavor of food, and seasonality and variety of menu. Thirdly, oriental instant food is included in the second quadrant of IPA regarding buffet menu which should be intensively managed. And three attributes such as temperature of food, time of changing food, and creativity of menu are included in the second quadrant of IPA graph by attribute of hotel buffet's menu quality. Lastly, in IPA graph by hotel, the following menus of each hotel need to be intensively managed: Oriental instant food of A hotel, Western cold food of B hotel, Oriental instant food, Western instant food, and Oriental dessert of C hotel, and Western porridge soup, Oriental instant food, and Western instant food of E hotel. The aforementioned menus should be improved.

메뉴관리에 따른 조리 표준량 목표가 업무 효율성에 미치는 영향 연구 (A Study that Target Amount of Standardization by Menu Management Effect on the Job Efficiency)

  • 호텔 레스토랑의 효율적인 메뉴 관리를 위하여 조리 표준량 목표를 설정하여 일정한 메뉴 품질 관리를 제공하므로 종업원들 간의 정보 교환, 원활한 업무 수행, 고객 유지 및 창출 방법을 모색하는데 있다. 본 연구의 실증적 분석은 호텔 레스토랑에 근무하는 종업원을 대상으로 설문조사를 실시하였고, 통계자료 분석은 SPSS WIN 12.0 프로그램을 활용하여 분석하였다. 빈도 분석, 신뢰도분석, 요인 분석, 상관 관계 분석, 선형회귀 분석을 실시하였고, 구성간의 표준량 목표의 조절 효과를 보기 위하여 곱 모형을 사용하는 조절회귀 분석을 실시하여 가설을 검증하였다. 업무효율성을 높이기 위해서는 표준량 목표를 사용하여 메뉴 관리를 해야 하고, 메뉴 계획 단계에서는 직원들과 충분한 협의에 의해서 메뉴를 구성하며, 그 과정에서 표준량 목표를 도구로 사용하여 메뉴 계획을 진행함으로써 업무효율을 높일 수 있다. 고객 서비스 업무의 효율을 높이기 위해서는 메뉴 운영 시 고객의 취향과 트렌드에 맞는 메뉴들로 표준량 목표를 설정하여 지속적으로 변화에 맞춰서 수정 보완하는 운영 관리에 따라 업무효율에 영향을 미친다는 것을 확인하였다.

  • The Korean buffet restaurant, which was developed by combining the Korean food and a buffet, allows a large menu to be enjoyed at a reasonable price and has become popular with men and women, young and old, and become a new type of eating out. This study examined the effects of the waiting time management and menu quality on the customer satisfaction and re-visit intention in a Korean buffet restaurant to help quality improvement and development of Korean buffet restaurants. The customer satisfaction and re-visit intention only had a significant effect on the staff attitude toward waiting time. Hygiene, sensory factor, and variety of menu quality were significantly related to customer satisfaction and re-visit intention, respectively. In addition, satisfaction with food and service had a significant effect on the re-visit intention and customer satisfaction. Therefore, it is important to establish a virtuous cycle structure that will improve the re-visit intention by satisfying customers through waiting time management and menu quality for the development of Korean buffet restaurants.

호텔외식 기업 조리부서에서의 6시그마 기법이 메뉴관리, 업무몰입, 조리품질성과 및 고객만족에 미치는 영향 (The Effect of a 6 Sigma Program on Menu Management, Work Commitment, Culinary Quality Performance and Customer Satisfaction in the Hotel & Food Service Culinary Division)

  • This study was conducted to investigate the effects of 6 Sigma on menu management, work commitment and quality in the culinary division of hotels and family restaurants. In addition, this study sought to identify the effects of menu management, work commitment and quality performance on customer satisfaction. Furthermore the relationship between menu management and culinary quality was evaluated here. The subjects evaluated in this study were employees of culinary division of hotels and family restaurants that implemented or were about to adopt the 6 Sigma program. A total of 385 questionnaires were analyzed using factor analysis, a reliability test, and covariance structural analysis. The results revealed that the 6 Sigma program influenced menu management, work commitment and culinary quality. Moreover, menu management, work commitment and culinary quality performance were found to impact customer satisfaction and culinary quality performance. Based on these findings, culinary divisions of hotels and family restaurants should incorporate the 6 Sigma program as soon as possible. To implement this program, faultless data for the 6 Sigma program should be collected using sufficient preparation procedures. After the data were collected, a task force team should be developed, experts should be cultivated and employees should be trained as necessary. Finally, the current level of product and services should be measured and reported to all employees in the culinary division and a challenge spirit should be brought with understanding for the reason for implementation of the 6 Sigma program. In implementing the 6 Sigma program, the leadership of the top manager and the head of the culinary division is very important.

