Time and temperature conditions, and microbiological qualities of six categories of menu items were assessed according to the process of food product Row in a 500 bed general hospital. The Harzard Analysis Critical Control Point (HACCP) system was applied to determine harzards, to assess their severity and risks, and to identity CCPs and memos for monitoring mem. The Critical Control Points identified for each category of menu items were: Meat Soup (Kyung Sang Do Gogi Guk): Pre-preparation, holding after pre-preration, and holding after cooking; Pot Stewed Stuffed Cabbage (Soe Yangbaechu Mali Chim): pre-preparation, holding after Pre-preparation, stuffing, cooking and holding after cooking; Boned Pork Sour Salad (Doeji Suyuk Muchim): Pre-preparation, holding after pre-preparation, and post-preparation after cooking; Sauteed Pork Ball (Jeyuk Wanja Jon): pre-preparation, holding after pre-preparation, shaping, and holding after cooking; Stir-fried Fragrant Mushroom (Pyogo Bosot Bokkum): basic ingredients, Pre-preparation, holding after pre-preparation, and holding after cooking; and Fried Corn with Vegetables (Oksusu Yachae Tuigim): pre-preparation, holding after pre-preparation, mixing, and holding after cooking.
The purposes of this study were to develop a model for university foodservices and to provide management strategies for reducing costs, and increasing productivity and customer satisfaction. The results of this study were as follows : 1) The demands in university food services varied depending on the time series. A fixed pattern was discovered for specific times of the month and semesters. The demand tended to constantly decrease from the beginning of a specific semester to the end, from March to June and from September to December. Moreover, the demand was higher during the first semester than the second semester, within school term than during vacation periods, and during the summer vacation than the winter. 2) Pearson's simple correlation was done between actual customer demand and the factors relating to forecasting the demand. There was a high level of correlation between the actual demand and the demand that had occurred in the previous weeks. 3) By applying the stepwise multiple linear regression analysis to two different university food services providing multiple menu items, a model was developed in terms of four different time series(first semester, second semester, summer vacation, and winter vacation). Customer preference for specific menu items was found to be the most important factor to be considered in forecasting the demand.
The purpose of this study was to investigate salinity and sodium content in foods served at industry foodservice operations in selected workplaces in Daegu. The researcher collected 1,142 food items categorized into 22 menu item groups from lunch samples served at 100 industry foodservice operations and measured the salinity of the food items, and calculated sodium and salt contents from the salinity. In terms of salt content of one meal at each workplace, 46% of the meals were 3-<5 g, and only 3.0% of them were 1.7 g or less, which is one third of the daily target intake (5 g) presented by the Dietary Reference Intakes for Koreans. In terms of sodium content, 35.3% of the meals were 1,000-< 1,500 mg (most), and only 2.5% of them were 667 mg or less, which is, again, one third of the daily target intake. As to the salinity of each menu item group, side dishes such as sauces, kimchi, seasoned vegetables, hardboiled foods, and stir-fried foods were significantly higher, but the sodium content was not higher, because their quantity per serving was small. The salinity of foods with liquid such as stews, noodles, soups, and broths was relatively lower, but the sodium content was higher, because their quantity per serving was large. This indicates that an education program should be developed for foodservice workers who prepare food for the workplace regarding the development and promotion of various menus for reducing sodium content, in order to reduce sodium content in meals served by food service in the workplace.
