중년기 여성의 영양교육이 식습관, 식행동, 영양지식 및 영양섭취에 미치는 영향 (The Effect of Nutrition Education on Food Habits, Dietary Behaviors, Nutritional Knowledges and Nutrient Intakes of Middle-aged Women)

  • This study investigated the effect of nutrition education on food habits, dietary behaviors, nutritional knowledges and nutrient intakes of middle-aged women. The subjects were 209 females aged $30{\sim}64yrs$. The subjects helped by trainers filled the questionnaire about demographic information, food habits, dietary behavior, nutritional knowledge and dietary intake before and after three months of nutrition education. All data were analyzed by chi-square test and paired t-test using the SAS program. The subjects who didn't drink alcohol significantly increased after the education(p<0.001). The largest meal of the day was lunch and the amount consumed was significantly different before and after the nutrition education(p<0.05). Dietary attitude scores significantly increased after the nutrition education(p<0.001). The percentages of subjects who didn't have processed foods, sweets and salty foods frequently significantly increased after the education(p<0.05). The subjects who answered correctly significantly increased in ten out of fifteen nutrition knowledge items related to obesity and in four out of five nutrition knowledge items related to nutrients after the education. There were significant differences in protein(p<0.01), calcium(p<0.05) and cholesterol intakes(p<0.01) before and after the nutrition education. This study suggests that nutrition education can improve dietary attitudes and nutritional knowledge.

여성노인의 건강상태와 건강관련서비스 요구 (A Study on the Health Status and the Needs of Health-related Services of Female Elderly in an Urban-rural Combined City)

  • The purpose of this study was to investigate health status and health promoting behaviors of female elderly, and their needs for health-related services in an urban-rural combined city. The data were collected from the subjects registered in senior welfare center and senior citizens' clubs. A total of 119 women were participated in the survey. The results of the study are as follows; 1. The subjects perceived their health status relatively unhealthy. Their health promotion behavior score was 10.82 (range 0-17), and more than $60\%$ of them performed well in smoking and drinking control, regular meal. taking breakfast, and maintaining good relationship with others. 2. The most needed service was health screening followed by health risk assessment, disease diagnosis and treatment. 3. The most demanded education was on dementia prevention, followed by exercise, balanced diet, and maintenance of memorial and mental capability. 4. As the health interest and the health responsibility increased, the need for health service increased as well. Likewise, the health education needs increased as the health interest, health responsibility, and health promotion behavior increased. The results show that the health promotion programs for female elderly need to be focused, primarily, on health screening, health risk assessment, medical services for disease diagnosis and treatment, and health consulting and education. And health consulting and education programs should be designed to promote health interest and health responsibility of female elderly, change positively their attitude to aging, and include education on dementia prevention, exercise and nutrition management. Recommendations are discussed.

중국인 여성결혼이민자의 한국 이주 후 식생활 : 한족과 조선족 비교를 중심으로 (Chinese Female Marriage Immigrants' Dietary Life after Immigration to Korea : Comparison between Han-Chinese and Korean-Chinese)

  • Objectives: This study was conducted to investigate Chinese female marriage immigrants' dietary life after immigration to Korea, focusing on comparison between Han-Chinese (traditional Chinese) and Korean-Chinese (Chinese of Korean descent). Methods: An in-person survey was conducted with women married to Korean men, having one child or more aged 1-6 years old, and having resided in Korea for at least one year before the survey. The data were collected from the 309 respondents comprising 151 Han-Chinese and 158 Korean-Chinese in the summer of 2013. Results: Overall, there was no significant difference in dietary practice, dietary acculturation, dietary behavior, dietary habits, and food intake between the Han-Chinese and the Korean-Chinese respondents. Over 50% of the respondents ate Korean food every day. The overall level of dietary acculturation was about 3.5 out of 5 points. The average score of healthy dietary behavior was a little bit higher than 3 out of 5 points. Approximately 3/4 of the respondents showed increasing frequency of eating out. The respondents reporting increase food diversity were over 70%. Decreased frequency of skipping meal was about 60% of the respondents. Over 50% of the respondents showed increasing consumption of Kimchi, vegetables, fruit, and meat. Conclusions: Dietary life of Korean-Chinese female marriage immigrants was similar to that of Han-Chinese female marriage immigrants after immigration to Korea. The results from this study suggest that not only Han-Chinese but also Korean-Chinese should be targeted in various diet-related acculturation support programs as important multicultural populations in Korea.

