  • To investigate the nutritional quality of packaged meals produced by packaged meal manufactures, a nutritional evaluation was conduced. Samples examined in this study were 95 Products which composed of 86 Doraks, 7 Kimplabs and 2 Yubuchopabs Produced in packaged meal manufactures in Seoul City and Kungki-do province The distribution of food groups showed that amounts of animal foods were abound, but amounts of green vegetables, limited in Dosirak comparing to one meal RDA levels. Amounts of meats, fishes and shells are increased more than amounts of egged and legumina with increase of price of Dosirak. The total kinds of food and the amounts of certain food in Kimpab and Yubuchopab were lower than Dosirak. The energy and protein contents of Dosirak were found to be higher than one meal RDA levels, with exception of protein content in Dosirak of the price 1000 won. The contents of energy and protein in Kimpab and Yubuchopab are less than one meal RDA levels. Calcium and iron contents in Dosirak, and calcium content in Yubuchopab were present in excess compared to the one meal RDA. However, In Kimpab, calcium and iron contents were lower than the one meal RDA. On the whole, vitamin contents of Dosirak were sufficient whereas vitamin contents of Kimpab and Yubuchopab were lower than the one meal RDA. Number of side dishes used in Dosirak were 6-23 items depending on prices. Guidelines were suggested for effective nutritional quality control of packaged meals.

  • The purpose of this study was to investigate dietary intake and to evaluate patient satisfaction toward the quality of hospital foodservice. Questionnaires were distributed to 203 hospitalized patients in 3 hospitals having 300 beds. The intake rates for served amounts of rice, side dishes, and soup were 72.5%, 68.2%, and 62.6%, respectively. The main reasons for left-overs were 'no appetite' (25.8%) and 'not salty enough' (19.9%). The rate of patients eating outside food was about 33.5%. The average score for quality satisfaction of meal characteristics was 3.34 ${\pm}$ 0.61, and the average score for quality satisfaction of sanitation and service characteristics was 3.58 ${\pm}$ 0.61. 'Seasoning' showed the lowest score and 'temperature' showed the highest score for quality satisfaction of meal characteristics. In the quality satisfaction of sanitation and services, 'explanation of meals' showed the lowest score and 'exactness of meal times' showed the highest score. The patients hospitalized for 10 days showed significantly lower average scores than those hospitalized over 60 days for quality satisfaction of meal characteristics. The patients with 'little appetite' and 'regular appetite' showed significantly lower average scores than those with 'much appetite' for the quality satisfaction of meal, sanitation, and service characteristics. The patients who 'rarely had leftovers' showed significantly higher average scores than those who 'always had leftovers' and 'often had leftovers' for quality satisfaction of meal characteristics. Meal characteristic scores were significantly correlated with age (r = 0.216), length of admission (r = 0.310), appetite (r = 0.251), leftovers (r = 0.233), and intake of soup (r = 0.205). Also, sanitation and service characteristics scores were significantly correlated with age (r = 0.327), education (r = -0.202), length of admission (r = 0.168), and appetite (r = 0.155). Thus, it would seem to be desirable that hospital foodservices improve the taste and seasoning of meals and provide appropriate nutrition education and counseling in mid-sized hospitals.

  • A study of concurrent bioassay for protein quality and energy level in protein sources was rnade by determining urinary nitrogenous compounds in excreta. The carry over effect of previous feeding was eliminated by 48 h of feeding the experimental diets prior to the determination of for protein digestibility and utilizability, and energy digestibility and metabolizability at 24 h interval during 3 days. Then, protein qualities and energy levels for soybean meal, rapeseed meal and fish meal were calculated by a substitution method. Apparent protein utilization (NB/NI) was affected by the increased fecal nitrogen excretion in soybean meal and by the increased urinary nitrogen excretion in rapeseed meal and fish meal. The apparent metabolizability of energy (ME/GE) was affected by the fecal energy excretion in soybean meal and rapeseed meal and by urinary energy excretion in fishmeal. The results indicated that the concurrent bioassay of protein quality and energy levels in ingredients appears to be applicable to chickens of other age, sex, breeds and environmental conditions.

