Quality Characteristics of SPI and Na-Caseinate Substituted Sausage for Meat Protein (분리대두단백 및 카세인 대체 소시지의 품질 특성)

  • Meat emulsions containing 0, 15, 30 and 45% of soy protein isolate(SPI), Na-caseinate(Na-CN) and their mixtures were prepared in order to determine the effect of these non-meat proteins on the physical properties and their sensory quality in emulsion type sausage. It was found that SPI was better fat stabilizer and better binder than Na-CN. The mixtures of SPI and Na-CN didn't exert any significant effect on emulsion stability. From the texture profile analysis by using Instron two-cycle compression tests, decrease in the substitution levels and increase in the ratio of SPI/Na-CN resulted in a significant increase in the textural values of hardness, adhesiveness, gumminess, chewiness. The finished products showed that the substituted product for 15 % meat protein had higher textural values than the unsubstituted product. The sensory quality evaluated for the final products showed no significant difference between the SPI substituted product for 15 % meat protein and the unsubstituted product. However, all of the substituted products for 15 % meat protein and some of those for 30 % substitution with SPI and 67 % SPI received higher scores than average.

A Study of Consumer Characteristics and Climate-friendly Food Consumption Behavior Classified by Food-Related Lifestyle (식품관련 라이프 스타일에 따른 소비자유형별 특성과 기후친화적 식품소비행동 분석)

  • Individual lifestyle and eating habits have changed rapidly due to the evolution of society. Especially, climate change caused by industrialization has influenced society, with the result that today's consumers perceive sustainability to be an important value. The purposes of this study were to segment consumers on the basis of their food-related lifestyle and to explore climate-friendly food consumption behavior by considering factors such as moral intensity, propensity for disgust with meat as well as consumer characteristics. The results of this study were as follows: first, consumers were segmented into three groups(high involvement, low involvement, convenience oriented). Consumers in the high involvement group presented a higher level of moral intensity and climate-friendly food consumption behavior than the other groups. Furthermore, factors influencing the selection of climate-friendly food were found to differ according to the type of consumer. Consumers in the high involvement group were found to be significantly influenced by age, concentration of effect, the morality of eating meat and meat texture, while consumers in the low involvement were found to be significantly influenced by social consensus and the morality of eating meat. Finally, consumers in the convenience oriented group for food life were found to be significantly influenced by age, harm perception, and the morality of eating meat.

Effects of a Dietary Fermented Mushroom (Flammulina velutipes) By-Product Diet on Pork Meat Quality in Growing-Fattening Berkshire Pigs

  • This study was carried out to investigate the effects of fermented mushroom (Flammulina velutipes) by-products on meat quality characteristics in fattening Berkshire pigs. The fermented diet mainly contained 40.0% mushroom by-products, 26.0% rice bran, and 20.0% formula feed and was fermented for 5 d. The basal diet for the control (C) was substituted with 10% (T1), 30% (T2), 50% (T3), and 70% (T4) fermented diet. Warner-Bratzler shear forces (WBSF) were significantly lower (P < 0.05) in treatments than that in C. The meat color (lightness, redness, and yellowness) was significantly lower (P < 0.05) in treatments than that in C, whereas fat color (redness and yellowness) was significantly higher in treatments than that in C (P < 0.05). The compositions of palmitoleic acid and arachidonic acid were significantly higher (P < 0.05) in T4 than that in C. The amino acid composition of longissimus dorsi (LD) and the sensory evaluation of cooked meat were not affected by diet type. In conclusion, a diet of fermented mushroom by-products increased pH and backfat color, but decreased cooking loss, WBSF, and meat color of LD in growing-fattening Berkshire pigs.

Quality Characteristics of Non-cooked Meat Patties with Ground Raw Tomato During Freeze Storage (토마토가 함유된 비가열 미트패티의 냉동 저장 중 품질특성)

  • The effects of tomato on the phsycochemical and sensory properties of meat patties during frozen storage were studied. Meat patties were produced with four different formulation including 0, 0.5, 1.0 and 1.5% chopped raw tomato. Meat patties made with the addition of tomato had higher(p<0.05) pH, L* and a* value than those of control sample. TBARS of all treatments were lower(p<0.05) when compared with those for control. In sensory evaluation, treatment groups resulted in slightly higher(p>0.05) score in overall acceptability. In the manufacture of functional meat patties containing tomato, further studied are needs on addition type and ratio of tomato materials during frozen storage than those of products without tomato.

