Many antinutritional and toxic factors abound in tropical seeds, which are also generally rich in nutrients and therefore more prone to attack from herbivores. Antinutritional and toxic factors are considered to defend seeds against environmental vagaries and thus help to protect them. These factors though good for the plant, cause deleterious effects or are even toxic to animals and man. The conventional seeds cultivated for oil or non-oil purposes, and general aspects of antinutritional factors are not presented here as these have already been discussed widely by many workers. Deficits in conventional protein and energy sources in the tropics have stimulated a quest for alternative feeds both for animals and humans. This article attempts to highlight two new oilseed crops, Jatropha curcas and Moringa oleifera, and in addition deals with some under-utilized seeds with potential as animal feed. Most of these seed plants are adapted to various marginal growing conditions in the tropics and can help to mitigate the prevailing deficit in protein and energy sources. Antinutritional and toxic factors in seed or seed meal, various approaches to detoxify seed meal, and future research and development priorities for their exploitation as animal feeds are presented.
The huge amount of demand for feedgrains from this region could not possibly be met by producing countries from the other regions. In order to fulfill this increasing demand for conventional raw materials, an alternative for the conventional raw materials produced in the Asia and Pacific region is becoming increasingly more important. A potential alternative is concentrates or non-conventional concentrates produced locally in relative abundance in this region. These feedstuffs include feed grains, by-products from the milling, sugar industries, brewing and distilling industries. Vegetable, citrus, and animal by-products from abattoir, feather meal and blood meal are also possibilities. In addition to more widespread use of unconventional feed sources, the following approach is recommended to improve utilization and performance. These include establishing the nutritive value of non-conventional feeds, quality control to minimize variability, proper storage and processing to assure the nutritive value and prevent mycotoxin contamination, properly balance amino acids with protein sources, supplementation with synthetic amino acids and the use of enzymes to increase digestibility. Currently, practical applications for these resources in feed formulation are negligible despite the potential. The socio-economic aspects will dominate the use of these non-conventional concentrates. In the future, the feed industry will resolve the problems in using locally available raw feed materials.
This study aimed to identify services and social and leasure programs that will be needed for helping senior residents to be aging healthfully and comfortably in the university-based continuing care retirement community (UBRC). This study conducted case study targeting three representative university-based CCRCs in the east area of United States such as Oak Hammock (OH) at Florida state, Kendal at Lexington (KL) and The Collonades (C) at Virginia state. There were three types of services in the UBRC, which were meal services, healthcare services, and personal services. Those services were different from the level of care such as independent living, assisted living, nursing home and memory care. Meal services and personal services were very similar among three UBRC, whereas healthcare services of OH were higher level of quality and diversity than the others. The social and leisure programs were categorized in-house programs, university outreach program and intergenerational programs between residents and students attending to related university. In-house programs and university outreach program were almost similar among three UBRC, whereas intergenerational programs of OH were well organized and actively operated than the others. This study results are expected to provides essential information for the development of Korean style services and programs of university-based CCRCs in the future.
The purpose of this study was to evaluate the relationship between the diversity of food intake and nutrient intake among Korean college students participating in a nutrition education class via the internet. The subjects were 796 college students throughout South Korea (278 males, 518 females). A 3 days dietary recall survey was conducted and results were analyzed using the Computer-aided Nutritional Analysis Program. Dietary variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). Dietary quality was assessed by NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio). As the DDS, MBS and DVS increased, the NAR and MAR improved. The subjects with a DDS of above 4 or a MBS of above 10 or a DVS of above 11 met two-thirds of the Korean recommended dietary allowance for most nutrients. The DDS, MBS and DVS correlated positively and significantly with the NAR and MAR. Associations between the NAR and high levels of DVS were more positive than those between the NAR and the DDS. Based on these results, the food intake of these subjects was not adequate. Specially, the dietary intake of calcium and iron were not adequate. Therefore, dietary guidelines should be made considering nutritional characteristics so as to improve the intake from all of the major food groups and provide a variety of foods in their diets.
Among edible insects, black soldier fly (Hermetia illucens), yellow mealworm (Tenebrio molitor), and common housefly (Musca domestica) have been considered as an alternative protein source for pigs. Because they are easy to breed and grow in the organic wastes, and they have well-balanced nutritional value as a protein source for pigs. The black soldier fly larvae and mealworm could replace the fish meal in the diets for weaned pigs without adverse effects on growth performance and nutrient digestibility. Black soldier fly could also be included in the finishing pig's diet without any negative effects on the growth performance and pork quality of the market pigs. Insect products showed a greater standardized ileal digestibility value of amino acids than conventional animal proteins in growing pigs. Due to the limited amount of insect products used for pig feeding study, most previous pig studies have been conducted in weaned pigs. Thus, further study is needed about the optimal inclusion level of insect products in every phase diet from weaned pigs to sows. The use of insect products in swine diets has some challenges in terms of cost, supply, and safety. Lastly, intrinsic differences among insect species, processing method, and feeding phase should be taken into consideration for the use of insect products in the swine diets.
This study analyzed the determinants that affect the purchase of ready-to-cook seafood products using the "Consumer Attitude Survey on Processed Foods" from 2018 to 2021. Dietary lifestyle, food awareness and preference survey questions were categorized, and factors affecting the purchase probability of ready-to-cook seafood were identified through a binomial logit model. The main research findings are as follows. First, consumers had higher preference for quality, safety, and new taste factors than health and price factors when purchasing HMR (Home Meal Replacement). Second, through binomial logit model analysis, the probability of purchasing ready-to-cook seafood products was low in the group pursuing taste and economy. On the other hand, the purchase probability was high in the group seeking convenience. Third, the purchase probability of ready-to-cook seafood products was higher in households with two or more persons than in single-person households. These results suggest that differentiated product development and marketing strategies should be needed for each consumer groups in the seafood convenience food market.