  • This study investigates the level of satisfaction with quality attributes of meal services for low-income children in Wonju, Korea. Based on interviews with 287 subjects (users of meal boxes: 17.4%, card users: 82.6%; boys: 48.4%, girls: 51.6%; elementary school students: 44.4%, middle school students: 33.0%, high school students: 22.6%; two parents household: 29.8%, single- or no- parent household: 70.2%) through consent from their guardians, some key characteristics of the subjects and the relationships between their characteristics and the level of their satisfaction with meal services were examined. According to the results, the level of satisfaction ranged from 54.7% to 66.0% (those respondents indicating "very good" and "good") indicated that the meals were generally acceptable. The highest level of satisfaction was for sanitation (66.0%), followed by taste (64.0%), ease of choosing preferred menu items (61.9%), a proper temperature (61.9%), a sufficient amount (60.8%), diversity (56.3%), the comfortableness of the dining area (54.7%), and sufficient nutrition (41.0%). For these eight quality aspects of meal services, users of meal boxes were more likely to be satisfied with the comfortableness of the dining area, whereas card users, with the taste and temperature of the food. The type of meal service, the attitudes toward talking to friends about supporting meals, and subjectively perceived health status had significant effects on the level of satisfaction with meal services.

  • Twenty-four Hereford steers, 22 months old and a mean liveweight (${\pm}\;s.e.$) of $250\;{\pm}\;7\;kg$ were used in an experiment to evaluate over 42 days two rates of copra meal supplementation to cattle on a low N ($8.6\;{\pm}\;0.9$ g N/kg dry matter (DM)), low digestible ($45\;{\pm}\;5.2%$ DM) native pasture hay. Steers given the two rates (500, 1000 g/steer/day; i.e. 500C, 1000C) were compared to steers on a non-supplemental diet and to the effects on steers of supplemental urea (30g/steer/day; 30U) or with copra meal (500 g/steer/day; 500C.U), or of cottonseed meal (500 g/steer/day; 500S). Liveweight change was increased (P<0.01) by all of the supplements except by supplemental urea. The most effective treatment, 1000C, increased significantly (P<0.01) liveweight change (946 g/day) in steers above all supplements except those steers given 500C.U (718 g/day). Hay intake per unit liveweight was increased (P<0.05) by 7% by the 30U and 500C.U treatment, and by 9% by 500C; this group having the highest supplements, being greatest (P<0.05) for the 1000C group (6.0 g feed intake/g gain) and least for the 500S supplemented group (11.5 g/g gain). Efficiency was lowest (18.6 g/g gain) for the non-supplemented steers on the basal hay diet. Copra meal N was less degradable (i.e. 29%) in nylon bags over 15 hours in the rumen than was cottonseed meal N (37%), and rumen ammonia concentrations were lower (P<0.05) in cattle supplemented with copra meal (25, 27 mg N/L) than in cattle given urea (36 mg N/L) or cottonseed meal (39 mg N/L). It is concluded that copra meal at a daily rate of 500 g/head, and with rumen soluble nitrogen from urea, is an effective supplement for improving growth of cattle on a low quality forage.

  • The current exploratory study investigates and compares the perceptions of the service quality of in-flight meals through the evaluation of recent consumers (within 2 weeks) of services provided by Korean and foreign-based airlines. Twenty (20) items for measuring service quality were categorized into three factor dimensions of 'food quality', 'employee service', and 'professionalism'. Among these, 'employee service' was rated highest by Korean and foreign-based airlines. When items representing each service quality dimension were analyzed and compared, only the 'food quality' dimension of Korean-based airlines was perceived higher than that of other foreign-based airlines. Findings also revealed a spectrum with some items with higher or lower mean values within each service quality dimension. Results of this study can expectedly be used to benefit both from a theoretical and practical point of view by providing empirical data that measure the service quality of in-flight meal service.

  • Hydrolysis of plant protein to non-protein nitrogen (N) or ammonia can reduce quality of silage crops. Heating or non-enzymatic browning is a treatment to inhibit this hydrolysis. This experiment was conducted to examine the effects of pre-heated soybean meal and molasses on the fermentation quality of napiergrass silage. The initial growth of napiergrass was harvested at 85 days of age and immediately chopped into about 1 cm length. About 700 g of the grass was ensiled into a laboratory silo (1.0 liter polyethylene container) and incubated for 30 days at room temperature ($28^{\circ}C$). No additives (control), molasses, soybean meal and molasses + soybean meal treatments were prepared. All additives were non-heated or heated in an oven at $150^{\circ}C$ for 30 minutes before ensiling. Molasses was added at 3% on the fresh weight basis and soybean meal was added at 0.5% N, respectively. After opening the silo, pH, total nitrogen (TN), volatile basic nitrogen (VBN), lactic acid (LA), acetic acid (AA), butyric acid (BA) and dry matter (DM) contents were determined. The data were analyzed statistically by analysis of variance. Compared with control, molasses addition significantly decreased pH value, VBN/TN, AA and BA and increased LA production. Soybean meal addition significantly increased TN and VBN/TN of silage. Both molasses and soybean meal addition significantly reduced pH value, AA, and BA and increased DM and LA contents of silage. The heating of additives was only effective to reduce VBN/TN production compared with non-heated additives in soybean meal and soybean meal with molasses addition.
