Inhibitory effect of natural extract mixtures on microbial growth and lipid oxidation of sausages during storage

  • Large amounts of additives are used during meat product processing to maintain product quality and shelf life. With the growing interest in healthy foods, natural plant-based additives are being used as alternatives to synthetic additives. In this study, six types of natural extracts with excellent antibacterial activity were selected, and their antibacterial and antioxidant activities against four types of pathogens were evaluated in various combinations. In addition, the pH, color, amount of thiobarbituric acid reactive substances (TBARS), and growth of pathogenic microorganisms were analyzed during the storage of sausages treated with various combinations of these extracts. The natural extract mixtures exhibited different antibacterial activities, depending on the combination. Compared to grapefruit seed extract, a mixture of natural extracts extracted with ethanol (M4) reduced the Escherichia coli content by more than 99.9% after 8 days of storage and slowed the growth of Listeria monocytogenes and Salmonella spp. by more than 80% after 14 days. Compared to untreated (NC) and grapefruit extract (PC)-treated sausages, sausages treated with the natural extract mixtures showed a significant decrease in CIE L* and an increase in CIE a* and CIE b* (p < 0.05). The pH value was significantly lower in sausages containing natural extract mixtures than in the NC and PC sausages (p < 0.05). The natural plant extract mixtures significantly prevented lipid oxidation (p < 0.05). In summary, different types of natural extract mixtures have a synergistic effect when used together, suggesting that natural preservatives can generally inhibit the growth of microorganisms and oxidation of processed meat.

전주 수원백씨인재공파 종가 학인당의 '모심상' 상품화 연구 (Development of Mosim Dining Table's Menu for Head House of Suwon Baek Clan and Injaegong Group in Jeonju)

  • This study aimed to develop a new commercialization model for theindustrialization of head family food as a gentry families' complex food culture product. We tried to develop a head family food and propose a city sightseeing style's head family product by interviews with 'Hakindang' as the center, the head house of the Suwon Baek clan, and Injaegong group in Jeonjoo. Hakindang (in Jeonju) was confirmed as an improved model Korean-style house in the enlightenment period and the twentieth style modern head family as emerging capitalist. Hakindangsupported independence war funds in the Japanese colonial era and was widely known as gate of filial piety in Jeonju. Representative seasonal foods of Hakindang include pan-fried sweet rice cake with flower petals in the spring, hot spicy meat stew and polypus variabilis in summer, hanchae in autumn, and napa cabbage kimchi with salted flatfish seafood in the winter. When parents-in-law had a birthday, there were party noodles, sliced abalone stuffed with pine nuts, brass chafing dish, fish eggs, slices of blilde meat, and matnaji. Daily, there were mainly salted seafood, slices of raw fish, grilled short rib patties, braised fish, baked fish, syruped chestnut, grilled deodeok root, bean sprouts, radish preserved with salt, dongchimi, soy sauce-marinated horseshoe crab, butterbur, perilla seed stew, salted clams, raw bamboo shoot, agar, fried kelp, etc. The most basic virtue of the head family is filial duty, and they developed mosim dining as a representative food of Hakingdang's head family. The mosim menu is composed of 65% carbohydrates, 20% protein, and 15% fat because it is table for parents-in-law like more than 75 years old. The sensory evaluation showed a chewy texture that is easily swallowed.

동결저장 및 빙장한 잉어 및 붕장어의 어묵원료적성 (Fish Jelly Forming Ability of Frozen and Ice Stored Common Carp and Conger Eel)

  • 빙장 및 동결저장한 잉어와 붕장어의 어묵 가공원료로서의 적성에 대하여 실험한 것을 요약하면 다음과 같다. 1. K값, VBN, 생균수, pH및 관능검사 결과로 미루어 보아 어묵가공원료로서의 빙장한계는 잉어인 경우 약 16일이었고 붕장어는 약 13 일이었다. 또한 $-30^{\circ}C$, 3개월 동결저장중에는 양시료 모두 그 원료의 품질이 양호한 편이었다. 2. 저온저장에 대한 내성은 잉어가 붕장어보다 다소 강한 편이었다. 3. 제품의 품질특성시험으로서 겔강도, 절곡시험, 보수력, 색조, texture의 측정결과와 관능검사결과로 미루어 보아 빙장시료중 잉어는 빙장 10 일까지 제품품질이 우수하였고 빙장 16 일까지 어묵원료로서 이용 가능하다고 인정되었으며 붕장어인 경우, 빙장 8일까지 제품이 우수하였고 빙장 13일까지 이용가치가 있는 것으로 나타났다. 4. 동결저장한 시료로 만든 어묵제품은 양시료 모두 원료 저장 3개월까지 어묵제품 품질이 양호하였으며, 3개월간 동결저장한 원료의 어묵제품 품질은 잉어인 경우 빙장 $3{\sim}4$일째의 것과, 붕장어는 빙장 $4{\sim}6$ 일째의 것과 그 품질이 각각 서로 유사하였다.

