Fifty-four, mixed-sex, halothane-carrier crossbred (Yorkshire${\times}$Landrace) pigs with an average initial BW of $108.2{\pm}0.8$ kg were randomly allotted to one of three dietary treatments for 5 d before slaughter: i) a control corn-soybean meal finisher diet devoid of supplemental magnesium; ii) a diet supplemented with 1.5 g/kg of elemental Mg from magnesium acetate; and iii) a diet supplemented with 1.5 g/kg of elemental Mg from magnesium sulfate heptahydrate. Serum creatine kinase (CK), lactate and glucose were analyzed at slaughter. Muscles from longissimus (LM) were packaged and stored to simulate display storage for muscle lactate and glycogen determinations at 0, 1, 2, 3, and 4 d. Mg supplementation reduced (p<0.05) serum CK and lactate concentration, but had no effect (p>0.05) on serum glucose. Daily change of muscle lactate concentration linearly increased (p<0.01), while glucose concentration linearly decreased (p<0.05) as storage time increased in all treatments. However, dietary Mg acetate and Mg sulfate supplementation in pigs elevated (p<0.05) muscle glycogen and reduced (p<0.05) muscle lactate concentrations, especially during the first 2 d of display, compared with pigs fed the control diet. This study suggests that short-term feeding of magnesium acetate and magnesium sulfate to heterozygous carriers of the halothane gene has beneficial effects on stress response and pork quality by improving blood and muscle biochemical indexes.
The effect of ammonia treatment and rice bran supplementation on the in situ rumen degradation of rice straw was determined using three Japanese Corriedale wethers fitted with permanent rumen cannula. About 4 g samples of diets containing 100% untreated rice straw (URS); 100% ammonia treated rice straw (ARS); 65% URS+30% rice bran (RB)+5% soybean meal (SBM) (T1); and 85% ARS+15% RB (T2) were incubated at 0, 4, 8, 16, 24, 48, 72, and 96 hours in the rumen of sheep to measure dry matter (DM), crude protein (CP) and neutral detergent fiber (NDF) degradability. The DM disappearance of ARS based diets were about 20% higher than that of URS based diets. Rice bran supplementation improved DM disappearance of URS but not on ammoniated straw. Degradation parameters showed that ammoniation increased rate (c) of straw degradation resulting to higher DM and fiber degradability but RB supplementation did not. ARS gave similar DM and CP solubility and effective rumen degradability (ED) with that of the supplemented groups indicating that ammoniation alone can give the same effect on rumen degradability of sheep receiving low quality roughage. All degradation parameters for NDF were consistently higher in ARS based-diets indicating improved fiber solubility. Rice bran supplementation did not affect degradation characteristics of the diets except on soluble DM and CP fraction (A) of URS but not on ARS.
This study was performed to investigate factors affecting sensitivity and preference for salty tastes of Korean adult females. Sensitivity and preference for salty tastes were determined as detection threshold concentration of NaCl solution and the optimally-preferred NaCl concentration of the bean sprout soup, respectively. A self-administered questionnaire was used to obtain the information regarding general characteristics, self diagnosis of stress, health-related lifestyle practices, dietary habits and food preferences. Dietary intake using 24-hours recall and blood pressure were measured. Salty taste detection thresholds and optimally-preferred NaCl concentrations were 0.0197% and 0.357%, respectively. There was a significant positive correlation between the optimally-preferred salt concentration and age, despite no significant correlation between either sensitivity or preference for salty taste and sodium intake, which was 3,605mg/day. Those who had bread or cereal with milk as breakfast instead of a traditional Korean meal and those who preferred jjigae to soup had significantly higher NaCl preferences for bean sprout soup. Going to bed after midnight and skipping meals (${\geq}3/week$) decreased salty taste sensitivity without reaching statistical significance. Self awareness of one's own health, recent weight changes, family history of hypertension, sleep quality, getting-up time, rate of eating and other food preferences did not affect either perception. Stress level, TV watching, BMI and sodium intake did not have significant correlation to sensitivity or preference. Further research including a large number of well-controlled subjects and more accurate measurement of sodium intake should be directed to find other factors affecting salt preference and sensitivity in order to decrease Na intake and related diseases.