A Literature Review on the Type of Joseon Dynasty Jwabans (조선시대 좌반류(佐飯類)의 종류에 대한 문헌적 고찰)

  • This article examines the types of Jwabans as recorded in 21 old books of the Joseon dynasty (1392-1909). The ingredients used in Jwabans during the Joseon dynasty were root vegetables, sea algae, seeds nuts, bird, meat, and fish. In the early, middle, and late eras of the Joseon dynasty, 10, nine, and 181 kinds of Jwabans were prepared, and two, one, and seven kinds of Jwabans were prepared using root vegetables (根菜類). During the early and late eras of the Joseon dynasty, one and 14 kinds of Jwabans were prepared using sea algae (海藻類), respectively, and four kinds of Jwabans were prepared using seeds nuts during late eras of the Joseon dynasty (種實類). During the early, mid and late eras, one, two, and 17 kinds of Jwabans were prepared using bird (鳥類), three, one, and 47 kinds of Jwabans were prepared using meat (肉類), and one, five, and 81 kinds of Jwabans were prepared using fish (魚類). The frequency of the Jwabans ingredients in order were fish (30.5%), meat (23.5%), pheasant (7%), root vegetables (5%), abalone (全鰒) (5%), laver (海苔) (4%), shellfish (貝類) (3%), fish eggs (魚卵) (2.5%), fleshy prawn (大蝦) (2.5%), sea tangle (昆布) (2%), dried tangle (海草) (1.5%), sparrow meat (雀肉) (1.5%), and etc during the Joseon dynasty. It seems that the appearance and supplementation with different ingredients increased throughout the Joseon dynasty. This may be associated with the commercial industrial development that prevailed during the late Joseon dynasty. Further study will be conducted on recipes and ingredients recorded in these old books to develop a standardized recipe to globalize Jwabans.

Emission Characteristics of Air Pollutants from Meat Charbroiling (고기구이에서 발생하는 대기오염물질의 배출 특성)

  • Emission characteristics from charbroiling of four different meats (beef, port, duck and chicken) in a pilot-scale cooking facility were investigated in this study. The analyzed air pollutants include gaseous species (CO, NO, $SO_2$, $NH_3$ and PAHs) as well as particulate matters (TSP, $PM_{10}$, $PM_{2.5}$ and black carbon). The emission factors of $PM_{10}$ and PAHs were in the range of 3~47 g-PM/kg-meat and 0.6~11.41 mg-PAHs/kg-meat, respectively, depending on the type of a meat. In addition, the results also revealed that the high ratio of $PM_{2.5}$ to TSP in a meat charbroiling should be considered to design and to operate air pollution control devices.

Meat Quality, Digestibility and Deposition of Fatty Acids in Growing-finishing Pigs Fed Restricted, Iso-energetic Amounts of Diets Containing either Beef Tallow or Sunflower Oil

  • The influence of dietary beef tallow (BT) versus sunflower oil (SO) on meat quality and apparent digestibility and deposition of individual fatty acids in the whole carcass was investigated in pigs fed diets containing either BT or SO. The diets contained equal amounts of energy in the form of the variable fats and were fed on an iso-energetic, restricted basis. Crude fat in the SO diet was better digested (p<0.001) than in the BT diet. The dietary fat type had no effect on growth performance, physical properties of the carcass and meat quality. The pigs fed the BT diet showed lower (p<0.001) apparent digestibilities for palmitic and linoleic acid, but those of oleic and ${\alpha}$-linolenic acid were not affected. The ratio of deposition in the carcass to intake of digestible fatty acids for the whole feeding period was decreased (p<0.01) for oleic and linoleic acid in pigs fed the SO diet. The pigs fed the SO diet instead of the BT diet had a lower (p<0.05) deposition:intake ratio for mono-unsaturated fatty acids. The calculated minimum de novo synthesis of saturated fatty acids was increased for the SO diet, but that of mono-unsaturated fatty acids was not different. In conclusion, the iso-energetic replacement of BT by SO had a marked impact on the fatty acid composition of tissues, but did not affect carcass and meat quality traits in spite of the marked difference in the deposition of linoleic acid in adipose tissues, loin muscle and the whole body. In addition, it became clear that the type of dietary fat had marked, specific effects on the synthesis and oxidation of fatty acids.