Use of Awamori-pressed Lees and Tofu Lees as Feed Ingredients for Growing Male Goats

  • Awamori is produced by fermenting steamed indica rice. Awamori-pressed lees is a by-product of the Awamori production process. Tofu lees is a by-product of the Tofu production process. Research was conducted to test if dried Awamori-pressed lees and Tofu lees can be used as a mixed feed ingredient for raising male goats. Eighteen male kids were divided into three groups of six animals (control feed group (CFG), Awamori-pressed lees mixed feed group (AMFG), Tofu lees mixed feed group (TMFG)). The CFG used feed containing 20% soybean meal as the main protein source, while the AMFG and TMFG used feed mixed with 20% dried Awamori-pressed lees or dried Tofu lees. The groups were fed mixed feed (volume to provide 100 g/d increase in body weight) and alfalfa hay cubes (2.0 kg/d) twice a day (10:00, 16:00). Klein grass hay and water was given ad libitum. Hay intake was measured at 10:00 and 16:00. Body weight and size measurements were taken once a month. At the end of the experiment, a blood sample was drawn from the jugular vein of each animal and the carcass characteristics, the physical and chemical characteristics of loin were analyzed. DCP and TDN intakes in AMFG and TMFG showed no significant difference to the CFG. Cumulative measurements of growth in body weight and size over the 10 mo period in the AMFG and TMFG were similar to the CFG. Blood parameter values were similar to those in normal goats. Dressing carcass weight and percentages, and total weight of meat in the AMFG were similar to that in the CFG, but smaller in the TMFG. The compressed meat juice ratio was higher in both the TMFG and AMFG than the CFG. While the fat in corn, Awamori-pressed lees, and Tofu lees contains more than 50% linoleic acid, the loin fat in both the AMFG and TMFG was very low in linoleic acid due to the increase in the content of oleic acid, stearic acid, and palmitic acid. This indicates that feeding on AMF and TMF does not inhibit hydrogenation by ruminal microorganisms. As in the CFG, the total essential and non-essential amino acids in the loin of the AMFG and TMFG were well balanced. Compared to the CFG, the AMFG and TMFG were high in taurine and carnosine. The results indicate dried Awamori-pressed lees and Tofu lees can be used as a feed ingredient for raising male goats.

재래닭의 경영 및 판매 실태에 관한 조사 연구 (A Research on Current Farm Management and Marketing Situation of Korean Native Chickens)

  • The purpose of this research was to get basic information for the development of Korean native chicken industry by reviewing the current native chicken farm management and marketing situation of native chicken products(meat and eggs). The research was carried on the basis of the farm field survey covering 210 native chicken feeders out of 9 different local areas, and the results were as follows ; 1. Average raising size of native chicken flocks of sample farms was 1,787 heads and about 50% of those farms raised less than 500 heads chickens for self-sufficiency or on the side. 2. Most farmers made the decision to start on feeding native chickens in small scale with small amount of capital without sound feeding program, and their decision was mainly influenced by recommendation of mass-media( 19.5%) and neighbors (17.2%). 3. The average income per farm earned by raising the native chickens was 13,719 Won, and income per head of chicken was 8,800 Won. 4. About 40% of feeders expressed that the poor marketing management and lack of capital were the bottleneck to native chicken farm management. 5. About 70% of feeders evaluated the prospect of native chicken industry positively and so, about 60% of feeders hoped to expand the raising size in the future. 6. Most farmers directry made a bargain with marketer including middleman and enduser in selling the chicken products because there was not established special marketing system for native chicken products. 7. The sales age of native broiler was about 16~20 weeks and average body weight of broiler was 1.5~2.0 kg. And farm recieved price was not decided on the basis of each body weight or meat quality but only number of heads. 8. The average first egg-laying age of chickens was about 165 days and average annual laying rate was only about 56%. 9. In order to develop the successful Korean native chicken industry, followings are recommended ; 1) Reducing the production costs and increasing the productivity of native chickens should be carried out through technological research and development for sound feeding program of native chickens and sufficient fund supply. 2) Orderly native chicken marketing and pricing system should be established to give good vision about native chickens to farmers and to delight the consumers. 3) The measures for product differentiation including meat quality and nutritional value of native chicken products against other improved chickens should be actively taken by feeders and government.