Soybean Kunitz trypsin inhibitor(SKTI) protein is a small, monomeric and non-glycosylated protein containing 181 amino acid residues and is responsible for the inferior nutritional quality of unheated or incompletely heated soybean meal. The objective of this research is to confirm SSR marker(Satt228) tightly linked to the Ti locus using several germplasm accessions with TiTi or titi genotypes for MAS in soybean breeding programs. TiTi genotypes('Jinpumkong2', 'Clark', and 'William') had allele1 and titi genotypes(PI196168, C242, W60, and PI157440) had allele2 in Satt228 marker analysis. 'Jinpumkong2', 'Clark', and 'William'(TiTi genotype) had a Kunitz trypsin inhibitor protein of 21.5 kDa size, and PI196168, C242, W60, and PI157440(titi genotype) did not have the band in protein gel electrophoresis from the mature seed. Cosegregation between the SKTI protein(21.5 kDa size) and allele of Satt228 marker was observed in seven germplasm accessions with different genetic backgrounds. Any recombination between the SKTI protein and allele of the Satt228 marker was not observed. This result indicates that Satt228 marker may effectively utilized to select the plants with the titi genotype.
Two experiments were carried out to evaluate the effects of adding phytase on nutrient availability and serum Ca and P level and to determine the effects of phytase on laying performance and egg quality in laying hens. In Exp. 1, twenty four laying hens(1.9kg average body weight and 78.4% egg production) were allotted to four treatments. Treatments included 1) corn-soybean meal based-control diet and 2), 3) and 4) control diet with phytase 200, 400 and 600 unit/kg, respectively. There were no significant effects of treatments on dry matter and nitrogen digestibility(P〉0.05). Ash, Ca and P digestibility in layer fed diet with phytase were greater than those in layer fed control diet(P〈0.05). Laying hens fed diets with phytase 200 and 400 unit retained more Ca than those fed other treatments (P〈0.05). No statistical difference was found for Ca exsretion(P〉0.05). P retention was greater for laying hens fed diet phytase 600 unit than other treaments(P〈0.05). P level in serum was higher for laying hens fed diets with phytase 400 and 600 unit than for laying hens fed other treatments. In Exp. 2, three hundred, IAS Brown layer, 40-week-old, divided into two treatment groups(control vs phytase supplementation without inorganic phosphate in the diets) with five replications per treatment and 30 layers per replication were fed the diets for 6 weeks. Egg production, egg weight and eggshell breaking strength and thickness were not different significantly(P〉0.05). In conclusion, phytase supplementation can be used to increase P utilization and retention in laying hens. Also, phytase supplementation was effective to spare inorganic phosphate in laying hen diets without any adverse effects on production performances.
Objective : To observe the effectiveness of Jayeumganghwa-tang on hot flush of a breast cancer patient who takes tamoxifen. Methods : For six weeks a dosage witch contained 13.92g of Jayeumganghwa-tang was administered 3 times (30 mins after meal) per day, for improvement of hot flush. No other therapies like hormone therapy or substituted therapy were done. Results : As a result of 6 weeks of Jayeumganghwa-tang therapy, the patient who suffered hot flush on taking tamoxifen showed improvement on several indices, including frequency, intensity and point of hot flush, Beck Depression Inventory-K (BDI-K) which shows uneasiness and sadness, and also Functional Assessment Cancer Therapy - Breast (FACT-B) which is an index of life quality of breast cancer patients. But no changes on female hormones like follicle-stimulating hormone (FSH) or luteinizing hormone (LH) were observed. Conclusion : This case demonstrates 6 weeks of Jayeumganghwa-tang taking had no effect on female hormones but can reduce the hot flush by tamoxifen. This shows minimum evidence of safety and efficacy of Jayeumganghwa-tang on hot flush of breast cancer patient. However this is a single case study so further case-series research should be compiled.
The objects of this experiment was to investigate the effect of dietary several supplemental probiotics on performance and intestinal microflora of Lohmann brown laying hens from 68 to 80 weeks. Basal diets based on corn and soybean meal contained 18.0% CP and 2,720㎉/kg ME. Bacillus subtilis, Lactobacillus salvarius isolated from piglet(LSP) were fed at the level of 0.1 and 0.2% in a one way design. There were four replicates of 40 hens each per treatment. Egg production, feed intake, feed conversion ratio(FCR), eggshell quality were measured at every four weeks and intestinal microflora were examined at the end of experiment. Egg production of bird fed 0.2% individual probiotics was significantly higher than that of control(P 0.05). Birds fed the diet containing 0.2% LSC and LSP had significantly lower FCR than other treatments(P 0.05). However, egg weight of birds fed control and 0.2% BS diet showed higher than other treatments. Feed intake of 0.2% BS and 0.1% LSP treatment was significantly higher than other treatments, but was not consistency of all treatments(P 0.05). Eggshell breaking strength and thickness of hens fed probiotics tended to increase compared to that of control, but was not significantly different. Intestinal anaerobes, Lactobacillus spp. and yeast of hens fed all tested probiotics were significantly increased compared to those of control. The number of intestinal E. coli of all probiotics treatments except 0.1% LSP tended to decrease. Intestinal Lactobacillus spp. was increased significantly by 0.1% dietary LSC, whereas intestinal yeast showed significant increase in LSP treatments(P〈0.05). The results of this experiment indicated that feeding probiotics to laying hens improved the egg production, FCR and increased beneficial microflora.
