Risk Assessment of Growth Hormones and Antimicrobial Residues in Meat

  • Growth promoters including hormonal substances and antibiotics are used legally and illegally in food producing animals for the growth promotion of livestock animals. Hormonal substances still under debate in terms of their human health impacts are estradiol-$17\beta$, progesterone, testosterone, zeranol, trenbolone, and melengestrol acetate (MGA). Many of the risk assessment results of natural steroid hormones have presented negligible impacts when they are used under good veterinary practices. For synthetic hormonelike substances, ADIs and MRLs have been established for food safety along with the approval of animal treatment. Small amounts of antibiotics added to feedstuff present growth promotion effects via the prevention of infectious diseases at doses lower than therapeutic dose. The induction of antimicrobial resistant bacteria and the disruption of normal human intestinal flora are major concerns in terms of human health impact. Regulatory guidance such as ADIs and MRLs fully reflect the impact on human gastrointestinal microflora. However, before deciding on any risk management options, risk assessments of antimicrobial resistance require large-scale evidence regarding the relationship between antimicrobial use in food-producing animals and the occurrence of antimicrobial resistance in human pathogens. In this article, the risk profiles of hormonal and antibacterial growth promoters are provided based on recent toxicity and human exposure information, and recommendations for risk management to prevent human health impacts by the use of growth promoters are also presented.

Studies on the Intestinal Microflora of Chicken Under Tropical Condition

  • Three media, i. e., MOD-SD, M98-5 and M98-5 supplemented with chicken fecal extract were tested as isolation media for anaerobic bacteria present in the duodenum, jeju-ileum and cecum of chicken. The results showed that the mean colony counts of medium M98-5 were similar with those of MOD-SD medium in all intestinal samples at the incubation periods of 2, 6 and 10 days. Supplementation with chicken fecal extract of M98-5 medium significantly increased (p < 0.05) the colony counts of bacteria from the duodenum, jeju-ileum and cecum. The colony counts at 6-day incubation were similar with those at 10-day incubation, but were much higher than the counts at 2-day incubation. The major types of bacteria found in the duodenum and jeju-ileum of chicken were tentatively identified as Lactobacillus, Streptococcus and E. coli. In the cecum, ten tentatively identified groups of bacteria, namely, Streptococcus, Staphylococcus, Lactobacillus, E. coli, anaerobic coccus, Eubacterium, Propionibacterium, Clostridium, Fusobacterium and Bacteroides were isolated. Anaerobes were found to comprise nearly the entire microbial population of the cecum. Predominating in all sections of the intestine were homofermentative lactobacilli. The main Lactotacillus species in chicken intestine were L. acidophilus, L. fermentum and L. brevis.

유산균 발효유의 이용과 건강증진 (Utilization of Fermented Milk and It's Health Promotion)

  • This study was designed to investigate the health promotion effect of fermented milk and historical story of Korean dairy products from the ancient period to present. Although the origin of fermented milk is Europe, the recede of fermented milk was founded in far-east and middle east areas at BC 4C. After the spread of fermented milk to Korea and Japan. The consumption of fermented milk in Korea was dramatically increased to 14.2 kg per person in 1997. Health promotion effect of fermented milk can be devided to 5 major effected improvements of intestinal microflora, anticancer, cholesterol assimilation anti-pathogenic activity. Fermented milk reduced the level of ${\beta}$-glucornidase and nitroreductase to 50% and it provides anticancer activity by cell wall an polysaccharides. Fermented milk has cholesterol assimilation activity ca. 54${\sim}$40% (B. longum, Str. thermophillus). Anti-pathogenic activity of fermented milk was significant. It appeared that Sal. ser. typhimurium was more susceptible than 5. coli 0157 at low pH fermented milk. Viable cells of E. coli 0157 were not dramatically decreased in most of fermented milks tested, but in general, Sal. ser. typhimurium was drastically decreased in most of the fermented milks.