남자 고등학생 흡연자의 영양상태 판정 및 흡연관련 요인분석 -II. 흡연과 관련된 사회심리적 요인에 대한 연구- (Assessment of Nutritional Status and Factors Related to Smoking in Adolescent Males -II. Psychosocial Factors Influencing Smoking among Male High School Students-)

  • The study purpose was to investigate psychosocial factors related to smoking among adolescent boys. The Theory of Planned Behavior provide the basis for the study. Twenty-five attitudinal beliefs, 9 normative beliefs and 20control beliefs were identified through questionnaire development. The data were analyzed using t-test and χ2-test. Thirty-three percent of 300 students were smokers. Most of the beliefs examined were significantly different between smokers(n=92) and nonsmokers(n=92). With respect to attitudinal beliefs, smokers responded less negatively on the items of bad health effects of smoking such as sore throat, headache, chest pain, risk of cancer and bad blood circulation(p<0.001), and decreased physical strength(p<0.05). Smokers believed less negatively on the items that smoking leads to bothering others, bad breath, yellow teeth and making them spend money(p<0.001). In contrast, smokers felt more positively on smoking as a means of stress management, relaxing, helping digestion(P<0.001). Smokers felt less pressure for not smoking from significant others. Especially mother, siblings, friends, girl friends, seniors of school were important sources of influence regarding subject's smoking. Smokers felt less confident in controlling the urge to smoke in several situations including; when they were with friends or asked to smoke by friends; after the meal, or drinking; when they were bored or stressed, upset, and when they felt unstable(p<0.001). Smokers also scored lower on specific skills to quit or control the urge to smoke as well as overall perceived control, compared to nonsmokers(p<0.001). These results suggest that interventions for adolescents incorporate diverse strategies to increase the perceived control over smoking in specific situations as well as overall perceived control, to help them realize and modify attitudinal beliefs, and to elicit support from significant others for not smoking. Effects of a mobile healthcare service provided by public health centers on practicing of health behaviors and health risk factors

  • BACKGROUND/OBJECTIVES: This study evaluated whether a mobile health (mHealth) application can instigate healthy behavioral changes and improvements in metabolic disorders in individuals with metabolic abnormalities. SUBJECTS/METHODS: Participants were divided into an mHealth intervention group (IG), which used a mobile app for 24 weeks, and a conventional IG. All mobile apps featured activity monitors, with blood pressure and glucose monitors, and body-composition measuring devices. The two groups were compared after 24 weeks in terms of health-behavior practice rate and changes in the proportion of people with health risks, and health behaviors performed by the IG that contributed to reductions in more than one health risk factor were analyzed using multiple logistic regression. RESULTS: Preference for low-sodium diet, reading nutritional facts, having breakfast, and performing moderate physical activity significantly increased in the mHealth IG. Furthermore, the mHealth IG showed a significant increase of eight items in the mini-dietary assessment; particularly, the items "I eat at least two types of vegetables of various colors at every meal" and "I consume dairies, such as milk, yogurt, and cheese, every day." The proportion of people with health risks, with the exception of fasting glucose, significantly decreased in the mHealth IG, while only the proportion of people with at-risk triglycerides and waist circumference of females significantly decreased in the control group. Finally, compared to those who did not show improvements of health risks, those who showed improvements of health risks in the mHealth IG had an odds ratio of 1.61 for moderate to vigorous physical activity, 1.65 for "I do not add more salt or soy sauce in my food," and 1.77 for "I remove fat in my meat before eating." CONCLUSIONS: The findings suggest that the additional use of a community-based mHealth service through a mobile application is effective for improving health behaviors and lowering metabolic risks in Koreans.

