Food Component Characteristics of Tuna Livers

  • Livers of skipjack tuna (Katsuwonus pelamis) and yellowfin tuna (Thunnus albacares) were investigated on the food compositional characteristics and also compared to that of Alaska pollack (Theragra chalcogramma). The proximate compositions of skipjack tuna and yellowfin tuna livers were high in crude protein, carbohydrate, and crude ash, while were low in crude lipid when compared to that of Alaska pollack liver. The results of heavy metal suggested that tuna livers appeared safe as a food resource. The total amino acid contents of skipjack tuna and yellowfin tuna livers were 17.7 and 17.1 g/100 g, respectively, and the major amino acids in both livers were aspartic acid, glutamic acid, alanine, valine, leucine, and lysine. Tuna livers were good sources of iron and zinc, while have low lipid content. The extractive nitrogen contents of skipjack tuna and yellowfin tuna livers were 526.5 and 468.2 mg/100 g, respectively, and their major free amino acids were taurine, glutamic acid, and alanine. From the results of taste value, the major taste active compounds among free amino acids were glutamic acid and aspartic acid.

  • 본 연구는 해양레저시설의 기반을 조사하고 디자인개발과 동남권역의 특성화를 위한 해양레저제품 카테고리를 체계적으로 분석하여 해양산업 발전에 미래상을 연구하였다. 국민소득이 2만 불 시대엔 마이카시대라 하고 3만 불이면 마이보트시대라 한다. 영국에 본부를 둔 마린 사우스이스트(Marine SouthEast)의 보고에 의하면 2010년 세계 소형보트와 개인용 수상장비의 규모가 277조원에 이르고 국내시장 규모도 11조원을 예상하고 있다. 해양레저시설은 국가의 전략, 핵심 산업으로 육성해야하는 신 성장 동력산업이며, 정부는 해양레저장비산업 활성화 방안(2009년 6월, 지식경제부), 해양레저 활성화방안(2010년7월, 국토해양부), 제1차 마리나 항만 기본계획(2010년1월, 국토해양부) 등을 발표하여 해양산업육성에 적극 추진하고 있다. 해양디자인은 바다를 중심으로 이루어지는 모든 해양활동에 디자인요소를 기능적, 예술적, 산업적, 문화적 발전을 통해 국가적 위치와 인간 삶의 질적 가치를 추구하는데 있다. 또한 해양과 연안에서 이루어지는 모든 활동과 연관된 것으로 물을 중심으로 한 특수한 조건을 포함하고 있는 디자인 영역이다. 3면이 바다인 조건이 국민의 질적 수준의 발전으로 국가 전략 방향이 산업과 문화융합과 지역의 특성화와 유망산업으로서 2010년대에 선진화된 해양강국으로서의 위상을 높이는데 현재 우리의 가치기반이 되는 해양레저시설의 실태조사를 중심으로 지역별 현황 보유장비, 시설유형, 운영현황과 해양레저시설 이용객의의 부문별 이용현황, 해양레저 제품의 향후 전망 등을 체계적으로 분석하였다. 특히 동남권 해양레저 제품별 실태조사를 통하여 유망한 해양레저제품 개발 시 디자인역할과 프로세스를 제시하여 시장성과 경쟁력 강화를 위한 전략기반을 예측하게 될 것이다.

Antioxidant and Anti-inflammatory Activity of Six Halophytes in Korea

  • The aim of this study was to measure and compare polyphenol content, antioxidant, and anti-inflammatory activity of six halophytes (Limonium tetragonum, Suaeda glauca, Suaeda japonica, Salicornia europaea, Triglochin maritimum, and Sonchus brachyotus). Depending on the total polyphenol content, the plants were categorized into two groups: (1) a high total polyphenol content group that included L. tetragonum, S. brachyotus, and S. europaea, and, (2) a low total polyphenol content group consisting of S. glauca, T. maritima, and S. japonica. Antioxidant activity was evaluated using DPPH and hydroxyl radical scavenging assays, and by measuring ROS. Anti-inflammatory activity was evaluated by measuring NO and $PGE_2$. L. tetragonum and S. brachyotus, that have high polyphenol content, also showed strong antioxidant activity. In addition, L. tetragonum, S. brachyotus, and S. europaea showed good anti-inflammatory activity. Consequently, the total polyphenol content was thought to be related to antioxidant and anti-inflammatory activity. Therefore, S. brachyotus and L. tetragonum are good candidates for use in pharmaceuticals and functional foods.