A total of 321 salaried employees were surveyed by questionnaires during September and October 2001 in order to investigate the bases for their choices between 26 popular menu items in JinJu restaurants. The subjects were aged 20 to 61 years, and were classified into 3 age groups (ages 20-29, 30-39, and over 40) and 2 gender groups. The data were analyzed using the SAS program for factor analysis. The results of this study were as follows: 1) The 26 popular menu items were classified into 6 factors by the 20-29 age group, into 5 factors by the 30-39 age group, and into 3 factors by the over 40 age group. The younger age group had the more numbers of factor which act as choice criteria of restaurant foods according to the purpose of eating out. 2) Because subjects classified steak and fast food into the same factor named 'new generation's food', we found that steak was an unfamiliar food for most of them, 3) The 20-29 age group had an aversion to Boshintang(dog soup), while the 30-39 age group and the over 40 age group liked Boshintang as a stamina food. 4) The over 40 age group, and men in all age groups, didn't choose Buffet and Shabushabu as a dinner food because they had negative attitudes toward novel or unfamiliar foods. 5) Women distinguished between a factor called 'social drink and party food' from a facor called 'dinner food', while men integrated the factor of 'dinner food' into the factor of 'social drink and party food' 6) Men preferred Samgyetang (chicken stew with ginseng) and Yangnyeumtongdak (spicy fried chicken) as a 'social drink and party food', while women preferred Dwaejibossam (boiled pork and kimchi) and Beef Bulgogi. In conclusion, most of subjects did not recognize fast food and steak as a meal, which were introduced recently in JinJu. The choice criteria and preferences of restaurant foods were different from the age and gender groups. The over 40 age group, and men in all age groups, had more negative attitudes toward novel or unfamiliar foods than the younger age and women groups.(Korean J. Nutrition 35(9) : 996~1006, 2002)
The purposes of this study were to investigate the effects of the popularity of menu items in nutrient consumption of school-aged children participating in a School Breakfast Program. The weighed plate waste method was used to determine the nutrient intake of students. The nutrient intake was evaluated based on the popularity of the menu item, gender, and grades. The average intakes of all nutrients except energy, fiber, and sodium were well within the goals. Actual nutrient intake varied based upon the popularity of $entr{\acute{e}}es$ and the popularity of menu items was a main effect in nutrient content of meals. When the most popular $entr{\acute{e}}es$ were served, school-aged children's energy intake and School Breakfast Program participation rate increased. Saturated fat and sodium intakes also were higher than the goal when the most popular $entr{\acute{e}}es$ were served. The significant main effect was grades for total fat (p < 0.05) and calcium (p < 0.05), which was qualified by the two-way interaction between gender and grades for saturated fat (p < 0.05), protein (p<0.1), iron (p<0.01), vitamin C (p<0.01) and carbohydrates (p<0.001). Gender itself was not a significant main effect. Based on the findings, the suggestions for educating school-aged children on more healthful breakfast food choices and reformulating recipes for the popular $entr{\acute{e}}es$ are made. The objective of the study was to evaluate nutritional balance for fast foods selected by middle and high school students using INQ (Index of Nutritional Quality). A thousan students that is 0.09% of the population (middle and high school students in Seoul) were surveyed from January 21 to February 10 in 1989. A total of 835 subjects excluding incomplete answer were analyzed. All statistical data analyses were conducted using the SPSS. Fifty kinds of fast foods were analyzed for nutrient values calculation. INQ and % of std. values of selected fast food combination were calculated, and % of std. were charted with each first letter of menu items by using GW-BASIC program. Satiety of fast foods was low in hamburger and pizza chain, high in noodle chain. 66.3% of the subjects ate fast foods snack, 29.2% for meals and 6% for beverages. Protein content of hamburger sold in Korea by American brand name was insufficient compared to the data published in the U.S. for the same brand's menu item. As a result of INQ evaluation, the desirable case of both 'nutritious' and 'fitness for a meal' was only appeared in selecting several menu items at once. A total of 59% of combined fast foods surveyed were revealed as 'nutritious'. Both 'nutritious' and 'fitness for a meal' was 10.4% and 'nutritious' was 48.6%, 'Unfitness for a meal' but 'nutritious' was 48.6% and 'undernutritious' was 37%. Thus a total of 85.6% was 'unfitness for a meal'. 'Undernutritious' but 'fitness for a meal' was 3.5%
The objective of this study is to investigate how patients satisfaction are affected by satisfaction with the patient menu and differentiated service resulting from QI activities and to evaluate the efficiency of QI activities. In order to improve satisfaction with menus through QI activities, this study strengthened meal round, examined the quantity of food waste produced by patients, diversified one-dish menus and used seasonal food as much as possible to reflect patients ′tastes to the maximum. With regard to cooking, additionally, it strengthened sampling and standardized recipes to maintain the constancy of taste and cooking/seasoning. From July 2003, dining time was changed from 08 : 00 to 07 : 30 for breakfast and from 17 : 30 to 18 : 00 for dinner. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The goal of QI was to improve food service by raising the score of "Satisfaction with Offered Menus" from 3.49 before QI to 3.55 after QI and differentiating nutrition service at the VIP ward. The score of "Satisfaction with offered menus" after QI was 3.56, and services related to the VIP ward were 7 dishes per meal, meal round once per day and the use of a napkin for a spoon in setting the table. In addition a variety of dishes were used in order to heighten the visual effect. Among the 10 items included on the patient satisfaction questionnaire, 8 items showed higher scores before QI. "Taste of meals" (p < 0.05), "Satisfaction with offered menus" (p < 0.05), "Kindness of meal serving assistants" (p < 0.05) and "Cleanliness of clothes & features" (p <0.05) of VIP ward were significantly higher than those of a general ward.
