Quality Characteristics and Manufacture of Mulberry Wine (오디 와인 제조 및 품질특성)

  • To poodnce a value added of mulberry, this study was optimized the condition for manufacture of wine using mulberry. On fermentation of mulberry wine, the best yeasts were Saccharomyces cerevisiae JBS 30 and JBS 33, and optimum composition of medium was crushed mulberry juice of $50\%$, sugar of $24\;^{\circ}brix,\;Na_2S_2O_5\;of\;0.02\%$. The content of alcohol after fermentation of 10 days at $25^{\circ}C$ was $11.2\%$. Sensory evaluation showed that color, taste and odor of mulberry wine were acceptable, and Saccharomyces cerevisiae JBS 30 was not difference compared to JBS 33.

  • The purpose of this study is to identify the effect of the innovation characteristics that AI Elderly Care Robots have on elderly consumers and to verify the acceptance or mediated resistance by the elderly of the innovation characteristics. Research was conducted throughout this study of the characteristics of the elderly so that the study results could contribute to the improvement of the quality and manufacture of AI Elderly Care Robots by lowering the psychological resistance of the elderly. Survey questions were answered by senior citizens aged 65 and older. The SPSS25 and AMOS22 programs were used for analysis. The analysis confirmed that innovation resistance has a significant mediated effect on the characteristics of elderly consumers and their willingness to accept the innovation characteristics of the AI Elderly Care Robots. Through this study, Ram's innovation resistance model has been verified empirically and it is estimated that by considering the specificities of elderly consumers and using the information to contribute to the development and modification of AI Elderly Care Robots will increase the willingness of the elderly to accept the innovation characteristics of the AI Elderly Care Robots.

  • To reduce the leadtime for a new model according to the strict market requirements, automobile manufacturer begins to utilize 3-dimensional CAD based techniques such as DMU(Digital Mock-Up). RP(Rapid Prototyping), VE(Virtual Engineering). But, not so many satisfactory utilities have been introduced to deal with the emotional properties such as embossment on the surface of interior parts and touch from material characteristics in virtual environment. It is required to manufacture prototype parts to verify actual feeling of the passengers in real automobile. This paper suggests a methodology to enhance emotional property via embedding embossment on the surface of prototype car interior trim without deterioration of dimensional accuracy using RIM(Reaction Injection Molding) and vacuum forming method.

Quality Characteristics of Muhwakwa-pyun with Various Starches (전분 종류를 달리한 무화과편의 품질 특성)

  • The effects of various kinds of starch (mungbean, potato, corn and a blend of potato and com starch) on the quality characteristics of muhwakwa-pyun were studied according to the storage duration. The sweetness, pH and total acidity of muhwakwa extract were analyzed, as were the Visco/Amylograph viscosity profile and DSC thermodynamic characteristics of starches. For quality characteristics, color difference, instrumental texture characteristics and sensory characteristics were compared. The sweetness of muhwakwa extract was satisfactory but the total acidity was low for Kwa-pyun manufacture. Therefore, its pH was adjusted to 3.4 by adding 10% citric acid with an amount of 1% of total liquid. From the Visco/Amylograph viscosity profile and DSC thermodynamic characteristics of starches, a blend of potato and com starch was found to be easy to cook and form a gel but a little more resistant than the other starches in terms of retrogradatin. Lightness (L) and yellowness (b) of Kwa-pyun increased while its redness (a) decreased by the storage. The color became whiter and the clarity decrease regardless of the kinds of starch, which became obvious after 3 days of storage. The hardness, springiness, adhesiveness and cohesiveness tended to decrease with storage, which was weak in a blend starch. The overall acceptability of Kwa-pyun made with a blend of potato and com starch was evaluated as being the best among the samples tested. Therefore, for traditional kwa-pyun manufacture manufacture mungbean starch might be replaced with a blend of potato and corn starch which is less expensive and easily available in the market nowadays.

Quality Characteristics of Livestock Feces Composts Commercially Produced in Gyeonggi Province in 2008

  • This survey was conducted to promote the environment-friendly use and recycling of livestock feces by obtaining information about the current state of livestock feces composts manufactured in Gyeonggi Province. Therefore, some aspects of quality and manufacturing techniques of livestock feces composts (LFCs) were examined especially in relation to the LFCs quality standard (LQS). By surveying the 70 composting plants in Gyeonggi Province, the total commercial production of LFCs in 2008 was estimated to be about $480,000Mg\;year^{-1}$ and they were manufactured mainly by using both mechanical mixer and bottom air blower. LFCs were composed mainly of chicken feces 29.2%, pig+chicken feces 23.1%, pig feces 20.0%, livestock feces+oil cake 12.3%, pig+chicken+cattle feces 10.8% and pig+cattle feces 4.6%. On the basis of the current official standard which was revised on March 2010, 11 composts out of surveyed 76 ones did not meet the LQS due to inadequate content of water (5), OM/N (1), NaCl (2) and Zn (3). The satisfaction rate to LQS by manufacturers was 100% in the composts produced by farmer's cooperative societies, 80.7% by civil factories, and 44.4% by farming guilds, respectively. The OM/N declined by adding chicken feces and oil cake, while Ca content was increased by the addition of chicken feces and NaCl was increased by adding cattle feces.