혼밥이 건강한 메뉴 선택에 미치는 영향: 소비 목적 지향과 메뉴 영양 정보 표시의 역할 (Can Dining Alone Lead to Healthier Menu Item Decisions than Dining with Others? The Roles of Consumption Orientation and Menu Nutrition Information)

  • Objectives: Driven by a growth of single-person households and individualized lifestyles, solo dining in restaurants is an increasingly recognizable trend. However, a research gap exists in the comparison of solo and group diners' menu-decision making processes. Based on the self-control dilemma and the temporal construal theory as a theoretical framework, this study compared the ordering intentions of solo vs. group diners with healthy vs. indulgent (less healthy) entrées. The mediating role of consumption orientation and the moderating role of amount of menu nutrition information were further explored to understand the mechanism and a boundary condition. Methods: A scenario-based online survey was developed using a 2 (dining social context: solo vs. with others) × 3 (amount of menu nutrition information: no nutrition information vs. calories vs. calories/fat/sodium), between-subjects, experimental design. Consumers' level of nutrition involvement was controlled. A nationwide survey data (n = 224) were collected from a crowdsourcing platform in the U.S. Data were analyzed using multivariate analysis of covariance, independent t-test, univariate analysis of covariance, and moderated mediation analyses. Results: Findings reveal that solo (vs. group) diners have less (vs. more) intentions to order indulgent menu items due to a more utilitarian (vs. more hedonic) consumption orientation in restaurant dining. Findings also show that solo (vs. group) diners have more (vs. less) intentions to order healthy menu items when the restaurant menu presented nutrition information including calories, fat, and sodium. Conclusions: The findings contribute to the literature of foodservice management, healthy eating, and consumer behavior by revealing a mechanism and an external stimuli of solo vs. group diners' healthy menu-decision making process in restaurants. Furthermore, the findings provide restauranteurs and health professionals with insights into the positive and negative impacts of menu nutrition labelling on consumers' menu-decisions.

일반균형론적 메뉴스코어링(SOCRING)에 관한 연구 (A Study on the General Equilibrium Menu Scoring)

  • A foodservice manager always is concerned with which of the menus or potential menus, or which of the menu items is best for the operation. A menu may be profitable but not popular, or vice versa. How dose one compare one menu with another\ulcorner A technique to accomplish this is Menu Scoring, which was developed by Michael Hurst. It can be used to analyze possible menu changes by estimating sales of the new items and seeing what the new menu score will be. But menu scoring considers food costs, limited menu and relation only. After the menu score is calculated, management can determine more effectively why one score differs from another. Thus, this study is focused on the general equilibrium effect analysis. It will be attained from menu formation and menu type. I concluded that one can also change menu prices and see how menu popularity and profitability and the resulting menu score are affected through this study.

긴 메뉴항목 리스트의 시각화 기법 비교에 관한 실험적 연구 (An Experimental Comparison on Visualization Techniques of Long Menu-Lists)

  • 인터넷 환경과 디지털자원의 활용환경이 빠르게 변화됨에 따라 탐색과 브라우징을 제공해주는 정보시스템의 인터페이스 또한 새롭게 변해가고 있다. 특히 최근에 검색 인터페이스에서 많이 사용되고 있는 긴 리스트의 메뉴항목을 이용자가 보다 쉽게 브라우징하고 선택할 수 있도록 하기 위하여 시각화기법을 이용하여 디스플레이하고 있다. 본 연구는 이용자와 데이터 특성에 맞는 긴 메뉴항목 시각화 기법을 제안하기 위하여 긴 리스트의 메뉴항목을 시각화하기 위하여 많이 사용되고 있는 기법 즉 트리구조 메뉴, 목차방식 메뉴, 롤-오버방식 메뉴, 클릭방식 메뉴, 어안렌즈 방식 메뉴를 비교하였다. 그 결과 계층구조 메뉴 중에서는 전문가는 목차방식 메뉴를, 초보자는 트리구조 메뉴를 선호하고, 또 순차적 구조 메뉴 중에서는 전문가와 초보자 모두 롤오버방식 메뉴를 선호하고 있음을 알 수 있었다.