해조류 유래 호흡기 질환 천식 치료제 연구 동향 (A Review of Marine Algae-derived Therapeutic Agents for Respiratory Disease Asthma)

  • Asthma is a complex inflammatory disease of the lung characterized by variable airflow obstruction, airway hyperresponsiveness, airway inflammation, and reduction of respiratory function. Its prevalence and incidence are increasing because of the effect of various environmental and lifestyle risk factors. Steroid inhalation, long-acting agonists, and other synthetic drugs are used for the treatment of this disease. However, they have some side effects and show unsatisfied result and response after treatment. Therefore, many researchers have focused on the development of natural product-related treatment for asthma to suppress the side effects and unsatisfied results. Seaweeds contain various bioactive compounds with anti-inflammatory, antibacterial, and anti-oxidant activities. Thus, we investigated the asthma treatment-related literature using marine algae via the Google scholar search engine. Consequently, the literature is rarely investigated, but is increasing steadily. The literature was performed as a comparison study with an ovalbumin-induced group or drug-treated group, and investigated the antiasthma activity of algae ethanol extract. Although many researchers have studied marine algae-derived therapeutic agents for asthma, the amount of literature is rare compared with those of herbal medicine-derived therapeutic agents. Conclusively, we suggest that many researchers should investigate and develop algae-derived therapeutic agents for asthma treatment.

Reaction Flavoring에 의한 진주조개 (Pinctada fucata) 추출물의 풍미개선 (Enhancing the Flavor of Pearl Oyster (Pinctada fucata) Extract Using Reaction Flavoring)

  • The optimal substrates and reaction flavoring conditions were examined to develop pearl oyster extract (POE) flavor using the Maillard reaction under a model system. The sugar for the Maillard reaction was glucose, and the amino acid was cysteine, with glycine as the reaction substrate. A three-dimensional response surface method was used to monitor the dynamic changes of the substrates during the Maillard reaction. To enhance the flavor of POE, a two-step enzymatic hydrolysate (Brix $20^{\circ}$) was reacted with the precursors (1:1, v/v). A 2:1:1 mixture of 0.4 M glucose:0.4 M glycine:0.4 M cysteine (v/v) was selected as a suitable reaction system for the reappearance of baked potato odor and boiled meat odor, and masking the shellfish odor. The two-step enzymatic hydrolysate and selected precursors were reacted in a high-pressure reactor to optimize the reaction parameters. The optimum conditions were 150 minutes at $120\;^{\circ}C$ and pH 7.0. The pH was the most critical factor for the response of the baked potato odor and masking the shellfish odor, while the reaction time affected the reappearance of the boiled meat odor.

Characterization of Acid- and Pepsin-soluble Collagens from Rockfish Sebastes schlegeli Skin

  • Biochemical and functional properties of acid-soluble collagen (ASC) and pepsin-soluble collagen (PSC) from rockfish skin were characterized. Yield of PSC (90.0%) was higher than that of ASC (63.2%). Both ASC and the PSC consisted of ${\alpha}1$ and ${\alpha}2$ chains, and $\alpha$-cross-linked components. According to the results of hydroxylation of proline and lysine, and FT-IR, no difference between the helical structure of ASC and PSC was identified. Thermal denaturation temperature (TDT) of ASC from rockfish skin was $22.8^{\circ}C$, the same as exhibited in PSC. Both ASC and PSC were higher in water absorption capacity (WAC) and oil absorption capacity (OAC) than other vegetable proteins. According to the results of emulsifying activity (EA) and cooking stability (CS), both ASC and PSC from rockfish skin were inferior compared to the commercial emulsifier (Tween-80). The results of FT-IR suggested that the structure of PSC was slightly different when compared to that of ASC. No differences in solubility were established between ASC and PSC from rockfish skin at various pH and NaCl concentrations.