어린이 식생활스크리닝(DST)을 이용한 부산지역 초등학생의 식행동 및 영양상태 평가 (Dietary Behavior of Students in the Busan Area as Determined Using the Nutritional and Dietary Diagnostic System)

  • In this study, the authors surveyed the dietary habits of all elementary school students registered with the Busan Metropolitan City Office of Education using an online questionnaire called the Dietary Screening Test (DST). The DST consists of 36 items, and these were divided into 5 factors: life rhythm, meal quality, eating development, eating temperament characteristics, and eating habit characteristics. Data were collected from 153,017 students attending 304 schools in Busan, and the responses of 4,020 were included in the analysis. The study was undertaken to document growth and development and diagnose nutrition and dietary problems to provide basic data for the development of customized nutrition education and counseling programs. Results showed that 13.5% and 14.3% of participants were classified as overweight or required weight management for obesity, respectively; 6.7% were underweight. Additionally, 37.0% and 9.5% of children required parental attention at bedtime and sleeping hours, and 14.2% ate too quickly or too slowly. Furthermore, food group consumptions were unbalanced, 25.0% and 64.4% of participants ate grains and protein less than twice a day, respectively, and 72.3% and 74.5% ate kimchi and vegetables less than twice a day, respectively. In contrast, 28.8% of respondents consumed sweet snacks daily or 5~6 times weekly. These findings highlight the need for a standardized school nutrition counseling manual and individually customized nutrition counseling programs to address the nutrition and dietary problems of elementary school students in Busan.

재한 중국 유학 여대생들의 식습관 변화에 따른 영양 섭취 실태 (Dietary behavior and nutritional status among Chinese female college students residing in Korea)

  • 본 연구는 현재 한국의 대학에 재학 중인 중국인 여대생 114명을 대상으로 중국인 유학생들의 영양소 섭취상태를 조사하고, 중국과 한국에서의 식습관 변화 및 식습관 변화에 따른 영양소 섭취상태를 평가하고자 수행되었으며, 그 결과를 요약하면 다음과 같다. 1) 중국인 유학생의 평균 에너지 섭취량은 $1,586.9{\pm}474.2$ kcal였고, 탄수화물, 단백질, 지방의 구성비는 56 : 14 : 30으로 나타났으며, 전체 대상자의 23.7%가 단백질의 평균필요량에 미치지 못하고 있었고 43%가 권장섭취량에 미만으로 섭취하고 있었다. 엽산의 평균필요량 미만으로 섭취하는 비율은 대상자의 93%였고, 대상자의 60~70%가 칼슘, 아연, 비타민 A, 비타민 $B_2$, 비타민 C을 평균필요량 미만으로 섭취하는 것으로 나타났다. 2) 중국 유학생의 총 식습관 점수는 $64.3{\pm}9.9$점으로 유학전 $75.9{\pm}9.9$점에 비해 유의적으로 낮아졌으며 (p < 0.001), 특히 식사의 규칙성과 균형성, 아침식사 여부 및 단백질 식품, 녹황색 채소와 과일 등의 섭취빈도가 좋지 않은 방향으로 변화되었고, 가공식품의 섭취와 외식의 빈도는 더 많아진 것으로 조사되었다. 3) 한국 유학 전 후의 식습관 혹은 식행동 변화 여부에 따른 영양소 섭취 수준을 비교한 결과, 한국에 온 이후 아침 결식률이 높아진 사람들은 단백질, 지방, 칼슘, 비타민 $B_2$ 및 니아신의 섭취량이 낮았고, 또 중국에서 보다 녹황색 채소를 더 적게 먹게 된 경우는 식이섬유소와 비타민 C를, 우유 및 유제품의 경우는 단백질과 칼슘비타민 $B_2$와 비타민 $B_6$를 비롯하여 비타민 E와 엽산을 적게 섭취하는 것으로 나타났다. 본 연구 결과, 성인기 식생활과 건강을 결정하는 20대 초반 재한 중국인 여대생들의 경우 바람직하지 않은 식습관과 이로 인한 영양 섭취 상태의 불균형을 나타내는 것으로 조사되었다. 이상의 결과는 고국을 떠나 낯선 문화에 적응하여야 하는 중국인 유학생들에 대한 영양교육 프로그램의 개발과 식생활 관리가 필요하다고 하겠다. 또 올바른 식생활의 정립은 심리적, 정서적 건강상태에도 영향을 미칠 수 있으며, 대학생활의 적응과 성공적인 유학생활에도 도움이 될 것으로 생각된다.

