Developmental Competence of Oocytes Collected from Individual Ovaries of Slaughtered Korean Native Cattle with Grade of Meat Quality and Meat Yield

  • We separately cultured follicular oocytes collected from individual ovaries of slaughtered Korean native cows and examined both the embryonic development rate and pregnancy rate after embryo transplantation according to the meat yield and quality grades of the source beef carcass. Oocytes from meat yield grade B cows exhibited a higher fertilization rate and embryonic developmental rate to the eight-cell stage than oocytes from grade A or C animals (p<0.05), but there was no significant difference in rate of development to the blastocyst stage among meat yield grades A, Band C. The oocyte cleavage rate and development rate to the eight-cell stage from meat quality grade 3 cattle was higher than grades 1++, 1+, 1 and 2 (p<0.05). Embryos derived from grade animals displayed a development rate to the blastocyst stage of 19.4%, which was also higher than all other meat quality grades (p<0.05). Transplantation of in vitro-cultured oocytes from meat yield grade A ovaries led to a higher pregnancy rate (64.2%) than in vitro-cultured oocytes from meat yield grade B ovaries (56.5%), but there was no significant difference between the two groups in pregnancy or abortion rates. In conclusion, embryonic development rate and pregnancy rate has a close relation to meat quality grades of the source beef carcass, this results is to give information for the Korean native cows improvement of breed.

Effect of the Use of Antibiotics on Meat Quality Grade of Broiler Carcass (항생제 사용 유무가 계육의 품질 등급에 미치는 영향)

  • The objective of this study was to investigate the effect of the supplementation of antibiotics on meat quality grade of broiler carcasses under the Korean meat grading system. A total of 34,000 broiler carcasses, which were randomly selected 100 broilers from each farm in 340 broiler farms (305 farms with antibiotics; 35 farms without antibiotics), were used in this study. Average daily weight gain of broilers was not significantly affected by the use of antibiotics. The ratio of quality grade A was higher in the broiler carcasses from the farms with antibiotics supplementation (78.87%) than those without antibiotics (73.46%, P<0.05). The numbers of carcass defects, which are down-grade factors of meat grading system, were much higher in the broiler carcasses produced from the farms without antibiotics supplementation when compared with those with antibiotics. In particular, the incidence of the carcass defect on conformation was approximately 1.8 times higher in the carcasses from the farms without antibiotics supplementation than those with antibiotics, which showed the highest negative correlation with quality grade A. Therefore, the improvement of farm management system, the use of antibiotics alternatives from natural products, and a proper incentive should be considered in various ways to encourage farmers to reduce antibiotics usage in their farm and earn consumers' trust for antibiotics-free products.

Investigation of Physicochemical and Sensory Quality Differences in Pork Belly and Shoulder Butt Cuts with Different Quality Grades

  • The objective of this study was to investigate the effects of quality grade (QG) on the physicochemical composition and eating quality attributes of pork belly and shoulder butt. Seventy-two growing-finishing crossbred pigs were slaughtered and their carcasses were graded according to the Korean pork carcass grading system. Based on the grading criteria, the carcasses were classified into: QG 1+ (n=23), QG 1 (n=23) and QG 2 (n=26) groups. At 24 h postmortem, belly and shoulder butt cuts were collected from the QG groups and used for analysis of meat quality, flavor compounds and eating quality attributes. Results showed that the variation in fat content among QG was approximately 2% in the both cut types. The QG showed no effects on all the quality traits: cooking loss, pH and color of the belly or shoulder butt (p>0.05). Thirty-five flavor compounds comprising mainly fatty acids oxidation/degradation-derived products (e.g., aldehydes) and only few Maillard reaction-derived products (e.g., sulfur-and nitrogen-containing compounds) were identified. However, the QG showed a minor effect on the flavor profiles in both the belly and shoulder butt. Regarding the sensory quality, no effects of the QG were found on all the eating quality attributes (color, flavor, juiciness, tenderness and acceptability) for both the belly and shoulder butt cuts (p>0.05). Thus, it may be concluded that the current pork carcass grading standards do not reflect the real quality and value of the belly and shoulder butt cuts.