조리냉동식품의 가공 및 저장중 품질안정성 : (I) 정어리버어거의 가공 (Processing and quality stability of precooked frozen fish foods : (I) Processing of sardine burger)

  • 정어리버어거를 가공하기 위하여 쵸핑한 정어리 육에 대해 분리대두단백 : 물 : 대두유(16 : 80 : 45)로 만든 유화커어드 14.1%, 식염 1.5%, 모노글루탐산나트륨 0.1%, 설탕 2.0%, sodium bicarbonate 0.4%, 중합인산염 0.2% 빵가루 8.0%, 분리대두단백 3.0%, 양파가루 0.3%, 생강가루 0.15, 후추가루 0.1%를 첨가하여 정어리육 알맹이가 붕괴되지 않도록 혼합한 후 튀긴($165{\pm}2^{\circ}C$, 3분) 것이 가장 좋았다. 정어리버어거의 수분함량은 62.7% 조단백질 17.7%, 조지방은 14.9%로 유화커어드를 첨가하므로서 원료어 지질의 변동에 관계없이 조지방 함량은 $14{\sim}15%$ 범위로 조정 가능하였다. 제품의 주요 구성지방산은 16 : 0, 18 : 1, 20 : 5 및 22 : 6 등으로 고도불포화지방산이 많이 함유되어 있었고, aspartic acid, glutamic acid, leucine, lysine 등과 같은 아미노산의 함량이 많았다. 정어리버어거는 histidine을 주체로 하는 유리아미노산과 IMP를 주체로 하는 핵산관련물질이 주요한 맛성분이고 여기에 total creatinine, betaine 및 TMAO가 보조적으로 정어리버어거의 맛에 관여하리라 판단된다.

농산 혼합 부산물 첨가급여가 송아지 질병 및 거세 한우 성장 및 도체특성에 미치는 영향 (Effects of Agricultural By-Product Feeds on Growth and Carcass Characteristics of Korean Native Steer)

  • 본 실험은 농산부산물인 감껍질, 맥강, 발효미강 및 활성탄을 혼합하여 만든 첨가 사료가 거세 한우의 질병, 성장 및 도체특성에 미치는 영향을 규명하고자 시험한 결과, 송아지 설사는 무처리구(Control)가 가장 발병율이 높았던 반면 첨가량이 가장 높은 T3구(5% 첨가구)가 가장 낮은 발병율을 보였다. 호흡기 질병 발병율은 3% 첨가구(T2)에 가장 낮게 나타났으며, 호흡기와 설사 동시 발생율은 Control구가 가장 높게 나타났다. 일당 증체량은 T2(0.76kg)>T1(0.7kg), T3(0.70)>Control구(0.67kg) 순으로 높게 나타났다. 등지방 두께는 T2>T3>Control>T1구 순으로 등심단면적은 T3>T1>Control>T2 순으로 나타났다. 그리고 육량등급은 1% 첨가구(T1)가 2.3은 가장 높게 나타났다. 지방색, 조직감, 성숙도에서는 상호 처리간 차이가 나타나지 않았지만 근내지방 및 육질 등급은 T2구에서 각각 5.0 및 3.5로서 가장 높게 나타났다. 특히 육색은 농산부산물 사료 첨가량이 증가할수록 높게 나타났다. 위의 결과로 볼 때 농산부산물 혼합 사료는 질병발생 억제, 육량증가 및 육질개선에 다양한 용도로 사용 가능한 것으로 사료된다.