Objectives: This study was conducted to examine the satisfaction of school cafeterias among the surveyed group at two middle schools located in Seoul. Methods: 574 out of 600 middle school students in Seoul (95.7%) completed the study. Results: Satisfaction rate of school meals was significantly higher among girls (73.2%) compared to boys (45.1%). The reasons for satisfaction factors of school meals were with the taste of school meals (55.1%), menu (19.3%), nutrition (14.2%), and food hygiene safety (7.0%). Students who had a double-income family, well-educated mother and higher happiness in their life reported a higher satisfaction with school meals. Both boys and girls who consumed milk frequently showed significantly higher satisfaction with school meals. Factors that were related to satisfaction of school meals were food temperature, the amount of food (especially among boys). Variety in the menu and food distribution speed were less related to the satisfaction of meals. In the case of girls, waiting time, food distribution speed were more important to them while the kindness of school staff was a less important factor. Improvements that were needed to increase the satisfaction for the school lunch meals, from the most important to least important were as follows: variety of meals (36.6%), food distribution speed waiting time (24.6%), taste of food (15.7%), amount of food (7.7%), hygienic management (5.1%), food quality (4.7%), kindness (3.0%), temperature of the food (2.8%). Students preferred to broadcast on campus and cooking practice for the dietary education. Conclusions: To improve school meal satisfaction, it is necessary for food distribution facilities to make improvements with regard to variety of meals and reduced waiting time.
Objectives : To obtain necessary fundamental data for the development of oral health improvement programs for senior citizens in the manner of investigating the Status of their oral health. Methods : Data were collected from 346 senior citizens aged 65 years or older who had lived in Seoul and Gyeonggido province, Republic of Korea. This study was conducted for 3 months from April 2011 to June 2011. Excluding those obtained from 34 respondents who gave inadequate responses to given questions, the data from 312 respondents were analyzed. Results : 1. The number of senior citizens who chose 'Sometimes' to as an answer to the question about the self-perception of their own oral conditions such as mastication, swallowing, gingiva hemorrhage, dry mouth, and/or oral malodor was the largest. As an answer to the question about the presence of interpersonal avoidance, 'No' accounted for the largest proportion. The number of respondents choosing gingiva treatment regarding the perception of the necessity for medical interventions was the largest. 2. In regard to the knowledge of oral health care, the percentage of correct answers was the highest for 'I brush my tooth before each meal' ($0.69{\pm}0.156$), while the lowest percentage of correct answers was seen for 'Gingival diseases can be improved by medications' ($0.33{\pm}0.472$). Conclusions : Based upon the above mentioned results, the author conclude that developing relevant national programs and support policies at a national level as well as implementing proactive and systematic home-visiting oral health programs at the levels of local autonomous entities or communities will lead to significant improvements in senior citizens' oral health and QoL (quality of life).

Purpose: The research presented in this paper applied the chemometric analysis to the near-infrared spectral data from line-scanned hyperspectral images of beef and fish meals in animal feeds. The chemometric statistical models were developed to distinguish beef meals from fish ones. Methods: The meal samples of 40 fish meals and 15 beef meals were line-scanned to obtain hyperspectral images. The spectral data were retrieved from each of 3600 pixels in the Region of Interest (ROI) of every sample image. The wavebands spanning 969 nm to 1551 nm (across 176 spectral bands) were selected for chemometric analysis. The partial least squares regression (PLSR) and the principal component analysis (PCA) methods of the chemometric analysis were applied to the model development. The purpose of the models was to correctly classify as many beef pixels as possible while misclassified fish pixels in an acceptable amount. Results: The results showed that the success classification rates were 97.9% for beef samples and 99.4% for fish samples by the PLSR model, and 85.1% for beef samples and 88.2% for fish samples by the PCA model. Conclusion: The chemometric analysis-based PLSR and PCA models for the hyperspectral image analysis could differentiate beef meals from fish ones in animal feeds.