Evidence of Significant Effects of Stunning and Chilling Methods on PSE Incidences

  • The current study was conducted to investigate the optimum stunning voltage and chilling regime with emphasis on reduction in pale, soft and exudative (PSE) pork. The experiments were conducted at seven Korean major pig abattoirs using a total of 91,082 industrial population. Frequencies of PSE meat was found to be significantly (p<0.05) increased as stunning voltage was elevated from 220-240 (13.14%), 250-280 (29.32%) to 430 volts (36.74%). Chilling methods after slaughter, either with cold water showing or rapid chilling reduced PSE meat by 22% compared to a classic chiller-based slow chilling regime. The current study also revealed that chiller temperature during the first 90 minutes had a significant (p<0.001) effect on PSE incidences. Pigs chilled between -5 to $7^{\circ}C$ resulted in the lowest PSE meat (17.8%), followed by higher than $7^{\circ}C$ (21.3%) and lower than $-5^{\circ}C$ (37.5%). The current data implies that low voltage stunning method (eg., 220-240 volts), followed by rapid chilling regime, maintaining chiller temperature between approximately -5 to $7^{\circ}C$ could reduce PSE incidences.

Characteristics of Pig Carcass and Primal Cuts Measured by the Autofom III Depend on Seasonal Classification

  • The objective of this study was to investigate slaughtering performance, carcass grade, and quantitative traits of cuts according to seasonal influence by each month in pigs slaughtered in livestock processing complex (LPC) slaughterhouse in Korea, 2017. A total of 267,990 LYD ($Landrace{\times}Yorkshire{\times}Duroc$) pig data were used in this study. Results of slaughter heads, sex distribution, carcass weight, backfat thickness, grading class, total weight, and fat and lean meat percentages of each cut predicted by AutoFom III were obtained each month. The number of slaughtered pigs was the highest in early and late fall but the lowest in midsummer. Only in midsummer that the number of females was higher than that of castrates. During 2017, carcass weight was the lowest in late summer. Backfat thickness was in the range of 21-22 mm. In mid and late spring, pigs showed high 1+ grade ratio (37.05% and 36.15%, respectively). For traits of 11 cuts predicted by AutoFom III, porkbelly showed lower total weight, lean weight, and fat weight in midsummer to early fall but higher lean meat percentage compared to other seasons. Weights of deboned neck, loin, and lean meat were the highest in midfall compared to other seasons (p<0.05). In conclusion, characteristics of slaughtering, grading, and economic traits of pigs seemed to be highly seasonal. They were influenced by seasons. Results of this study could be used as basic data to develop seasonal specified management ways to improve pork production.

A Review on Meat Quality Evaluation Methods Based on Non-Destructive Computer Vision and Artificial Intelligence Technologies

  • Increasing meat demand in terms of both quality and quantity in conjunction with feeding a growing population has resulted in regulatory agencies imposing stringent guidelines on meat quality and safety. Objective and accurate rapid non-destructive detection methods and evaluation techniques based on artificial intelligence have become the research hotspot in recent years and have been widely applied in the meat industry. Therefore, this review surveyed the key technologies of non-destructive detection for meat quality, mainly including ultrasonic technology, machine (computer) vision technology, near-infrared spectroscopy technology, hyperspectral technology, Raman spectra technology, and electronic nose/tongue. The technical characteristics and evaluation methods were compared and analyzed; the practical applications of non-destructive detection technologies in meat quality assessment were explored; and the current challenges and future research directions were discussed. The literature presented in this review clearly demonstrate that previous research on non-destructive technologies are of great significance to ensure consumers' urgent demand for high-quality meat by promoting automatic, real-time inspection and quality control in meat production. In the near future, with ever-growing application requirements and research developments, it is a trend to integrate such systems to provide effective solutions for various grain quality evaluation applications.

Estimation of Environmental Effect and Genetic Parameters for The Carcass Traits in Hanwoo (Korean Cattle) (한우 도체형질의 환경효과 및 유전모수의 추정)

