한국 초등학교 급식 식단의 영양가 및 식품 구성의 다양성 평가 (Evaluation of Elementary School Foodservice Menus on Its Contents and Diversity of the Food Served.)

  • This study was conducted to evaluation the quality of meals served in elementary school based on nutrient contents and food diversity . A questionnaire was mailed to school foodservice dietitians requesting one week menus for April and October . Menus served in 388 schools from each province and from major cities in Korea were analyzed. Mean nutrient contents per meal of persons served, and food expenses per meal. Mean percentages of energy from fat was 20.2% , and was significantly l different by foodservice system. When nutrient contents were converted to amount per 1, 000kcal, all were higher than that calculated from RDA except calcium, iron, and Vitamin A. Most of these were not significantly different according to area, foodservice system, the number of persons served, and food expense per meal. Compared to 1/3 of RDA for children , many meals provided lower amounts of energy, Vit A, VitB2, and Ca. More than half of the meals provided less iron than 1/3 RDA for 10-12 years girls. Using the highest values of RDA for the elementary school age group as evaluation, criteria nutrient adequacy ratios(NAR) were lowest for Ca(0.61), Vit A(0.57), and iron(0.77). The mean adequacy ratio(MAR) was 0.86. Mean numbers of food items and dishes per meal were 15.3 and 5.1 , respectively. 66.3% of the meals provided three food groups of grain, meat, and vegetable. Except for the number of different food items served per meal, the aspect of food diversity was similar to that of nutrient contents. There was significant positive correlation between mean number of different food items served per meal and nutrient content . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those or density. Also the more food groups served per meal, the higher the nutrient content per meal . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those adapting conventional foodservice system, schools serving smaller number of persons, and schools with higher food expenses provided higher energy contents and food diversity.

Chemical composition of cassava-based feed ingredients from South-East Asia

  • Objective: Information about the chemical composition of cassava-based feed ingredients is needed to accurately formulate animal diets. A study was conducted to determine the chemical composition of cassava-based feed ingredients and to test the hypothesis that there is variation in chemical composition among cassava products originating from different South-East Asian countries. Methods: Sources of dried peeled and unpeeled cassava roots, cassava chips, cassava meal, high-ash cassava meal, and cassava residue were used. All samples were analyzed for dry matter, gross energy, nitrogen, amino acids (AA), acid-hydrolyzed ether extract (AEE), ash, minerals, total starch, insoluble dietary fiber, and soluble dietary fiber. Samples of peeled and unpeeled cassava roots, cassava chips, and cassava meal were also analyzed for sugars. Results: High-ash cassava meal had greater (p<0.05) dry matter and ash, but lower (p<0.05) total starch and gross energy than all other cassava products. Peeled cassava roots, unpeeled cassava roots, and cassava chips had greater (p<0.05) total starch than the other cassava-based ingredients. Cassava residue had greater (p<0.05) concentrations of lysine, insoluble dietary fiber, and soluble dietary fiber compared with the other cassava products, but tryptophan and glutamic acid were greater (p<0.05) in peeled cassava roots, cassava chips, and cassava meal samples compared with the other ingredients. Concentration of most minerals was greater (p<0.05) in high-ash cassava meal than in the other cassava products. Conclusion: Cassava-based ingredients sold as peeled roots, unpeeled roots, chips, or meal have chemical compositions that are not different from each other, and peeling has little impact on chemical composition. High-ash cassava meal has lower nutritional quality compared with other cassava products due to low starch and gross energy. The high fiber content in cassava residue makes this ingredient more suitable for ruminants and sows than for younger pigs or poultry.

병원급식서비스의 질 인식에 대한 입원환자와 종사자간 괴리 분석 (A Gap Analysis between Inpatients' and Personnel's Perception of Hospital Foodservice Quality)

  • The purposes of this study were to analyze the gap between foodservice personnel and inpatients, to urge foodservice providers to reconsider by identifying the problems in service delivery for customer satisfaction, and to deduce the priority for foodservice quality improvement. The results of this study can be summarized as follows : the average perception score of personnel (4.32 out of 5) was higher than that of customers (3.90). In particular, the customers' perceptions of 17 attributes, which included 'removal service of tray by foodservice personnel', 'nutrition and health-related information service', 'handling inpatient's complaint ASAP', 'delicious meals' and 'salty enough meals' and so on, was significantly lower than personnel's. Both service providers and customers perceived that 'personnel attitude' was the highest and 'meal quality' was the lowest among the 4 factors, but there was significant difference on 'meal quality'(p < .001), 'customer reception' (p < .001) and 'personnel attitude' (p < .05) between the two groups. As a results of quadrant analysis, 'removal service of tray by foodservice personnel', 'handling inpatient's complaints ASAP' and 'meal service according to doctor's orders were categorized into Quadrant A with meaning of high personnel's perceptions and low customers'. Therefore service providers have to perceive the gap between the two viewpoints and grant priority to these attributes in improving foodservice qualify. Effect of dietary supplementation of tapioca on growth performance and meat quality in pigs