시판된장의 유리아미노산, 유기산 및 Isoflavone의 함량에 관한 연구 (Studies on the Contents of Free Amino Acids, Organic Acids and Isoflavones in Commercial Soybean Paste)

  • In order to establish the quality standard of commercial soybean paste, pH, color, moisture, crude protein, isoflavone, free amino acid and organic acid contents of the fermented soybean food in both traditional and commercial products were analyzed. The crude protein contents were from 5.0 to 11.9% in commercial soybean pasted of Samjang and traditional soybean paste of Chungugjang, and the latter showed higher value than those of the former. The contents of isoflavones in commercial soybean paste were less than those of traditional soybean paste. Total contents of free amino acids were distributed from 301 to 4,602mg%, respectively, in which Chungugjang showed the smallest value of 301mg% and the traditional soybean paste showed the most abundant one of 4,602mg%. The ratio of glutamic acid to total free amino acids were 15.9% and 30.1% in traditional soybean paste and commercial soybean paste, respectively. The major organic acid both commercial soybean paste and Samjang was citric acid containing 109.9~196.5mg%. On the other hand, that of traditional soybean paste and Chungugjang was oxalic acid containing 82.8~130.1mg%. This results might be caused by the differences of brewed periods, microflora, processing methods and used raw materials.

Probiotic bifidobacteria의 건강 증진 작용과 산업적 이용 (Health Benefits of Probiotic Bifidobacteria and Their Industrial Application)

  • Bifidobacteria are normal inhabitants of the human gastrointestinal tract throughout lift, starting just days after birth, and are one of several predominant species of the colonic microflora, along with Peptostreptococcus, Eubacteria, Clostridia, and Bacteroides. Bifidobacteria differ from lactic acid bacteria in that they produce not only lactic acid but also acetic acid as major fermentation products. The classification of bifidobacteria has changed numerous times since they were discovered in 1899 in the feces of breast-fed infants. Since 1994, three additional species have been included in the list (B. lactis, B. inopinatum, and B. denticolens), with a current total of 32 species. A variety of probiotic effects of bifidobacteria are currently being investigated. Research reports suggests several potential probiotic advantages, in particular antimicrobial effects, immune-modulation reduction of the cancer risk, and modulation of gastrointestinal flora. As technological challenges related to viability and enumeration are being overcome, milks fermented with these anaerobic microorganisms(alone or in combination with lactic acid bacteria) are more able to provide consistently satisfying with large numbers of viable microorganisms. Over 70 products containing bifidobacteria are currently offered around the world, including fermented milks, cheese, buttermilk frozen desserts, candy, and pharmaceutical preparations.

Pharmacokinetics of ginsenoside Rb1 and its metabolite compound K after oral administration of Korean Red Ginseng extract

  • Compound K is a major metabolite of ginsenoside Rb1, which has various pharmacological activities in vivo and in vitro. However, previous studies have focused on the pharmacokinetics of a single metabolite or the parent compound and have not described the pharmacokinetics of both compounds in humans. To investigate the pharmacokinetics of ginsenoside Rb1 and compound K, we performed an open-label, single-oral dose pharmacokinetic study using Korean Red Ginseng extract. We enrolled 10 healthy Korean male volunteers in this study. Serial blood samples were collected during 36 h after Korean Red Ginseng extract administration to determine plasma concentrations of ginsenoside Rb1 and compound K. The mean maximum plasma concentration of compound K was $8.35{\pm}3.19$ ng/mL, which was significantly higher than that of ginsenoside Rb1 ($3.94{\pm}1.97$ ng/mL). The half-life of compound K was 7 times shorter than that of ginsenoside Rb1. These results suggest that the pharmacokinetics, especially absorption, of compound K are not influenced by the pharmacokinetics of its parent compound, except the time to reach the maximum plasma concentration The delayed absorption of compound K support the evidence that the intestinal microflora play an important role in the transformation of ginsenoside Rb1 to compound K.

프로바이오틱스의 기능성과 안전성 (Functionality and Safety of Probiotics)

  • Probiotics stabilize intestinal microflora, reduce constipation, reduce decay by inhibiting harmful bacteria, and prevent diseases. Probiotics have also been studied for their possible roles in immune activation, treatment of cancer, remediation of cholesterol, treatment of diabetes, alleviation of allergies, and relief of lactose intolerance. However, recent data concerning the side effects of probiotics have prompted debate regarding their efficacy and safety. Major adverse events associated with probiotics are gastrointestinal symptoms, such as diarrhea, gastrointestinal disorders, and vomiting, along with skin rash and urticaria. Probiotics occasionally cause sepsis in infants with poor immunity and elderly people with severe diseases. In contrast to previous studies that described the efficacy of probiotics in intestinal regulation, some recent studies have reported that the activity of intestinal microbes becomes weak as a result of the influx of probiotics. The data indicate that the safety of probiotics is not guaranteed and that further investigations are needed.