겨울철 자연 동결 건조에 의한 노계 육제품의 제조 (Manufacture of Spent Layer Chicken Meat Products by Natural Freeze-Drying during Winter)

  • 경제적 가치가 낮은 노계육으로 겨울철의 자연 동결 건조에 의해 새로운 염지 건조 계육을 제조하기 위하여 본 연구를 실시하였다. 평균 80주령의 산란 노계 통닭을 무처리(대조구), 염지구, 염지에 2% trehalose 첨가구로 나누어 실시하였다. 시험용 노계육은 강원도 인제에서 겨울철 3개월(2008. 1-2008. 3; 평균기온: $-1.8^{\circ}C$; 평균습도: 63%; 평균풍속: 1.8 m/sec) 동안 명태 건조와 동일한 방법으로 야외에서 건조시켰다. 건조가 진행됨에 따라 노계육의 수분과 수분활성도는 모두 감소하였다. 특히 염지 처리를 하면 건조기간 중 대조구에 비해 pH가 높고 수분활성도와 전단력이 낮으며, 지방산화와 단백질 부패가 억제되었다(p<0.05). 관능검사에서도 염지시킨 건조 노계육이 대조구에 비해 맛, 연도, 다즙성 및 종합적 기호도에서 월등히 우수하였다(p<0.05). Trehalose는 염지육에서 건조기간 중상대적으로 수분 함량을 높이고 건조를 지연시켰으나, 수분활성도는 대조구에 비해 낮췄기(p<0.05) 때문에 보습제의 역할을 하였다. 지방산 조성을 보면 건조기간 동안 염지육들이 대조구에 비해 다가불포화지방산 함량이 높았다. 대부분의 미생물들은 건조 중에 약 2 Log CFU/g 이하의 낮은 수준이거나 검출되지 않았다. 따라서 이화학적, 미생물학적 및 관능검사의 결과로 볼 때 노계육을 염지시켜 자연 건조를 3개월 이내 실시하면 품질 및 위생적으로 문제가 없는 건조 노계 육제품을 제조할 수 있다.

식육추출가공품의 사용원료 확인을 위한 유전자추출 방법의 비교 및 검토 (A Comparison of Gene Extraction Methods for the Identification of Raw Materials from Processed Meat Products)

  • 본 연구에서는 분자생물학적 방법을 통한 식육추출가공품의 사용원료 확인을 위해 효율적인 유전자 추출 방법을 검토하였다. 가공식품의 원료성분 확인을 위하여 종 특이 프라이머를 이용하였으며, 대상 식품원료로는 소, 돼지, 닭을 주원료로 가공된 식육추출가공품 13종을 선정하였다. 선정된 시료는 제품유형에 따라 액상, 소스, 분말류로 구분하고 원심분리 등의 전처리를 추가하거나 추출유전자의 증폭을 위하여 Whole Genome Amplification (WGA)를 실시한 뒤 유전자증폭 후 전기영동하여 예상되는 PCR 산물의 생성유무를 확인하였다. PCR을 실시한 결과 액상형태 식육 추출가공품의 경우에는 1 ml을 취하여 원심분리 과정을 통해 유전자를 추출 하였을 때 사용원료 확인이 가능하였으며, 소스형태 식육추출가공품의 경우 유전자 추출 후 WGA 과정을 추가로 시행하여야 사용원료확인이 가능하였다. 분말형태 식육추출가공품의 경우에는 추가의 전처리 과정이나 WGA 과정이 필요하지 않았다. 본 연구에서 검토된 유형별 유전자추출법은 식육추출가공품의 유전자추출을 통한 사용원료확인이 가능함을 확인하였으며, 향후 식육추출 가공품 중 사용원료의 진위여부 판별에 활용이 가능할 것으로 판단된다.

Comparison of the Quality of the Chicken Breasts from Organically and Conventionally Reared Chickens

  • In this study, the quality of chicken breasts from organically reared chickens was compared with that of chicken breasts from conventionally reared chickens. Broilers were raised in an indoor pen with conventional and organic production system, respectively. The diet formulation for the organically reared chickens and the production density were in accordance with the guidelines for organic chicken products. Twenty birds from each group were slaughtered and their breasts were obtained for analysis. The organic chicken breasts had a higher cooking loss, and waterholding capacity, and a lower shear force (p<0.05) compared to the conventional chicken breasts. The organic chicken breasts also showed higher $a^{\ast}$ and $b^{\ast}$ values and myoglobin contents compared with the conventional chicken breasts (p<0.05). In the fatty-acid analysis, the organic chicken breasts resulted in higher polyunsaturated fatty acid (PUFA) and unsaturated fatty acid contents, and a higher PUFA-saturated fatty acid ratio.