  • This study evaluated whether dietary supplementation of tapioca could alleviate the negative effects of palm kernel meal (PKM) on growth performance and meat quality in growing and finishing pigs. In experiment 1, 120 73-dold crossbred growing pigs [$(Yorkshire{\times}Landrace){\times}Duroc$], with an average body weight of $31.7{\pm}4.5kg$, were used in a 3-week trial. In experiment 2, 120 108-d-old crossbred finishing pigs [$(Yorkshire{\times}Landrace){\times}Duroc$], with an average BW of $52.6{\pm}4.2kg$ were used in a 10-week trial. Treatments were: CON, a corn-soybean meal-based diet; PKM, 8% PKM, and TPKM, 8% PKM and 10% tapioca. No difference was observed in growth performance or meat quality among treatments in growing pigs. In finishing pigs, no difference was observed in growth performance or meat quality among CON and TPKM dietary treatments. Finishing pigs fed PKM decreases in final BW and ADG compared with those fed CON. Meat quality was not affected by dietary treatments. In conclusion, dietary supplementation of tapioca alleviated anti-nutritional effect of PKM on growth performance in growing and finishing pigs. Thus, the PKM with tapioca could be an available alternative energy source to reduce the cost of pig diets.

Effects of Expander Conditioning of Corn- and Sorghum-Based Diets on Pellet Quality and Performance in Finishing Pigs and Lactating Sows

  • Two experiments were conducted to determine the effects of conditioning (conventional vs expander) corn- and sorghum-based diets on production traits for lactating sows and finishing pigs. In Exp. 1, one hundred sixty-eight sows (parity 1-4, PIC line C15) were fed the corn or sorghum grain diets as a meal, standard (steam) conditioned pellets, or expanded pellets to give a $2{\times}3$ factorial arrangement of treatments. Pellet durability index (PDD was similar for the sorghum- vs corn-based diets, but increased when diets were expanded pellets for both corn- and sorghum-based diets. The corn-based meal diet supported 3.3% greater litter weight gain than the sorghum-based meal diet (44.0 kg vs 42.8 kg). However, the advantage for the corn-based diet disappeared with expander processing (ie., sows fed the sorghum-based diet responded more to diets processed with the alternative processing technology). Sow weight change during lactation was similar (p>0.15) among treatments, although average daily feed intake tended to be greater (p<0.09) for the sows fed sorghum. For Exp. 2, a total of 71 barrows (average initial weight of 58.0 kg) were used in a growth assay to determine the effects of feeding com- and sorghum-based diets, as meal or pellets, after processing with a conventional steam conditioner or an expander (high-shear) conditioner. PDI was not different for the sorghum- vs corn-based diets, but increased from 84 to 95% with expander conditioning compared to conventional steam conditioning. Rate and efficiency of gain, and carcass leanness were similar for pigs fed sorghum and corn (p>0.15). Efficiency of gain was greater (p<0.04) for pigs fed the pelleted (356 g/kg) diets compared to those given the meal (348 g/kg) diets. However, efficiencies of gain were similar (p>0.11) for pigs fed the conventional- and expander-conditioned diets. Pelleting increased (p<0.01) the incidence and severity of stomach lesions regardless of grain type. In conclusion, corn-based meal diet resulted in a greater litter weight gain than the sorghum-based meal diet. However, that advantage disappeared when the diets were expanded and pelleted. Finishing pigs fed pelleted diets were more efficient than those fed meal diets.

유기액비 관비가 고추 생육 및 과실 품질에 미치는 영향 (Effects of Organic Liquid Fertilizer Fertigation on Growth and Fruit Quality of Hot Pepper)

  • 본 연구는 유기액비 관비가 '녹광(세미니스)' 고추의 생육과 수량에 미치는 영향을 구명코자 실시하였다. 유기액비 조성에 따라 대조구(화학비료시비), 유기액비 I(계분 : 어분 : 대두박, 2:1:1), 유기액비 II(계분 : 골분 : 대두박, 2:1:1), 유기액비 III(계분 : 골분, 1:1), 유기액비 IV(계분 : 쌀겨 : 대두박, 2:1:1) 등 5처리를 두었다. 유기액비 조성재료와 비율에 따른 액비의 pH와 EC는 각각 6.5~6.8와, $2.91{\sim}3.69dS{\cdot}m^{-1}$의 분포를 나타냈다. 유기액비 조성 비율에 따른 C/N율은 유기액비 IV가 5.75로 가장 높았으며, 그 외 처리는 처리간에 차이가 없었다. 주당 총과중은 유기액비 IV 처리구에서 1,558g으로 가장 무거웠으며 총과수는 대조구에 비해 23.7% 증가하였다. 홍고추의 캡사이신 함량은 유기액비 I과 II에서 대조구에 비하여 증가하였으며, 유기액비 III과 IV 관비구에서는 감소하였다. 당도는 유기액비 IV 관비구에서 $10.0^{\circ}Brix$로 가장 높았다.