  • This study aims to estimate the genetic parameters for carcass traits on Hanwoo of breeding farmhouses using Animal Products Grading Service’s data of 428,812 cattle from 101 slaughterhouses nationwide from 2000 to 2005. Using carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color that greatly influence Hanwoo's grade, the effects of carcass year, carcass season, sex and carcass region were estimated. Based upon carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score and meat color that greatly influence Hanwoo’s grade, the heritabilities and genetic parameters were estimated of 17,578 Hanwoo slaughtered in 2005 with existing herdbook, where EM-REML algorithm was used in estimating genetic parameters. The mean and standard deviation of each carcass trait are 321.42±53.62kg, 76.25±10.43cm2, 9.96± 4.14mm, 3.75±2.00, 4.83±0.48 and 2.99±0.40, for carcass weight, eye muscle area, backfat thickness, marbling score, meat color and fat color, respectively. As a result of analysis on the effects of carcass year, the carcass weight, backfat thickness and meat color came out highest as 359.40±0.181, 9.82±0.017 and 4.90±0.002, respectively in 2004. As a result of analysis on the effects of carcass season, the carcass weight and eye muscle area came out highest as 345.88±0.144 and 79.57±0.033 respectively in spring, and the backfat thickness was highest as 8.78±0.013 in winter, and the meat color and fat color slightly came out higher as 4.88±0.002 and 2.96±0.001 in fall, while the marbling score was highest as 3.29±0.006 in summer. The results of the analysis on the effects of sex indicated that the backfat thickness and fat color were highest as 10.53±0.010 and 3.07±0.001 in cow, the carcass weight came out highest in Hanwoo steer as 368.03±0.068kg, the eye muscle area were highest as 82.96±0.042 in bull, and the marbling score was highest as 4.19±0.007 in steer, and the meat color was highest as 4.89±0.001 in cow.   • As pork consumption increases, rapid and accurate determination of porcine carcass grades at abattoirs has become important. Non-destructive, automated inspection methods have improved slaughter efficiency in abattoirs. Furthermore, the development of a calibration equation suitable for non-destructive inspection of domestic pig breeds may lead to rapid determination of pig carcass and more objective pork grading judgement. In order to increase the efficiency of pig slaughter, the correct estimation of the automated-method that can accommodate the existing pig carcass judgement should be made. In this study, the previously developed calibration equation was verified to confirm whether the estimated traits accord with the actual measured traits of pig carcass. A total of 1,069,019 pigs, to which the developed calibration equation, was applied were used in the study and the optimal estimated regression equation for actual measured two traits (backfat thickness and hot carcass weight) was proposed using the estimated traits. The accuracy of backfat thickness and hot carcass weight traits in the estimated regression models through stepwise regression analysis was 0.840 (R2) and 0.980 (R2), respectively. By comparing the actually measured traits with the estimated traits, we proposed optimal estimated regression equation for the two measured traits, which we expect will be a cornerstone for the Korean porcine carcass grading system.

Quality Characteristics of Breast Meat during Post-mortem Storage of Chicken Meat (도계 후 원료육의 저장기간 동안 가슴육의 품질 특성)

  • This study was first conducted to investigate the effect of post-mortem storage time of chicken meat on the quality of chicken breast, and to determine whether the current grading rule that is 'using the chicken meat within 2 day post-mortem (PM)' is appropriate or not at meat processing plants. Different methods such as freshness, lightness ($L^*$), total number of microbes, 2-thiobarbituric acid reactive substances (TBARS), shear force and cooking loss were performed. Forty samples of different PM time (0~4 day) of chicken meat were stored in the refrigerator ($3^{\circ}C$). As a result of comparing the chicken meat of 2 day and 3 day PM, torrymeter value was 6.9 and 7.0, respectively. The other values are also as follows: lightness ($L^*$) 60.22 and 60.51, total number of microbes 4.20 and $4.31log_{10}CFU/g$, TBARS value 0.056 and 0.071 mg MDA/kg, shear force 1.43 and $1.59kg/cm^2$, and cooking loss 17.24 and 15.66%, respectively. As a result, these two groups were not significantly different (P<0.05). TBARS value of the chicken meat of 4 day PM was 0.088 mg MDA/kg which is significantly higher compared to 2~3 day PM (P<0.05). Thus, the result of the study suggests that using the chicken meat within 3 day PM is also possible. If the grading rule that is 'using the chicken meat within 2 day post-mortem (PM)' is changed to 3 day PM, it will allow processing plants and distributors to more flexibly use or distribute chicken meat.

Effects of Tethering and Loose Housing on the Meat Quality of Hanwoo Bulls

  • This study was carried out to investigate the effects of housing system on the carcass and meat qualities of Hanwoo (Korean cattle) bulls. Fourteen 6 months-old male calves were randomly divided into two groups. The first group was individually tethered using double neck-bar tethers. The second group was collectively loose-housed in the pen. They were raised for 15 months prior to slaughter. At 24 h post-slaughter chilling, the carcasses were weighed and evaluated by official grader for carcass traits. At 48 h post-slaughter chilling, the M. longissimus at the $12-13^{th}$ thoracic vertebra from each carcass was collected and stored at $4{\pm}0.2^{\circ}C$ for 7 days for meat quality analysis. There were no significant differences in dressing percentage and carcass yield index between groups. Meat from loose bulls had lower marbling score (p<0.05) and fat content (p<0.01) but higher PUFA concentration (p<0.001) than that from tethered bulls. There were no significant differences physical and sensory properties, aroma pattern, TBARS value, metmyoglobin concentration and CIE color values during refrigerated storage between groups. Compared to tethering, loose-housing bulls produced lower fat content and healthier meat without different physical properties, acceptability, and lipid and color stabilities.