Potential of Using Maize Cobs in Pig Diets - A Review

  • The quest to broaden the narrow range of feed ingredients available to pig producers has prompted research on the use of low cost, unconventional feedstuffs, which are typically fibrous and abundant. Maize cobs, a by-product of a major cereal grown worldwide, have potential to be used as a pig feed ingredient. Presently, maize cobs are either dumped or burnt for fuel. The major challenge in using maize cobs in pig diets is their lignocellulosic nature (45% to 55% cellulose, 25% to 35% hemicellulose, and 20% to 30% lignin) which is resistant to pigs' digestive enzymes. The high fiber in maize cobs (930 g neutral detergent fiber/kg dry matter [DM]; 573 g acid detergent fiber/kg DM) increases rate of passage and sequestration of nutrients in the fiber reducing their digestion. However, grinding, heating and fermentation can modify the structure of the fibrous components in the maize cobs and improve their utilization. Pigs can also extract up to 25% of energy maintenance requirements from fermentation products. In addition, dietary fiber improves pig intestinal health by promoting the growth of lactic acid bacteria, which suppress proliferation of pathogenic bacteria in the intestines. This paper reviews maize cob composition and the effect on digestibility of nutrients, intestinal microflora and growth performance and proposes the use of ensiling using exogenous enzymes to enhance utilization in diets of pigs.

주요 오염물질로 오염된 지하수에서 미생물의 무배양식 군집분석방법과 미생물상에 대한 조사방법 연구 (Culture-Independent Methods of Microbial Community Structure Analysis and Microbial Diversity in Contaminated Groundwater with Major Pollutants)

  • 최근에 적용된 지하수 미생물의 군집구조를 밝히는 분자생물학적 및 생화학적 방법들에 대해서 알아보았고 그 결과로서 지하수의 주요 오염물질에 따른 활성화된 미생물군집들이 무엇인지를 밝힌 연구논문들을 종합하여 정리하였다. PCR에 의한 유전자 증폭기술의 발달로 배양 없이 미생물 종류와 개체군을 파악할 수 있게 되었고 각종 finger-printing 방법 (DGGE, SSCP, RISA, microarray) 과 지방산분석법 (PLFA/FAME)을 이용하여 활성화 된 미생물군집구조를 분석하였으며 FISH 등의 방법으로 특정균의 활성도를 알아본 사례들을 조사하였다. 대표적인 지하수오염물질인 유류성분 (n-alkanes, BTEX, MTBE, ethanol)과 염소계 용매 (TCE, PCE, PCB, CE, carbon tetrachloride, chloro-benzene) 등으로 오염되었을 때 우점하는 지하수 미생물상에 대해 보고된 내용을 포함하였다.

쑥, 양파 및 원지가 흰쥐의 장내환경에 미치는 영향 (Effects of Mugwort, Onion and Polygalae Radix on the Intestinal Environment of Rats)

  • 원지, 양파 및 쑥을 추출물, 즙 또는 분말로 하여 기준식이에 5 및 10% 첨가하여 흰쥐에게 14일간 먹여 대장내용물에서 주요균의 변화와 ${\beta}-glucosidase$${\beta}-glucuronidase$의 효소활성 및 인돌과 volatile basic nitrogen의 생성량을 조사하였다. 실험쥐들의 사료섭취량과 체중증가량은 쑥의 물추출물 5% 섭취구를 비롯하여 시료 첨가구들에서 대체로 높았으나, 원지물추출물 5%와 쑥의 에탄올추출물 10% 섭취구에서는 체중이 감소하였다. 쑥의 물 또는 에탄올추출물 첨가구에서 유익균인 bifidobacteria가 대조구에 비해 높았고, clostridia와 E. coli는 낮았다(p<0.05). 그외 양파즙 10% 첨가구에서도 유익균의 증가와 유해균의 감소와 같은 유리한 균총변화를 보였다. 한편 쑥분말 5% 첨가구에서 대장내용물중 ${\beta}-glucosidase$${\beta}-glucuronidase$ 활성은 대조구와 비교해 통계적인 유의성이 없으나, 인돌함랑과 pH는 대조구에 비해 낮았다(p<0.05). 그러나 원지물추출물과 양파를 10% 첨가구에서는 ${\beta}-glucosidase$ 활성이, 쑥추출물들의 첨가구에서는 ${\beta}-glucuronidase$ 활성이 높았다(p<0.05). 인돌함량은 단백질 함량이 높은 원지물추출물과 쑥에탄올추출물 첨가구에서 높았다(p<0.05). 한편 휘발성 염기태 질소화합물의 함량은 처리구들에서 유의적인 차이가 없었다.