급식서비스이용 노인들의 거주유형에 따른 사회ㆍ정서적 안정감과 영양상태 및 급식서비스 이용행태 (Psycho-Social, Nutritional Status and Mean service Utility Pattern by Living Arrangements of the Elderly Participated in Meal Service)

  • This study is designed to examine influences of living arrangements on psycho-social factors, health and nutritional status, dietary adequacy and meal service utility patterns of the elderly. Nutritional status was evaluated by Mini Nutritional Assessment (MNA). Three hundred and nine elderly (110 men and 199 women) who participated in meal service in the Chung-buk province were investigated. Proportion of the elderly living alone, couples only, living with spouse and family, living with family without spouse; and living with other than family were 30.7%, 25.9%, 14.2%, 24.3% and 4.9% respectively. The mean age of the elderly was 74.1 years and the elderly who are living couples only and living with spouse and family were younger than those with other living status. Living arrangements seem to be related to psycho-social factors, health and nutritional status, and dietary quality. Those who live alone and live with other than family were mostly women and they have lower socio-economic status, psycho-social, health and nutritional status and dietary patterns compared with those of the elderly who are living with spouse or family. It was found that the elderly who live a couple only and live with spouse and family had better emotional, health and nutritional index than those of the elderly who live with family without spouse, especially in case of females. Most of elderly perceived that participation of meal service programs had a positive effect on their daily life and satisfied with meals. The elderly living alone and living with other than family were more frequently using meal service but had a negative attitude about the charged meal service for better quality than the elderly with other living status. The most important reason for all the elderly to participate in meal service was to meet their friends and then to get other services. Particularly those who are living alone and living with other than family showed lack of moivation to prepare and set the meal, and for them the economic reason is also important. They also replied that the poor health and lack of other help were the most difficult problems for them to prepare meals. It would be effective to provide nutritional services that meet specific needs of the elderly according to their characteristics and living environment.

Carcass Characteristics of Goats Fed Ammoniated Neem (Azadirachta indica) Seed Kernel Cake

  • The present investigation was carried out to study the affect of feeding urea ammoniated neem kernel meal on carcass characteristics and organoleptic properties of the meat in goats. Eight local weaned kids of 3-4 months age with mean body weight of $7.85{\pm}0.42kg$ were assigned to two groups of four each in a completely randomised design and were offered diets containing isonitrogenous concentrate mixtures containing either peanut meal or urea ammoniated neem (Azadirachta indica) seed kernel meal (UANSKM) along with ad libitium oat hay or green sorghum as roughage for 13 fortnights. The animals were slaughtered at the end of the experimental period and the carcass characteristics and organoleptic evaluation of the meat was carried out. The carcass characteristics in terms of dressing percentage, meat bone ratio, percent edible and inedible did not differ between the treatments. Similarly the organoleptic characteristics and cooking loss were comparable between the treatments implying that UANSKM can be substituted for peanut meal in goat diets to alleviate the shortage and high cost of peanut meal without affecting meat quality.

실버타운 입주자 개인 특성에 따른 급식 및 전체 만족에 관한 연구 (A Study on the Feeding and Whole Satisfaction of Silver Town Tenants according to Individual Characteristics)

  • It is a real situation that the meal service at silver towns such as the welfare facilities for the elderly is giving help in maintaining health, preventing diseases, and giving mental pleasure to the dwelling elderly people, thus the importance of meal service for housing occupants is being demanded together. This study is based on some inconvenient matters when using the meal-service facilities within the silver town targeting housing occupants at the silver town, aiming to examine which influence it can have upon the satisfaction with meal service in housing occupants. Accordingly, the purpose of this study is to present a desirably developmental direction for the meal-service facilities, which can cope with diverse needs of housing occupants. To achieve the objectives of this study, it was analyzed by selecting research variables that were verified by the consideration of preceding studies.

Effect of Feeding High Glucosinolate Rapeseed Meal to Laying Japanese Quail

  • The laying performance of Japanese quails fed graded levels of high glucosinolate ($92.5{\mu}mole/g$) rapeseed meal (RSM) was assessed. One hundred and twenty Japanese quails aged 1 day-old were assigned at random to four dietary treatments consisting of 0, 50, 75 or 100 g/kg RSM in the diet replacing part of the soybean meal and de-oiled rice bran in a standard quail ration. 12 female representative quails from each diet were selected at random and housed in individual cages from 7-20 wk of age. The egg production, feed intake and FCR was comparable among the different dietary groups. The egg quality characteristics, organoleptic evaluation of boiled eggs as well as the haematological (haemoglobin, total erythrocyte count, total leucocyte count) and biochemical (glucose, protein, cholesterol, aspartate amino transferase, alanine amino transferase and alkaline phosphatase) constituents did not differ significantly among the groups. The gross and histopathological studies of vital organs did not reveal any appreciable changes. The feed cost was reduced by the incorporation of RSM in the diet, but only the production cost of quails fed the 75 g/kg RSM was lower in comparison to other groups. In the present study, the laying potential of Japanese quail was well-maintained up to the 100g/kg dietary level of rapeseed meal.