제4차 산업혁명 시대의 보편적 삶의 형태는 비대면이라는 키워드로 요약될 수 있을 것이다. 특히 소비 활동 측면에서도 점차 대면 접촉이 최소화되는 시스템으로 변화하고 있으며, 오프라인 매장에서는 키오스크(kiosk)와 로봇 등을 통한 비접촉 서비스로의 전환이 빠르게 이어지고 있다. 사회 구조 역시 시간의 흐름에 따라 변화되고 있으며 특히 1인 가구 증가와 고령화는 식생활과 연관된 외식산업의 변화에도 영향을 미치고 있다. 가정 내에서 직접 조리하는 노동이 줄어들고, 대체할 수 있는 식품의 이용이 증가하고 있음에 따라 가정간편식 (HMR: Home Meal Replacement)시장이 큰 규모로 성장하였다. 시장의 규모가 커지며 상품을 제공하는 비즈니스의 형태도 다양해졌다. 기술의 발전, 비대면 문화 그리고 기업의 경영 효율성이 맞물리며 최근 무인매장이 확산되고 있는 추세이다. 본 연구에서는 차츰 경쟁이 심화되는 HMR 무인매장의 서비스 품질 속성을 분류하여 고객만족을 기반으로 한 서비스 경영 관리 측면의 시사점을 제공하고자 Kano model을 활용한 서비스 품질 분류 및 Timko의 고객만족계수를 산출하였다. 분석결과 '상품(메뉴) 다양성' 등이 매력적 품질로 분류되었으며, '매장 내부/외부 청결성' 등이 일원적 품질로 분류되었다. 또한 '셀프 계산 과정의 편리성'은 당연적 품질, '매장 내 통행의 편리성' 무관심 품질로 분류되었다. 나아가 만족계수가 가장 높은 요소는 '상품(메뉴)다양성'으로, 불만족계수가 가장 높은 요소는 '셀프 계산과정의 편리성'으로 나타났다. 본 연구의 결과를 통해 HMR 무인매장의 서비스 품질 관리에 있어 우선순위를 도출하고, 이를 통해 관련 비즈니스에서의 전략적 시사점을 제공하고자 한다.
The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ⅱ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by Korean style restaurants in Changwon. A total of 20 restaurants in Changwon participated in this study, and two investigators visited there, consumed and investigated it. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance(RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) 1,821.2Kcal were served, 1,052.6Kcal were consumed and 768.6Kcal which is equivalent to 1/3RDA were thrown away on average. 2) The average carbohydrate:protein:fat(CPF) ratio of caloric nutrients was 42:27:31. 3) The correlation between the consumed and unconsumed calories was r=0.661 and the correlation between served and unconsumed calories was r=0.819. Both consumed and unconsumed calories were closely related to the served calories. 4) The result of the research showed that mean INQ in most nutrients was higher than 1.0, especially INQ in unconsumed food is mostly higher than INQ in provided and consumed food. 5) The unconsumed food and the meal prices were closely correlated in terms of price loss. These findings indicate the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. They should also be strongly encouraged to play an active role in improving their customers’ nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants.
인공사료육 누에에 있어서 사료조성 차이와 사육환경이 누에의 성장발육에 미치는 영향은 다음과 같다. 1. 사료의 대두분말 함량이 많을수록 경과가 짧았으나 대두분말 함량이 50%를 넘으면 오히려 경과가 길어졌다. 2. 감잠비율은 대두분말 함량비가 50%까지는 영향을 미치지 못하지만 그 이상에서는 높았다. 3. 사료조성 차이가 견질에 미치는 영향은 단견중에 있어서는 단백질 함량이 많을수록 무겁고 견층중은 차이가 없었으며 견층비율은 대조구에 비해 각 처리구 모두 낮았다. 4. 사육환경 중 온도는 고온이 광선은 암조건이 경과를 단축시켰다. 5. 감잠비율은 치잠기 고온에서 낮았고 광선은 암조건에서 낮았다. 6. 사육환경이 견질에 미치는 영향은 단견중, 견층중, 견층비율 모두 온도는 고온이, 광선은 암조건이 양호하였다.
Food is an essential component of good health and a high quality of life. This is especially true for the elderly, where health and quality of life can vary due to eating issues. This study attempts to measure the satisfaction with food-related life in the elderly of South Korea, while examining differences in social support, depression, isolation, and life satisfaction based on the level of satisfaction with food-related life. Data collection was conducted using one-on-one surveys from December 2011 to January 2012. A total of 390 elderly (aged 65 and over) who live in Korea participated in this study. The results showed that the satisfaction with food-related life was high (3.52 out of 5). The elderly who had company during a meal or a meal preparer showed a higher satisfaction with their food-related life. Social support was high (5.32 out of 7) and the feelings of isolation were low (3.85 out of 5). The average satisfaction with life was 4.42 out of 7, indicating a fair satisfaction with life, while the average depression score was relatively low (8.77 out of 26). In general, the elderly with a higher satisfaction with food-related life had a higher social support and overall satisfaction with their life. On the other hand, the elderly with a lower satisfaction with food-related life generally reported higher levels of depression and isolation. A positive correlation was observed between satisfaction with food-related life, social support, and satisfaction of life, while a negative correlation was found between satisfaction with food-related life, isolation, and depression. The results of this study indicate that managing the satisfaction with food-related life is an important component of mental health in the elderly.