보육시설 급식소의 공동조리 요구도 조사 (Need Assessment for Central Food Production in Child Care Center Foodservices)

  • Nutrition during childhood is essential for growth and maintenance of health. Good food habits developed during the childhood will contribute both to the healthy growth and the prevention of the degenerative disease of later life. Both parents and the providers in child care centers play an important role for children's good eating behavior. Therefore all child care programs should achieve recommended standards for meeting children's nutritional and educational needs in a safe, sanitary, and supportive environment to promote the healthy growth and development of children. The purposes of this study were to evaluate the foodservice management practices and assess the needs for a Central Production Unit by contacting the child care center' providers. This approach was achieved using a variety of qualitative and quantitative information including the general foodservice management practices and the needs for a Central Production Unit. An indepth face-to-face interview with structured-questionnaires was undertaken at 32 representative child-care centers in Seoul. Statistical data analysis was done using the SAS program for descriptive analysis and ANOVA. The number of national/public and private sectors were 11 respectively, followed by 10 licensed home day-care centers. Total average number of children in child-care centers was 54.3 $\pm$48.5. The foodservice productivity index in child-care centers was 4.8 minutes per meal for public child care centers, 6.0 for private child-care centers, and 9.8 for home child care centers. Home child care centers were found to have the lowest productivity index which indicated inefficient foodservice practice. The important factors in group purchasing were menus(39.6%) or close distance(39.6%) > type of foodservice operation(32.8%) > total number of meals(19.9%) > food costs(16.2%) in order. Average score of the efficiency for central food production in child-care centers was 3.80 $\pm$0.84 out of 5.

경기지역 노인의 건강과 식생활관리 II - 75세 미만의 젊은 노인과 75세 이상 고령 노인 비교 - (The Elderly Health and Dietary Management in Gyeonggi Province II - Comparison with Younger Old and Older Old -)