본 연구의 목적은 전주지역 이태리 레스토랑을 대상으로 메뉴 주문시 선택 속성에 관한 중요 내용을 알아보고, 이태리 레스토랑의 이용 형태와 각 메뉴 구성별 좋아하는 음식이 무엇인지 분석을 하는데 있다. 연구 결과의 내용을 요약하면 다음과 같다. 첫째, 이태리 레스토랑 메뉴 주문시 선택 속성에 관한 중요도에서는 요인분석에서 건강관리 요인, 서비스관리 요인, 음식관리 요인, 메뉴관리 요인으로 명명하였는데, 만족도 검증 결과 건강관리 요인에서 유의한 차이가 있는 것으로 나타났다. 둘째, 이태리 레스토랑 이용형태에서는 이태리 음식의 인지도에서 긍정적으로 나타났으며, 방문 횟수는 한 달에 1회- 2회, 주 동반인은 가족, 이용 목적은 식사를 하기 위해서, 음식에 대한 정보는 구전을 통해서 정보를 얻은 것으로 나타났다. 셋째, 이태리 메뉴 중에서 각 메뉴별 좋아하는 음식으로는 안티파스토에서 모짜렐라 치즈요리, 수프에서는 아스파라거스 크림 수프, 파스타에서는 크림소스의 스파게티 까르보나라, 피자에서는 모짜렐라 치즈와 살라미, 검정 올리브, 토마토 소스를 얹어 구운 피자, 샐러드는 모짜렐라 치즈 토마토 샐러드, 주요리 중에서 육류는 쇠고기 안심 스테이크, 생선요리는 광어요리, 후식에서는 신선한 과일과 티라미슈를 좋아하는 음식으로 나타났다. 향후 연구에서는 고객들이 이태리 레스토랑을 방문했을때 메뉴 선택시 중요하게 이루어지는 내용을 조사대상자 표본 집단별로 분석하는 다양한 연구가 진행이 되어야 하겠다.
오늘날 한식의 세계화가 이루어지면서 우리나라를 방문하는 외국인 관광객 수가 매년 증가함에 따라 한식에 대한 관심이 높아지고 인지도와 기대감이 크다. 본 연구는 한식당 이용특성에 따른 메뉴선택속성이 고객만족에 미치는 영향에 대해서 조사해보고자 하였다. 또한 한식의 메뉴선택속성을 통해 외국인 관광객들에게도 한식이 편안한 이미지로 다가가 발전할 수 있는 기초자료로 활용하는 것이 본 연구의 목적이다. 연구 결과, 한식당 이용특성에 따른 메뉴선택속성이 고객만족에 유의한 영향을 미치고 있으며, 외국인 관광객들이 메뉴를 선택하는데 있어 속성을 알고 고객만족으로 이어지는 것으로 판단된다. 그러나 외국인 관광객들에게는 한식 메뉴에 대한 설명과 특성의 부족한 부분은 개선 할 필요가 있는 것으로 사료된다.
This study examined students' menu preferences as well as the job satisfaction and specific considerations concerning foodservice operation of dieticians and nutrition teachers at special schools for the disabled. Semi-structured interview questionnaires were sent to all of the 21 special schools with direct school food service in Gyeonggi-do, and 16 dieticians and nutrition teachers agreed to participate in this study. Among the various menu groups, the subjects perceived the meat group as the most preferred and the vegetable group the least preferred. They were generally satisfactory with their job and duty, and had a strong sense of belonging to the school. However, most of them answered that they needed more time for nutritional education and counseling. While most had pride and pleasure in their job, they expressed a desire to change the system to better fit with their roles as professional nutritionists. The content analysis revealed that the subjects mainly focused on safety issues in planning the food menu and were thus limited in selecting menu items. They also felt difficulty in menu planning due to various tastes and preferences, since special schools tend to consist of a wider grade range. However, most subjects reported little trouble in food distribution and food leftovers owing to practical support from teachers and parents. The necessity for education concerning table manners and obesity prevention was generally a shared opinion, and education programs for parents were also perceived as necessary to better understand the special considerations for developing proper eating habits in their child. The study findings provide useful basic data to improve the foodservice system at special schools.
