가족 동반여부에 따른 학령기 아동 및 청소년 아침식사의 질: 2013-2014년 국민건강영양조사자료를 바탕으로 (Nutritional Quality of Breakfast among Korean School-Aged Children and Adolescents Depending on Eating Together as a Family: Based on the Data from the 2013-2014 Korea National Health and Nutrition Survey)

  • This study aimed to assess the nutritional quality of breakfast among Korean school-aged children and adolescents depending on eating together as a family, based on the 2013-2014 Korea National Health and Nutrition Survey. One day 24-hour recall data of 1,831 children and adolescents aged from 6 to 17 years were collected. The nutritional quality of breakfast was analyzed and compared between Family Breakfast Group (FBG, n=1,410) and Eating-alone Breakfast Group (EBG, n=421). The results showed that age, family structure, number of family members, and frequency of breakfast were associated with eating breakfast as a family. The calorie intake from breakfast explained 19% and 16% of the daily intake for FBG and EBG, respectively. The percentages of children and adolescents consuming Vitamin A, Vitamin $B_1$, Vitamin $B_2$, Vitamin C, Niacin, and Iron less than 1/4 of the Estimated Average Requirements were significantly lower in FBG than in EBG. The average numbers of serving for "Grains" and "Vegetables" food groups and the average Dietary Diversity Score were significantly higher in FBG than in EBG. Overall, the results indicated that eating breakfast as a family is positively associated with nutritional quality of breakfast among Korean school-aged children and adolescents.

커피박 첨가 돈족(豚足)의 품질특성 (Quality Characteristics of Pettitoes(Jokbal) added with Coffee Meal)

  • 본 연구는 실제 커피박을 자원화하고, 부가가치를 향상시키며, 열수추출물로 만든 커피박을 제조한 후 족발을 현재 식품제조사에서 만드는 공정으로 가공하여 다변화된 풍미와 기능성이 향상된 족발로 돈족 제품의 다양성과 품질에 미치는 영향을 기초자료로 얻고자 실시하였다. 족발의 pH는 대조구에서 가장 높은 수치를 보였고, 수분함량의 경우 대조구와 커피박 추출물 첨가 간의 유의적인 차이가 없는 것으로 나타났다. 조지방, 조회분의 경우 첨가량 증가에 따라 유의적 차이는 없었으나 다소 증가되었으며, 단백질의 경우는 첨가량이 증가함에 따라 유의적인 차이는 나타나지 않았으나, 다소 감소하는 경향을 보였다. 염도의 경우 대조구보다 첨가구에서 높게 나타났다. 텍스쳐(texture) 분석은 커피박 추출물 첨가에 따라 hardness와 chewiness는 유의적으로 감소하는 경향을 보였고, cohesivenes와 springiness는 대조구와 유의적 차이가 없었다. 명도는 커피박 추출물 첨가량을 10%, 20%, 30%로 점차적으로 증가할수록 L값은 대조구에 비해 점점 유의적으로 낮아지는 것으로 나타났다. a값은 커피박 추출물 첨가구가 대조구에 비해 유의적으로 차이가 없었으며, b값은 대조구가 가장 낮았고 첨가량 증가에 따라 유의적으로 증가하는 결과를 보였다. 이와 같은 분석결과는 커피박 추출물의 색도가 족발의 색에 영향을 미쳤기 때문인 것으로 사료된다. 관능평가 결과, 10%의 커피박 추출물 첨가군이 외관, 씹힘성, 냄새 및 선호도에 높은 점수를 나타내 족발의 품질을 향상시키는 것으로 관찰된다.

입원환자의 급식서비스 인식에 따른 고객 군집화 및 군집별 급식서비스 질 평가, 재이용 의도 분석: S병원을 대상으로 (Clustering according to Inpatients' Opinion on Hospital Foodservice and Analyzing Inpatient Response to Foodservice Qualify and Revisit Intention by the Cluster: In Case of S Hospital)