초고추장첨가 과메기통조림의 제조 및 특성 (Processing and Characteristics of Canned Kwamaegi Cololabis saira using Red Pepper Paste with Vinegar)

  • Kwamaegi is a traditional Korean seafood made from the flesh of Pacific saury Cololabis saira. It is recognized as a valuable, healthy food containing the ${\omega}$-3 fatty acids EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). This study was conducted in order to obtain basic data for application to the canning process of Kwamaegi using red pepper paste with vinegar. Commercial Kwamaegi was cut into $2{\times}3cm$ lengths and 90 g was put into cans (301-3). Then, 60 g of water was added and precooked for 10 minutes at $100^{\circ}C$. The water was drained after precooking. The precooked Kwamaegi was packed into cans, and 60 g of red pepper paste with vinegar was added. The cans were seamed using a vacuum seamer, then sterilized for differing times (8-12 minutes) in a steam system retort at $121^{\circ}C$. Parameters such as: pH, TVB-N, amino-N, total amino acid content, free amino acid content, color value (L, a, b), texture profile, TBA value, mineral content, sensory evaluation and viable bacterial count of the product produced under varying sterilization times (8-12 minutes) were measured. There were no remarkable differences between sterilization conditions and textural characteristics. The results showed that product sterilized for 8 minutes proved to be the most desirable.

  • This study investigated the cosmetic effects of enzymatic hydrolytes of an aquatic by-product, fish skin. The skins of olive flounder Paralichthys olivaceus (PO) and Alaska pollock Gadus chalcogrammus (AP) were hydrolyzed using pepsin, Alcalase, and Protemax. Three enzymatic hydrolytes were obtained and the inhibitory effects of these hydrolytes on the aging-related enzymes tyrosinase, elastase, and collagenase were determined. The results indicated that the pepsin hydrolytes of PO and PA had stronger activities than the other hydrolytes. PO and PA also significantly reduced the intracellular reactive oxygen species levels in and improved the viability of H2O2-treated Vero cells; decreased nitric oxide production by and increased the cell viability of lipopolysaccharide-treated RAW 264.7 cells; and reduced intracellular reactive oxygen species levels and improved the viability of ultraviolet B irradiated HaCaT cells and human dermal fibroblasts. Furthermore, PO and PA remarkably reduced the intra- and extracellular melanin contents of alpha-melanocyte-stimulating hormone-stimulated B16F10 cells. These results demonstrate that PO and PA have potential for use in the cosmetic industry.

  • This study examined the effects of dietary supplementation with citrus by-product (CBP) on the growth, feed utilization, innate immunity, and histology of the gills and intestine of juvenile olive flounder Paralichthys olivaceus during low water temperature season. A vitamin C-free basal diet was regarded as a control and five other diets were formulated that contained 30 and 300 mg of L-ascorbyl-2-polyphosphate (LAPP) or CBP as vitamin C equivalents/kg diet, or the antibiotic oxytetracycline (OTC) (designated as control, LAPP30, LAPP300, CBP30, CBP300, and OTC, respectively). Olive flounder (initial body weight $44.6{\pm}0.32g$) were fed the six experimental diets to apparent satiation for 9 weeks. Growth and feed utilization were significantly higher in CBP30 than in the control and LAPP groups. The lysozyme activity was significantly higher in CBP30 than in LAPP300. Enterocyte height was significantly higher in CBP30 than in the control. The number of goblet cells was increased significantly with LAPP30, LAPP300, and CBP30. These results demonstrate that CBP can reduce or replace vitamin C and antibiotic in the diet of olive flounder during the low-water-temperature season. The optimal CBP supplementation level seems to be approximately 1%, which is equivalent to 30 ppm vitamin C/kg in the fish diet.

  • 본 연구는 농협 농산물 물류센터의 상적, 물적 유통체계를 파악하고, 물류의 효율성과 집약화를 위해 설립된 청주 물류센터의 계절별 농$.$$.$수산물의 입하지를 고찰하고자 한다. 그리고 각 상품의 판매액에 의한 배송의 지역유형과 지역특성과의 관계를 밝히는 것을 연구목적으로 한다. 그 결과 청주 물류센터는 충북을 핵심지역으로 전국에서 농$.$$.$수산물을 입하하여 충북과 충남, 대전시 일부 지역에 배송을 집중화시키고 있다. 이는 청주 물류센터가 취급하고 있는 농$.$$.$수산물이 신선도를 요하는 상품이기 때문에 물류센터에서 상대적으로 가까운 지역에서 주로 입하하여 근거리 배송을 하는 지역 물류시스템을 형성하고 있다는 것이다. 이러한 농$.$$.$수산물의 배송은 수급관계라는 경제원칙뿐만 아니라 물류센터의 판매전략도 크게 작용하고 있다.