Antioxidative Activity of Yacon and Changes in the Quality Characteristics of Yacon Pickles during Storage (야콘의 항산화성 및 야콘 초절임제품의 저장 중 품질특성)

  • The purpose of this study was to measure the antioxidant activity of yacon root and to manufacture yacon pickles for commercialization as a functional food. The total phenol content in yacon roots were the highest, 29.96 mg GAE/ 100 g, in the ethyl acetate fraction and the DPPH radical scavenging activity and ABTS radical scavenging activity was 37.07%, and 91.60%, respectively, in the ethyl acetate fraction. The optimum recipe for the pickling solution was determined to be vinegar, water and high fructose corn syrup, at 34%, 22% and 44%, respectively. The quality characteristics of yacon pickles using this solution were monitored during storage at $25^{\circ}C$ for 43 days. The pH value decreased to 2.98 (42 days) during storage and $^{\circ}Brix$ gradually increased during storage. The L-value decreased significantly during storage but there were no significant changes detected in the a and b values. No significant changes were detected in the hardness of the yacon pickles. According to the sensory evaluation, no significant changes in taste, texture and overall acceptance of yacon pickle were observed during storage. These results indicated that yacon was an excellent functional food in terms of its antioxidant activity and that pickling might be a promising methods to maintain the taste and quality of yacon during storage.

  • Conventionally, grinding of stainless steel, aluminium ally, copper alloy, and titanum alloy are difficult to obtain the high quality finish, because they have the mechanical properties such as low hardness, high toughness which result in the loading of wheel and the poor surface finish. Inorder to perform the grinding operations for these sorts of materials easily, the discontinuous grinding wheel with multi-porous grooves has newly been developed. The multi-porous grooves were formed during wheel production. This discontinous grinding wheel increases the grinding performance. It is desirable to use the discontinuous grinding wheel when grinding materials wiht high efficiency and accuracy which is impossible by conventional wheels. In this paper, the constructing and manufacturing method of grinding wheel with multi-proous grooves are explained, and the grinding charateristics of discontinuous grinding wheel are also illustrate.

Process Conditions Optimizing the Yield of Power Semiconductors (전력반도체의 수율향상을 위한 최적 공정조건 결정에 관한 연구)

  • Purpose: We used a data analysis method to improve semiconductor manufacturing yield. We defined and optimized important factors and applied our findings to a real-world process. The semiconductor industry is very cost-competitive; our findings are useful. Methods: We collected data on 15 independent variables and one dependent variable (yield); we removed outliers and missing values. Using SPSS Modeler ver. 18.0, we analyzed the data both continuously and discretely and identified common factors. Results: We optimized two independent variables in terms of process conditions; yield improved. We used DS Leak software to model netting and Contact CD software to model meshes. DS Leak shows smaller the better characterisrics and Contact CD shows normal the best characteristics Conclusion: Various efforts have been made to improve semiconductor manufacturing yields, and many studies have created models or analyzed various characteristics. We not only defined important factors but also showed how to control processing to improve semiconductor yield.

Quality Changes in Jicama (Pachyrhizus erosus) Pickle Due to Variations in Soaking Solution Temperature During Storage (담금액 온도에 따른 히카마 피클의 저장 중 품질변화)

  • This study was carried out to determine the optimum temperature of the jicama pickle solution by evaluating physicochemical and sensory characteristics at various temperatures. The soaking solution of the jicama pickle was prepared at different temperatures (95, 75, 50, and 25℃). During storage, the titratable acidity, Brix, and the salinity of the jicama pickles increased, and these values increased with increasing temperature of the soaking solution. The higher the temperature of the soaking solution, the lower the L and b values. In all samples, the hardness increased rapidly until the 5th day of storage, and then gradually decreased. During storage, the jicama pickles showed a high tendency to harden at soaking solution temperatures of 75 and 95℃. Sensory evaluation indicated that the taste, flavor, crispness, and overall preference of the jicama pickle were higher at a soaking solution temperature of 75℃ and above. The higher the temperature of the soaking solution, the higher the acceptability. Based on these results, we conclude that soaking solution temperature of 75°¦95℃ in the manufacture of jicama pickles had a positive effect on the reduction in tissue softening and the sensory properties of the jicama pickle.

Quality Characteristics of Dough Liquid according to the Addition Ratio of Doraji in Seaweed Snack Manufacturing (김스낵 제조시 도라지 첨가량에 따른 반죽액의 품질 특성)

  • This study was examined the quality characteristics of dough liquid according to the additional ratio of Doraji in seaweed snack manufacturing. Firstly, the results of Doraji type (dry & powder) were as follows: Carbohydrates 77.57~79.29, crude protein 9.10-9.25, crude fat 0.96~1.33 and calories 355~366 kcal, pH 5.42~5.45, sugar $3.53{\sim}3.96^{\circ}brix$, color 33.82~44.25 (L), 2.27~3.52 (B) and total free amino acids 2,200~2,699 mg/100 g. Total polyphenol contents had dry extracts 1,931.18 mg% and powder extract 1,382.43 mg%, DPPH and ABTs radical scavenging activities tended to increase with higher treatment concentration. Next, the results showed that dough liquid for seaweed snack manufacture which was added Doraji were as follows: Color became deep poppy red with increased addition of Doraji. The texture of adhesiveness, cohesiveness, chewiness, and brittleness tended to decrease with addition of Doraji. The springness showed the opposite tendency. Accordingly, these results suggest that 20% of dry Doraji extract is a proper proportion so that it can be added to the rice dough liquid to produce form Doraji (dry and powder) containing seaweed snacks.