  • The purpose of this study is to provide the information of the aged olds for which basic data are almost no available. The subjects were divided on the base of age 75. The elderly under 75 were named 'the young olds' and over 75 were 'the aged olds'. The aim of this research is to promote health and to improve nutrition, and the survey was made for health promotion behaviors, habits against health risk, dietary management status and diet intake. And it was conducted by 24 hr-recall method and analyzed by nutrients intake. 242 subjects were collected in 12 cities or counties in Gyeonggi Province and 20 elderly people (10 male and 10 female) were selected out of 1 village in each district. Questionnaire about health behavior and dietary management was carried out by interview method through regional home extension workers. Statistical analyses were made by SAS (version 8.1) and Chi-square tests and General Linear Models were used. Out of the subjects the aged olds over 75 was 31.9%, elementary school educated (93.5%), with spouse (40.3%), with adult children(28.6%), monthly living cost of 500-1,000 thousand won(40.3%). Mean age was 78.82 years compared with 69.75 years of the young olds. 46.8% of the aged olds used monthly pocket money over 1000 won and it was lower than 63.3% of the young olds. Only half of the aged olds had regular exercise of walking (77.8%) or with athletic equipment (17.8%). However, the young olds did more frequent walking (82.1 %) and less exercise with athletic equipment (4.8 %), which was significantly different. Kinds of disease were different with the young or the aged olds, as more proportion of cardiovascular disease(37.9%) for the young olds and joint lumbago neuralgia(41.6%) for the aged olds. Dietary management was good (3 meals per day: 93.4%, fixed mealtime: 72.4%, and regular amount: 79.9%). But there was significant difference in side dish varieties and kinds of snacks; for the aged olds only 8% had over 5 sorts (compared with 18.8% of the young olds) and the kinds of snacks were cookie, candy, juice, carbonated beverage for the aged olds (compared with noodle, milk, soybean-milk for young olds). The ratio of nutrients intake (energy, riboflavin and niacin) with RDA was significantly higher for the aged olds than that of the young olds. The surveyed subjects had no difficulties in Activities of Daily Living (ADL), but some of the aged olds had difficulties in Instrumental Activities of Daily Living (IADL) like housekeeping, using transportation, going shopping and making phone calls. These results suggest that low quality of life is linked with low economic status of the rural elderly and congregate meal at village hall would be required because of the lack of side dishes variety for the aged olds. And nutrition education program about good snacks and exercise practice would be needed for the aged olds. By operating nutrition education program the aged olds would enjoy better quality life maintaining or ameliorating IADL abilities.

경기지역 노인의 건강과 식생활관리 I - 노인의 성별 비교 - (The Elderly Health and Dietary Management in Gyeonggi Province - Comparison with Gender Difference -)

  • The purpose of this study is to search how to promote health and improve nutrition and health care of the elderly people in rural area. Behaviors for health promotion and habits against health risk were surveyed. Dietary management was analyzed for surveyed nutrient intake by 24 hr -recall method. 242 subjects were collected in 12 cities or counties in Gyeonggi Province and 20 elderly people (10 male and 10 female) were selected out of 1 village in each district. Questionnaire for health behavior and dietary management was carried out by trained interviewers. Statistical analyses were made by SAS (version 8.1) and Chi-square tests and General Linear Models were used. Characteristics of the elderly people were 61-74 year-olds (68.2%), elementary school educated (78.4%), with spouse (51.7%), monthly living cost of 500-1,000 thousand won(43.4%), and monthly pocket money of 50-100 or 100-200 thousand won(33.5%, 26.5%). 41.4% of the subjects checked up medical examination regularly. The alcohol drinking status was significantly different according to gender: high no-drink rate of female (52.5%) and low no-drink rate of male (25.6%). Kinds of disease were different according to gender: higher proportion of cardiovascular disease(46.3%) and diabetes mellitus(8.1 %) in male and joint lumbago neuralgia(44.4%) and osteoporosis(8.6%) in female. Gastrointestinal complaints were nausea (69.0%) and chronic indigestion (17.8%). Constipation (12.0%) and vomiting (4.3%) were more frequent in female. Dietary management was good (3 meals per day: 93.4%., dining with family: 72.4%, regular mealtime: 72.4%, and 3-4 times of snacks per week: 44.9%) except side dish taking of 3-4 kinds only. However, almost one-third of the female elderly ate alone (30.6%) which was well compared with one-fifth of the male (19.7%). And food and nutrients intake were not significantly different according to gender except that male elderly's intake of energy and protein was lower than that of female's. The surveyed subjects had no difficulties in Activities of Daily Living (ADL), but some female elderly had some difficulties with Instrumental Activities of Daily Living (IADL) like working at home, using transport, and going shopping. These results suggest that low quality of life linked with low economic status of the rural elderly and that congregate meal at village hall would be required for the female elderly eating alone. For the undernourished male elderly, it would be needed to provide snacks and to establish nutrition and health surveillance system.