  • 본 연구에서는 병원급식에 대한 입원환자들의 견해를 조사하고 그 자료를 근거로 군집화를 실시한 후 급식서비스의 질, 만족도, 재방문 의사에 대한 집단별 차이 분석을 실시함으로써 병원 급식서비스에 대한 환자의 인식과 만족도 재방문 의사의 관련성을 분석하였다. 병원급식에 대한 고객의 견해를 조사한 결과, 전체 의료서비스 중 급식서비스의 중요성은 4.25점, 제공받은 급식서비스의 전반적인 질 3.57점, 지불한 식대에 대한 급식서비스의 질 3.08점이었다. 급식 서비스의 만족도를 표현하는 항목으로는 급식서비스가 질병 치료에 도움이 되는 정도, 식사가 고객에게 행복을 주는 정도, 전반적인 급식서비스 만족도가 각각 3.48점, 3.18점, 3.66점이었으며, 입원 전 기대에 대한 만족도는 3.53점, 병원 명성에 맞는 급식서비스 제공은 3.40점으로 조사되었다. 만약 향후 다시 병원에 입원할 기회가 생긴다면 S병원을 다시 찾겠다는 재이용 의사에 대한 질문에 대해서는 전반적인 치료서비스를 고려할 때와 급식서비스 수준을 고려할 때로 분리해서 분석 한 결과, 각각 4.04점, 3.84점으로 재입원 의사는 높은 것으로 나타났다. 급식서비스의 중요성, 질, 가치, 만족에 대한 고객의 견해 8문항을 독립변수로 하여 군집분석을 실시한 결과, 2개의 군집으로 분류되었고 각 군집의 의미에 따라 군집 1을 '긍정적 평가군', 군집 2를 '부정적 평가관'이라고 명명하였다. 군집별 급식서비스 요인에 대한 기대, 인식 및 만족도 차이를 분석한 결과, 두 군집간 기대도에는 유의적 차이가 없었으나, 인식도에서는 식사의 질(p<0.001), 고객 응대(p<0.001), 정확한 서비스(p<0.001), 배선원의 태도(p<0.01)의 4개요인 모두에서 긍정적 평가군이 부정적 평가군에 비해 유의적으로 수행수준을 높게 인식하고 있었다. 만족도의 경우 긍정적 평가군에서는 만족을, 부정적 평가군에서는 배선원의 태도를 제외한 3가지 요인에서 불만족을 보였으며 4개요인 모두에서 두 군간 유의적인 차이를 보였다. 의료서비스를 고려하거나 혹은 급식서비스를 고려하거나 간에 모두 긍정적 평가군이 부정적 평가군에 비해 유의적(p<0.001)으로 선택가능성이 높게 나타났다.

백령도 주둔 신세대 장병의 군급식 만족도 및 식행동 (Satisfaction of Foodservice and Eating Behavior of Male Military Personnel in Backryung-do)

  • The purpose of this study was to provide basic references in order to improve the quality of military foodservice by investigating the eating behavior, preferred items for improvement and foodservice satisfaction of male military personnel in Backrung do. A total of 213 male military personnel (66 sergeants, 44 corporals, 80 privates first class and 27 privates third class) responded to a survey questionnaire. Frequencies, t tests, analysis of variance, and Cronbach's alpha, were carried out by SPSS Win V.18.0. The results of the study were as follows. The satisfaction level of military foodservice was slightly below 3 out of 5 points, and Korean cuisine was the favorite food. Military male personnel preferred frying and stewing as their favorite cooking methods. Sixty-six percent of subjects answered that their favorite principal ingredients were meat and fish. Therefore, as young soldiers' taste preferences were westernized, proper nutrition education programs for good health are needed. Further, the current military dining environment should be changed into a quiet and neat atmosphere, with clean dishes, nutritious meal items, and quick and proper serving methods, etc. Based on the results above, military authorities should develop an adequate menu for the male military personnel at Backrung do military base that includes a variety of foods, and cooking methods.

청주지역의 출장요리 서비스에 대한 이용실태 및 고객만족도 (Use and Customer Satisfaction with Catering Services among Women in Cheongju City)

  • In order to obtain baseline data for quality improvement of the catering services, a survey was carried out to investigate the consumer use and satisfaction with catering services. Subjects were 171 women who had used catering services within a year previously, and were replied to a questionnaire. The results were as follows: With respect to the use of the catering service, most reasons for using the catering service were no time and no cooking skills, and most events using catering services were the first birthday party and 100th day party for baby. The preferred meal cost was 8,000-10,000 won per person. With respect to customer satisfaction, over 60% of the people were satisfied with catering service which they had used ; they were satisfied with service quality and quantity of the dishes provided whereas they showed a little bit dissatisfaction in desserts and seasonal foods. It is recommended that supplying of sufficient desserts, and development of new and various menus according to seasons should be required to improve the consumer satisfaction with catering services.