퓨전 메뉴의 중요도, 만족도, 인지도 및 섭취 빈도에 관한 연구 (A Study on the Importance, Satisfaction, Perception and Intake Frequency of Fusion Menu)

  • This thesis is aimed to analyze the importance, satisfaction, perception and intake frequency of fusion menu in order to develop the market segmentations and marketing strategies for useful information on the fusion menu and its improvement in the food industries. The findings of the study are as follows: First, the study revealed that diet menu(low fat, low-cal) and vegetarian menu items have more influence on females than males in regard to the importance of fusion menu when examining gender. Second, the study revealed that Bulgogi pizza, Bulgogi burger, cheese cutlet, cheese kimbab, sweet and sour pork items have great influence on customers in their 10s while green tea latte, rice burger, Bulgogi pizza, kimchi hamburger items have a high effect on customers in their 20s in regard to the perception of fusion menu when examining age. Finally, the study revealed that the taste of food, the cleanliness of vessels, food hygiene, the freshness of food, the quality of menu, the portions of food, the nutrition of food, the speed of food service, food material harmony, the temperature of food, the flavor of food, distinctions from existing food, environment-friendly organic agriculture food material items have maintaining the good performance of fusion menus. It also showed that various strategies for price of fusion menu should be made when examining the IPA analysis.

비대칭 활성화 확산 이론을 이용한 휴대폰 메뉴 구조 디자인 (Menu Structure Design using Asymmetric Spreading Activation in Mobile Phone)

  • As products are getting more diverse and new products are entering the market faster, customers have trouble learning how to use them. User-oriented menu structures may solve this problem. In order to design user-oriented menu structures, spreading activation theory has been studied. The spreading activation test shows that the strong associative relationship between words has shorter response times. Based on the spreading activation test, asymmetric spreading activation was introduced and a hypothesis that in a well-designed menu structure, association between upper-low menu pairs is not affected by an activation direction was tested for this study. In this study the menu of a cellular phone (Model: SPH-w2900) was extracted, and underwent 1st spreading activation tests. Then, on each menu pair, response time differences (asymmetric transition) by accuracy and directions were analyzed to find out problems in labels and improve menu structures and vocabulary. Second spreading activation tests were conducted to check whether asymmetric transitions decreased. The results showed that response time differences (asymmetric transition) for activation directions were found to be dropped significantly. Asymmetric transitions in spreading activation presented in this study will be helpful to define user-oriented menu structures.

메뉴엔지니어링기법과 CMA 기법을 이용한 메뉴 분석에 관한 연구 - 서울지역 특1급 호텔의 프렌치레스토랑을 중심으로 - (Menu Analysis Using Menu Engineering and Cost/Margin Analysis - French Restaurant of the Tourism Hotel in Seoul -)

  • This study was designed to : (a) analyze the menus of the French restaurant in tourism hotel using the menu analysis techniques of Kasavana & Smith and Pavesic, (b) compare the characteristics of the two analysis techniques. The calculations for the menu analysis were done using the MS 2000 Excel spreadsheet program. The menu mix % and unit contribution margin were used as variables by Kasavana & Smith and weighted contribution margins (WCM) and potential food cost % (PFC%) by Pavesic. In two cases, a four-cell matrix was created and menu items were located in each according they achieved high or low scores with respect to two variables. The items that scored favorably on both variables were rated in the top category (e.g., star, prime) and those that scored below average on both were rated in the lowest category (e.g., dog, problem). While Kasavana & Smith's method focused on customer's viewpoints, Pavesic's method considered the manager's viewpoints. Therefore, it is more likely to be desirable for decision-making on menus if the menu analysis techniques chosen is suited to its purpose.