Classification of elderly households based on diet-related style and analysis of their characteristics

  • The objectives of this study were to classify the types of elderly households and to compare the characteristics of their dietary lifestyle. Panel data surveyed by Korea Rural Economic Institute (KREI) for Food Purchase Attitudes over three years (2019 - 2021) were utilized for the analysis. Through a factor analysis, five common factors were extracted out of 19 basic variables related to dietary style, which indicate two kinds of consumer competency index (safe diet, traditional diet) and three kinds of purchase frequency (healthy food, meat & fish, fresh seafood). Applying the cluster analysis method, by using socioeconomic variables along the five common factors, elderly households aged 60 or older were grouped into four types. As a result, Type 1 elderly households accounted for 50.8%, Type 2 for 16.2%, Type 3 for 27.8%, and Type 4 for 5.2% out of all 870 elderly households. Type 1 is characterized as a low-income vulnerable class with a poor diet, Type 2 as a middle-income class with a healthy food-oriented diet, whereas Type 3 was classified as a middle-income class with a meat-oriented diet, and Type 4 as a high-income class with diverse dietary culture. It is necessary to expand the agri-food voucher pilot project to the entire country and also increase the monthly subsidy for the Type 1 elderly households. Implementing community kitchen projects for elderly single-person households, promoting senior internships by providing incentives to companies that employ retirees, the provision of education by local governments on a safe and balanced diet for Types 2 and 3, and the promotion of an elderly-friendly social environment are also recommended.

Comparative effects of corn-based diet and phase-fed cassava-based diet on growth rate, carcass characteristics and lipid profile of meat-type ducks

  • Objective: This experiment was conducted to evaluate the effects of a corn- or cassava- based diet on the production of meat-type ducks. Methods: Four hundred day-old ducks were used in this experiment. They were divided into five groups with each group replicated eight times. The ducks fed the corn-based diets served as the control group. The four other groups comprised different treatments, with each one given the cassava-based diet based on phase-feeding. Three treatments were fed the cassava-based diet from 16, 28, and 35 d; respectively up to 42 d of age and the other group was fed the cassava-based diet from 1 to 42 d of age. Results: The results indicated that ducks on either the corn- or cassava-based diets were similar in growth during 1 to 9 d of age. However, toward 35 to 42 d, the cassava-diet produced a higher weight gain (p<0.05). The cassava-based diet was better than the corn-based diet at increasing the outer and inner breast weights at 28, 35, or 42 d (p<0.05). In contrast, the corn-based diet was better at increasing abdominal fat (p<0.05). The two diets did not differ in their effects on the serum triglyceride, cholesterol, high-density lipoprotein-cholesterol, low-density lipoprotein-cholesterol, very-low-density lipoprotein-cholesterol, and liver cholesterol. The corn-based diet, however, caused a highly significantly greater level of liver triglyceride (p<0.01). Conclusion: The results of this study suggest that both the cassava- and corn- based diets are similar in their effect on meat-type ducks during the starter stage but toward the finisher stage, the cassava-based diet has a better influence on weight gain and carcass characteristics.

  • Hanwoo (Korean cattle) is the native, taurine type of cattle breed of Korea and its history as a draft animal dates back to 5000 Years. In earlier times Hanwoo was used extensively for farming, transportation. Over the period of time, Hanwoo has changed to be meat type cattle. Full-scale production of Hanwoo as meat-type cattle has occurred since 1960s with the rapid growth of the Korean economy. Hanwoo is one of the most economically important species in Korea as it is a significant source of nutrition to the Korean people. Hanwoo beef is the most cherished food of Korea. One of the main goals of researchers is to increase the meat quality, quantity and taste of the beef. In this review we describe the origin, domestication of Hanwoo cattle and breeding program initiated from 1980's. Moreover the advent of technological advancement had provided us a platform to perform genome wide selection on economic traits and its implementation into traditional breeding programs.