대학생의 삶의 질에 관한 연구 (A study on quality of life among college student in Korea)

  • This study was conducted in order to identify quality of life(QL) and it's related factors in college students in Korea. The data were collected at september, 1996, using the instrument of QL. It was measured by a 5-point scale, composed of 20 questions, 4 regions; “the region of task”, “the region of life style”, “the region of mentalㆍemotional health” and “the region of physical health”. The subjects of this study were 413 college students. Data were analyzed with t-test, ANOVA -test using SPSS program. The results were as follows. 1. The lowest mean of QL score was 2.685 in the region of task. And the mean of QL score in the region of life style was 2.772, in the region of mentalㆍemotional health 3.114, in the region of physical health 3.323. 2. There were significant relation between “sex” and “QL” in the regions of task(p〈 .05), mentalㆍemotional health(p〈.01), and physical health(p〈.01), between “resident patterns” and “QL” in the regions of task(p〈.05), life style(p〈.01), and mentalㆍemotional health (p〈.01), between “meal provider” and “QL” in the regions of mentalㆍemotional health(p〈.05), between “monthly pocket money” and “QL” in the regions of mentalㆍemotional health(p〈.05). Mean score of QL on the subjects who exercised regularly was statistically significant higher than others' in the regions of task(p〈 .05) and physical health(p〈 .05). And QL score of working students for money was statistically significant higher than others' in the regions of physical health(p〈.05).

호텔 이용 의도에 따른 호텔 브랜드, 서비스 지각과 호텔 선택의 구조적 관계 (The Model Structure on Hotel Brand, Service Quality Perception and Choice along Intention of Use)

  • 호텔 기업은 고객에게 최고의 숙박과 식사 시설을 제공하여야 한다. 또한 고객에게 최고 품질의 서비스를 해야 한다. 고객의 호텔 선택 기준은 매우 까다롭다. 숙박 이용, 식당 이용, 컨벤션 이용 의도에 따라 호텔 선택의 기준도 다르며, 호텔 인지도도 달라진다. 본 연구는 이러한 호텔 이용자의 이용 의도에 따라 호텔 선택의 영향을 분석하였다. 분석 방법은 구조적 모형 검증 방식을 통하여 실시하였다. 연구 결과의 특징은 식당 이용, 숙박 이용, 컨벤션이용 의도에 따라 호텔 선택을 하고 있는 것으로 나타났다. 그렇지만 호텔 브랜드 지각 또는 서비스 품질지각에 따라 호텔을 선택하는 가설을 채택하지는 못했다.

사업체 위탁 급식소에서 제공되는 메뉴에 대한 관리자 측면에서의 품질 관리 평가 (Evaluation of Menu Quality Management in Business & Industry Contract Foodservice from Manager′s Viewpoint)

  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items. IPA를 이용한 편의점 PB 도시락의 선택속성에 관한 연구 (A Study on the Selection Attributes of Convenience Store PB Lunch Box using IPA)

  • This study compared and analyzed the importance-satisfaction regarding the selection attributes of the convenience store focusing on PB lunch box for consumers of 20s and 30s. According to the research results, the importance of factors such as easy purchase, time reduction, convenient intake were found to be high among the selection attributes of the convenience store PB lunchbox and those of factors such as confirmation of food ingredients, nutrition, and new taste were found to be relatively low. In addition, factors with high satisfaction included easy purchase, convenient intake, time reduction, while factors with low satisfaction were confirmation of food ingredients, nutrition and hygiene. The results of the IPA analysis were as follows: The $1^{st}$ quadrant (Keep up the good work) included convenience, time reduction, easy purchase, convenient intake, convenient cooking method, and convenient packing container Etc. $2^{nd}$ quadrant (possible overkill) includes origin labeling and the 3rd quadrant (low priority) includes packing container design, convenient storage, consistency of quality and taste, good taste, moderate amount, new taste, one meal, moderate quantity and quality, inexpensive intake, and hygiene Etc. $4^{th}$ quadrant was found to include no corresponding factors.

정형외과 환자의 관여도에 따른 병원급식 만족도 분석 (The Assessment of Foodservice Satisfaction by Orthopedic Patients according to their Involvement)

  • The purposes of this study were to evaluate the quality of hospital food services in view of patients in orthopedic wards and accomplish the quality improvement in hospital foodservice operations. Quantitative questionnaires for patients containing foodservice satisfaction and demographic information were developed. A survey of 8 general hospitals was undertaken and detailed information was collected from 290 patients in orthopedic wards. The collected data were processed using the SAS PC 6.12 for descriptive analysis, t-test. In demographic information of patients, 32.6% was over 50 years old and 31% was hospitalized over 30 days. 80% of patients was taking normal diet. 47.7% and 47.9% of patients showed moderate appetite and moderate pain respectively. The overall satisfaction score for patients was 3.24 out of 5, showing slightly higher level than the average score(3.00). According to foodservice involvement scores of patients, they were divided into two groups which were high involved group and low involved group. Two groups showed significant differences in taste of meals, variety of menu, punctuality of meal times, temperature of meals and portion size. The foodservice involvement factor which affected significantly patient foodservice satisfaction was 'kindness of foodservice staff'.
